Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double-post is dedicated to chicken recipes.
At one time, chicken was relegated to the Sunday dinner table. These days, though, you're liable to have chicken any day of the week, any time of day. Look at how many fast food places specialize in chicken or have chicken somewhere on the menu.
That said, here are six chicken recipes to help you through the day, including BBQ Chicken and Chicken Cacciatore. Enjoy!
CHICKEN PAPRIKASH
This comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn’t terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It’s a dish that pairs beautifully with butter-slicked egg noodles.” Yield: Serves 4 - 6; Time: 1 hour.

Ingredients
3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola
3 tablespoons unsalted butter
1 large yellow or Spanish onion, peeled and diced
3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination
3 tablespoons all-purpose flour
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
3/4 cup sour cream
Preparation
Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.
Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.
Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.
BBQ CHICKEN
This comes from the folks at GE Appliances, and begins, “This BBQ chicken recipe is a simple classic that will be the star of your next summer gathering.”

Ingredients
1 pound chicken drumsticks
1 pound chicken thighs
2-3 cups Italian dressing
2-3 Cups BBQ sauce (homemade or store bought)
Directions
Marinate the Chicken:
Combine drumsticks and thighs in a bowl and add Italian dressing until chicken is covered. Let sit overnight (ideal) or for 3-4 hours.
Cooking:
Fire up a gas or charcoal grill to medium heat, put chicken on, and cook for 20 minutes (about 10 minutes per side). After 20 minutes, brush on your favorite BBQ sauce. Turn chicken and add more BBQ sauce. Cook for an additional 10-15 minutes. Watch closely, so you don't burn the BBQ sauce.
CHICKEN POT PIE TURNOVERS

2 tablespoons butter
1/2 onion, chopped
1 carrot, chopped
1 stalk celery, chopped

1/2 cup white wine
1 cup chicken stock
1 teaspoon Dijon mustard
1/2 cup frozen peas
1 1/2 cups cubed or shredded cooked chicken
1 sheet frozen puff pastry, thawed
1 egg
Directions
Preheat the oven to 375 degrees F.
Melt the butter in a large saute pan over medium heat. Cook the onions, carrots, and celery with salt and pepper, to taste, until the carrots soften, about 10 minutes. Add the garlic and thyme and cook for an additional minute, stirring frequently. Add the flour and cook off the raw flavor, about 1 minute more. Turn up the heat to medium-high and deglaze the pan with the wine. Whisk in the stock and Dijon mustard. Add the peas and chicken and cook on a very low simmer until the sauce thickens up into a gravy, 5 to 10 minutes. Remove from the heat and set aside.
On a lightly floured surface, unfold the pastry dough and cut into 4 even squares (cut once horizontally and once vertically). Gently roll out each square, increasing the size of the square by about 20 percent. Place the squares on a baking sheet and spoon the chicken mixture in the center. Fold the squares diagonally to create triangles. Pinch the edges together to create turnovers (use a little water if needed to bind). Press the edges with a fork to create a decorative border. Whisk the egg with a splash of water and brush the turnovers with the egg wash. Cut a small slit in the top to allow the steam to escape during baking. Bake the turnovers until golden brown, about 30 minutes. Let cool at least 10 minutes before serving as the insides will be very hot.
CRAIG CLAIBORNE’S SMOTHERED CHICKEN
Along with being the founding editor for NYT Cooking and writing about food in the Sunday Times Magazine, Sam Sifton posts a ton of good food recipes in The New York Times cooking e-newsletters. With this recipe, Sam wrote, “Craig Claiborne was a child of Mississippi who started as food editor of The Times in 1957 and did as much as anyone to help bring home cooking into the spotlight. The dish “belongs in the ‘comfort’ category,” he wrote in 1983, “a food that gives solace to the spirit when you dine on it.” You could give your smothered chicken some European flair with mushrooms and small onions in the gravy, as Claiborne did in his experiments with Pierre Franey, then his kitchen co-pilot. Or you could send yourself south to the Creole tastes of the Delta, with a blend of tomatoes, chopped celery, onion and green peppers added to the sauce. But sometimes the easiest way is the best. Try it.” Yield: 4 servings; Time: 1 hour 20 minutes.

