Friday Recipes

If your week has seemed as long as mine has, you're probably glad that it's finally Friday. (Can I get a yay?!)

And in celebration of that, here are six yummy recipes to help you through the weekend, including Vietnamese Beef and Vegetable Spring Rolls and Tuscan Tortellini Salad. Enjoy!

CORNY GREEN ENCHILADAS

This is from the infamous long-since-forgotten emailing list. Serves: 4; Preparation time: 25-30 minutes

Ingredients (use vegan versions):

12 corn tortillas

1 can of fiesta corn (drained)

1 can of black beans (drained)

1 can of green enchilada sauce

2 cups of vegan cheese

2 tablespoon cumin

1 teaspoon chili powder

Directions:

This is a layered casserole. You can vary the layers to your liking.

Mix the spices with your enchilada sauce and stir until well incorporated. Taste the enchilada sauce to see if it needs salt. Normally the canned sauce is seasoned very well.

Using a casserole dish, layer the ingredients, starting with 1/4 of sauce on the bottom. Layer sauce, tortillas (torn or whole), corn, beans and vegan cheese. Continue layering and end with a layer of tortillas and then sauce.

Sprinkle 1/2 cup of vegan cheese over the top and cover loosely with aluminum foil.

Bake at 350 degrees for 20-30 minutes or until it starts to bubble. Remove the foil the last 5-10 minutes to let the vegan cheese brown.

Serve with a salad, salsa and smoothie! Good eats!

TUSCAN TORTELLINI SALAD

This comes from Rian Handler on Delish. Rian wrote, “This hearty pasta salad might be better than a trip to Tuscany.”

Yields: 6; Prep Time: 10 minutes; Total Time: 20 minutes.

Ingredients

1 lb. fresh cheese tortellini

1/4 c. extra-virgin olive oil

2 tbsp. balsamic vinegar

1/2 tbsp. honey

kosher salt

Freshly ground black pepper

3/4 c. chopped salami or prosciutto

1/2 c. baby spinach

1/2 c. oil-packed sun-dried tomatoes, chopped

1/4 c. freshly grated Parmesan

Directions

In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to large serving bowl.

Make dressing: Whisk together olive oil, balsamic vinegar and honey and season with salt and pepper.

To bowl, add prosciutto, spinach, sun-dried tomatoes and dressing and toss until well combined.

Garnish with Parmesan.

SUMMER MINESTRONE WITH FRESH BASIL

This comes from Martha Rose Shulman in The New York Times cooking e-newsletter. The recipe begins, “You can finish this hearty summer soup with slivered fresh basil, or with pistou, the Provençal version of pesto (it’s pesto without the pine nuts). A Parmesan rind, simmered in the soup and then removed, adds great depth of flavor without adding fat. On a hot summer day in Italy the soup might be served at room temperature, or just barely warm.”

Yield: 6 to 8 servings; Time: 1 hour 20 minutes.

Ingredients

For the Soup

1 tablespoon olive oil

1 medium onion, chopped

2 medium carrots, peeled and chopped

1 celery stalk, chopped

Salt

4 large garlic cloves, minced or pressed

1 pound tomatoes, peeled, seeded, and chopped, or 1 (14-ounce) can chopped tomatoes, with liquid

1 medium turnip, peeled and diced

3/4 pound zucchini, diced

A bouquet garni consisting of 1 Parmesan rind, 1 bay leaf, 3 sprigs parsley and 3 sprigs thyme, tied together with kitchen string or tied into a piece of cheesecloth

1 (15-ounce) can cannellini or borlotti beans, drained and rinsed

6 ounces green beans, cut into 1-inch lengths

1/2 cup soup pasta, such as elbow macaroni, or broken spaghetti, or 3/4 cup penne

Freshly ground pepper to taste

1/4 cup slivered fresh basil leaves, or 1/2 cup pistou (see recipe; you'll need to subscribe to The New York Times cooking e-newsletter to get this)

Freshly grated Parmesan for garnish

Preparation

Heat the olive oil over medium-low heat in a large, heavy soup pot or Dutch oven and add the onion, carrots, and celery. Cook, stirring, until beginning to soften, about 3 minutes, and add 1/2 teaspoon salt. Continue to cook, stirring often, until tender, about 5 more minutes. Add the garlic, stir together for about a minute, and stir in the tomatoes. Cook, stirring, until the tomatoes have cooked down and smell fragrant, about 10 minutes. Stir in 2 quarts water, the turnip, zucchini, and the bouquet garni, and bring to a simmer. Add 2 teaspoons salt, reduce the heat to low, cover and simmer 45 minutes. Stir in the canned beans. Taste and adjust salt. Remove the bouquet garni.

While the soup is simmering, bring a pot of salted water to a boil and add the green beans. Boil 5 minutes, until just tender but still bright green. Transfer to a bowl of ice water, allow to cool, and drain. Retain the cooking water in case you want to thin out the soup later.

Add the pasta to the soup and simmer another 10 minutes, or until the pasta is cooked al dente. Stir the cooked green beans into the soup. Grind in some pepper and taste and adjust seasonings. It should be savory and rich-tasting.

Stir in the basil or pistou, or place a spoonful of pistou in each bowl and stir in. Serve in wide soup bowls, with a sprinkling of Parmesan over the top.

