Sloppy Joes

Who doesn't love Sloppy Joes? Even the name sounds fun.

Here are six yummy Sloppy Joe recipes to help you through the day, including Slow-Cooker Enchilada Sloppy Joes and Turkey Lentil Sloppy Joes with Quick Cabbage Slaw. Enjoy!

SMOKY WHITE BEAN AND BEEF SLOPPY JOES

This is from Sarah DiGregorio in The New York Times cooking e-newsletter. She wrote, "This update on the kid-friendly classic uses half the meat as a traditional sloppy Joe recipe, but retains the qualities that everyone loves: a tart-sweet savoriness and a quick cooking time. You can substitute ground pork, turkey, lamb or plant-based ground meat for the beef; the key is to use a protein that’s not too lean. A little fat helps carry the flavor of the meat through the entire dish. (If you use plant-based meat or you only have lean meat on hand, add another tablespoon of olive oil or your preferred fat.) The addition of adobo sauce from a can of chipotles imparts smoke, with just a hint of heat. (If you’d like a spicier version, by all means, chop up one or two of the chipotles and add them.) The leftover chipotles keep for at least two weeks in the fridge or indefinitely in the freezer, and they are a welcome addition to many dishes, like chicken tacos or chili."

Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

Kosher salt

1 red, yellow or orange bell pepper, finely chopped

1/2 pound ground beef, preferably 85 percent lean

1 packed tablespoon light or dark brown sugar

1 tablespoon tomato paste

1-1/2 teaspoons garlic powder

1/2 teaspoon ground cumin

3/4 cup canned or jarred tomato purée

1 tablespoon adobo sauce (from canned chipotles in adobo)

1 tablespoon cider vinegar

1 (15-ounce) can cannellini or pinto beans, drained

4 hamburger buns, preferably potato buns

Tomato slices and pickle chips, for topping

Preparation

Warm the oil in a large (12-inch) skillet over high heat. Add the onion, season with 1 teaspoon salt, and cook, stirring often, until softened, about 5 minutes.

Stir in the bell pepper, then spread out the vegetable mixture and let it cook undisturbed for about 1 minute. Stir well and repeat, letting the vegetables cook undisturbed for another minute or so at a time. You want the onions and peppers to get softened, seared and browned in spots, about 5 minutes total.

Push the vegetables to the sides of the pan, making an empty spot in the middle of the pan, and add the ground beef. Season the beef with a pinch of salt, and smash it flat with a spatula, letting it cook undisturbed for 1 minute until brown underneath. Break up the beef with the spatula and cook 1 to 2 more minutes, until completely browned with no visible pink spots.

Combine the vegetables and beef, then add the sugar and tomato paste, and cook for 1 minute to toast the tomato paste. Add the garlic powder and cumin, then the tomato purée, adobo sauce and vinegar. Stir in the beans. Reduce the heat to medium and let simmer to thicken slightly, about 3 minutes.

Meanwhile, toast the buns.

With a fork, roughly smash some of the beans to thicken the mixture. Taste and add more salt if necessary. Serve on toasted buns, topped with tomatoes and pickles.

TURKEY LENTIL SLOPPY JOES WITH QUICK CABBAGE SLAW

This is originally from Oven to Table, by Jan Scott, and reprinted on Taste for Life. Prep Time: 55 minutes; Makes 8 in regular-sized buns, or 16 in mini-slider buns.

Ingredients

For the Sloppy Joes

2 Tbsp olive oil

1 small onion, finely chopped (about 1/2 cup)

Kosher salt

2 cloves garlic, grated or pressed

1 lb ground turkey

2 cups cooked green or brown lentils (or 1 19-oz can, rinsed and drained)

3 Tbsp chili powder

1 tsp dried oregano

1 tsp ground cumin

1/2 tsp freshly ground black pepper

2 Tbsp tomato paste

1 can (28 oz) crushed tomatoes

3 Tbsp brown sugar

1 Tbsp prepared yellow mustard

1 tsp Worcestershire sauce

1 tsp hot sauce

For the Slaw

4 cups chopped red cabbage (about 1 small cabbage)

1 large carrot, peeled

3 green onions, ends trimmed and thinly sliced

1/2 cup mayonnaise

1/4 cup fresh lime juice

2 tsp liquid honey

1 tsp celery seed

Kosher salt

For Serving

8 whole-wheat dinner rolls or hamburger buns (split in half and toasted)*

Directions

In a large cast iron, stainless steel, or nonstick skillet, heat oil over medium heat. Add onions, season with a pinch of salt and sauté until onions are soft and translucent, about 3 to 5 minutes. Add garlic and cook for 1 minute more.

Crumble ground turkey into skillet and stir to combine, cooking until browned. Add lentils, chili powder, oregano, cumin, pepper, and tomato paste and stir, cooking for another 1 to 2 minutes to infuse turkey and lentils with spices.

Stir in crushed tomatoes, brown sugar, mustard, Worcestershire sauce, and hot sauce. Reduce heat to medium-low and simmer, partially covered, for 20 minutes. Check seasonings and add more salt if needed.

While meat mixture is cooking, make slaw. Place cabbage in a medium bowl and, using a vegetable peeler, shave carrot into ribbons. Add carrot and green onions to bowl and toss with clean hands to combine.

In a small bowl, whisk together mayonnaise, lime juice, honey, and celery seed. Pour over cabbage and toss to combine. Finish with a pinch of salt.

Spoon Sloppy Joes onto split and toasted rolls. Top with slaw and serve at once.

Notes

For more of a bite-size snack, turn these into sliders. Just replace the 8 hamburger buns with approximately 16 mini-slider buns.

You can easily double or triple this recipe for a large party. The slaw adds some crunch to this dish. Its simplicity lends itself well to customization, so feel free to play around with vegetables if you like, maybe adding some grated apple or green cabbage to the mix.

BULGOGI SLOPPY JOES WITH SCALLION SALSA

This is from Sam Sifton in The New York Times cooking enewsletter. Sam wrote, “The dish is the Korean barbecue standard known as bulgogi — ‘fire meat,’ is the literal translation — transformed into a sandwich filling, a sloppy Joe for a more perfect union. (File under ‘Blessings of Liberty.’) Fed to children with a tall glass of milk, the sandwiches may inspire smiles and licked plates, rapt attention and the request that the meal be served at least monthly — they are not at all too spicy for younger palates. Given to adults accompanied by cold lager, cucumber kimchi and a pot of the fermented Korean hot-pepper paste known as gochujang, they can rise to higher planes.

“Bulgogi sandwiches are a taste of the sort of home cooking that can lead to more home cooking. They serve as fragrant hamburger crushers, elegant vanquishers of pizza. They are an enemy of takeout.

“To cook them, you can follow the instructions slavishly, as if working for Hooni Kim, the chef and owner of Danji, on the edge of the theater district in Manhattan. Bulgogi ‘sliders’ are a hallmark of his menu and by far the restaurant’s most popular dish. This recipe is his.”