Ingredients
1 chicken, about 3 1/2 pounds, spatchcocked (split down the backbone, breast left intact and unsplit)
Kosher salt, to taste
Freshly ground pepper, to taste
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups chicken broth, ideally homemade
Preparation
Craig Claiborne believed a cast-iron skillet to be essential for the authentic preparation of this dish. Sprinkle the chicken on both sides with salt and pepper. Select a skillet large enough to hold the chicken comfortably when it is opened up, as for broiling. Fold wings under to secure them.
Melt the butter in the pan and add the chicken, skin side down. Cover chicken with a plate that will fit comfortably inside the skillet. Place a heavy can, stone or brick on top of the plate to weigh it down. Cook over low heat, checking the chicken skin, until it is nicely browned, about 25 minutes.
Remove weight and plate. Turn chicken so skin side is up. Replace plate and weight and continue cooking for about 15 minutes more.
Remove chicken and pour off fat from the skillet, leaving about 2 tablespoons in the pan. Add the flour to the fat, stirring with a wire whisk over medium heat. Gradually add the chicken broth and, when thickened, return chicken to the skillet, skin side up. Add salt and pepper to taste. Cover with the plate and weight and continue cooking over low heat about 20 to 30 minutes longer or until the meat is exceptionally tender. Spoon the sauce over it.
Cut chicken into serving pieces, and serve with the sauce and fluffy rice on the side.
BUFFALO CHICKEN GRILLED CHEESE SANDWICH
This comes from Jennifer Meier, About.com’s Cheese expert. Jennifer wrote, “Perhaps this isn't a traditional grilled cheese sandwich - maybe it's just a sandwich - but either way it's delicious. This buffalo chicken grilled cheese sandwich recipe takes everything we love about Buffalo Chicken (spicy, crispy chicken, creamy blue cheese dip, celery on the side) and turns it into a memorable sandwich.” Prep Time: 20 minutes; Cook Time: 25 minutes; Total Time: 45 minutes; Yield; 4 sandwiches