THAI PEANUT CHICKEN

This recipe, from FamilyTime, begins, “This company-worthy, skillet dish is perfect for weeknight dinners too...it's ready in just 30 minutes and features a savory peanut sauce accented with garlic, lime and cilantro.”

Serves: 4 servings (about 1 1/4 cups each); Prep Time: 15 minutes; Cook Time: 15 minutes

Ingredients

4 skinless, boneless chicken breast half (about 1 pound), cut into 1 1/2-inch pieces

4 teaspoons minced garlic

2 tablespoons lime juice

2 tablespoons finely chopped fresh cilantro leaves

2 tablespoons olive oil

1 large onion, thinly sliced (about 1 cup)

2 medium red, yellow or orange bell pepper, cut into 2-inch-long strips (about 3 cups)

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)

1 cup milk or water

1/4 cup creamy peanut butter

Hot cooked rice

Directions

Stir the chicken, garlic, lime juice and 1 tablespoon cilantro in a medium bowl.

Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat. Add the chicken mixture and cook until the chicken is well browned, stirring often. Remove the chicken mixture from the skillet.

Heat the remaining oil in the skillet over medium heat. Add the onion and peppers and cook until they're tender-crisp, stirring occasionally.

Stir the soup, milk and peanut butter in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cook for 5 minutes or until the chicken is cooked through, stirring occasionally. Serve the chicken mixture with the rice and sprinkle with the remaining cilantro.

For Thai Chicken: Substitute 1 cup coconut milk for the milk and add 1 tablespoon green or red curry paste with the peanut butter.

VIETNAMESE BEEF & VEGETABLE SPRING ROLLS

Makes 16 appetizers

Ingredients

16 thin slices deli roast beef (about 12 ounces)

1 cup shredded carrots

1/2 cup chopped jicama

3/4 cup torn fresh cilantro

1/2 cup torn fresh basil

1/4 cup torn fresh mint

8 rice paper wrappers (8-1/2-inch diameter)

8 green leaf lettuce leaves, ribs removed

Dipping Sauce:

1/4 cup seasoned rice vinegar

2 tablespoons red jalapeno pepper jelly

1 teaspoon soy sauce

Directions

Whisk dipping sauce ingredients in small microwave-safe bowl until blended. Microwave on HIGH 20 to 40 seconds or until warm; do not boil. Set aside to cool.

Toss carrots and jicama with 2 tablespoons of the dipping sauce in small bowl. Set aside. Toss cilantro, basil and mint in small bowl to combine. Set aside.

Fill large bowl with warm water. Dip 1 rice paper wrapper into water for a few seconds or just until moistened. Rice paper will still be firm but will continue to soften during assembly. Place on work surface.

Place 1 lettuce leaf at bottom of wrapper, leaving 1-inch border on right and left sides. Top with 2 slices roast beef, 2 tablespoons carrot mixture and 1/8 of herb mixture (about 1/4 cup). Fold right and left sides of wrapper over filling. Fold bottom edge up over filling and roll up tightly.

Place seam-side down on serving platter. Repeat with remaining wrappers and filling ingredients. Cover rolls with damp paper towel during assembly to prevent from drying out.

Cut each spring roll diagonally in half. Serve with dipping sauce.

STUPID CHICKEN

If you've been looking for a foolproof slow cooker chicken recipe to add to your collection of easy weeknight dinner ideas, this is it!”

Ingredients

4 skinless boneless chicken breasts

1 (28-ounce) can Italian-seasoned diced tomatoes

1 envelope Herb and Garlic Recipe soup mix (Lipton’s or similar>

Hot cooked rice or pasta

Parmesan cheese, grated

Instructions

Cut chicken into bite-size pieces. Mix chicken, tomatoes and soup mix together, and pour into slow cooker.

Cook on LOW for 6 to 8 hours.

Serve over rice or bow tie pasta and sprinkle with Parmesan cheese.

Notes

If you have an oven, you can do this in an oven-browning bag. Bake for about 45 minutes at 350 degrees F.

Zucchini and mushrooms are nice additions to the recipe.

Wednesday Recipes

Half-way through the work-week...Here are today's six recipes to get you through the day, including Stupid Chicken and Rhubarb Crisp. Enjoy!

TIE-DYE CHEESECAKE

This is from The Food Network, and begins, “This outrageous psychedelic cheesecake is an ode to all the tie-dye of the 1960s. Making the vibrant swirls is much easier to do than it looks; all you need is a wooden skewer – groovy!” Total: 10 hr 45 min; Active: 35 min; Yield: 12 servings; Level: Intermediate

Ingredients

Crust:

2 cups graham cracker crumbs (from about 18 whole crackers)

1 stick (8 tablespoons) unsalted butter, melted

2 tablespoons sugar

Pinch fine salt

Filling:

Three 11.5-ounce containers whipped cream cheese

1 1/4 cups sugar

One 16-ounce container sour cream, at room temperature

1 cup heavy cream

4 large eggs

1 teaspoon pure vanilla extract

Juice of 1/2 lemon

Neon blue, pink and purple food coloring

Yellow food coloring

Whipped cream, for serving

Directions

Special equipment: a 10-inch springform pan and a wooden skewer

Position an oven rack in the middle of the oven and preheat to 325 degrees F.