For the Bulgogi

1 cup soy sauce

2 tablespoons sugar

1 tablespoon peeled and grated garlic

1 tablespoon sesame oil

3 tablespoons sake

2 tablespoons mirin

1 Asian pear, peeled, cored and puréed in a food processor

1 small carrot peeled and sliced into julienne

1 medium white onion peeled and sliced into julienne

1 cup apple juice

2 pounds beef brisket, chilled slightly and sliced thin

For the Spicy Mayonnaise

1 cup mayonnaise

1 tablespoon soy sauce

3 tablespoons hot chili sauce, ideally Sriracha

For the Scallion Salsa

1/2 cup soy sauce

2 tablespoons water

1/4 cup sugar

2 tablespoons gochugaru (Korean red-pepper flakes)

2 tablespoons grapeseed oil

2 tablespoons sesame oil

3 tablespoons rice vinegar

2 tablespoons mirin

1 tablespoon sesame seeds

2 bunches scallions, cleaned, dried and sliced on the bias

Unsalted butter

6 soft hamburger buns

Preparation

For the Bulgogi

In a large, nonreactive bowl, combine the soy sauce, sugar, garlic, sesame oil, sake, mirin, pear, carrot, onion and apple juice. Add the sliced brisket, stir to combine, cover tightly and place in the refrigerator overnight or for at least six hours.

Meanwhile, in a small, nonreactive bowl, combine the mayonnaise, soy sauce and hot chili sauce and stir to combine. Taste and adjust flavors, then cover and store in the refrigerator until ready to use.

When you are ready to make the sandwiches, set one very large sauté pan (or two large ones) over high heat. Using tongs, lift meat from marinade in batches, allow to drain well, then cook, turning occasionally until the excess liquid has evaporated and the edges of the beef have started to crisp.

Meanwhile, combine all the ingredients for the salsa except for the scallions, then stir to combine.

Toast and butter the hamburger buns. Spread spicy mayonnaise on the buns, and using tongs, cover one side of each set of buns with bulgogi. Add a large pinch of scallions on top of each burger and drizzle with the dressing. Serve with cucumber kimchi (see recipe).

BEST HOMEMADE SLOPPY JOES

This yummy recipe came from Amanda, who came up with her wonderful site, titled Chunky Chef. I'd never seen it before, but you can be sure I'm going to be checking back onto her site! Definitely a good site.

She starts this recipe off by writing, “Step away from the canned sauce and give these homemade sloppy joes a try! They’re truly the best version of a childhood favorite!”

1 Tbsp butter

1 tsp olive oil

1 lb. ground beef

1/3 green bell pepper, minced

1/2 large yellow onion, minced

3 cloves garlic, minced

1 Tbsp tomato paste

2/3 cup ketchup

1/3 cup water

1 Tbsp brown sugar

1 tsp yellow mustard

3/4 tsp chili powder

1/2 tsp Worcestershire sauce

1/2 tsp kosher salt

1/4 tsp red pepper flakes (optional)

1/4 tsp black pepper

dash of hot sauce (optional)

Directions

Heat butter and oil in large skillet over MED/MED-HIGH heat. Add beef and brown, breaking apart into crumbles as it cooks, about 5 minutes. Transfer to colander to drain.

Add onion and bell pepper to same skillet and cook 2-3 minutes, until soft. Add garlic and cook 30 seconds or so, until fragrant. Add beef back to the skillet and add tomato paste. Stir well.

Add ketchup, water, brown sugar, mustard, chili powder, Worcestershire sauce, salt, red pepper flakes (if using), and black pepper. Stir well to combine.

Cook over MED heat for 10-15 minutes, until mixture has thickened to your liking. Remove from heat and serve over toasted buns.

Notes

Sloppy Joe meat mixture can be frozen!

Cool the mixture completely, then add to freezer containers and freeze for up to 4 months.

Thaw overnight in the refrigerator and reheat before serving.

SLOPPY JOES

This is from Andrea Strong in The New York Times cooking e-newsletter. The recipe begins, “Some foods are memory triggers, meals that send you back to long-forgotten moments in your life. The sloppy Joe sandwich is one such time machine.

“This version is an adaptation of one developed by Chris Gesualdi, the chef at TriBakery in Manhattan. It's a tribute to the one his mother, Rose, used to make for him as a child, and it is perfect: a sweet and spicy hill of thick sautéed ground beef spilling out of a toasted homemade kaiser roll. He tops his with melted cheddar, and that can't be a bad thing. All in all, it is a terrific antidote to adulthood.”

Yield: 12 servings; Time: 1 hour 20 minutes.

2 tablespoons olive oil

1 cup finely diced onion

1 teaspoon minced garlic

2 pounds lean ground beef

1 cup tomato paste

2 3/4 cups tomato puree

1/2 teaspoon chili powder

1/2 teaspoon Tabasco sauce

1 teaspoon pureed canned chipotle in adobo

1 bay leaf

12 kaiser rolls or hamburger buns

12 slices cheddar cheese (optional)

Preparation

In a large skillet over medium heat, warm oil, and saute onions until translucent, 5 to 6 minutes. Add garlic, and saute for 30 seconds. Add ground beef, and saute until well browned, 15 to 20 minutes.

Add tomato paste, tomato puree, chili powder, Tabasco, chipotle and bay leaf. Stir until blended. Raise heat to bring to a boil, then reduce heat to low. Simmer mixture, stirring occasionally, until thick enough to spread on a sandwich, about 45 minutes.

To serve, heat a broiler. Slice the rolls open and place them under the broiler until lightly toasted, turning as necessary. Ladle about 1/2 cup onto the bottom of each roll, and top with cheddar cheese to taste. Return bottom halves to the broiler until cheese just melts. Top with the remaining halves, and serve immediately.

SLOW-COOKER ENCHILADA SLOPPY JOES

This comes from Tablespoon.com, and begins, “Seasoned with chiles, enchilada sauce and taco seasoning, this set-it-and-forget-it beef recipe is packed with south-of-the-border flavors.” Prep Time: 10 min; Total Time: 4 hr 10 min; Servings: 4

1 tablespoon Old El Paso™ taco seasoning mix

1 can (10 oz) Old El Paso™ enchilada sauce

1 can (4.5 oz) Old El Paso™ chopped green chiles

1/2 cup fresh cilantro, chopped

1 cup shredded Mexican cheese blend (4 oz)

4 soft burger buns

Directions

Heat 10-inch skillet over medium heat. Add oil and onion; cook about five minutes or until soft. Add beef; cook until brown, stirring occasionally.

Spray 7-quart slow cooker with cooking spray. Pour mixture into slow cooker. Stir in taco seasoning mix, enchilada sauce and green chiles. Cover and cook on Low heat setting 4 to 6 hours.

Just before serving, stir in cilantro and 1/2 cup of the cheese. If too saucy, cook uncovered about 30 minutes longer, allowing extra moisture to evaporate.

Serve on buns. Top with remaining cheese. Enjoy!