2 skinless, boneless chicken breasts, pounded to 1/8-inch thickness. Or, make your life easier and buy 4 thin chicken breasts
1/2 cup all-purpose flour
2 eggs, whisked
1 cup panko
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 cup celery, very thinly sliced (plus any leaves you can pull from the stalks)
1/4 of a red onion, thinly sliced
1 tablespoon finely chopped parsley
3/4 cup mayonnaise, divided, plus more for spreading on the outside of the bread slices
1 tablespoon buttermilk
2 teaspoons hot sauce, or more to taste
4 tablespoons vegetable oil
4 ounces blue cheese
8 slices of sourdough or country bread
Preparation
Generously season chicken breasts with salt. Cut each pounded chicken breast in half, so you have 4 pieces of chicken.
You’ll need three shallow bowls or dishes for dredging the chicken. One for the flour, one for the eggs, and one for the panko, salt and cayenne pepper.
Working with one piece of chicken at a time, dredge both sides of the breast in flour, shaking off excess. Next, dip the chicken into the egg, coating both sides and letting excess drip off.
Lastly, dredge through the panko/salt/cayenne mixture, pressing gently so the panko sticks to the chicken. Set the coated chicken pieces aside.
In a food processor, combine the celery (plus celery leaves if you have them), red onion, parsley, 1/4 cup of mayo and the buttermilk. Pulse just a few times until the celery and onion are roughly chopped. Don’t over-process or the mixture will get too mushy. Set aside.
In a small bowl, mix the remaining 1/2 cup of mayo with the hot sauce. Start with 1 teaspoon of hot sauce and then add more according to how spicy you want it. Set aside.
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 pieces of chicken to the skillet and cook until dark golden brown on both sides, about 8 minutes. Remove from the pan and set aside. Heat the last 2 tablespoons of oil in the same pan and cook the remaining pieces of chicken. (If you have a very large pan, you might be able to cook all the chicken pieces at once)
Return all the chicken to the pan.
Top each piece of chicken with crumbles or slices of blue cheese. Turn the heat to low and put a lid on the pan.
Spread a thin layer of regular mayonnaise evenly on one side of each piece of bread. Flip the slices over and spread the spicy mayo on the other side of each slice of bread.
When the blue cheese on the chicken is warm and very soft, remove the chicken from the pan (use a wide spatula) and set one piece of chicken on the spicy mayo side of 4 slices of bread.
Top each breast with a scoop of celery slaw and another slice of bread, with the side spread with regular mayo on the outside.
Over medium heat cook the sandwiches until the bottom is golden brown. Flip. Brown again. Slice the sandwich in half and serve.
Why Use Mayo on Grilled Cheese Sandwiches?
Spreading the outer slice of bread with mayonnaise instead of butter or oil makes the perfect slice of toasted bread; crispy, flaky and evenly browned.
Leftover Buttermilk?
Buttermilk is the slightly sour liquid that remains after milk is churned into butter. It adds a tangy flavor to recipes that always punches the flavor up a notch or two. Buttermilk is usually sold in 1 quart containers, which means you're likely to have some leftover when you buy it for a recipe. How can you use up the buttermilk before it goes bad? Chicken - and Computer Back Up
Finally, I'm back online! It only took several calls, including one that lasted almost 35 minutes (shortly after noon) and one that lasted 55 minutes! Ouch! But now that we're back in business...
There was a time when chicken was relegated to Sunday dinner. Now, it's an anytime meal. Chicken fast food restaurants seem to be everywhere; even burger places frequently have chicken sandwiches and nuggets. And many picnics and pot luck dinners have at least one or two chicken dishes, whether fried or baked, with or without gravy – hundreds of ways to have chicken.
As you probably guessed by now, today's post gives you six tasty ways to fix chicken. Enjoy!
KUNG PAO CHICKEN
This was posted by Daring Gourmet in tbsp. (tablespoon)’s website. She wrote, “One of the most popular dishes throughout China and the Western world alike, this sweet and spicy chicken dish is not for the faint of taste buds. It packs a punch, or should we say, ‘PAO, right in the kisser!’” Prep Time: 15 minutes; Total Time: 25 minutes; makes 4 servings.

Ingredients
3 tablespoons peanut or vegetable oil
6-10 dried hot red chili peppers (or less according to heat preference), seeded and membranes removed (gloves recommended)
1 1/2 pounds chicken breast, cut into bite-sized pieces
2 cloves garlic, minced
1 1/2 teaspoons fresh ginger, minced
3/4 cup dry roasted peanuts
1 bunch green onions (about 6 green onions)
For the Marinade:
1 1/2 tablespoons soy sauce
1 tablespoon Chinese rice wine or sherry
3/4 teaspoon cornstarch
For the Sauce:
1/4 cup black Chinese vinegar or dark balsamic vinegar
3 tablespoons soy sauce
1 1/2 tablespoons toasted sesame oil
3 tablespoons white sugar
2 tablespoons hoisin sauce
2 teaspoons cornstarch
Directions
Combine the marinade ingredients in a small bowl and pour over the chicken pieces. Toss to coat and let the chicken sit while you prepare the rest of the ingredients.
Combine all the sauce ingredients in a bowl, stirring until the cornstarch and sugar is dissolved. Set aside.
Heat the oil in a wok or skillet over high heat. Fry the chilies for a few seconds until they turn darker in color.
Add the chicken and marinade and fry until no longer pink. Add the garlic, ginger, and white parts of the green onions and fry for two minutes. Add the sauce and stir until thickened. Reduce the heat to medium-high and stir in the peanuts. Simmer for one minute. Remove from heat and stir in the green onions. Serve immediately with steamed rice.
CHICKEN CACCIATORE

And many picnics and pot luck dinners have at least one or two chicken dishes, whether fried or baked, with or without gravy – hundreds of ways to have chicken.