For the crust: Mix together the graham cracker crumbs, butter, sugar and salt and press into bottom of a 10-inch springform pan. Bake until golden brown, 15 to 18 minutes. Cool completely. Wrap up the bottom and sides of pan with a large piece of foil and put in a large roasting pan.

For the filling: Beat the cream cheese and sugar, in a large bowl, with an electric mixer on medium speed for 1 minute. Add the sour cream and mix until just combined. Add the heavy cream and mix until just combined. Mix in the eggs, by hand, 1 at time. Then mix in the vanilla, lemon juice, by hand as well, until just combined. (Overmixing can turn your cheesecake into a souffle.)

Using a ladle, divide the cheesecake batter into 4 separate bowls. Dye each a separate color; blue, pink, purple and yellow. Add enough food coloring so that the colors are very vibrant and intense.

Use an ice cream scoop or large spoon to drop spoonfuls of the batter onto the crust, alternating the colors, until all the batter has been scooped. Use a wooden skewer and drag it through the colors to marble them for tie-dye effect, making sure the skewer reaches down to the bottom of the pan. Transfer the pan to the roasting pan. Add enough hot water to come about halfway up the side of the springform pan.

Bake until the outside of the cake is set and the center is still slightly loose, about 1 hour 20 minutes. Turn the oven off and leave the cheesecake in the oven for another hour. Remove the cheesecake from the roasting pan to a cooling rack. Run a knife around the edge and cool to room temperature. Cover and refrigerate at least 8 hours.

Unmold the cheesecake and transfer to a serving plate or cake stand. Serve slices with a dollop of whipped cream.

QUICK TURKEY MEATBALLS OVER GREENS

This comes from The Kitchn's emailing list. (Yes, another recipe from The Kitchen. If you haven't signed up for their emails, you really should!) This serves 4, and can be viewed online (along with Faith Durand's description) here.

1 pound ground turkey, either 85% lean or 93% lean

1/4 cup grated onion, from 1/2 small to medium onion

1 large egg

1/3 cup breadcrumbs

1/4 cup freshly grated Parmesan cheese

2 whole cloves garlic, minced

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons chopped Italian parsley

2 tablespoons olive oil

2 cups tomato sauce, homemade or store-bought

2 pounds greens, such as broccoli rabe, kale, mustard greens, washed, de-veined, and roughly chopped

Shaved Parmesan, to serve, optional

Combine the turkey, onion, egg, breadcrumbs, cheese, garlic, salt, pepper, and parsley in a large bowl. Mix with your hands until all of the ingredients are evenly distributed.

Begin heating a large pot of salted water for the cooking the greens while you shape and cook the meatballs.

Roll the meat mixture into 1 1/4-inch meatballs and place on a tray or in a pan. You should have between 26 and 30 meatballs.

Heat the olive oil over medium-high heat in a large skillet or sauté pan. Place the meatballs in the hot skillet and brown for 3 to 4 minutes on each side. Use tongs to gently rotate the meatballs so they brown evenly. (If your pan isn't large enough to brown all of the meatballs without them touching, cook them in batches and place them back on the cookie sheet once they've been browned. Then combine them back in the pan before simmering with the tomato sauce.)

Reduce the heat to medium, add the tomato sauce, and cover the pan. Simmer the meatballs and sauce for another 10 minutes, or until meatballs are cooked through.

While the meatballs are simmering, boil the greens in the salted water for 8 to 10 minutes, until tender. Drain. (You can also sauté or stir-fry the greens in a hot skillet with oil if preferred.)

To serve, put greens on the plate and top with meatballs and sauce.

Recipe Notes:

To prevent the meatballs sticking to the pan, make sure it is hot before adding the meatballs, and brown thoroughly before trying to turn them. They should release easily once browned. Also, using 85% lean turkey (as opposed to completely lean) should help the meatballs release more cleanly.

Storage: Store the meatballs in their sauce for up to 3 days in the fridge. Freeze cooked meatballs and sauce for up to 3 months.

BOILED POTATOES WITH BUTTER AMD MINT

This is from Julia Moskin in The New York Times cooking e-newsletter. Julia wrote, "The chef April Bloomfield cooks from a place of profound hunger for good food: specifically, Birmingham in the Midlands of England, where she grew up in the 1970s and 1980s just as English food reached a low point. The childhood food she remembers most fondly: the hot buttered potatoes served in her school cafeteria. Her homage to that dish is this basic but stunningly good recipe for freshly boiled potatoes thickly glazed in butter and brightened with lemon, garlic, cracked black pepper and what she calls a 'five-fingered pinch' of fresh mint leaves, 'as much as you can grab with just the tips of all five fingers.'"

Yield: 3 to 4 servings; Time: 30 minutes.

Ingredients

1 pound small potatoes, like fingerlings or creamers, all about the same size

1 tablespoon flaky salt, like Maldon, or kosher salt

4 tablespoons/2 ounces cold unsalted butter, cut into 8 pieces

1 small garlic clove, finely grated or shaved

A 5-finger pinch of whole mint leaves, preferably black mint (see note)

1/2 lemon

Coarsely ground black pepper

Preparation

In a medium pot, combine potatoes and salt. Add enough cold water to cover the potatoes by a generous 1/2 inch and set the pot over high heat. Bring to a boil, then reduce to a vigorous simmer. Cook potatoes just until tender and creamy inside, 10 to 25 minutes depending on size.