Friday Recipes

It's finally Friday. Yay! It's time to Celebrate. This iconic Kool & The Gang's song is done by Playing for Change. While this is their first cover I've heard from Playing for Change done by only kids, it still rocks. If you've never heard of them before, check out some of their covers on YouTube.

I know, I know, I usually don't start of with that much of an intro...It's finally Friday. Here are six yummy recipes to help you through the weekend, including Pesto Pasta Salad with Sun Dried Tomatoes and Caribbean Beef Burgers with Mango Salsa. Enjoy!

FIREHOUSE CHILI GUMBO

This comes from Sam Sifton in The New York Times cooking e-newsletter. It begins, “This recipe is adapted from the one that a Louisiana firefighter named Jeremy Chauvin entered into a national cook-off run by Hormel Foods in 2017, and that took home the prize for America’s Best Firehouse Chili. It is not really a chili in the Texas sense of the word. There is a roux at its base — it’s more like a chili gumbo, a bayou take on the original red. Serve with grated cheese and corn chips. Chauvin told me he was moved to enter the chili contest as a way to honor his brother Spencer, also a firefighter, who was killed in the line of duty in 2016. ‘I just want people to remember his sacrifice,’ he said.”

Yield: Serves 8 to 10; Time: 2 hours

Ingredients

For the Chili:

2 tablespoons neutral oil, like canola or grapeseed

3 pounds ground beef, ideally coarse-ground

1 tablespoon kosher salt

1 teaspoon ground white pepper

1 teaspoon ground black pepper

1 teaspoon ground cayenne pepper, or to taste

2 tablespoons chile powder

1 teaspoon ground turmeric

1 teaspoon dried oregano

1 teaspoon ground cumin

3 tablespoons steak sauce

2 tablespoons Worcestershire sauce

2 14.5-ounce cans diced tomatoes

For the Gumbo:

2 tablespoons unsalted butter

1 tablespoon olive oil

2 tablespoons all-purpose flour

1 large yellow onion, peeled and diced

2 medium shallots, peeled and diced

1 green bell pepper, diced

1 yellow bell pepper, diced

3 ribs celery, trimmed and diced

3 cloves garlic, peeled and minced

2 6-ounce cans tomato paste

2 8-ounce cans tomato sauce

1 to 2 cups tomato juice

1 cup ketchup

1 tablespoon apple-cider vinegar, or to taste

2 tablespoons hot sauce, or to taste

Preparation

Make the chili. Heat the oil in a large skillet or heavy-bottomed pot set over medium-high heat. Working in batches, cook the beef, stirring often, until it has begun to brown at the edges. Using a slotted spoon, transfer browned meat to a bowl.

Pour off excess fat, turn heat down to medium and return the browned beef to the skillet or pot. Add salt, peppers, chile powder, turmeric, oregano and cumin, and stir to combine. Add steak sauce, Worcestershire sauce and diced tomatoes, and stir again. Cover the skillet or pot, and cook, stirring a few times, for 15 minutes or so.

Make the gumbo. Place a large pot with a heavy bottom over medium heat, and put the butter and oil into it. When the butter is melted and foaming, sprinkle the flour into the pan, and whisk to combine. Continue whisking until the mixture is golden brown, approximately 15 to 20 minutes. Add the onion, shallots, bell peppers, celery and garlic, and cook, stirring often, until the vegetables have started to soften, approximately 10 to 15 minutes.

Make the chili gumbo. Add the beef mixture to the pot with the vegetables along with the tomato paste, tomato sauce, tomato juice and ketchup, and stir to combine. Cook, stirring occasionally, for 30 to 45 minutes, then add apple-cider vinegar and hot sauce to taste. Take the pot off the heat, and serve, or allow to cool and refrigerate overnight to allow the flavors to cure. Heat before serving.

LUCALI SALAD

This is from Sam Sifton in The New York Times cooking newsletter. Sam wrote, "Mark Iacono sometimes serves a version of this salad at Lucali, his candlelit church of pizza in Brooklyn. It’s what he calls a “bottom of the bowl” salad, reminiscent of what’s left after a long Sunday dinner with family, with tomatoes, black olives and red onion deeply marinated in a vinegar-heavy dressing. He layers these above and below cold, crisp lettuce, adds a final drizzle of dressing and serves the salad with a meatball on top of it. But it goes as well plain alongside a pizza or under a sausage that’s been simmered in sauce, with stuffed shells or lasagna or eggplant Parm. You don’t need fancy tomatoes or lettuce with bona fides, just strong vinaigrette and enough time to allow the tomatoes to bleed out in it before you assemble the salad and serve."

Yield: 4 to 6 servings; Time: 40 minutes

Ingredients

For the salad:

5 smallish tomatoes, halved and cut into fifths

1/2 smallish red onion, peeled and thinly sliced

1 rib celery with leaves, ideally from the heart, chopped

18 canned, pitted black olives, plus 2 tablespoons olive brine

2 teaspoons kosher salt

1 teaspoon coarsely ground black pepper

1 teaspoon lemon pepper

1/3 cup olive oil

1 teaspoon red-wine vinegar

1 head iceberg lettuce, outer leaves and brown bits removed, roughly torn

For the dressing:

1 cup plus 2 tablespoons olive oil

1/2 cup red-wine vinegar

1/2 teaspoon kosher salt

1/2 teaspoon coarsely ground black pepper

1/2 teaspoon lemon pepper

Preparation

Combine the tomatoes, red onion and celery in a large bowl. Add the olives, bruising each slightly between finger and thumb, and the olive brine.

Add the salt, peppers, olive oil and red-wine vinegar to the bowl, and mix gently with your hands or a wooden spoon. Cover with plastic wrap, and place in refrigerator for a minimum of 20 minutes and up to 2 hours.

Wash and dry the lettuce, then put in a bowl, cover and place in the refrigerator until ready to assemble the salad.

Make the dressing. There will be a lot left over, which you can cover and store in the refrigerator for up to a few weeks. Combine the olive oil, red-wine vinegar, salt, black pepper and lemon pepper in a jar or large bowl. Cover the jar, and shake until emulsified, or use a whisk to achieve the same result in the bowl. Set aside.

Assemble the salad. Spoon onto a large platter enough of the tomato mixture and accumulated juices to cover its bottom. Arrange some of the iceberg across the top of the tomatoes, and drizzle a little dressing over it. Add some more of the tomato mixture, then another round of the iceberg. Drizzle with some more of the dressing, and then repeat. Serve immediately, so the lettuce does not wilt, either with Italian bread or topped with meatballs, perhaps alongside spaghetti or pizza.

PESTO PASTA SALAD WITH SUN DRIED TOMATOES

This is from Cara Harbstreet on Fruits & Veggies, a website I recently stumbled across. This salad can be served hot or cold, whichever strikes your fancy.

