Desserts - Double-Post Thursday

Besides being Diabetic Thursday, it's also Double-Post Thursday. Today's double post deals with one of my favorites, desserts!

Is there anyone who hasn't wanted something snacky once in a while? Here are six yummy desserts (or anytime snacks) to help us all through the day, including Red Velvet Cheesecake and Lemon-Spice Visiting Cake. Enjoy!

ALMOND JOY ENERGY BITES

I found this on Runner’s World website in an article titled “18 No-Bake High-Protein Energy Bites for Easy Fueling.”

This particular recipe is from Ali at Gimme Some Oven. It begins, “These Almond Joy Energy Bites taste like the candy bar we all love, but are made with healthier ingredients and sweetened with dates.”

Ingredients:

12 oz. (about 2 cups, loosely-packed) Medjool dates (**see note below about types of dates and substitutions**)

2 cups almonds

1/2 cup shredded coconut

1/2 cup unsweetened cocoa powder

1 Tbsp. coconut oil

1 Tbsp. vanilla extract

1/2 tsp. almond extract (optional)

Directions:

Add dates and remaining ingredients to a food processor. Pulse a few times to combine, then use a rubber spatula to scrape the sides of the bowl. Blend the mixture for about 3 minutes, or until the mixture has moved past the crumbly stage and begins to clump and stick to the sides of the food processor.

Use a spoon or small cookie scoop to measure out a tablespoon of dough (or your desired size) and roll it into a ball. If desired, roll the ball in a bowl of coconut flakes. Or just set it aside to eat as-is. Repeat with the remaining dough. (Alternately, you can flatten the dough into the bottom of an 8×8-inch parchment-lined baking dish, then cut it into bars.)

Store the energy bites in an airtight container for up to 2 weeks.

**I used Medjool dates in this recipe, which are already nice and soft. If you substitute another kind of date, you may need to soak them in warm water for 10 minutes first in order to soften then. (Then drain them before using.)

PUMPKIN SHEET PAN PIE

This is from LandOLakes, and begins, “Pie for everyone! Classic pumpkin pie topped with the most delicious caramel whipped cream is perfect for your Thanksgiving dessert.”

Makes 24 servings; Prep Time: 45 minutes; Total Time: 2 hours 45 minutes

Ingredients

Crust

4 cups all-purpose flour

1/2 teaspoon salt

1 1/3 cups cold Land O Lakes® Butter cut into chunks

1 1/4 cups cold water (additional if necessary)

Filling

4 large Land O Lakes® Eggs

2 cups firmly packed brown sugar

1 cup Land O Lakes® Heavy Whipping Cream

1 (29-ounce) can pumpkin

2 teaspoons pumpkin pie spice

1 teaspoon salt

Caramel Whipped Cream

1 1/2 cups Land O Lakes® Heavy Whipping Cream

1/4 cup caramel ice cream topping

2 tablespoons powdered sugar

Directions

Heat oven to 425°F. Line baking sheet with parchment paper. Set aside.

Combine flour and 1/2 teaspoon salt in medium bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Gradually stir in 1 cup water with fork, adding enough additional water just until flour is moistened.

Divide dough into 1/4 and 3/4 portions. Shape each portion into ball; flatten slightly. Wrap larger portion of dough in plastic food wrap; refrigerate.

Roll out smaller portion of dough on lightly floured surface to 1/8-inch thickness. Using various fall-shaped cookie cutters, cut out at least 40 pieces. Place 12-18 cut-outs onto prepared baking sheet. Refrigerate remaining cut-outs. Sprinkle with sanding sugar, if desired. Bake 5-7 minutes or until crust is lightly golden brown. Cool completely. Set aside.

Beat eggs at medium speed in medium bowl until thick and pale yellow in color. Add all remaining filling ingredients; beat until well mixed. Set aside.

Roll out larger portion of dough on lightly floured surface into 19x14 (1/8-inch thick) rectangle. Fold dough rectangle into quarters. Place dough into ungreased 15x10x1-inch baking pan. Unfold dough, pressing firmly against bottom and sides. Crimp or flute edges.

Pour filling into crust. Decorate top of crust with remaining unbaked cut-outs. Bake 10 minutes. Reduce oven temp to 350°F. Bake 50-60 minutes or until knife inserted into center of pie comes out clean. Cool completely.

