Tuesday Recipes

Okay, first things first: I've started a Kickstarter campaign to film an hour-long documentary, titled Another Day in Paradise. To check out the campaign - and possibly be a backer! (hint, hint) - check it out here.

And now for today's recipes. Can any group of recipes that starts off with three guacamole be anything but great? I doubt it. That said, here are today's six recipes, including three for guacamole. Enjoy!

GUACAMOLE

This comes from Florence Fabricant in The New York Times cooking e-newspaper. Florence wrote, “This guacamole is the definitive recipe, adapted from Josefina Howard, the chef at the original Rosa Mexicano restaurant in Manhattan. It is dead simple and easily scaled to serve a crowd, which is good, because you'll need a lot of it — even if you're the only one partaking.” Yield: 2 servings; Time: 15 minutes.

This was featured in “BY THE BOOK; Memories of Mexico, Seasoned by Time” and can be viewed online here.

Ingredients

3 tablespoons chopped onion

1/2 teaspoon minced Serrano chili, or more, to taste

1 1/2 teaspoons finely chopped cilantro leaves

1/2 teaspoon salt, or more, to taste

1 small vine-ripened tomato

1 ripe Haas avocado

Tortilla chips for serving

Preparation

In a medium-size bowl, mortar or a Mexican molcajete (lava stone mortar), thoroughly mash 1 tablespoon of the onion with the chili, 1/2 teaspoon cilantro and the salt to make a paste.

Cut the tomato in half horizontally, squeeze out the juice and seeds and discard. Chop pulp, and add it to the bowl.

Cut the avocado in half lengthwise, cutting around the pit. Gently twist the top half of the avocado off to separate the halves. Carefully rap the pit with the edge of a sharp knife and twist it out. Using a paring knife slice the avocado flesh of both halves lengthwise, then crosswise, cutting down to the skin, to form a grid. Scoop the avocado into the bowl with a spoon.

Add the remaining onion and cilantro, and gently fold all the ingredients together. Season with more chili and salt if desired. Serve at once with tortilla chips.

GUACAMOLE DE FRUTAS

This is from Sam Sifton, also n The New York Times cooking e-newspaper. Sam wrote, “Toloache is one of the great treats of the theater district, up there with bumping into Laura Benanti in front of Joe Allen: the chunky guacamole with apple, pear and jalapeño that the chef Julian Medina serves at his marvelous little Mexican joint on 50th Street. Just add margaritas.” Yield: About 1 1/ 2 cups (about 4 servings); Time: 10 minutes.

This was featured in “Dishes That Earned Their Stars” and can be viewed online here.

Ingredients

1 tablespoon finely diced sweet onion, like Vidalia

1 teaspoon finely diced seeded jalapeño pepper

1 teaspoon lime juice

Kosher salt

2 tablespoons finely diced peeled Granny Smith apple

2 tablespoons finely diced peeled Asian pear

2 tablespoons dried cranberries

1 teaspoon thinly sliced basil, preferably Thai

2 ripe Haas avocados

1 tablespoon fresh pomegranate seeds

Preparation

In a nonreactive mixing bowl, combine onion, jalapeño, lime juice and a pinch salt. Mix well, and add the apple, pear, cranberries and basil. Mix again.

Cut the avocados in half, scoop out the pulp and mash it with the ingredients in the bowl. Adjust salt to taste. Transfer to a serving bowl and top with pomegranate seeds. If desired, serve with warm corn tortillas or chips.

GREEN PEA GUACAMOLE

And finally, this comes from Melissa Clark, also in The New York Times cooking e-newspaper. Melissa wrote, “Adding fresh English peas to what is an otherwise fairly traditional guacamole is one of those radical moves that is also completely obvious after you taste it. The peas add intense sweetness and a chunky texture to the dip, making it more substantial on the chip. They also intensify the color of the green avocado — and help the guacamole stay that way. Pea guacamole keeps its bright hue in the fridge for a few days without turning brown around the edges. A good dose of lime juice helps this cause. This dish, a collaboration between ABC Cocina’s chef-owner, Jean-Georges Vongerichten, and his chef de cuisine, Ian Coogan, is the best kind of greenmarket tweak upon a classic.” Yield: 6 to 8 servings; Time: 45 minutes.

This was featured in “Green Pea Guacamole” (part of the Times’ Restaurant Takeaway column), and can be viewed online here.