Prep Time: 5 minutes; Cook Time: 10 minutes; Servings: 8

Ingredients

1 16 oz box cellentani, rotini, or bowtie pasta

1 cup pesto sauce

1 can chickpeas

1/2 cup sun-dried tomatoes chopped

1/2 cup shredded parmesan cheese

1 head broccoli florets

1 tbsp olive oil

Salt and pepper to taste

1/2 lemon (optional)

Directions

Heat the oven to 400 degrees F. Wash and dry the broccoli, then cut into small florets. Arrange in a single layer on a baking sheet and drizzle with the olive oil. Season with salt and pepper to taste. Roast 10 minutes on high heat or until the edges begin to brown and the broccoli is cooked to your preference.

While the oven is preheating, bring a large pot of water to a boil. Once boiling, add the pasta and cook until al dente, about 8-10 minutes depending on your pasta shape.

Meanwhile, chop the sun-dried tomatoes and drain and rinse the chickpeas. Set aside until ready to combine.

Once pasta is cooked, drain and add to a large mixing bowl. Remove the broccoli from the oven and allow to cool slightly. Add to the mixing bowl with the pesto sauce, sun-dried tomatoes, and chickpeas. If using lemon, squeeze over the top, being careful not to include the seeds. Gently fold together to combine all ingredients.

Top with parmesan cheese just before serving. Serve warm, or chill until ready to serve.

BLUEBERRY BANANA CAKE

This comes from Carroll Pellegrinelli, who wrote for The Spruce Eats. Carroll wrote, "Whether you overbought at the farm stand or your fruit is ripening quicker than you can eat it, this blueberry banana cake is the perfect way to use up the produce and enjoy something sweet. What is great about this recipe is that there are more bananas and blueberries in the batter than flour and sugar, which makes it not only extra fruity and delicious, but also a healthy breakfast, dessert, or snack.

"This cake was made in a cathedral bundt cake pan, but you can use any bundt, cake, or loaf pan."

Prep Time: 20 minutes; Cook Time: 50 minutes; Total Time: 70 minutes; Yield: 16 slices (16 servings)

Ingredients

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter (softened)

3/4 cup sugar

3 large eggs (at room temperature)

1 teaspoon vanilla extract

4 bananas (very ripe, mashed)

1 cup blueberries (rinsed and dried)

Directions

Gather the ingredients.

Preheat the oven to 350 F. Grease and flour the cake pan.

Combine the flour, baking soda, and salt in a large bowl with a wire whisk. Set aside.

Cream together the butter and sugar. Add the eggs and vanilla. Beat until well combined.

Add the butter mixture to the flour mixture. Combine until just mixed.

Fold in the bananas and blueberries.

Carefully pour the batter into the prepared pan.

Bake for 50 minutes or until a cake tester comes out clean.

Tips

This recipe is somewhat simple, but there are a few tips you should keep in mind to ensure your banana blueberry cake is a success:

First, it is important that the butter and eggs be at room temperature so they both mix into the batter uniformly.

You also want to make sure that the bananas are nice and ripe; the goal is to have them blend into the batter versus remain in chunks. Bananas with almost black skins are ideal.

To achieve the creamiest texture, mash the ripe bananas with a mixer until they are a thick puree. You can use frozen bananas as well, just remember to thaw first.

When it comes to the blueberries, you need completely dry them before adding to the batter. Introducing water to the batter will result in a soggy cake.

This recipe can be baked in a bundt pan, loaf pan, or muffin tins. Just be sure to adjust the cooking times (muffins will take about half the time).

Recipe Variations

Whether you add or sub out ingredients in this cake, there are a few twists on this recipe that are sure to please. If your family is a fan of nuts, adding walnuts to the batter—or sprinkled on top—brings a nice crunch to the cake.

And, chances are, the kids won't object to a few chocolate chips.

You can elevate the cake by layering on a streusel topping before baking, which will create a sweet, crispy outer crust.

CARIBBEAN BEEF BURGERS WITH MANGO SALSA

Mango Salsa:

1 large mango, peeled, coarsely chopped (about 1 cup)

1 tablespoon chopped fresh cilantro

1 tablespoon finely chopped seeded jalapeno pepper

1 tablespoon fresh lime juice

Directions

Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties.

Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160F, turning occasionally. Season with salt, as desired.

Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa.

Sloppy Joes

LENTIL CHICKPEA SLOPPY JOES

1 Tbsp Eden Extra Virgin Olive Oil

1/4 cup shallots, minced

1 clove garlic, minced

1/2 cup red bell peppers, diced

14 ounces Eden Crushed Tomatoes

3 Tbsp organic tomato paste

1 Tbsp organic maple syrup

2 tsp Eden Red Wine Vinegar

1 1/2 tsp Eden Shoyu Soy Sauce, or Tamari

1 tsp smoked paprika

1/2 tsp Eden Brown Mustard

1 tsp Eden Ground Chili Powder

1/4 tsp Eden Ground Cumin

1/4 tsp Eden Sea Salt

1/8 tsp fresh ground black pepper

15 ounces Eden Lentils w/Onion & Bay Leaf

Ingredients

1 1/2 tablespoons Vegetable Oil

2 large onion, chopped (about 2 cups)

3 pounds ground beef

ketchup or 2 cups barbecue sauce

1 cup French's® Classic Yellow® mustard

1/2 cup French's® worcestershire sauce

2 packages (15 ounces each) Pepperidge Farm® Mini Sandwich Buns (White or Wheat)

Directions

Heat the oil in a 6-quart saucepot over medium heat. Add the onions and cook until tender, stirring occasionally.

Increase the heat to medium-high. Add the beef to the saucepot and cook until it's well browned, stirring often to separate meat. Pour off any fat.

SLOPPY JOES

Ingredients

1 large onion, choppe

1 to 2 C celery, chopped

1 tsp balsamic vinegar (other vinegar can be used)

1 green bell pepper, chopped

3 cloves garlic, crushed
(or 2 tsp dried minced garlic or garlic powder)

1 T chili powder (will not make it too hot)

2 T cumin

2 1/2 C tomato sauce (or a 6 oz can tomato paste + 1 C tomato juice + 1 C water)

1 T prepared yellow mustard

1 T ground dry mustard

1 T brown sugar

1 tsp black strap molasses

1 1/2 cups dry TVP granules

1 1/2 C boiling water

optional spicy version: 1 to 3 tsp hot sauce or roasted chilies

Directions

Saute onion and celery in balsamic vinegar and a little water on medium heat. Add more water if needed. Add garlic, peppers and spices and saute for a few more minutes. Add everything else and simmer for 20 minutes. Serve over whole wheat buns, rice or pasta.

Adding a can of chili beans makes a very filling dish, changing it slightly to Sloppy Josés.

BULGOGI SLOPPY JOES WITH SCALLION SALSA

This is from Sam Sifton in The New York Times cooking enewsletter. Sam wrote, “The dish is the Korean barbecue standard known as bulgogi — ‘fire meat,’ is the literal translation — transformed into a sandwich filling, a sloppy Joe for a more perfect union. (File under ‘Blessings of Liberty.’) Fed to children with a tall glass of milk, the sandwiches may inspire smiles and licked plates, rapt attention and the request that the meal be served at least monthly — they are not at all too spicy for younger palates. Given to adults accompanied by cold lager, cucumber kimchi and a pot of the fermented Korean hot-pepper paste known as gochujang, they can rise to higher planes.