Beat chilled whipping cream, caramel sauce, and sugar in chilled bowl at low speed, scraping bowl often, until caramel sauce has dissolved. Continue beating at high speed until stiff peaks form.

Serve pie with a dollop of whipped cream and crust cut-out garnish.

Tip #1

To make ahead, prepare pie crust and filling the day before serving. Cover and refrigerate separately overnight. Bake cut-outs, assemble and bake pie.

RED VELVET DOUGHNUTS

This is from Diana Rattry, Southern food expert for The Spruce. Diana wrote, “These red velvet doughnuts are as delicious as they are attractive. They make a wonderful treat for any time of the year, and the vibrant red color makes them an excellent choice for a Valentine's Day or Christmas morning.

“Glaze the doughnuts with a cream cheese frosting or plain vanilla icing and decorate them with red sugars or candies. These doughnuts will be an instant hit!”

Prep Time: 15 minutes; Cook Time: 10 minutes; Total Time: 25 minutes; Yield: 10 servings.

Ingredients

Doughnuts

1 1/4 cups all-purpose flour (5 1/2 ounces)

1 tablespoon cocoa powder

1/2 cup granulated sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1 large egg

1/2 cup buttermilk*

1 tablespoon red food coloring

4 tablespoons butter ( melted, cooled slightly)

1 teaspoon vanilla extract

1/2 teaspoon white vinegar

Vanilla Icing

1 1/4 cups powdered sugar (sift after measuring)

1 tablespoon light corn syrup

1 tablespoon butter (melted)

1 tablespoons water (or more, as needed)

1/2 teaspoon vanilla extract

Cream Cheese Icing

1 1/4 cups powdered sugar (sift after measuring)

2 tablespoons cream cheese (softened)

1/2 teaspoon vanilla extract

3 tablespoons milk (or more, as needed)

Directions

Preheat the oven to 350 F.

Spray doughnut pans with nonstick cooking spray.

In a medium bowl, combine the flour, cocoa powder, granulated sugar, baking soda, and salt. Stir with a whisk or spoon to blend thoroughly.

In a large bowl, whisk the egg with the buttermilk (or sour milk), red food coloring, melted butter, 1 teaspoon of vanilla extract and vinegar.

Add the dry mixture to the wet mixture and stir just until blended.

Spoon the batter into a small plastic food storage bag.

Cut a small corner from the bag and pipe the batter into the cavities of the doughnut pan, filling them about half full.

Bake standard size doughnuts for about 10 to 12 minutes. Bake mini doughnuts for about 6 minutes.

Dip the tops of the doughnuts into the cream cheese or vanilla icing to glaze or spread with the icing (see below).

The recipe makes about 10 standard baked doughnuts or about 16 to 18 mini baked doughnuts.

Vanilla Icing

In a mixing bowl with an electric mixer on low speed, combine the sifted powdered sugar with the light corn syrup, melted butter, 1 tablespoon of water and 1/2 teaspoon of vanilla extract.

Beat the icing, adding more water in small amounts until the desired consistency is reached.

Cream Cheese Icing

In a mixing bowl with an electric mixer on low speed, combine the powdered sugar with the softened cream cheese, 1/2 teaspoon of vanilla extract and 3 tablespoons of milk.

Beat the icing, adding more milk in small amounts until the desired consistency is reached.

*Sour milk is a good buttermilk substitute. To make sour milk, put 1 1/2 teaspoons of white vinegar or lemon juice in a measuring cup. Add milk to the 1/2-cup line. Stir and let stand for about 5 minutes. It might look curdled, but that's okay.

APPLESAUCE BROWNIES

Ingredients

1/3 cup vegetable oil

1/2 cup unsweetened applesauce

1/2 cup unsweetened cocoa powder

1/2 cup sugar

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

2 large eggs

1 tsp vanilla extract

1/4 cup chopped nuts

Directions

Preheat oven to 375 F.

Combine oil, applesauce and cocoa. Add sugar and stir until dissolved. Add eggs and vanilla. Mix dry ingredients together and stir into the mixture.

Pour the batter into a greased and floured (or wax paper lined & sprayed) 9 inch square pan. Sprinkle on nuts (optional).

Bake about 20 to 30 minutes or until top is set but edges are not dried out. Toothpick will come out clean. Cut into 16 or 24 squares.

