Chili

I have so many great memories surrounding chili. It was one of the foods that my dad loved cooking, so, naturally, it brings back memories of him, as well as friends who loved hitting up places that offered chili alone and on other things (spaghetti, hot dogs, etc.).

To that end, here are six yummy chili recipes to try, including Bush’s® Big Game Chili and Beef and Pinto Bean Chili. Enjoy!

HEARTY SLOW COOKER CHICKEN CHILI

This is from Diana Rattray, a contributor to The Spruce Eats. She wrote, " This easy slow cooker chicken chili is relatively light and low-calorie compared to the classic beef or pork chili. Boneless chicken breasts and a variety of canned beans make the chili super easy and convenient. If you prefer to cook the chili on the stovetop, see the tips below the recipe.

"Feel free to use boneless chicken thighs in the recipe and use the canned beans you have on hand. We used pinto beans and great northern beans, but kidney beans, navy beans, black beans and cannellini beans are all excellent alternatives."

Ingredients:

2 pounds boneless chicken breasts (about 4 large chicken breast halves)

1 cup onion (chopped)

1/2 cup green bell pepper (chopped)

2 cloves garlic (minced; or 1 teaspoon granulated garlic or garlic powder)

1 (15-ounce) can great northern beans (rinsed and drained)

1 (15-ounce) can pinto beans (rinsed and drained)

1 (14.5-ounce) can stewed tomatoes

1 (14.5-ounce) can diced tomatoes

1 (8-ounce) can tomato sauce

1 1/2 cups corn kernels (frozen, thawed)

1 tablespoon chili powder (heaping)

1 teaspoon cumin (ground)

1 teaspoon dried oregano

1 1/2 teaspoons kosher salt

1/2 teaspoon black pepper (freshly ground)

1 bay leaf

Garnish: sour cream or shredded cheese

Optional: chopped fresh cilantro

Directions

Gather the ingredients.

Dice the chicken or cut it into strips. Put the chicken pieces in the slow cooker along with the onion, bell pepper, garlic, drained and rinsed beans, tomatoes and tomato sauce, corn, chili powder, cumin, oregano, salt, pepper and bay leaf. Stir to blend ingredients.

Cover and cook on high for 1 hour, then cook on low for 3 to 4 hours longer, or until the chicken is cooked and tender. Or cook on high for 3 to 4 hours.

Remove the bay leaf.

Spoon the chili into bowls and garnish with sour cream or shredded cheese, along with chopped fresh cilantro, if desired.

Serve with cornbread, crackers, or crusty bread.

Tips

Stovetop: Put ingredients in a large Dutch oven instead of a slow cooker. Stir and bring to a boil. Reduce the heat to low and simmer for 1 to 2 hours.

For thicker chili, add a few tablespoons of cornmeal about 30 minutes before it's done.

Recipe Variations

Other vegetables that may be added include sliced summer squash or zucchini, shredded or julienne-cut carrots, and sliced celery.

For a little heat, add a few tablespoons of minced jalapeno pepper or serrano. Or add some crushed red pepper flakes.

Use different varieties of canned beans, or use cooked dried beans instead. See crock pot great northern beans.

Use part or all boneless chicken thighs in the recipe. Chicken thighs stay tender and juicy in the slow cooker, so they're especially good in this recipe if you will be cooking it longer than the recommended times.

This is from BUSH'S® Best, and begins, "Your friends will become big fans of this hearty chili recipe, made with two types of BUSH'S® Chili Beans. Garnish with chopped green onions and sour cream for added flavor."

Ingredients

1 can (16 oz) BUSH'S® Chili Beans

1 can (16 oz) BUSH'S® Dark Red Kidney Beans

1 lb lean ground beef

1 cup chopped onion

1 cup chopped green bell pepper

1 can (14.5 oz) diced tomatoes

1 can (6 oz) tomato paste

1/2 cup water

1/4 tsp black pepper

1 tsp salt

1 Tbsp chili powder

2 tsp oregano

2 cloves garlic, chopped

Garnish:

Chopped green onion

Sour cream

Directions

In large pan, cook beef, onion, and green pepper until meat is browned. Drain excess grease.

Stir in remaining ingredients, except green onion and sour cream. Bring to boil. Cover, reduce heat, and simmer for 20 minutes.

Garnish with green onion and dollop of sour cream.

HEALTHY LENTIL CHILI

This is from the Food Network, and begins, "This hearty vegetarian chili is both nutritious and satisfying, thanks to the protein-packed navy beans and brown lentils. We added a generous dose of dried spices and other pantry staples to boost the flavor and make this dish accessible for any night of the week."