“Bulgogi sandwiches are a taste of the sort of home cooking that can lead to more home cooking. They serve as fragrant hamburger crushers, elegant vanquishers of pizza. They are an enemy of takeout.

“To cook them, you can follow the instructions slavishly, as if working for Hooni Kim, the chef and owner of Danji, on the edge of the theater district in Manhattan. Bulgogi ‘sliders’ are a hallmark of his menu and by far the restaurant’s most popular dish. This recipe is his.”

1 cup soy sauce

2 tablespoons sugar

1 small carrot peeled and sliced into julienne

1 medium white onion peeled and sliced into julienne

1 cup mayonnaise

1 tablespoon soy sauce

3 tablespoons hot chili sauce, ideally Sriracha

For the Scallion Salsa

1/2 cup soy sauce

2 tablespoons water

1/4 cup sugar

2 tablespoons gochugaru (Korean red-pepper flakes)

2 tablespoons grapeseed oil

2 tablespoons sesame oil

3 tablespoons rice vinegar

2 tablespoons mirin

1 tablespoon sesame seeds

2 bunches scallions, cleaned, dried and sliced on the bias

Unsalted butter

6 soft hamburger buns

Preparation

For the Bulgogi

In a large, nonreactive bowl, combine the soy sauce, sugar, garlic, sesame oil, sake, mirin, pear, carrot, onion and apple juice. Add the sliced brisket, stir to combine, cover tightly and place in the refrigerator overnight or for at least six hours.

Meanwhile, in a small, nonreactive bowl, combine the mayonnaise, soy sauce and hot chili sauce and stir to combine. Taste and adjust flavors, then cover and store in the refrigerator until ready to use.

When you are ready to make the sandwiches, set one very large sauté pan (or two large ones) over high heat. Using tongs, lift meat from marinade in batches, allow to drain well, then cook, turning occasionally until the excess liquid has evaporated and the edges of the beef have started to crisp.

Meanwhile, combine all the ingredients for the salsa except for the scallions, then stir to combine.

Toast and butter the hamburger buns. Spread spicy mayonnaise on the buns, and using tongs, cover one side of each set of buns with bulgogi. Add a large pinch of scallions on top of each burger and drizzle with the dressing. Serve with cucumber kimchi (see recipe).

Friday Recipes

It's finally Friday. Yay! It's time to Celebrate. While we're starting off with the same song as last Friday, this time Kool & The Gang's song is done by Playing for Change. While this is their first cover I've heard from Playing for Change done by only kids, it still rocks. If you've never heard of them before, check out some of their covers on YouTube.

I know, I know, I usually don't start of with that much of an intro...It's finally Friday. Here are six yummy recipes to help you through the weekend, including Pesto Pasta Salad with Sun Dried Tomatoes and Caribbean Beef Burgers with Mango Salsa. Enjoy!

FIREHOUSE CHILI GUMBO

This comes from Sam Sifton in The New York Times cooking e-newsletter. It begins, “This recipe is adapted from the one that a Louisiana firefighter named Jeremy Chauvin entered into a national cook-off run by Hormel Foods in 2017, and that took home the prize for America’s Best Firehouse Chili. It is not really a chili in the Texas sense of the word. There is a roux at its base — it’s more like a chili gumbo, a bayou take on the original red. Serve with grated cheese and corn chips. Chauvin told me he was moved to enter the chili contest as a way to honor his brother Spencer, also a firefighter, who was killed in the line of duty in 2016. ‘I just want people to remember his sacrifice,’ he said.”

Yield: Serves 8 to 10; Time: 2 hours

Ingredients

For the Chili:

2 tablespoons neutral oil, like canola or grapeseed

3 pounds ground beef, ideally coarse-ground

1 tablespoon kosher salt

1 teaspoon ground white pepper

1 teaspoon ground black pepper

1 teaspoon ground cayenne pepper, or to taste

2 tablespoons chile powder

1 teaspoon ground turmeric

1 teaspoon dried oregano

1 teaspoon ground cumin

3 tablespoons steak sauce

2 tablespoons Worcestershire sauce

2 14.5-ounce cans diced tomatoes

For the Gumbo:

2 tablespoons unsalted butter

1 tablespoon olive oil

2 tablespoons all-purpose flour

1 large yellow onion, peeled and diced

2 medium shallots, peeled and diced

1 green bell pepper, diced

1 yellow bell pepper, diced

3 ribs celery, trimmed and diced

3 cloves garlic, peeled and minced

2 6-ounce cans tomato paste

2 8-ounce cans tomato sauce

1 to 2 cups tomato juice

1 cup ketchup

1 tablespoon apple-cider vinegar, or to taste

2 tablespoons hot sauce, or to taste

Preparation

Make the chili. Heat the oil in a large skillet or heavy-bottomed pot set over medium-high heat. Working in batches, cook the beef, stirring often, until it has begun to brown at the edges. Using a slotted spoon, transfer browned meat to a bowl.

Pour off excess fat, turn heat down to medium and return the browned beef to the skillet or pot. Add salt, peppers, chile powder, turmeric, oregano and cumin, and stir to combine. Add steak sauce, Worcestershire sauce and diced tomatoes, and stir again. Cover the skillet or pot, and cook, stirring a few times, for 15 minutes or so.

Make the gumbo. Place a large pot with a heavy bottom over medium heat, and put the butter and oil into it. When the butter is melted and foaming, sprinkle the flour into the pan, and whisk to combine. Continue whisking until the mixture is golden brown, approximately 15 to 20 minutes. Add the onion, shallots, bell peppers, celery and garlic, and cook, stirring often, until the vegetables have started to soften, approximately 10 to 15 minutes.

Make the chili gumbo. Add the beef mixture to the pot with the vegetables along with the tomato paste, tomato sauce, tomato juice and ketchup, and stir to combine. Cook, stirring occasionally, for 30 to 45 minutes, then add apple-cider vinegar and hot sauce to taste. Take the pot off the heat, and serve, or allow to cool and refrigerate overnight to allow the flavors to cure. Heat before serving.

LUCALI SALAD

This is from Sam Sifton in The New York Times cooking newsletter. Sam wrote, "Mark Iacono sometimes serves a version of this salad at Lucali, his candlelit church of pizza in Brooklyn. It’s what he calls a “bottom of the bowl” salad, reminiscent of what’s left after a long Sunday dinner with family, with tomatoes, black olives and red onion deeply marinated in a vinegar-heavy dressing. He layers these above and below cold, crisp lettuce, adds a final drizzle of dressing and serves the salad with a meatball on top of it. But it goes as well plain alongside a pizza or under a sausage that’s been simmered in sauce, with stuffed shells or lasagna or eggplant Parm. You don’t need fancy tomatoes or lettuce with bona fides, just strong vinaigrette and enough time to allow the tomatoes to bleed out in it before you assemble the salad and serve."