Ingredients

1/2 pound fresh sweet peas, shucked (about 1/2 to 2/3 cup peas)

2 small jalapeños

2 tablespoons packed cilantro leaves, chopped, more for garnish

3/4 teaspoon salt, more as needed

3 small ripe avocados, mashed

2 scallions, whites only, sliced as thin as possible (about 1/4 cup)

Zest of 1 lime

Juice of 1 lime, more as needed

1 tablespoon toasted sunflower seeds

Flaky sea salt, for serving

Tortilla chips, for serving

Lime wedges, for serving

Preparation

Bring a medium pot of salted water to a boil and prepare a bowl with water and ice. Plunge peas into the boiling water and cook until al dente, about 1 minute. Drain peas and immediately transfer to the ice bath. Drain.

Heat broiler to high and broil one of the jalapeños on a heatproof pan. Cook, turning occasionally, until jalapeño is completely charred. Transfer to a small bowl, cover tightly in plastic wrap and let sit for 15 minutes. When cool enough to handle, use a towel to wipe off the charred skin. Halve, seed and devein the roasted jalapeño. Then halve, seed, and mince the remaining raw jalapeño.

In a blender or the bowl of a food processor, purée peas (reserving 2 tablespoons for garnish) with roasted jalapeño, minced raw jalapeño, cilantro and 1/4 teaspoon salt. Process until almost smooth but still a little chunky.

In a medium bowl, combine mashed avocado, scallions, lime zest, lime juice, remaining 1/2 teaspoon salt and the pea purée. Adjust salt and lime juice as needed and garnish with fresh peas, sunflower seeds and flaky sea salt. Serve with tortilla chips and lime wedges.

MEXICAN MEATLOAF

This comes from Stephanie Gallagher, About.com’s Cooking for Families expert. Stephanie wrote, “This Mexican meatloaf recipe gets its zing from salsa and Mexican cheese blend. If you're a fan of make-ahead cooking. you can make this easy meatloaf recipe and freeze it, either before or after cooking.

“If you freeze it before cooking, shape the meatloaf and wrap tightly in plastic wrap, then put it in a zip-loc bag.“If freezing it after cooking, wrap the meatloaf tightly and store in an airtight container. Be sure to defrost the meatloaf overnight in the refrigerator before cooking or reheating.”

Meatless Monday

It's Monday, which means it's time for posting six vegetarian recipes. Enjoy!

CARIBBEAN COCONUT RICE

This is from the April 2009 issue of Vegetarian Times, and begins, ““This fragrant rice pilaf goes especially well with Indian, Asian, and Caribbean entrées. It’s so good and so simple, though, you’ll probably find yourself making it often to accompany weeknight meals.” Serves 4 in 30 minutes or less.

DOUBLE CHOCOLATE CHEWS

This is also from the April 2009 issue of Vegetarian Times. It begins, “The secret to success when making these rich, chewy meringue cookies is to make sure the melted chocolate is just warm to the touch (not hot), and to beat the egg whites with the sugar long enough for them to be stiff, smooth, and glossy. Because the end result depends on the quality of the chocolate, select a high-grade variety.” Makes 24 cookies in 30 minutes or less.

BROCCOLI WITH ASIAN TOFU

Optional: Delicious served on top of brown rice or Asian-style noodles (soba or udon).

Yield: 4 servings

Serving size: 2 slices tofu, with broccoli and marinade mixture

Source: Deliciously Healthy Dinners

Find this recipe at: http://diabeticgourmet.com/recipes/html/995.shtml

Ingredients

1 pkg (16 oz) firm tofu, drained

2 Tbsp lite soy sauce

1 tsp sesame oil (optional)

1/2 Tbsp brown sugar

1 Tbsp fresh ginger root, finely chopped or shredded (or 1 tsp ground ginger)

1 lb fresh broccoli, rinsed and cut into individual spears

1 Tbsp peanut oil or vegetable oil

1/4 tsp crushed red pepper

4 Tbsp garlic, peeled and thinly sliced (about 8 cloves)

1 Tbsp sesame seeds (optional)

Cooking spray

Directions

Slice tofu into eight pieces. Place on a plate or flat surface covered with three paper towels. Top with four more paper towels. Top with another flat plate or cutting board. Press down evenly and gently to squeeze out moisture. Throw away paper towels. Replace with fresh paper towels and press again. (The more liquid you remove, the more sauce the tofu will absorb.)

Place tofu in a bowl just big enough to hold all eight pieces lying on their widest side without overlapping.