KUNG PAO CHICKEN
This was posted by Daring Gourmet in tbsp. (tablespoon)’s website. 3 tablespoons peanut or vegetable oil
6-10 dried hot red chili peppers (or less according to heat preference), seeded and membranes removed (gloves recommended)
1 1/2 pounds chicken breast, cut into bite-sized pieces
2 cloves garlic, minced
1 1/2 teaspoons fresh ginger, minced
3/4 cup dry roasted peanuts
1 bunch green onions (about 6 green onions)
For the Marinade:
1 1/2 tablespoons soy sauce
1 tablespoon Chinese rice wine or sherry
3/4 teaspoon cornstarch
For the Sauce:
1/4 cup black Chinese vinegar or dark balsamic vinegar
3 tablespoons soy sauce
1 1/2 tablespoons toasted sesame oil
3 tablespoons white sugar
2 tablespoons hoisin sauce
2 teaspoons cornstarch
Directions
Combine the marinade ingredients in a small bowl and pour over the chicken pieces. Toss to coat and let the chicken sit while you prepare the rest of the ingredients.
Combine all the sauce ingredients in a bowl, stirring until the cornstarch and sugar is dissolved. Set aside.
Heat the oil in a wok or skillet over high heat. Fry the chilies for a few seconds until they turn darker in color.
Add the chicken and marinade and fry until no longer pink. Add the garlic, ginger, and white parts of the green onions and fry for two minutes. Add the sauce and stir until thickened. Reduce the heat to medium-high and stir in the peanuts. Simmer for one minute. Remove from heat and stir in the green onions. Serve immediately with steamed rice.

1 cup tomato sauce
1 16-ounce can whole plum tomatoes
1/2 cup white wine (or cooking wine)

Directions
Heat liquid chicken broth in a non-stick skillet and brown chicken, onion, and garlic.

1/2 cup all-purpose flour
2 eggs, whisked
1 cup panko
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 cup celery, very thinly sliced (plus any leaves you can pull from the stalks)
1/4 of a red onion, thinly sliced
1 tablespoon finely chopped parsley
3/4 cup mayonnaise, divided, plus more for spreading on the outside of the bread slices
1 tablespoon buttermilk
2 teaspoons hot sauce, or more to taste
4 tablespoons vegetable oil
4 ounces blue cheese
8 slices of sourdough or country bread
Preparation
Generously season chicken breasts with salt. Cut each pounded chicken breast in half, so you have 4 pieces of chicken.
You’ll need three shallow bowls or dishes for dredging the chicken. One for the flour, one for the eggs, and one for the panko, salt and cayenne pepper.
Working with one piece of chicken at a time, dredge both sides of the breast in flour, shaking off excess. Next, dip the chicken into the egg, coating both sides and letting excess drip off.
Lastly, dredge through the panko/salt/cayenne mixture, pressing gently so the panko sticks to the chicken. Set the coated chicken pieces aside.
In a food processor, combine the celery (plus celery leaves if you have them), red onion, parsley, 1/4 cup of mayo and the buttermilk. Pulse just a few times until the celery and onion are roughly chopped. Don’t over-process or the mixture will get too mushy. Set aside.
In a small bowl, mix the remaining 1/2 cup of mayo with the hot sauce. Start with 1 teaspoon of hot sauce and then add more according to how spicy you want it. Set aside.
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 pieces of chicken to the skillet and cook until dark golden brown on both sides, about 8 minutes. Remove from the pan and set aside. Heat the last 2 tablespoons of oil in the same pan and cook the remaining pieces of chicken. (If you have a very large pan, you might be able to cook all the chicken pieces at once)
Return all the chicken to the pan.
Top each piece of chicken with crumbles or slices of blue cheese. Turn the heat to low and put a lid on the pan.
Spread a thin layer of regular mayonnaise evenly on one side of each piece of bread. Flip the slices over and spread the spicy mayo on the other side of each slice of bread.
When the blue cheese on the chicken is warm and very soft, remove the chicken from the pan (use a wide spatula) and set one piece of chicken on the spicy mayo side of 4 slices of bread.
Top each breast with a scoop of celery slaw and another slice of bread, with the side spread with regular mayo on the outside.
Over medium heat cook the sandwiches until the bottom is golden brown. Flip. Brown again. Slice the sandwich in half and serve.
Why Use Mayo on Grilled Cheese Sandwiches?

This comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn’t terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It’s a dish that pairs beautifully with butter-slicked egg noodles.” Yield: Serves 4 - 6; Time: 1 hour.

Ingredients
3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola
3 tablespoons unsalted butter
1 large yellow or Spanish onion, peeled and diced
3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination
3 tablespoons all-purpose flour
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
3/4 cup sour cream
Preparation
Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.
Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.
Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

SPAGHETTI PIE
This was featured on The Today Show in August, and got Matt Lauer's attention. I had never tried anything like this before. As a vegetarian, I'd lean toward using a vegetarian substitute for the ground turkey or beef.

Ingredients
12 ounces spaghetti, cooked, 1/2 cup cooking water reserved
1 small yellow onion, chopped finely
1 pound ground turkey or sirloin beef
1 cup tomato paste, divided
3 large eggs
1 cup grated parmesan cheese
1 1/2 cup shredded mozzarella
2 tablespoons olive oil
Salt to taste
Preparation
Preheat oven to 350.
In a large skillet, saute the onions until soft. Add ground turkey or beef, and 3/4 cup of the tomato paste. Add half the reserved pasta water and stir well. Season with salt, to taste. Consistency should be like a thick Bolognese sauce. Add more cooking water as needed.
In a large bowl, mix together the cooked spaghetti, eggs, parmesan cheese, 1 cup of the mozzarella, and 1/4 cup of the tomato paste.
Grease a 9 or 10-inch pie pan with olive oil. Spread half the meat mixture over the bottom of the pan. Add the spaghetti mixture and press it down to level it. Top with the remaining meat mixture, then scatter the remaining mozzarella on top.
Bake the pie in the oven for 30 to 35 minutes. Remove from the oven and let sit about 10 minutes. Use a sharp knife or pizza slicer to cut into wedges like a pie. Serve with a green salad.
SKIRT STEAK WITH LENTIL SALAD
This is from Pierre Franey in The New York Times cooking e-newsletter. The recipe begins, “This recipe came to The Times in 1990 in Pierre Franey's 60-Minute Gourmet column. A lentil salad (we used those tiny French green lentils, but you can use the standard supermarket variety as well) is dressed with a Dijon mustard vinaigrette, then topped with skirt steak that's been seared in a cast-iron pan. A simple sauce, made by deglazing the pan with butter, garlic and parsley, is drizzled over the top. It is classic Franey – uncomplicated, elegant and delicious.” Yield: 4 servings; Time: 45 minutes.