Yield: 4 to 6 servings; Time: 40 minutes

Ingredients

For the salad:

5 smallish tomatoes, halved and cut into fifths

1/2 smallish red onion, peeled and thinly sliced

1 rib celery with leaves, ideally from the heart, chopped

18 canned, pitted black olives, plus 2 tablespoons olive brine

2 teaspoons kosher salt

1 teaspoon coarsely ground black pepper

1 teaspoon lemon pepper

1/3 cup olive oil

1 teaspoon red-wine vinegar

1 head iceberg lettuce, outer leaves and brown bits removed, roughly torn

For the dressing:

1 cup plus 2 tablespoons olive oil

1/2 cup red-wine vinegar

1/2 teaspoon kosher salt

1/2 teaspoon coarsely ground black pepper

1/2 teaspoon lemon pepper

Preparation

Combine the tomatoes, red onion and celery in a large bowl. Add the olives, bruising each slightly between finger and thumb, and the olive brine.

Add the salt, peppers, olive oil and red-wine vinegar to the bowl, and mix gently with your hands or a wooden spoon. Cover with plastic wrap, and place in refrigerator for a minimum of 20 minutes and up to 2 hours.

Wash and dry the lettuce, then put in a bowl, cover and place in the refrigerator until ready to assemble the salad.

Make the dressing. There will be a lot left over, which you can cover and store in the refrigerator for up to a few weeks. Combine the olive oil, red-wine vinegar, salt, black pepper and lemon pepper in a jar or large bowl. Cover the jar, and shake until emulsified, or use a whisk to achieve the same result in the bowl. Set aside.

Assemble the salad. Spoon onto a large platter enough of the tomato mixture and accumulated juices to cover its bottom. Arrange some of the iceberg across the top of the tomatoes, and drizzle a little dressing over it. Add some more of the tomato mixture, then another round of the iceberg. Drizzle with some more of the dressing, and then repeat. Serve immediately, so the lettuce does not wilt, either with Italian bread or topped with meatballs, perhaps alongside spaghetti or pizza.

PESTO PASTA SALAD WITH SUN DRIED TOMATOES

This is from Cara Harbstreet on Fruits & Veggies, a website I recently stumbled across. This salad can be served hot or cold, whichever strikes your fancy.

Prep Time: 5 minutes; Cook Time: 10 minutes; Servings: 8

Ingredients

1 16 oz box cellentani, rotini, or bowtie pasta

1 cup pesto sauce

1 can chickpeas

1/2 cup sun-dried tomatoes chopped

1/2 cup shredded parmesan cheese

1 head broccoli florets

1 tbsp olive oil

Salt and pepper to taste

1/2 lemon (optional)

Directions

Heat the oven to 400 degrees F. Wash and dry the broccoli, then cut into small florets. Arrange in a single layer on a baking sheet and drizzle with the olive oil. Season with salt and pepper to taste. Roast 10 minutes on high heat or until the edges begin to brown and the broccoli is cooked to your preference.

While the oven is preheating, bring a large pot of water to a boil. Once boiling, add the pasta and cook until al dente, about 8-10 minutes depending on your pasta shape.

Meanwhile, chop the sun-dried tomatoes and drain and rinse the chickpeas. Set aside until ready to combine.

Once pasta is cooked, drain and add to a large mixing bowl. Remove the broccoli from the oven and allow to cool slightly. Add to the mixing bowl with the pesto sauce, sun-dried tomatoes, and chickpeas. If using lemon, squeeze over the top, being careful not to include the seeds. Gently fold together to combine all ingredients.

Top with parmesan cheese just before serving. Serve warm, or chill until ready to serve.

1 Tbsp butter

1 lb. ground beef

1/3 green bell pepper, minced

1/2 large yellow onion, minced

3 cloves garlic, minced

1 Tbsp tomato paste

2/3 cup ketchup

1/3 cup water

1 Tbsp brown sugar

1 tsp yellow mustard

3/4 tsp chili powder

1/2 tsp Worcestershire sauce

1/2 tsp kosher salt

1/4 tsp red pepper flakes (optional)

1/4 tsp black pepper

dash of hot sauce (optional)

Directions

Heat butter and oil in large skillet over MED/MED-HIGH heat. Add beef and brown, breaking apart into crumbles as it cooks, about 5 minutes. Transfer to colander to drain.

Add onion and bell pepper to same skillet and cook 2-3 minutes, until soft. Add garlic and cook 30 seconds or so, until fragrant. Add beef back to the skillet and add tomato paste. Stir well.

Add ketchup, water, brown sugar, mustard, chili powder, Worcestershire sauce, salt, red pepper flakes (if using), and black pepper. Stir well to combine.

Cook over MED heat for 10-15 minutes, until mixture has thickened to your liking. Remove from heat and serve over toasted buns.

Notes

Sloppy Joe meat mixture can be frozen!

Cool the mixture completely, then add to freezer containers and freeze for up to 4 months.

Thaw overnight in the refrigerator and reheat before serving.

BLUEBERRY BANANA CAKE

Directions

Gather the ingredients.

Tips

This recipe is somewhat simple, but there are a few tips you should keep in mind to ensure your banana blueberry cake is a success:

First, it is important that the butter and eggs be at room temperature so they both mix into the batter uniformly.

You also want to make sure that the bananas are nice and ripe; the goal is to have them blend into the batter versus remain in chunks. Bananas with almost black skins are ideal.

To achieve the creamiest texture, mash the ripe bananas with a mixer until they are a thick puree. You can use frozen bananas as well, just remember to thaw first.

When it comes to the blueberries, you need completely dry them before adding to the batter. Introducing water to the batter will result in a soggy cake.

This recipe can be baked in a bundt pan, loaf pan, or muffin tins. Just be sure to adjust the cooking times (muffins will take about half the time).

1 pound boneless, skinless chicken breasts

1/2 teaspoon salt

1 tablespoon olive oil

1 cup frozen carrots, thawed and drained

1 cup frozen peas, thawed and drained

1 (14.75-ounce) can cream-style corn

3/4 cup skim milk, divided into 1/4 cup and 1/2 cup portions

1 cup biscuit mix

Directions

Heat oven to 400 degrees F.

Cut chicken breasts into 1-inch cubes and season with 1/2 teaspoon salt.

Heat 1 tablespoon olive oil or vegetable oil in a skillet over medium-high heat.

Add the 1 pound of salted chicken breast cubes and cook for 8 minutes, stirring occasionally, or until browned.

Place chicken into a 3-quart baking dish, and add 1 cup frozen, thawed and drained carrots, 1 cup.

Cover and bake for 25 minutes.

In a mixing bowl combine 1 cup biscuit mix and remaining 1/2 cup of skim milk. Stir until a soft dough forms.