Reserving 1/4 cup cooking liquid, gently drain the potatoes and return them to the stove. Add butter, garlic and reserved cooking liquid to the pot and set over medium heat. Bring to a simmer and cook, swirling the pan and basting as needed so that the liquid coats the potatoes until they are well glazed, about 5 minutes.

Tear the mint leaves into small pieces, stir them very gently into the potatoes, and take the pot off the heat. Squeeze on just enough lemon to add brightness, not sourness; taste as you go. Add salt and pepper to taste and serve immediately.

RHUBARB CRISP

This is from Mark Bittman, also in The New York Times cooking e-newsletter. Mark wrote, "When you think of rhubarb you probably think of strawberry-rhubarb pie, a quintessential spring dessert, especially if it’s made by someone who makes good pies. I usually manage around one pie crust annually, so I need alternatives. Thus, when the spring’s first rhubarb shows up, I adjust the execution and produce a crisp. If rhubarb is young and fresh, you can trim it in seconds. If it has fibrous outer strings, peel them off as you would those of celery. Toss the rhubarb with orange or lemon juice and zest, and only a little sugar. (You can also substitute strawberries for some of the rhubarb if you want the classic combination.) Blend the ingredients for the crisp topping in a food processor, crumble the topping over the rhubarb mixture, and bake — it is nearly effortless and as good or better than a pie."

Ingredients

6 tablespoons cold butter, cut into small pieces, plus more for greasing pan

2 1/2 to 3 pounds rhubarb, trimmed, tough strings removed, and cut into 1 1/2-inch pieces (about 5 to 6 cups)

1/4 cup white sugar

1 tablespoon orange or lemon juice

1 teaspoon orange or lemon zest

3/4 cup brown sugar

1/2 cup all-purpose flour

1/2 teaspoon cinnamon, or to taste

Pinch salt

1/2 cup rolled oats

1/2 cup pecans

Preparation

Heat oven to 375 degrees. Grease an 8- or 9-inch square baking or gratin dish with a little butter. Toss rhubarb with white sugar, orange or lemon juice and zest, and spread in baking dish.

Put the 6 tablespoons butter in a food processor along with brown sugar, flour, cinnamon and salt, and pulse for about 20 or 30 seconds, until it looks like small peas and just begins to clump together. Add oats and pecans and pulse just a few times to combine.

Crumble the topping over rhubarb and bake until golden and beginning to brown, 45 to 50 minutes.

STUPID CHICKEN

BASIL AND TOMATO CHICKEN BREASTS

This is from Derrick Riches, who runs the Barbecue & Grilling site for The Spruce. Derrick wrote, “This is a great way to prepare chicken breasts. The combination of tomatoes, basil, and balsamic vinegar gives this dish a fantastic Italian-inspired flavor.”

Time: 24 minutes; Prep Time: 12 minutes; Cook Time: 12 minutes; Yield: Serves 4

Ingredients

4 chicken breasts, skinless and deboned

4-6 tomatoes, quartered

1/2 cup balsamic vinegar

1/4 cup fresh basil, loosely packed

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper, ground

1/2 teaspoon pepper flakes, optional

Directions

Combine garlic, tomatoes, vinegar, oil, basil, black pepper, and salt in a food processor. Reserve a small amount of the chopped tomatoes and chopped basil for garnish.

In a large resealable plastic bag, add chicken and 3/4 of the marinade. Make sure chicken is well coated. Seal bag and allow to marinate for 2-4 hours in the refrigerator. In a small saucepan, bring the reserved 1/4 of the marinade to a boil for 1 minute, reduce heat and allow mixture to simmer for 5-8 minutes. Remove from heat and set aside.

Preheat grill. Place chicken on grill and cook on medium heat for 10-12 minutes, turning once. Remove chicken from heat, top with cooked sauce and garnish with diced tomatoes or chopped basil.

Besides being Meatless Monday, it's also Double-Post Monday. Here are six yummy recipes to get your week started, including S'mores Cake Rolls and Stupid Chicken. Enjoy!

CAMPBELL'S® EASY TURKEY POT PIE

Prep. time: 10 min. Cooking time: 30 min.

Serves: 4

Ingredients

1 can (10 3/4 oz.) Campbell's® Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup

1 pkg. (about 9 oz.) frozen mixed vegetables, thawed

1 cup cubed cooked turkey OR chicken

1/2 cup milk

1 egg

1 cup all-purpose baking mix

Directions

Preheat oven to 400°F.

Mix soup, vegetables and turkey in 9" pie plate.

Mix milk, egg and baking mix. Pour over turkey mixture. Bake 30 min. or until golden.

Tips

*Or use Campbell's® Cream of Chicken with Herbs Soup.

Serve with a tossed green salad. For dessert serve pineapple tidbits.

S’MORES CAKE ROLLS

This is from Tablespoon (tbsp.), and begins, “First things first: Yes, this cake roll tastes as good as it looks. We rolled chocolate cake around a marshmallow buttercream filling, and topped it all with melted chocolate, Golden Grahams™ cereal and marshmallows. It’s a grown-up take on s’mores that your inner child is guaranteed to love.”