For the Lentil Salad:
8 cups water
1 pound dried lentils
1 cup finely diced carrots
1 bay leaf
3 sprigs fresh thyme, or 1 teaspoon dried
Salt to taste
1 tablespoon Dijon-style mustard
3/4 cup vegetable oil
1/4 cup red-wine vinegar
1 cup finely chopped onions
4 tablespoons chopped fresh tarragon or parsley
Freshly ground pepper to taste
For the Steaks:
4 skirt steaks, about 1/2 pound each, trimmed of excess fat
1 tablespoon vegetable oil
2 tablespoons butter
2 teaspoons finely chopped garlic
2 tablespoons finely chopped parsley
Preparation
To make the lentil salad, put the water in a large saucepan. Wash the lentils in a colander and add to the saucepan. Add the carrots, bay leaf, thyme and salt. Cover and simmer 20 to 25 minutes. Do not overcook. Drain and remove the bay leaf and thyme sprigs.
In a large mixing bowl combine the mustard, 3/4 cup of oil and the vinegar, onions, tarragon, salt and pepper. Blend well with a wire whisk. Add the lentils and stir. Serve warm, lukewarm or cool.
To prepare the meat, sprinkle it on both sides with salt and pepper and brush with 1 tablespoon of oil.
Heat a cast-iron skillet large enough to hold two steaks over high heat, add the steaks and brown them for 3 minutes for medium-rare. Turn and continue cooking until they are thoroughly browned, about 3 minutes more. Remove to a warm platter. Repeat the procedure for the two remaining steaks.
Pour the fat from the skillet and reduce the heat. Add the butter, garlic and parsley. Cook briefly, stirring. Add any juices from the platter and blend well. Pour the sauce over the steaks and serve with the lentil salad immediately.
ZUCCHINI BREAD WITH LEMON HONEY BUTTER

Lemon Honey Butter:
4 ounces unsalted butter, softened
1 tablespoon honey
1 tablespoon lemon zest
Directions
Preheat the oven to 350 degrees F. Grease two 9- by- 5-inch loaf pans. In large bowl, beat together the eggs, oil, sugar and vanilla. Slowly add the zucchini. Add the lemon zest and mix thoroughly.
In a separate large bowl, combine the flour, baking soda, baking powder, cinnamon and salt. Slowly add the zucchini mixture until completely combined. Divide the batter between the prepared loaf pans. Bake until a toothpick comes out clean and the sides have started to brown, about 45 minutes. Let cool on a rack 15 minutes. Unmold and serve warm or at room temperature sliced with the Lemon Honey Butter.
Special equipment: two 9- by- 5-inch loaf pans
Lemon Honey Butter:
Combine all ingredients and mix together well. Chill and serve.

Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.
In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.
Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.
Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

1 cup celery, very thinly sliced (plus any leaves you can pull from the stalks)
1/4 of a red onion, thinly sliced

1 tablespoon buttermilk
2 teaspoons hot sauce, or more to taste
4 tablespoons vegetable oil
4 ounces blue cheese
8 slices of sourdough or country bread
Preparation
Generously season chicken breasts with salt. Cut each pounded chicken breast in half, so you have 4 pieces of chicken.
You’ll need three shallow bowls or dishes for dredging the chicken. One for the flour, one for the eggs, and one for the panko, salt and cayenne pepper.
Working with one piece of chicken at a time, dredge both sides of the breast in flour, shaking off excess. Next, dip the chicken into the egg, coating both sides and letting excess drip off.
Lastly, dredge through the panko/salt/cayenne mixture, pressing gently so the panko sticks to the chicken. Set the coated chicken pieces aside.
In a food processor, combine the celery (plus celery leaves if you have them), red onion, parsley, 1/4 cup of mayo and the buttermilk. Pulse just a few times until the celery and onion are roughly chopped. Don’t over-process or the mixture will get too mushy. Set aside.
In a small bowl, mix the remaining 1/2 cup of mayo with the hot sauce. Start with 1 teaspoon of hot sauce and then add more according to how spicy you want it. Set aside.
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 pieces of chicken to the skillet and cook until dark golden brown on both sides, about 8 minutes. Remove from the pan and set aside. Heat the last 2 tablespoons of oil in the same pan and cook the remaining pieces of chicken. (If you have a very large pan, you might be able to cook all the chicken pieces at once)
Return all the chicken to the pan.
Top each piece of chicken with crumbles or slices of blue cheese. Turn the heat to low and put a lid on the pan.
Spread a thin layer of regular mayonnaise evenly on one side of each piece of bread. Flip the slices over and spread the spicy mayo on the other side of each slice of bread.
When the blue cheese on the chicken is warm and very soft, remove the chicken from the pan (use a wide spatula) and set one piece of chicken on the spicy mayo side of 4 slices of bread.
Top each breast with a scoop of celery slaw and another slice of bread, with the side spread with regular mayo on the outside.
Over medium heat cook the sandwiches until the bottom is golden brown. Flip. Brown again. Slice the sandwich in half and serve.
Why Use Mayo on Grilled Cheese Sandwiches?
Spreading the outer slice of bread with mayonnaise instead of butter or oil makes the perfect slice of toasted bread; crispy, flaky and evenly browned.