6 slices bacon, or 3 tablespoons unsalted butter

1 bunch scallions, white and green parts thinly sliced separately

Preparation

MAPLE & BROWN SUGAR OATMEAL WITH ORANGE, CRANBERRIES & ALMONDS

I somehow ended up on the Kroger emailing list, which is a little strange, considering that 1) there isn't a Kroger anywhere near me, and 2) I don't recall signing up for their emails. No matter…I did visit a Kroger once while visiting family in Knoxville, and will say that while it looks like there are maybe two Krogers in Florida, I wouldn't object to them spreading out, say, to Florida's west coast. (Hey, Kroger people, are you listening?)

For the record, I'd also love to see Wegmans here, too. While I've shopped at Publix for years, it'd be nice to have some competition from the aforementioned two grocery stores. I'll leave it at that…

Anywho, this recipe was in the Kroger emailing list and looked absolutely yummy. While I'm not a fan of instant oatmeal, and plan to use this recipe to come up with something similar using quick cook oats, I'll post it here as it does look good. (Keep in mind that when I tweak it, I'll post the new one, okay?)

As the meatballs bake, the soy sauce marries the garlic and scallions to create a glaze. This meatball mixture can be made ahead and left to marinate in the fridge for 3 hours or even overnight. Use ground beef that is 85 percent lean meat, 15 percent fat, or 80 percent lean and 20 percent fat for juicier meatballs. The Ritz crackers here make for a more tender meatball, but feel free to substitute plain dry bread crumbs. The meatballs are tasty on their own, but for a simple dipping sauce, combine 2 tablespoons soy sauce and 1 tablespoon distilled white vinegar. Serve over steamed rice with kimchi, or as a sandwich with mayonnaise or marinara sauce."

1/2 cup chopped scallions

2 tablespoons low-sodium soy sauce

2 pounds Ground Beef (95% lean)

1 can (28 ounces) crushed tomatoes, undrained

1 can (14-1/2 ounces) diced tomatoes with mild green chilies

1 can (14 to 14-1/2 ounces) regular or reduced-sodium beef broth

1 bottle (12 ounces) regular or light beer

1 medium yellow onion, diced

2 medium green, red, yellow or orange bell peppers, diced

1 can (6 ounces) tomato paste

1 large jalapeno pepper, seeded, finely chopped

1 tablespoon ground cumin

Ingredients

1 pound extra-lean ground beef (90% or better)*

1 cup chopped onion

1 can (14 1/2 ounces) diced tomatoes

2 teaspoons Worcestershire sauce

2 teaspoons salt

1 1/2 cups corn kernels or 1 can (15 ounces), drained

16 ounces diced frozen hash brown potatoes, thawed, or about 3 to 4 cups mashed potato or cooked diced potato

1/4 cup flour

1 green bell pepper, chopped

4 tablespoons butter, melted

2 cups shredded sharp or mild Cheddar cheese

Directions

Combine beef, onion, tomatoes, Worcestershire sauce, and salt. In a separate bowl, combine corn, potatoes, flour, melted butter, and chopped green bell pepper.

Pat the beef mixture into a 13x9x2-inch baking pan; top with the corn and potato mixture.

Bake uncovered at 375° for 45 minutes; sprinkle with the cheese and bake ground beef casserole 15 to 20 minutes longer, or until browned and potatoes are tender.

*If the ground beef is not extra lean, you might want to brown it first. Brown the beef with the onions win a large skillet over medium heat until no longer pink. Drain well and then mix it with the tomatoes, Worcestershire sauce, and salt. Proceed with the recipe.

GRILLED ONION BURGER

Here's a healthier version of a classic burger topped with grilled onions and all the fixings.

Tips

Cook over MED heat for 10-15 minutes, until mixture has thickened to your liking. Remove from heat and serve over toasted buns.

It's finally Friday. Here are six yummy recipes to help you through the weekend, including Pesto Pasta Salad with Sun Dried Tomatoes and Caribbean Beef Burgers with Mango Salsa. Enjoy!

FIREHOUSE CHILI GUMBO

This comes from Sam Sifton in The New York Times cooking e-newsletter. It begins, “This recipe is adapted from the one that a Louisiana firefighter named Jeremy Chauvin entered into a national cook-off run by Hormel Foods in 2017, and that took home the prize for America’s Best Firehouse Chili. It is not really a chili in the Texas sense of the word. There is a roux at its base — it’s more like a chili gumbo, a bayou take on the original red. Serve with grated cheese and corn chips. Chauvin told me he was moved to enter the chili contest as a way to honor his brother Spencer, also a firefighter, who was killed in the line of duty in 2016. ‘I just want people to remember his sacrifice,’ he said.”

Ingredients

For the Chili:

2 tablespoons neutral oil, like canola or grapeseed

3 pounds ground beef, ideally coarse-ground

1 tablespoon kosher salt

1 teaspoon ground white pepper

1 teaspoon ground black pepper

1 teaspoon ground cayenne pepper, or to taste

2 tablespoons chile powder

1 teaspoon ground turmeric

1 teaspoon dried oregano

1 teaspoon ground cumin

3 tablespoons steak sauce

2 tablespoons Worcestershire sauce

2 14.5-ounce cans diced tomatoes

For the Gumbo:

2 tablespoons unsalted butter

1 tablespoon olive oil

2 tablespoons all-purpose flour

1 large yellow onion, peeled and diced

2 medium shallots, peeled and diced

1 green bell pepper, diced

1 yellow bell pepper, diced

3 ribs celery, trimmed and diced

3 cloves garlic, peeled and minced

2 6-ounce cans tomato paste

2 8-ounce cans tomato sauce

1 to 2 cups tomato juice

1 cup ketchup

1 tablespoon apple-cider vinegar, or to taste

2 tablespoons hot sauce, or to taste

Preparation

Make the chili. Heat the oil in a large skillet or heavy-bottomed pot set over medium-high heat. Working in batches, cook the beef, stirring often, until it has begun to brown at the edges. Using a slotted spoon, transfer browned meat to a bowl.

Pour off excess fat, turn heat down to medium and return the browned beef to the skillet or pot. Add salt, peppers, chile powder, turmeric, oregano and cumin, and stir to combine. Add steak sauce, Worcestershire sauce and diced tomatoes, and stir again. Cover the skillet or pot, and cook, stirring a few times, for 15 minutes or so.

Make the gumbo. Place a large pot with a heavy bottom over medium heat, and put the butter and oil into it. When the butter is melted and foaming, sprinkle the flour into the pan, and whisk to combine. Continue whisking until the mixture is golden brown, approximately 15 to 20 minutes. Add the onion, shallots, bell peppers, celery and garlic, and cook, stirring often, until the vegetables have started to soften, approximately 10 to 15 minutes.

Make the chili gumbo. Add the beef mixture to the pot with the vegetables along with the tomato paste, tomato sauce, tomato juice and ketchup, and stir to combine. Cook, stirring occasionally, for 30 to 45 minutes, then add apple-cider vinegar and hot sauce to taste. Take the pot off the heat, and serve, or allow to cool and refrigerate overnight to allow the flavors to cure. Heat before serving.