In a small bowl, stir to thoroughly combine soy sauce, sesame oil, brown sugar, and ginger into a marinade, and stir thoroughly. Pour over tofu. Carefully turn the tofu several times to coat well. Set aside.

Meanwhile, heat a large nonstick saute pan coated with cooking spray. Add broccoli and saute for about 5 minutes, until it turns bright green and becomes tender and crispy. Remove broccoli from pan and set aside.

Heat a grill pan or flat saute pan over high heat. Drain tofu, reserving marinade. Place on grill pan to heat for about 3 minutes. Gently turn. Heat the second side for 3 minutes.

At the same time, in the saute pan over medium-low heat, warm the peanut oil, crushed red pepper, and garlic until the garlic softens and begins to turn brown, about 30 seconds to 1 minute. Add broccoli and reserved marinade, and gently mix until well-coated.

Place two slices of tofu on each plate with one-quarter of the broccoli and marinade mixture. Sprinkle with sesame seeds (optional).

CRANBERRY TART WITH NUT CRUST

This is from The Kitchn, one of my favorite email newsletters. Serves 6. Makes one 9-inch tart.

To view online, click here.

For the pie:

4 cups (16 ounces) fresh (or defrosted) whole cranberries

2/3 cup granulated sugar

2/3 cup golden syrup

Zest of 1/2 unwaxed lemon

For the crust:

1 cup unbleached all-purpose flour

3/4 cup nut flour

1/4 cup powdered sugar

1/2 teaspoon salt

4 ounces (1 stick) unsalted butter, cut into small pieces and chilled

1 to 3 tablespoons cold water

In a medium sauce pan, combine the sugar and golden syrup over medium heat. Stir until the sugar dissolves and the mixture is bubbling. Add the cranberries and lemon zest and turn over several times to coat evenly with the sugar mixture. Remove the pan from the heat and set aside to cool to room temperature.

Prepare the dough: If using a food processor, combine the dry ingredients in the processor bowl and pulse to combine. Drop in the butter pieces and pulse several times until the consistency of oatmeal. If preparing by hand, combine the dry ingredients in a large mixing bowl. Add the butter pieces and cut in with two knives or a pastry blender until the mixture is the consistency of oatmeal.

Continue preparing the dough by adding the water one tablespoon at a time until the dough just barely comes together in a ball. Turn the dough out onto the counter and gather up and shape into a disk. Wrap tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes.

Unwrap the dough and place on a lightly floured surface. Roll out to a rough 9-inch circle. Carefully transfer to a 10-inch tart pan with removable bottom. Press the dough into the pan and then form a lip around the edge by turning the pan while gently pinching the lip between your left thumb on the outside and right thumb and forefinger on the inside. Chill the prepared pan for 10-15 minutes.

Preheat the oven to 375°F.

When ready to bake, remove the prepared pan from the refrigerator and prick the bottom a few times with the tines of a fork. Line the bottom of the tart shell with pie weights or a layer of parchment paper and uncooked beans. Bake for 10 minutes or until crust begins to show some drying and browning.

Remove the tart shell from the oven and pour the cool cranberry mixture into the shell, spreading it out from the middle so as not to drip on the lip of the crust. Drizzle any remaining sugar mixture from the pan throughout the shell, again avoiding the lip of the tart.

Bake for another 30 minutes, or until crust deepens in color and the filling is bubbling. Cool on a wire rack. Carefully remove the outer ring, and serve while still warm, or at room temperature. Top with a scoop of ice cream, or a dollop of cream.

Friday Recipes

Finally, it's Friday. Hope everyone has a great weekend. And for everyone in the path of Hurricane Matthew, or otherwise affected by the storm, please STAY SAFE!

Here are today's six recipes to help you through the weekend. Enjoy!

LOADED NACHOS

This is from Sam Sifton, in The New York Times cooking e-newspaper. Sam wrote, “Nachos are among the most ubiquitous of America’s pastime foods. At ballgames, carnivals or bowling alleys you can expect a pile of limp tortilla chips, drowned in warm yellow cheese product. But nachos should, and can, be better than this.

“Try them showered in good shredded cheese and accompanied by a fragrant meat sauce, the fire of jalapeños, the chill and silkiness of sour cream, the tart excellence of a good tomato, with shredded lettuce and thin-sliced radishes. Here is avocado; there, the awesome funk of chopped cilantro.

“Want some bacon on there as well, or a slash of hot sauce? Go to! Some will add beans. Others black olives, chopped raw onion. Please do.

“But take care to layer well. Layering is the key to loaded nacho perfection.” Yield: 6 to 8 servings; Time: 30 minutes.