LEMON-SPICE VISITING CAKE

This comes from Dorie Greenspan on The New York Times cooking emailing list. Dorie wrote, “Whether you pack this cake as a gift or have it ready when visitors come to you, the imperative to share is implicit in its name. The cake is built for comfort and durability – make it on Thursday or Friday and have it all weekend. And if it stales, toast it; the heat will intensify the lemon and spice deliciously. The cake is easy to make (no machines needed) and, like all spice cakes, better after a day’s rest. Giving it a swish of warmed marmalade when it comes out of the oven is optional. What shouldn't be passed up is what I call the ‘lemon trick’: Use your fingertips to rub the recipe’s lemon and sugar together until the sugar is moist and aromatic. This easy step transfers everything essential from the lemon to the cake. Think of it as aromatherapy for the cake and you.”

Ingredients

Butter and flour for the pan

1 1/2 cups all-purpose flour

1 1/4 teaspoons baking powder

1 teaspoon ground cardamom

1/2 teaspoon ground ginger

1/2 teaspoon fine sea salt

1 1/4 cups sugar

1 large (or 2 small) lemons

4 large eggs, at room temperature

1/2 cup heavy cream, at room temperature

1 1/2 teaspoons pure vanilla extract

5 1/2 tablespoons unsalted butter, melted and cooled

1/3 cup marmalade (for optional glaze)

1/2 teaspoon water (for optional glaze)

Preparation

Center a rack in the oven, and preheat it to 350. Butter an 8 1/2-inch loaf pan (Pyrex works well), dust with flour and tap out the excess. (For this cake, bakers’ spray isn’t as good as butter and flour.) Place on a baking sheet.

Whisk the 1 1/2 cups flour, baking powder, cardamom, ginger and salt together.

Put the sugar in a large bowl, and grate the zest of the lemon(s) over the sugar. Squeeze the lemon(s) to produce 3 tablespoons juice, and set this aside. Using your fingers, rub the sugar and zest together until the mixture is moist and aromatic. One at a time, add the eggs, whisking well after each. Whisk in the juice, followed by the heavy cream. Still using the whisk, gently stir the dry ingredients into the batter in two additions. Stir the vanilla into the melted butter, and then gradually blend the butter into the batter. The batter will be thick and have a beautiful sheen. Scrape it into the loaf pan.

Bake for 70 to 75 minutes (if the cake looks as if it’s getting too dark too quickly, tent it loosely with foil) or until a tester inserted deep into the center of the cake comes out clean. Transfer to a rack, let rest for 5 minutes and then carefully run a blunt knife between the sides of the cake and the pan. Invert onto the rack, and turn over. Glaze now, or cool to room temperature.

For the glaze: Bring the marmalade and water to a boil. Brush the glaze over the top of the warm cake, and allow to it to set for 2 hours. The glaze will remain slightly tacky.

When the cake is completely cool, wrap in plastic to store. If it’s glazed, wrap loosely on top.

RED VELVET CHEESECAKE

For the crust:

1 1/2 cups finely crushed chocolate wafer cookies (about 28 cookies)

5 tablespoons unsalted butter, melted

1/3 cup sugar

Pinch of salt

For the filling:

4 8-ounce packages cream cheese, softened

1 1/4 cups sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

2 tablespoons all-purpose flour

4 large eggs

1 tablespoon unsweetened cocoa powder

1 teaspoon red food coloring

Make the crust: Preheat the oven to 350 degrees F. Mix the cookie crumbs, melted butter, sugar and salt in a bowl. Press into the bottom and 1 inch up the sides of a 9-inch springform pan. Put the pan on a baking sheet and bake until set, about 10 minutes. Let cool completely.

Make the filling: Reduce the oven temperature to 325 degrees F. Beat the cream cheese, sugar, lemon juice and vanilla in a stand mixer fitted with the paddle attachment until smooth, 4 to 5 minutes. Add the flour, then beat in the eggs one at a time. Transfer 2 cups batter to a bowl; stir in the cocoa powder and food coloring. Pour the red batter into the crust, then pour the white batter on top. Using a spoon, pull some of the red batter up from the bottom of the cake and swirl. Bake until the edges are set but the center is still wobbly, about 1 hour, 20 minutes.

Turn off the oven but keep the cake inside to cool, 20 minutes. Run a knife around the edge of the pan (don't remove the springform side), then transfer to a rack to cool. Refrigerate at least 4 hours before slicing.