LUCALI SALAD

This is from Sam Sifton in The New York Times cooking newsletter. Sam wrote, "Mark Iacono sometimes serves a version of this salad at Lucali, his candlelit church of pizza in Brooklyn. It’s what he calls a “bottom of the bowl” salad, reminiscent of what’s left after a long Sunday dinner with family, with tomatoes, black olives and red onion deeply marinated in a vinegar-heavy dressing. He layers these above and below cold, crisp lettuce, adds a final drizzle of dressing and serves the salad with a meatball on top of it. But it goes as well plain alongside a pizza or under a sausage that’s been simmered in sauce, with stuffed shells or lasagna or eggplant Parm. You don’t need fancy tomatoes or lettuce with bona fides, just strong vinaigrette and enough time to allow the tomatoes to bleed out in it before you assemble the salad and serve."

Ingredients

For the salad:

5 smallish tomatoes, halved and cut into fifths

1/2 smallish red onion, peeled and thinly sliced

1 rib celery with leaves, ideally from the heart, chopped

18 canned, pitted black olives, plus 2 tablespoons olive brine

2 teaspoons kosher salt

1 teaspoon coarsely ground black pepper

1 teaspoon lemon pepper

1/3 cup olive oil

1 teaspoon red-wine vinegar

1 head iceberg lettuce, outer leaves and brown bits removed, roughly torn

For the dressing:

1 cup plus 2 tablespoons olive oil

1/2 cup red-wine vinegar

1/2 teaspoon kosher salt

1/2 teaspoon coarsely ground black pepper

1/2 teaspoon lemon pepper

Preparation

Combine the tomatoes, red onion and celery in a large bowl. Add the olives, bruising each slightly between finger and thumb, and the olive brine.

Add the salt, peppers, olive oil and red-wine vinegar to the bowl, and mix gently with your hands or a wooden spoon. Cover with plastic wrap, and place in refrigerator for a minimum of 20 minutes and up to 2 hours.

Wash and dry the lettuce, then put in a bowl, cover and place in the refrigerator until ready to assemble the salad.

Make the dressing. There will be a lot left over, which you can cover and store in the refrigerator for up to a few weeks. Combine the olive oil, red-wine vinegar, salt, black pepper and lemon pepper in a jar or large bowl. Cover the jar, and shake until emulsified, or use a whisk to achieve the same result in the bowl. Set aside.

Assemble the salad. Spoon onto a large platter enough of the tomato mixture and accumulated juices to cover its bottom. Arrange some of the iceberg across the top of the tomatoes, and drizzle a little dressing over it. Add some more of the tomato mixture, then another round of the iceberg. Drizzle with some more of the dressing, and then repeat. Serve immediately, so the lettuce does not wilt, either with Italian bread or topped with meatballs, perhaps alongside spaghetti or pizza.

PESTO PASTA SALAD WITH SUN DRIED TOMATOES

This is from Cara Harbstreet on Fruits & Veggies, a website I recently stumbled across. This salad can be served hot or cold, whichever strikes your fancy.

Prep Time: 5 minutes; Cook Time: 10 minutes; Servings: 8

Ingredients

1 16 oz box cellentani, rotini, or bowtie pasta

1 cup pesto sauce

1 can chickpeas

1/2 cup sun-dried tomatoes chopped

1/2 cup shredded parmesan cheese

1 head broccoli florets

1 tbsp olive oil

Salt and pepper to taste

1/2 lemon (optional)

Directions

Heat the oven to 400 degrees F. Wash and dry the broccoli, then cut into small florets. Arrange in a single layer on a baking sheet and drizzle with the olive oil. Season with salt and pepper to taste. Roast 10 minutes on high heat or until the edges begin to brown and the broccoli is cooked to your preference.

While the oven is preheating, bring a large pot of water to a boil. Once boiling, add the pasta and cook until al dente, about 8-10 minutes depending on your pasta shape.

Meanwhile, chop the sun-dried tomatoes and drain and rinse the chickpeas. Set aside until ready to combine.

Once pasta is cooked, drain and add to a large mixing bowl. Remove the broccoli from the oven and allow to cool slightly. Add to the mixing bowl with the pesto sauce, sun-dried tomatoes, and chickpeas. If using lemon, squeeze over the top, being careful not to include the seeds. Gently fold together to combine all ingredients.

Top with parmesan cheese just before serving. Serve warm, or chill until ready to serve.

BLUEBERRY BANANA CAKE

This comes from Carroll Pellegrinelli, who wrote for The Spruce Eats. Carroll wrote, "Whether you overbought at the farm stand or your fruit is ripening quicker than you can eat it, this blueberry banana cake is the perfect way to use up the produce and enjoy something sweet. What is great about this recipe is that there are more bananas and blueberries in the batter than flour and sugar, which makes it not only extra fruity and delicious, but also a healthy breakfast, dessert, or snack.

"This cake was made in a cathedral bundt cake pan, but you can use any bundt, cake, or loaf pan."

Prep Time: 20 minutes; Cook Time: 50 minutes; Total Time: 70 minutes; Yield: 16 slices (16 servings)

Ingredients

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter (softened)

3/4 cup sugar

3 large eggs (at room temperature)

1 teaspoon vanilla extract

4 bananas (very ripe, mashed)

1 cup blueberries (rinsed and dried)

Directions

Gather the ingredients.

Preheat the oven to 350 F. Grease and flour the cake pan.

Combine the flour, baking soda, and salt in a large bowl with a wire whisk. Set aside.

Cream together the butter and sugar. Add the eggs and vanilla. Beat until well combined.

Add the butter mixture to the flour mixture. Combine until just mixed.

Fold in the bananas and blueberries.

Carefully pour the batter into the prepared pan.

Bake for 50 minutes or until a cake tester comes out clean.

Tips

This recipe is somewhat simple, but there are a few tips you should keep in mind to ensure your banana blueberry cake is a success:

First, it is important that the butter and eggs be at room temperature so they both mix into the batter uniformly.

You also want to make sure that the bananas are nice and ripe; the goal is to have them blend into the batter versus remain in chunks. Bananas with almost black skins are ideal.

To achieve the creamiest texture, mash the ripe bananas with a mixer until they are a thick puree. You can use frozen bananas as well, just remember to thaw first.

When it comes to the blueberries, you need completely dry them before adding to the batter. Introducing water to the batter will result in a soggy cake.

This recipe can be baked in a bundt pan, loaf pan, or muffin tins. Just be sure to adjust the cooking times (muffins will take about half the time).

Recipe Variations

CARIBBEAN BEEF BURGERS WITH MANGO SALSA

1-1/2 pounds 95% lean ground beef

2 tablespoons Caribbean jerk seasoning

Salt

Mango Salsa:

1 large mango, peeled, coarsely chopped (about 1 cup)

1 tablespoon chopped fresh cilantro

1 tablespoon chopped green onion

1 tablespoon finely chopped seeded jalapeno pepper

1 tablespoon fresh lime juice

Directions

Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties.

Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160F, turning occasionally. Season with salt, as desired.

Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa.