Prep Time: 60 minutes; Total Time: 2 hours 50 minutes; Servings: 16

Ingredients

Cake

6 eggs

1 box Betty Crocker™ SuperMoist™ chocolate fudge cake mix

1/2 cup water

1/4 cup vegetable oil

1/2 cup powdered sugar

Filling

1 jar (7 oz) Kraft™ Jet-Puffed™ marshmallow creme

3/4 cup butter, softened

1 teaspoon vanilla

1 1/2 cups powdered sugar

Glaze

1 1/2 cups semisweet chocolate chips

1 cup heavy whipping cream

Decorations

3/4 cup Golden Grahams™ cereal, coarsely crushed

1/2 cup miniature marshmallows

Directions

Heat oven to 375°F. Line bottom only of two 15x10x1-inch pans with cooking parchment paper. Spray parchment paper with baking spray with flour.

In large bowl, beat eggs with electric mixer on high speed about 6 minutes or until thick and lemon colored. Add cake mix, water and oil; beat on low speed 30 seconds, then on medium speed 1 minute. Pour 2 1/4 cups batter into each pan; spread evenly.

Bake 10 to 12 minutes or until cake springs back when lightly touched in center.

Meanwhile, sprinkle 1/2 cup powdered sugar over two clean kitchen towels. Remove cakes from oven. Run metal spatula around edges of pans; carefully turn one on to each kitchen towel. Peel away parchment paper. Immediately roll up cake and towel from narrow end. Let rolled cakes cool with seam centered on bottom of cake. Allow cakes to cool 30 minutes on cooling rack.

In large bowl, beat marshmallow crème, softened butter and vanilla with electric mixer on medium speed until smooth, scraping bowl occasionally. On low speed, beat in 1 1/2 cups powdered sugar until smooth and creamy.

Carefully unroll cakes. Allow narrow end to remain slightly curled. Drop 1 cup of the filling by spoonfuls over each cake, and spread evenly to within 1/2 inch of edges. Reroll filled cake, using kitchen towel to help roll up cake. Wrap in plastic wrap, making sure seam is centered on bottom. Repeat rolling with second cake. Place both wrapped cakes on cookie sheet; refrigerate 30 minutes.

In small microwavable bowl, microwave chocolate chips and heavy cream uncovered on High 60 to 90 seconds; stir. Continue to microwave in 15-second increments, until chips can be stirred smooth. Remove plastic wrap from cakes. Place cakes on cooling rack placed over waxed paper. Pour chocolate mixture over each cake to cover. Let stand 5 minutes. Sprinkle tops of cakes with cereal and marshmallows. Return cakes to refrigerator about 30 minutes or until chocolate is set. Store loosely covered in refrigerator.

Set a timer to be sure you beat the eggs for a full 6 minutes. This will help ensure a spongy cake texture and will help keep the cake from breaking when you roll it.

You must roll the cake into the kitchen towel immediately after turning it out. The cake is most malleable while still hot.

For best results, work quickly when assembling cake rolls to prevent cracking.

KEY LIME PIE POPS

This was on the TODAY website, and starts off, “Turn your favorite summer pie into an easy creamy lime and graham cracker frozen treat.

Technique tip: You don't need fancy ice pop molds to make these pops. Try using basic tools you already have in your kitchen, such as small paper cups, a loaf pan, large ice cube trays or even empty yogurt containers.

Swap option: To give these pops a chocolaty twist, swap 16 chocolate wafer cookies for the graham crackers.”

6 graham crackers

1/4 cup (1/2 stick) unsalted butter, melted

4 ounces (1/2 package) cream cheese, at room temperature

1/2 cup sweetened condensed milk

1 teaspoon finely grated lime zest

1/4 cup freshly squeezed lime juice

1 cup heavy cream, very cold

Twelve 3-ounce paper cups

12 wooden craft sticks

Preparation

In the bowl of a food processor, pulse the graham crackers to form fine crumbs. Add the butter and pulse to combine.

In the bowl of an electric mixer, using the whisk attachment, beat the cream cheese on low speed until smooth. With the mixer running, gradually add the sweetened condensed milk, then the lime zest and juice.

Add the cream, then increase the speed until mixture is thick and soft peaks form, 3 to 4 minutes. Divide among the cups (about 5 tablespoons per cup). Top with the graham mixture and lightly press down to flatten.

Transfer the cups to a small, rimmed baking sheet and push a craft stick halfway down into each cup. Freeze until firm, at least 6 hours.

When ready to serve, peel the cups away from the pops.

TWICE BAKED POTATOES

4 large russet potatoes, each about 3/4 pound each, scrubbed and dried

1/3 cup sour cream

1 scallion, finely chopped

Freshly grated nutmeg, optional

1/2 cup shredded sharp cheddar

Kosher salt and freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Place the potatoes directly on the rack in the center of the oven and bake for 30 minutes. Pierce each potato in a couple spots with a fork and continue to bake until tender, about 30 minutes more. Remove potatoes from the oven, and turn the heat down to 375 degrees F.

Hold the potato with an oven-mit or towel, trim off the top of the potatoes to make a canoe-like shape. Reserve the tops. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream. Stir in the scallion, nutmeg, and season with salt and pepper, to taste. Season the skins with salt and pepper. Refill the shells with the potato mixture mounding it slightly. Sprinkle the cheese on top of the potato filling. Brush the reserved top with the remaining butter and season with salt and pepper.

Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.

POTATO, LEEK, AND WHITE BEAN SOUP

This is from Kaleigh McMordie, MCN, RDN, LD, whose site, Lively Table, is full of great food and info. She also writes for Very Well. Kaleigh wrote, “If you have high blood pressure, it is usually best to avoid canned soup or soup bought at restaurants. They contain lots of sodium, and if they are creamy they'll have extra saturated fat. Potato soup in particular is commonly made with heavy cream, bacon, cheese, and sour cream, but just because you are trying to eat healthier doesn’t mean you have to miss out on it.

“This potato, leek, and white bean soup is loaded with flavor thanks to sauteed leeks and potatoes cooked in low sodium chicken or vegetable broth. Then white beans are blended in, resulting in a smooth, creamy texture with tons of flavor and nutrition.”

Heat oil over low heat in the bottom of a heavy-bottomed pot.

Chop leeks and save greens for another use. Add the white part of leeks and garlic to the stock pot and cook, stirring, until softened. Add potatoes and broth and simmer, covered, until potatoes are soft, about 20 minutes. Remove from heat and transfer all contents to a blender. Add white beans and pepper and blend until smooth.

Pour into bowl and garnish each with a dollop of yogurt, a teaspoon of chives, and a teaspoon of crumbled bacon (optional).

Ingredient Variations and Substitutions

This healthier version of potato soup provides plenty of fiber and plant-based protein and can be made vegan by using vegetable broth. If you aren’t vegetarian, feel free to top your soup with a dollop of plain greek yogurt, a tiny bit of crumbled bacon, and chives for even more flavor.

For dairy-free, leave off yogurt.

Cooking and Serving Tips

If you like your soup more chunky, leave half of the beans and half of the potatoes when blending, and stir them back in at the end.

This soup makes a delicious and filling lunch along with a side salad or on its own. The recipe makes a big batch, so you can portion it out to eat all week long.

TIE-DYE CHEESECAKE

This is from The Food Network, and begins, “This outrageous psychedelic cheesecake is an ode to all the tie-dye of the 1960s. Ingredients

Crust:

2 cups graham cracker crumbs (from about 18 whole crackers)

1 stick (8 tablespoons) unsalted butter, melted

2 tablespoons sugar

Pinch fine salt

Filling:

Three 11.5-ounce containers whipped cream cheese

1 1/4 cups sugar

One 16-ounce container sour cream, at room temperature

1 cup heavy cream

4 large eggs

1 teaspoon pure vanilla extract

Juice of 1/2 lemon

Neon blue, pink and purple food coloring

Yellow food coloring

Whipped cream, for serving

Directions

Special equipment: a 10-inch springform pan and a wooden skewer

Position an oven rack in the middle of the oven and preheat to 325 degrees F.

For the crust: Mix together the graham cracker crumbs, butter, sugar and salt and press into bottom of a 10-inch springform pan. Bake until golden brown, 15 to 18 minutes. Cool completely. Wrap up the bottom and sides of pan with a large piece of foil and put in a large roasting pan.

For the filling: Beat the cream cheese and sugar, in a large bowl, with an electric mixer on medium speed for 1 minute. Add the sour cream and mix until just combined. Add the heavy cream and mix until just combined. Mix in the eggs, by hand, 1 at time. Then mix in the vanilla, lemon juice, by hand as well, until just combined. (Overmixing can turn your cheesecake into a souffle.)

Using a ladle, divide the cheesecake batter into 4 separate bowls. Dye each a separate color; blue, pink, purple and yellow. Add enough food coloring so that the colors are very vibrant and intense.

Use an ice cream scoop or large spoon to drop spoonfuls of the batter onto the crust, alternating the colors, until all the batter has been scooped. Use a wooden skewer and drag it through the colors to marble them for tie-dye effect, making sure the skewer reaches down to the bottom of the pan. Transfer the pan to the roasting pan. Add enough hot water to come about halfway up the side of the springform pan.

Bake until the outside of the cake is set and the center is still slightly loose, about 1 hour 20 minutes. Turn the oven off and leave the cheesecake in the oven for another hour. Remove the cheesecake from the roasting pan to a cooling rack. Run a knife around the edge and cool to room temperature. Cover and refrigerate at least 8 hours.

Unmold the cheesecake and transfer to a serving plate or cake stand. Serve slices with a dollop of whipped cream.

BOILED POTATOES WITH BUTTER AMD MINT

This is from Julia Moskin in The New York Times cooking e-newsletter. Julia wrote, "The chef April Bloomfield cooks from a place of profound hunger for good food: specifically, Birmingham in the Midlands of England, where she grew up in the 1970s and 1980s just as English food reached a low point. The childhood food she remembers most fondly: the hot buttered potatoes served in her school cafeteria. Her homage to that dish is this basic but stunningly good recipe for freshly boiled potatoes thickly glazed in butter and brightened with lemon, garlic, cracked black pepper and what she calls a 'five-fingered pinch' of fresh mint leaves, 'as much as you can grab with just the tips of all five fingers.'"

Yield: 3 to 4 servings; Time: 30 minutes.

