Taco Tuesday

I hope you love Taco Tuesday as much as I do. There's just something almost magical about a good taco, whether on a crunchy or soft shell, whether meat-filled or vegetarian. Yum! What's not to love?

With that in mind, here are six yummy taco recipes to help you through the day, including Chicken Lettuce Tacos with Pickled Strawberry Salsa and Beef Tacos with Mango Salsa. Enjoy!

CHICKEN AND AVOCADO TEN MINUTE TACO BOWLS

This comes from Old El Paso, and begins, "These taco 'bowls' are sure to be the next family favorite; even better, they come together in record time!"

Prep Time: 10 minutes; Total Time: 10 minutes; Makes 8 servings

Ingredient

1 tablespoon vegetable oil

3 boneless skinless chicken breasts (about 1.25 lbs), cut into very small thin strips

1 package (1 oz) Old El Paso™ taco seasoning mix

8 Old El Paso™ Stand 'N Stuff™ soft tortillas

2 Avocados from Mexico™, pitted, peeled and diced

Make it FRESH toppings, if desired (see below)

Preparation

In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook, stirring occasionally, until browned on both sides. Sprinkle with taco seasoning mix. Cook, stirring occasionally, just until chicken is no longer pink in center.

While chicken is cooking, heat shells and prepare toppings. Divide chicken among shells; add avocado and other desired toppings.

BEEF TACOS WITH MANGO SALSA

This comes from Old El Paso, and begins, "Family taco night gets a summery twist with this easy beef taco topped with Monterey Jack cheese, shredded red cabbage and a fresh mango, red onion salsa."

Ingredient

1 ripe medium mango, seed removed, peeled and diced (about 1 cup)

2 tablespoons chopped red onion

1 tablespoon lime juice

1 teaspoon honey

1 lb ground beef (at least 80% lean)

2/3 cup water

1 package (1 oz) Old El Paso™ Original Taco Seasoning Mix

1 package (10 count) Old El Paso™ Stand ‘N Stuff™ Taco Shells, heated as directed on package

1 1/4 cups Old El Paso™ Shredded Monterey Jack Cheese (5 oz)

1 1/4 cups shredded red cabbage

2 tablespoons chopped fresh cilantro leaves

Preparation

In small bowl, mix mango, red onion, lime juice and honey. Set aside.

In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.

Divide warmed beef mixture among heated taco shells. Top with cheese, cabbage, mango salsa and cilantro.

Expert Tips

No red cabbage? Use shredded green cabbage. If shredded cabbage has larger pieces, chop into smaller, more bite-size pieces.

To peel a mango, first stand the fruit on its end, and use a knife to cut straight down on either side, avoiding the large seed in the middle. Slice horizontally and crosswise on the flesh to make diced mango. To save time, purchase already peeled and sliced mango.

SEITAN TACOS

This is from FoodFanatic, and begins, “Seitan tacos made with citrus and herb are a fantastic vegetarian idea. These tacos are a fantastic addition to Taco Week!” Makes 4 servings; Serving Size: 2 tacos; Prep Time: 30 minutes; Cook Time: 10 minutes; Total Time: 40 minutes.

Ingredients

8 ounces seitan strips, 1 package

2 cloves garlic, minced

2 jalapeños, deseeded and minced

1 teaspoon cumin

1/2 teaspoon ancho chili powder

1/2 cup onion, chopped

1/2 cup orange juice

2 tablespoons fresh lime juice

1/4 cup olive oil

3 tablespoons fresh parsley, chopped

4 tablespoons fresh cilantro, chopped

2 tablespoons honey

3 tablespoons sour cream

3 tablespoons canola oil

1 large tomato, diced

2 cups baby spinach, chopped

1/2 cup shredded cheddar cheese

8 flour tortillas, corn tortillas, or corn taco shells

Directions

Drain the seitan strips and toss them with the garlic, jalapenos, cumin, chili powder, and onions in a small bowl. Set aside.

Combine the orange juice, lime juice, olive oil, parsley, cilantro and honey in a blender and mix until combined. Whisk in the sour cream. Set aside.