This was featured in “Super Bowl 50 Playbook Calls for Loaded Nachos” and can be found online here.

Ingredients

1/4 pound slab or thick-cut bacon, diced

1 medium yellow onion, peeled and diced

1 1/2 pounds ground beef, like chuck or sirloin

3 cloves garlic, peeled and minced

2 tablespoons ancho chile powder

1 tablespoon ground cumin

2 teaspoons kosher salt

2 teaspoons smoked paprika, hot or mild

1 1/2 teaspoons black pepper

1 teaspoon light brown sugar

1 teaspoon cornstarch

1/2 teaspoon red pepper flakes

1/2 to 2/3 cup chicken stock, homemade or low-sodium, or water

1 12- to-16-ounce bag corn tortilla chips

1/2 head iceberg or romaine lettuce, shredded

1/2 cup pickled jalapeños

2 avocados, pitted and sliced

2 cups shredded Monterey Jack cheese

1 1/2 cups shredded sharp Cheddar cheese

1/2 cup crumbled Cotija cheese

3 radishes, cleaned and thinly sliced

2 cups cherry tomatoes, sliced into quarters

1/2 cup sour cream

1/2 cup roughly chopped cilantro leaves

2 limes, cut into eighths, for garnish

Hot sauce, if desired

Preparation

Heat oven to 400 degrees. Put a large sauté pan with high sides over medium-high heat and add the bacon. Cook, stirring occasionally, until the fat has rendered and the pieces are crisp, about 5 to 7 minutes, then remove the bacon and set aside.

Add the onions to the bacon fat and sauté, stirring occasionally, until they have softened and started to go brown around the edges, about 3 to 5 minutes. Add the ground beef and garlic and cook, breaking up the meat with a spoon, until browned, about 5 minutes. Add the chile powder, cumin, salt, paprika, black pepper, sugar, cornstarch and red pepper flakes and stir to combine and toast the spices. Add enough chicken stock or water to loosen the mixture, and allow it to simmer, uncovered, until the sauce is slightly thickened, about 5 to 6 minutes. (Add a little more stock or water if mixture is too thick.)

Assemble the nachos on a half sheet pan: Put a layer of tortilla chips on the pan and cover with about 1/3 of the meat sauce, then add about 1/3 of the lettuce, 1/3 of the jalapeños, some avocado slices and a handful of the Monterey Jack and Cheddar cheeses. Top with more tortilla chips, more meat sauce, more lettuce, jalapeños, avocado and cheese, then make a final layer of chips, meat, bacon, jalapeños, avocado and cheese. Top with crumbled Cotija cheese and slide the sheet pan into the oven to bake until the cheeses have melted through, about 10 to 12 minutes.

Top cooked nachos with the sliced radishes and tomatoes, and dot the tray with teaspoons of sour cream. Scatter the cilantro over the top and serve, accompanied by limes and hot sauce.

ALL-PURPOSE BISCUITS

This also comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Biscuits are what take us into the kitchen today to cook: fat, flaky mounds of quick bread, golden brown, with a significant crumb. Composed of flour, baking powder, fat and a liquid, then baked in a hot oven, they are an excellent sop for sorghum syrup, molasses or honey. They are marvelous layered with country ham or smothered in white sausage gravy, with eggs, with grits. Biscuits are easy to make.” Yield: 6 to 8 servings; Time: 1 hour.

This was featured in “A Quest for New York’s Perfect Biscuit”, and can be viewed online by clicking here.

Ingredients

2 cups all-purpose flour, plus more for dusting

2 tablespoons baking powder

1 scant tablespoon sugar

1 teaspoon salt

5 tablespoons cold, unsalted butter, preferably European style

1 cup whole milk

Preparation

Preheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball.

Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes.

Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise.

Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes.

MEATLOAF MUFFINS

Some of the nicknames we give ourselves while we’re on the web are interesting. This one comes from CountryLady from Ontario, Canada, and is posted on Food.com. She wrote, “Another good one from Toronto Chef Michael Bonacini. Not your ordinary meat loaf, its great with his Macaroni & Cheese and a green vegetable for a ‘retro’ dinner!!!!” Total Time: 30 minutes; Prep Time: 10 minutes; Cook Time: 20 minutes; Yield: 12 muffins.

To view this online, click here.