Ingredients

1 tablespoon olive oil

1 large onion, diced

1 red, orange or yellow bell pepper, diced

4 cloves garlic, minced

Kosher salt and freshly ground black pepper

2 tablespoons tomato paste

2 tablespoons chili powder

1 1/2 teaspoons dried oregano

1/2 teaspoon ground cumin

4 cups low-sodium vegetable broth

Two 14.5-ounce cans fire-roasted diced tomatoes

One 15-ounce can navy beans or another small white bean (do not drain)

1 cup dried brown lentils

1 dried bay leaf

1 tablespoon red wine vinegar

Shredded reduced-fat Cheddar, plain yogurt, pickled jalapenos and crushed tortilla chips, for serving (all are optional)

Directions

Heat the olive oil in a large pot or Dutch oven over medium-high heat until shimmering. Add the onion, bell pepper, garlic, 1/2 teaspoon salt and several grinds of black pepper. Cook until vegetables are just tender and browned in spots, stirring occasionally, about 6 minutes. Stir in the tomato paste, chili powder, oregano and cumin, then continue to cook until fragrant and brick-red in color, stirring frequently, about 2 minutes.

Stir in the chicken broth, diced tomatoes, beans (and their liquid), lentils, bay leaf, 1/2 teaspoon salt and a couple grinds of black pepper. Bring to a steady simmer, then reduce the heat to medium-low. Partially cover with a lid and gently simmer, stirring occasionally, until the lentils are tender and the chili has thickened slightly, 35 to 45 minutes.

Remove the bay leaf and stir in the vinegar. Season with salt and black pepper. Ladle into bowls and serve with toppings as desired.

SIMPLE, PERFECT CHILI

2 pounds ground beef

One 8-ounce can tomato sauce

Directions

Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.

After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

DEEP, DARK AND STOUT CHILI

Recipe Yield: Yield: 8 servings. Serving size: 1-1/3 cups (325 mL) chili.

Ingredients

2 Tbsp canola oil

1-1/2 lb extra lean ground beef (or 1 lb extra lean ground beef and 15-oz can kidney beans, rinsed and drained)

2 cups diced green bell peppers

1 cup diced red onion

3 cans (14.5 oz each) no-salt-added stewed tomatoes

1 bottle (12 oz) dark stout beer

3 Tbsp chili powder

1-1/2 Tbsp ground cumin

1-1/2 Tbsp smoked paprika (optional)

1 Tbsp sodium-free beef bouillon granules

1 tsp salt

Toppings:

1/2 cup chopped fresh cilantro leaves

1/2 cup finely chopped red onion

1 medium lime, cut into 6 wedges

Directions

Heat 1 Tbsp canola oil in Dutch oven over medium-high heat. Working in two batches, brown beef, about 3-4 minutes per batch, stirring frequently.

Meanwhile, in a saute pan heat remaining 1 Tbsp canola oil and cook bell peppers and onions 4 minutes or until onions are soft, stirring frequently. Stir into cooked beef. Add stewed tomatoes, beer, chili powder, cumin, paprika, and bouillon. Bring just to a boil over medium-high heat, reduce heat, cover and simmer 45 minutes. Stir in salt.

Serve chili with choice of toppings placed in three small bowls.

Notes:

Like most chili recipes, the flavors are more blended if the chili is served the next day. This dish freezes well, too.

BEEF AND PINTO BEAN CHILI

This is from WW, and begins, "Chili doesn’t get any easier than this quick beef-and-bean version you make in a skillet. You can serve it with lime wedges, a sprinkle of coarsely chopped fresh cilantro, and dollops of plain fat-free Greek yogurt."

Prep Time: 10 minutes; Cook Time: 15 minutes; Total Time: 25 minutes; Serves: 4; Serving size: about 1 1/4 cups; Difficulty: Easy

2 tsp canola oil

14 oz Frozen pepper strips with onions

1 large clove Garlic, minced

1 pound uncooked lean ground beef

15 1/2 oz Canned pinto beans, rinsed and drained

14 1/2 oz Canned tomatoes with green chilis

1 cup Canned crushed tomatoes fire roasted

2 tsp chili powder

1/4 tsp Dried oregano, crumbled

1/4 tsp Table salt

1/4 tsp Black pepper

Directions

Heat oil in large skillet over medium-high heat. Add frozen vegetables and garlic and cook, stirring, until vegetables are thawed and any liquid is evaporated, about 3 minutes.

Add beef to skillet and cook, breaking it up with wooden spoon, about 2 minutes. Add beans, tomatoes, chili powder, oregano, salt, and black pepper and bring to boil over high heat. Reduce heat and cook, stirring, until beef is no longer pink and chili is slightly thickened, about 3 minutes longer. Divide among 4 bowls.