Ingredients

1 pound small potatoes, like fingerlings or creamers, all about the same size

1 tablespoon flaky salt, like Maldon, or kosher salt

4 tablespoons/2 ounces cold unsalted butter, cut into 8 pieces

1 small garlic clove, finely grated or shaved

A 5-finger pinch of whole mint leaves, preferably black mint (see note)

1/2 lemon

Coarsely ground black pepper

Preparation

In a medium pot, combine potatoes and salt. Add enough cold water to cover the potatoes by a generous 1/2 inch and set the pot over high heat. Bring to a boil, then reduce to a vigorous simmer. Cook potatoes just until tender and creamy inside, 10 to 25 minutes depending on size.

Reserving 1/4 cup cooking liquid, gently drain the potatoes and return them to the stove. Add butter, garlic and reserved cooking liquid to the pot and set over medium heat. Bring to a simmer and cook, swirling the pan and basting as needed so that the liquid coats the potatoes until they are well glazed, about 5 minutes.

Tear the mint leaves into small pieces, stir them very gently into the potatoes, and take the pot off the heat. Squeeze on just enough lemon to add brightness, not sourness; taste as you go. Add salt and pepper to taste and serve immediately.

RHUBARB CRISP

This is from Mark Bittman, also in The New York Times cooking e-newsletter. Mark wrote, "When you think of rhubarb you probably think of strawberry-rhubarb pie, a quintessential spring dessert, especially if it’s made by someone who makes good pies. I usually manage around one pie crust annually, so I need alternatives. Thus, when the spring’s first rhubarb shows up, I adjust the execution and produce a crisp. If rhubarb is young and fresh, you can trim it in seconds. If it has fibrous outer strings, peel them off as you would those of celery. Toss the rhubarb with orange or lemon juice and zest, and only a little sugar. (You can also substitute strawberries for some of the rhubarb if you want the classic combination.) Blend the ingredients for the crisp topping in a food processor, crumble the topping over the rhubarb mixture, and bake — it is nearly effortless and as good or better than a pie."

3/4 cup brown sugar

1/2 cup all-purpose flour

1/2 teaspoon cinnamon, or to taste

1/2 cup pecans

Preparation

Heat oven to 375 degrees. Grease an 8- or 9-inch square baking or gratin dish with a little butter. Toss rhubarb with white sugar, orange or lemon juice and zest, and spread in baking dish.

Put the 6 tablespoons butter in a food processor along with brown sugar, flour, cinnamon and salt, and pulse for about 20 or 30 seconds, until it looks like small peas and just begins to clump together. Add oats and pecans and pulse just a few times to combine.

Crumble the topping over rhubarb and bake until golden and beginning to brown, 45 to 50 minutes.

Ingredients

4 chicken breasts, skinless and deboned

4-6 tomatoes, quartered

1/2 cup balsamic vinegar

1/4 cup fresh basil, loosely packed

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper, ground

1/2 teaspoon pepper flakes, optional

Directions

Combine garlic, tomatoes, vinegar, oil, basil, black pepper, and salt in a food processor. Reserve a small amount of the chopped tomatoes and chopped basil for garnish.

In a large resealable plastic bag, add chicken and 3/4 of the marinade. Make sure chicken is well coated. Seal bag and allow to marinate for 2-4 hours in the refrigerator. In a small saucepan, bring the reserved 1/4 of the marinade to a boil for 1 minute, reduce heat and allow mixture to simmer for 5-8 minutes. Remove from heat and set aside.

Preheat grill. Place chicken on grill and cook on medium heat for 10-12 minutes, turning once. Remove chicken from heat, top with cooked sauce and garnish with diced tomatoes or chopped basil.

OLD-FASHIONED MEAT LOAF

It's Finally Friday. Hooray! Here are six chicken recipes to help you through the weekend, including Stupid Chicken and Grilled Barbecue Chicken and Potato Kabobs. And before you wonder, "Is chicken your new Friday thing, like Meatless Monday or Taco Tuesday?" Nope, just happened that last Friday's and today's posts are chicken recipes. Enjoy!

SPICE-RUBBED SPATCHCOCKED CHICKEN

This is from Melissa Clark in The New York Times cooking e-newsletter. Melissa wrote, “A spatchcocked chicken, also called a butterflied chicken, cooks more quickly and evenly than a whole bird, giving you juicy white meat as well as dark meat in less than an hour. Here the chicken is marinated in a brown sugar and chile spice rub before being roasted until its skin is crisp and deeply flavored. If you aren’t up for spatchcocking your own bird, you can ask your butcher to do it for you.”

Ingredients

1 chicken, 3 1/2 to 4 pounds, patted dry

1 tablespoon dark brown sugar

2 1/2 teaspoons kosher salt

1 teaspoon ancho or New Mexico chile powder

1 teaspoon sweet paprika

1 teaspoon dry mustard powder

1 teaspoon dried oregano

1/2 teaspoon ground black pepper

1/4 teaspoon ground allspice

2 bay leaves, torn or cut into pieces

Lime or lemon wedges, for serving

Preparation

Spatchcock the chicken by using poultry shears or kitchen scissors (or a sharp knife) to cut along one side of the backbone until the chicken opens. If you like you can cut along the other side of the backbone and remove it, or leave it attached to roast with the rest of the bird. Open up the bird and place it so it lies flat, breast side up. Press hard onto the center of the breast until you feel a pop, and the breast lies more or less flat.