Ingredients

1 1⁄2 lbs ground beef

1 1⁄4 cups finely chopped onions

1 cup breadcrumbs

2⁄3 cup ketchup

1 dash hot sauce

1 dash Worcestershire sauce

2⁄3 cup finely chopped fresh parsley

3 large eggs, lightly beaten

1⁄2 teaspoon thyme

1 teaspoon salt

1⁄2 teaspoon pepper

barbecue sauce, for glaze

Directions

Combine all ingredients in a large bowl& mix until well blended- do not over mix.

Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.

This will be used for unmoulding after they are cooked.

Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.

Brush with BBQ sauce & bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

DEVIL’S FOOD MARSHMALLOW CUPCAKES

This comes from Nichelle Stephens, About.com’s Cupcakes expert. Nichelle wrote, “Ding Dongs, Ho Hos, and Cocoa Cremes are the chocolate snack cakes that have been the dessert for kids and adults lunches for decades. However, there's a better way to get a chocolate fix by baking the cakes from scratch. The essential components are chocolate cupcake, marshmallow filling and chocolate ganache frosting.

“Tip: An easy way to make chocolate ganache is to use chocolate candy melts. I have used Chocoley's Bada Bing dark chocolate candy melts.

“This chocolate cupcake recipe is from the cookbook, Home Baked Comfort by Kim Laidlaw.

Prep Time: 20 minutes; Cook Time: 20 minutes; Total Time: 40 minutes; Yield: 18 cupcakes

To view this online, click here.

Ingredients

Devil’s Food Cupcakes

1 3/4 cup all-purpose flour

3/4 cup natural cocoa powder

2/3 cup boiling water

1 cup buttermilk

1 1/2 tsp baking soda

1/2 tsp kosher salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar

3 large eggs

2 tsp pure vanilla extract

Cream Filling

3/4 cup confectioners' sugar

3 tbsp unsalted butter, room temperature

1 tbsp heavy cream

1/2 cup of marshmallow fluff

1/2 tsp pure vanilla extract

Chocolate Ganache

1 cup of dark chocolate candy melts

6 tbsp of heavy cream

Preparation

Preheat oven to 350F degrees. Place one 12 cupcake cavity and one 6 cavity pan with cupcake liners. In a small bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.

In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.

Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. Use a scoop to divide the batter evenly into 18 wells of the baking pans.

Bake until the cupcakes are puffed and slightly springy to the touch and toothpick inserted into one of the cupcakes comes out clean which will be about 20 minutes. Let cool in pans for about 5 minutes. Then remove from pans and let cool completely on a wire rack.

To make the filling, in the mixing bowl, sift the sugar over the butter. Use the paddle attachment and beat on medium speed until light and fluffy. Add the marshmallow fluff, vanilla and cream. Beat until light and fluffy.

Using a paring knife or an apple corer, create a hollow about 1 1/2 inches in diameter and 1 inch deep in the center of each cupcake. Fill each hollow with a spoonful of the filling.

To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.

Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

Note: Don't be intimidated about trying these recipes, even if you're not a diabetic or cooking for someone with diabetes. You can still try your hand at these recipes. BITTERSWEET CHOCOLATE TORTE

Serves: 12

See the recipe here: http://diabeticgourmet.com/recipes/html/957.shtml

Ingredients

Torte Ingredients:

6 tablespoons stick butter or margarine

4 ounces unsweetened chocolate

1/3 cup fat-free milk

1/3 cup sugar-free apricot preserves or apricot spreadable fruit

2 teaspoons instant coffee crystals

1 egg yolk

1 teaspoon vanilla

1-1/2 cups Equal Spoonful or Granulated*

3 egg whites

1/8 teaspoon cream of tartar

1/4 cup all-purpose flour

1/8 teaspoon salt

Rich Chocolate Glaze Ingredients:

1 ounce semi-sweet chocolate

1 tablespoon stick butter or margarine

Whipped topping, fresh raspberries, and/or fresh mint (optional)

* May substitute 36 packets Equal sweetener

Directions

For Torte, heat 6 tablespoons butter, 4 ounces unsweetened chocolate, milk, preserves and coffee crystals in small saucepan, whisking frequently until chocolate is almost melted.

Remove pan from heat; continue whisking until chocolate is melted and mixture is smooth. Whisk in egg yolk and vanilla. Add Equal, whisking until smooth.

Lightly grease bottom of an 8-inch round cake pan and line with parchment or waxed paper. Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocolate mixture into egg whites; fold in combined flour and salt. Pour cake batter into pan.