In a medium skillet, heat the canola oil over medium heat. Add the seitan mixture and cook until the seitan has browned and the onions are soft.

Assemble the tacos with the seitan mixture, tomatoes, spinach and cheese.

Spoon the citrus dressing over the tacos. Alternatively, because it is very liquid, you can also coat the cooked seitan mixture with the desired amount of dressing before taco assembly.

Notes

I used a thyme flavored honey which added to the herby flavor of the dressing.

Make sure the jalapeno is actually spicy. This dish is better with a little kick!

CHICKEN NACHO TACOS

This comes from Campbells, and begins, "These tasty tacos combine a few on-hand ingredients with canned chicken and fiesta nacho cheese soup to make a delicious dish super-simple!"

Ingredients

1 tablespoon vegetable oil

1 medium onion, chopped (about 1/2 cup)

1/2 teaspoon chili powder

1 can (10 3/4 ounces) Campbells® Condensed Fiesta Nacho Cheese Soup

8 taco shell, warmed

1 cup shredded lettuce

1/2 cup chopped tomato

Directions

Heat the oil in a 10-inch skillet over medium-high heat. Add the onion and chili powder and cook until the onion is tender, stirring often.

Stir the soup and chicken in the skillet and cook until the mixture is hot and bubbling. Spoon the chicken mixture into the taco shells. Top with the lettuce and tomato.

SPICY TURKEY TACOS

This is from Judy Kim on Delish and begins, “Thought ground turkey was blah? Think again.”

Ingredients

8 hard corn taco shells

1 tsp. extra-virgin olive oil

1 lb. ground turkey

4 tsp. Mexican seasoning

1 tsp. cayenne pepper

kosher salt

Freshly ground black pepper

2 cloves garlic, minced

1 onion, diced

1 c. crushed tomatoes

1/4 c. chopped fresh cilantro, plus more for garnish

1 c. grated mozzarella

1 c. Pico de Gallo

1 c. sour cream

Directions

Preheat oven to 375°. Place taco shells on a sheet pan.

In a large skillet over medium-high heat, heat oil and add ground turkey; brown while breaking up with a wooden spoon. Season with Mexican seasoning, cayenne, salt and pepper.

Add garlic and onions; sauté until softened, about 4 minutes. Add tomatoes and cilantro and stir until warmed through. Turn off heat and cover to keep warm.

Just before serving, bake taco shells until warmed through, about 2 minutes. Spoon spicy turkey mixture into taco shells and top with mozzarella, pico de gallo and cilantro. Serve with sour cream.

CHICKEN LETTUCE TACOS WITH PICKLED STRAWBERRY SALSA

This one begins, “Using crisp lettuce as a taco base adds fresh flavor and shaves off calories. The vinegar soaked strawberries infuses the salsa with sweet, briny taste and special antioxidants shown to bolster heart health by improving cholesterol numbers.”

Ingredients

1 Tbsp. granulated sugar

1 tsp. kosher salt

1/2 cup cider vinegar; more as needed

2 cups halved strawberries

1/2 cup unsweetened coconut milk

2 garlic cloves, minced

1 lb. lean ground chicken

1/2 cup chopped mint

2 tsp. lemon zest

1 cup grape tomatoes, quartered

1 yellow bell pepper, diced

2 scallions, thinly sliced

1 jalapeno pepper, seeded and minced

8 large lettuce leaves, such as Boston

Instructions

In a glass jar, stir the sugar and 1/2 tsp. salt with 1/4 cup boiling water until dissolved. Add the cider vinegar and let cool to room temperature. Add the strawberries and more vinegar if needed to cover berries. Seal lid and let stand for at least 30 minutes or up to 1 day in the refrigerator.

In a large skillet, bring coconut milk, garlic and 1/2 tsp. salt to a simmer. Stir in chicken and simmer until meat is no longer pink, stirring occasionally, about 7 minutes. Remove from heat and stir in mint and lemon zest. Season to taste with salt.

Remove strawberries from brine and toss with tomato, yellow pepper, scallions and jalapeno.

Divide chicken among the lettuce leaves and top with strawberry salsa. Serves 4.