In a small bowl, mix together sugar, salt, chile powder, paprika, mustard powder, oregano, pepper, allspice and bay leaves. Smear the mixture all over the chicken. Lay chicken, skin side up, on a rimmed baking sheet (or plate) and refrigerate uncovered for at least 2 hours and up to 24 hours.

Heat oven to 425 degrees. If the chicken isn’t on a rimmed baking sheet, transfer it to one. Roast chicken until the juices run clear when the thickest part of the thigh is pricked with a fork (an instant-read thermometer plunged into the thickest part of the breast will read 150), 40 to 50 minutes.

Remove from oven, cover bird with foil and let rest for 10 minutes before carving. Serve with lime or lemon wedges on the side.

5-INGREDIENT LEMON-ROSEMARY GRILLED CHICKEN BREASTS

This is from Grace Parisi in the Today Show cooking e-newsletter. According to the newsletter, “Grace Parisi is a New York City-based food writer, cookbook author and food stylist. Her book, Get Saucy, was nominated for a James Beard award. Her latest book, Quick Pickles comes out in Fall 2016.”

For this recipe, Grace wrote, “Crispy chicken skin is so delicious, but it's not easy to find boneless breasts with skin in the supermarket. You're more likely to find boneless, skinless chicken breasts or bone-in, skin-on chicken breasts. Most butchers will debone a breast for you, but it's easy enough to do yourself and you get to keep the bones for making stock in the future.”

She added this Note: “If you decide to use boneless, skinless chicken breasts instead, using a meat pounder, gently pound the chicken breasts so they are about 1/2-inch thick all around.” Active Time: 15 minutes; Total Time: 2.25 hours or overnight.

Prepare the chicken breasts:

Debone the skin-on chicken breasts: Using a sharp knife, make a small incision near the wing joint. Leaving the skin intact, slip your finger into the incision, close to the bone. Working your finger back and forth, separate the meat from the bone as best you can. Use the knife to fully separate the meat. (Reserve the bones in the freezer for stock.) Using a meat pounder, gently pound the chicken breasts so they are about 1/2-inch thick all around.

For boneless chicken breasts: Using a meat pounder, gently pound the chicken breasts so they are about 1/2-inch thick all around.

In a small bowl, combine the oil, garlic, rosemary, lemon zest and 1/2 teaspoon each of the salt and pepper. Rub the mixture all over the chickens, add the rosemary sprigs and refrigerate for 2 hours or up to 8 hours.

Light a grill and oil the grates. Grill the chicken, lemon halves, and rosemary sprigs over high heat, turning occasionally, until lightly charred and firm to the touch, about 10 to 12 minutes. Squeeze the grilled lemon halves over the chicken and serve.

TEX-MEX CHICKEN & RICE BAKE

1/2 cup barbecue sauce

Directions

Heat gas or charcoal grill. If using bamboo skewers, soak in water 10 minutes; drain.

In large bowl, beat vinegar, honey, mustard, pepper and 1/2 teaspoon salt with whisk. Beat in 1/4 cup olive oil in a thin stream. Add coleslaw mix and apple; toss to coat. Cover and refrigerate.

In large microwavable bowl, mix quartered potatoes and water. Cover; microwave on High 8 to 10 minutes, stirring once, until just tender when pierced with a knife. Carefully uncover and drain; set aside to cool.

In large bowl, mix 1/4 cup olive oil, the barbecue seasoning and 1 teaspoon salt. Add potatoes and onion; toss to coat. On each of 4 skewers, alternately thread potatoes and onion, leaving 1/4-inch space between each piece. In same bowl, place chicken; toss with remaining oil and seasoning in bowl. On remaining 4 skewers, thread chicken.

Place kabobs on grill over medium heat. Cover grill; cook 5 minutes. Brush kabobs with barbecue sauce; turn, and brush other sides with sauce. Cook 3 to 6 minutes longer or until chicken is no longer pink in center and vegetables are tender and browned in places. Serve with slaw.

CROCKPOT MAPLE BBQ CHICKEN SANDWICHES

1/2 C. maple flavored syrup

2 T. prepared mustard

2 T. Worcestershire sauce

2 t. lemon juice

1/2 t. chili powder

1/4 t. garlic powder

4 boneless, skinned chicken breasts

Place all ingredients in crockpot & cook on LOW for about 7 to 8 hours or until chicken is done.

You can either eat the breasts whole or shred them on buns or rice for more points.

4 servings = 225 calories, 4g fat, 1g fiber.

STUPID CHICKEN

Ingredients

4 skinless boneless chicken breasts

1 (28-ounce) can Italian-seasoned diced tomatoes

1 envelope Herb and Garlic Recipe soup mix (Lipton’s or similar>

Hot cooked rice or pasta

Parmesan cheese, grated

Instructions

Cut chicken into bite-size pieces. Mix chicken, tomatoes and soup mix together, and pour into slow cooker.

Cook on LOW for 6 to 8 hours.

Serve over rice or bow tie pasta and sprinkle with Parmesan cheese.

Notes

If you have an oven, you can do this in an oven-browning bag. Bake for about 45 minutes at 350 degrees F.

Zucchini and mushrooms are nice additions to the recipe.