Bake in preheated 350 F oven 20 to 25 minutes or until wooden pick inserted in center comes out clean. Do not over bake. Carefully loosen side of cake from pan with small sharp knife, which will keep cake from cracking as it cools. Cool cake completely in pan on wire rack. Cover and refrigerate 1 to 2 hours or until chilled.

For Rich Chocolate Glaze, melt 1 ounce semi-sweet chocolate and 1 tablespoon butter in small saucepan, stirring frequently.

Remove cake from pan and place on serving plate. Pour Rich Chocolate Glaze over top of cake, letting it run down sides. Let cake stand about 1 hour or until glaze is set. Garnish top of cake with prepared whipped topping, fresh raspberries and fresh mint, if desired. Cut cake into wedges.

1/4 tsp. ground black pepper

1 Tbsp. extra-virgin olive oil

1 lb. skinless and boneless chicken breast, cut into 4 pieces

PASTA WITH MARINATED TOMATOES AND SUMMER HERBS

This comes from Julia Moskin in The New York Times cooking e-newsletter. Julia wrote, “The easiest summer dinner known to man, pasta con salsa crudo, is a one-bowl, infinitely variable riot of seasonal flavors. It can be made with fancy Italian tuna and local heirloom tomatoes for foodies, or with supermarket mozzarella and tomatoes for children, or with excellent olives and extra pine nuts for vegetarians. It puts you in the kitchen for about a half-hour at the tail end of lunchtime. After that, all there is to do is cook the pasta, and serve with or without crusty bread, boiled corn, sliced tomatoes, or a nice, simple green salad.” Yield: 6 to 8 servings; Time: 30 minutes.

This was featured in “The House, the Food and Issues in Between” and can also be viewed online here.

Ingredients

About 1 1/2 pounds ripe tomatoes, halved or quartered if small, diced if large

Salt

2 cans olive oil-packed tuna or 1 pound mozzarella cheese, diced (optional)

2/3 cup pitted oil-cured black olives, halved, or 1/2 cup pitted green olives, chopped, or 3 tablespoons capers (optional)

2/3 cup chopped fresh herbs (basil, parsley, mint, chives, cilantro, scallion tops, or a combination), more for garnish

Freshly grated zest of 1 lemon (optional)

About 3/4 cup extra virgin olive oil

Freshly ground black pepper

2 pounds short pasta, like fusilli, farfalle or penne

Hot red pepper flakes (optional)

1/2 cup toasted pine nuts (optional)

Preparation

Up to 4 hours before serving, put tomatoes in a large bowl and sprinkle all over with salt. Set aside for 30 minutes, then drain off liquid.

Add tuna and its oil, olives or capers, if using. Add herbs and zest. Add olive oil, salt and pepper to taste and stir gently, flaking tuna into pieces. Cover and set aside at least 1 hour or up to 3 hours, stirring occasionally.

Cook pasta in plenty of boiling salted water. Drain very well. Combine tomatoes and pasta well, then taste and add more oil, salt and pepper to taste. Add red pepper flakes if desired. Sprinkle with pine nuts, if using, and chopped herbs. Serve immediately.

Tuesday Recipes

Can you believe it's already October? Where did the summer go? Where did the year go? Some time in the next week or two, I'll be posting a few pumpkin and cranberry recipes; next month, it'll be recipes for Thanksgiving. December? Gift-giving recipes, including, but not limited to cookies.

In the meantime, here are today's six recipes to help you through the day. Enjoy!

PEACH ICE CREAM

Is there anything better than homemade ice cream? And while many of us think of homemade ice cream as simply a summer treat, there's no reason you can't make it at other times of the year.

This is from Julia Reed in The New York Times cooking e-newsletter. Julia wrote, “This easy ice cream is meant to evoke hazy memories of a summer spent luxuriating on a front porch, cold glass in hand, waiting as your ice cream maker does the churning work for a late-afternoon treat. Use the best peaches you can find — the flavor of this depends directly on the fruit. You can also use mangoes or strawberries, or other stone fruits. Use your imagination, but let the ice cream maker do most of the work.” Yield: 1 1/2 quarts, 6 to 8 servings; Time: About 1 hour, plus freezing.

This was featured in “Food; Frozen Assets” and can be viewed online here.

Ingredients

4 pounds ripe peaches

1 1/4 cups sugar (or more, as needed)

1/8 teaspoon salt

2 teaspoons lemon juice

1 quart (4 cups) heavy cream

1 2-inch piece of vanilla bean (or 2 teaspoons vanilla extract)

Preparation

Peel peaches over a large bowl to catch the juice. Halve and pit them and chop roughly. Place in the bowl and sprinkle with 1/2 cup of sugar, the salt and lemon juice and let them sit for 30 minutes.

While peaches macerate, put cream and remaining sugar in saucepan with vanilla bean or vanilla. Heat over medium-low heat, stirring frequently to keep from scorching, until the sugar is dissolved. Remove from heat and cool. Discard vanilla bean.

Pour cream over peaches and mix thoroughly. Taste to see if it needs more sugar. (This will depend on the peaches.) Refrigerate until chilled.

Pour the mixture into an ice-cream machine and freeze according to the manufacturer's directions until set but not quite hard. (If serving immediately, freeze harder.) Pack the ice cream into a bowl or mold to completely solidify. When it has hardened, dip mold into hot water or wrap in a hot towel and invert onto a serving platter. Or, simply scoop and serve.

BUTTERSCOTCH PEACHES

This is from Celia Barbour in The New York Times cooking e-newsletter. Celia wrote, “I make a peach-butterscotch sauce that I dreamed up to impress my children, whose love for me, though unwavering, I am nonetheless constantly trying to cement with food. The result was delectable. We ate the sauce straight from the pot. We ate it from the serving dish. And we ate what was left for dessert that night, poured over Ronnybrook vanilla ice cream with chewy gingersnaps from Hawthorne Valley on the side. My children’s adoration of me was unaffected by the butterscotch, but their energy level definitely got a boost from all the sugar.” Yield: 4 to 6 servings; Time: 1 hour.

This was featured in “Ode to the Peach: A Cook Baffled, and Then at Peace” and can be viewed online here.

Ingredients

6 medium or 5 large ripe peaches

4 tablespoons unsalted butter

1/2 cup cream

1/2 cup sugar

1 tablespoon honey

Pinch of salt

3/4 teaspoon vanilla, 1/2 teaspoon ground ginger or 1/2 teaspoon almond extract

Vanilla ice cream

Almond biscotti, gingersnaps or other cookies

Preparation

Fill a large bowl with ice and water, and set aside. Bring a large pot of water to a boil. Place peaches in boiling water for 2 minutes. Using a slotted spoon, transfer to ice water. When cool, drain and pat dry.

Working over a bowl to catch the juice, peel skins from peaches, squeezing as much juice as possible from the skins. Slice each peach into 10 to 12 slices, and set aside with juice; discard skin and pits.

In medium skillet over low heat, melt butter. Raise heat to medium-high and cook butter until it foams, subsides, foams again and begins to brown. As soon as butter is nut-brown, add the peaches with juices. Sauté 2 to 3 minutes, then place skillet over low heat to keep warm.

In medium heavy-bottomed saucepan, combine cream, sugar, honey and salt. Place over low heat and cook, stirring occasionally, until sugar is completely melted. Raise heat to medium and let boil without stirring until it turns a rich golden brown, 12 to 15 minutes. (Because of honey and cream it will appear to turn pale brown before it has caramelized; wait until it has darkened noticeably, thickened and reduced before proceeding.) Carefully pour contents of skillet into saucepan; it will boil and spatter; stir to combine. Remove from heat and allow to cool slightly. Add vanilla or other flavoring. Serve warm or at room temperature over ice cream, with cookies on the side.

Add the garlic and thyme and cook for an additional minute, stirring frequently. Add the flour and cook off the raw flavor, about 1 minute more. Turn up the heat to medium-high and deglaze the pan with the wine. Whisk in the stock and Dijon mustard. Add the peas and chicken and cook on a very low simmer until the sauce thickens up into a gravy, 5 to 10 minutes. Remove from the heat and set aside.

On a lightly floured surface, unfold the pastry dough and cut into 4 even squares (cut once horizontally and once vertically). Gently roll out each square, increasing the size of the square by about 20 percent. Place the squares on a baking sheet and spoon the chicken mixture in the center. Fold the squares diagonally to create triangles. Pinch the edges together to create turnovers (use a little water if needed to bind). Press the edges with a fork to create a decorative border. Whisk the egg with a splash of water and brush the turnovers with the egg wash. Cut a small slit in the top to allow the steam to escape during baking. Bake the turnovers until golden brown, about 30 minutes. Let cool at least 10 minutes before serving as the insides will be very hot.

Kosher salt and freshly ground pepper

1 stick salted butter, cut into pieces

BEIGNETS

This was posted on TODAY Recipes (yes, from The TODAY Show), and is from Kix Brooks. The recipe begins, “Country legend Kix Brooks (of Brooks & Dunn fame) has a new cookbook called ‘Cookin' It with Kix.’ Here, he shares how to make classic beignets at home, and it's way easier than you think!” Let me tell you, if you’ve never eaten a beignet, you’re in for a real treat. They’re absolutely delicious!

You can view this online here.

Ingredients

Vegetable oil, for deep frying

2 eggs

1 1/2 cups purpose flour

3/4 cup whole milk

1 tablespoon sugar

1 teaspoon

1/4 teaspoon salt

Pinch of cinnamon or nutmeg (optional)

1/2 cup powdered sugar

Preparation

Pour enough oil to come halfway up the sides of a large, heavy deep pot. Heat the oil over high heat for 360 degrees.

Whisk the eggs in a large bowl. Add the flour, milk, sugar, baking powder, and salt. Whisk well to make a smooth batter.

In batches, without crowding, drop heaping tablespoons (or use an ice cream scoop) of the batter into the pot of oil. Fry, turning the beignets occasionally, until evenly browned. This could take several minutes. The best way to know if they're done is to take one out, cut it in half, and see if it's done in the middle. Use a slotted metal spoon to transfer the beignets to paper towels to drain.

Sift the powdered sugar onto the beignets, and serve immediately for breakfast or brunch. Or serve them as a dessert with ice cream.

Kix tip: For a little something different, mix equal parts powdered sugar and cinnamon together, and sprinkle onto the freshly fried beignets. Or mix several small bowls of powdered sugar and other spices, such as cardamom, nutmeg, or even cayenne pepper, and let your guests sprinkle on the sugar of their choice.

Meatless Monday

It's Monday, which means Meatless Monday. Here are six vegetarian recipes to help you through the day. Enjoy!

FAST FRENCH APPLE TART

This comes from the April 2008 issue of Vegetarian Times, and begins, “Slicing apples on a mandoline makes a pâtisserie-style apple tart a snap. The thin, even slices come out of the oven meltingly tender—not mushy.” Serves 8.

1 sheet puff pastry, thawed (1/2 17.3-oz. pkg.)

7 medium tart apples, peeled and cored

2 Tbs. lemon juice

1/4 cup sugar

1/3 cup apricot jam

Preheat oven to 400°F. Coat 9-inch pie dish or fluted tart pan with cooking spray. Roll out puff pastry into 11-inch square on floured work surface. Press puff pastry into prepared pan, and trim excess dough from edges. Prick bottom all over with fork, and refrigerate until ready to use.

Slice apples into 1/8-inch-thick rounds (with hole in middle) using mandoline. Toss apple slices in lemon juice in bowl.

Place apple slices in overlapping concentric circles on puff pastry, starting from outside and working toward center. Make sure to cover holes in apple slices, and overlap each row by 1/3 inch to prevent apples from shrinking as they cook. Sprinkle with 2 Tbs. sugar. Repeat layering and sprinkling process once more, and finish with a layer of apples. Bake 10 minutes. Reduce heat to 325°F, and bake 30 to 40 minutes more, or until crust is golden brown. Cool on wire rack.

Bring jam and 2 Tbs. water to a boil in small saucepan. Reduce heat to medium, and simmer 1 minute. Strain into small bowl. Brush over tart while jam is still hot.

This recipe, as well as the Good Morning Sweet Potato are from Runner's World, and are from the latest Runner's World cookbook. Both recipes can be found online by clicking here.

The recipe begins, “The secret behind getting these 'baked' apples on the table fast? Cooking them in the microwave, which quickly steams the fruit until perfectly tender. Braeburn, Cortland, or Rome varieties work just as well as Gala. Use a spoon or melon baller to core the halved apples. Top the finished dish with a dollop of yogurt for a protein and calcium boost.

“Cooked apples get topped with sugar and cinnamon, plus granola for extra carbs. If you like, add a dollop of yogurt to the finished dish for a protein boost.”

1 tablespoon packed light brown sugar

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

4 teaspoons butter

Instructions

In a microwavable dish, arrange the apple halves cut side up.

Top each apple half evenly with the tart cherries and brown sugar. Sprinkle with the cinnamon and nutmeg. Dot evenly with the butter.

Cover the apples with a microwavable dome lid or microwave-safe plastic wrap. Microwave on high for about 4 minutes, or until the apples are tender.

This is a terrific, relaxed party dish—easy to make, fun to eat and meant for a gathering.” Serves 6.