This was featured on The Today Show in August, and got Matt Lauer's attention. I had never tried anything like this before. As a vegetarian, I'd lean toward using a vegetarian substitute for the ground turkey or beef.

12 ounces spaghetti, cooked, 1/2 cup cooking water reserved
1 small yellow onion, chopped finely

1 cup tomato paste, divided

2 tablespoons olive oil

Preheat oven to 350.

In a large bowl, mix together the cooked spaghetti, eggs, parmesan cheese, 1 cup of the mozzarella, and 1/4 cup of the tomato paste.
Grease a 9 or 10-inch pie pan with olive oil. Spread half the meat mixture over the bottom of the pan. Add the spaghetti mixture and press it down to level it. Top with the remaining meat mixture, then scatter the remaining mozzarella on top.
Bake the pie in the oven for 30 to 35 minutes. Remove from the oven and let sit about 10 minutes. Use a sharp knife or pizza slicer to cut into wedges like a pie. Serve with a green salad.
SKIRT STEAK WITH LENTIL SALAD
This is from Pierre Franey in The New York Times cooking e-newsletter. The recipe begins, “This recipe came to The Times in 1990 in Pierre Franey's 60-Minute Gourmet column. A lentil salad (we used those tiny French green lentils, but you can use the standard supermarket variety as well) is dressed with a Dijon mustard vinaigrette, then topped with skirt steak that's been seared in a cast-iron pan. A simple sauce, made by deglazing the pan with butter, garlic and parsley, is drizzled over the top. It is classic Franey – uncomplicated, elegant and delicious.” Yield: 4 servings; Time: 45 minutes.

8 cups water
1 pound dried lentils
1 cup finely diced carrots
1 bay leaf
3 sprigs fresh thyme, or 1 teaspoon dried

1/4 cup red-wine vinegar
1 cup finely chopped onions
4 tablespoons chopped fresh tarragon or parsley

For the Steaks:
4 skirt steaks, about 1/2 pound each, trimmed of excess fat
1 tablespoon vegetable oil
2 tablespoons butter
2 teaspoons finely chopped garlic
2 tablespoons finely chopped parsley
Preparation
To make the lentil salad, put the water in a large saucepan. Wash the lentils in a colander and add to the saucepan. Add the carrots, bay leaf, thyme and salt. Cover and simmer 20 to 25 minutes. Do not overcook. Drain and remove the bay leaf and thyme sprigs.
In a large mixing bowl combine the mustard, 3/4 cup of oil and the vinegar, onions, tarragon, salt and pepper. Blend well with a wire whisk. Add the lentils and stir. Serve warm, lukewarm or cool.
To prepare the meat, sprinkle it on both sides with salt and pepper and brush with 1 tablespoon of oil.
Heat a cast-iron skillet large enough to hold two steaks over high heat, add the steaks and brown them for 3 minutes for medium-rare. Turn and continue cooking until they are thoroughly browned, about 3 minutes more. Remove to a warm platter. Repeat the procedure for the two remaining steaks.
Pour the fat from the skillet and reduce the heat. Add the butter, garlic and parsley. Cook briefly, stirring. Add any juices from the platter and blend well. Pour the sauce over the steaks and serve with the lentil salad immediately.

CHICKEN PAPRIKASH
This comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn’t terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It’s a dish that pairs beautifully with butter-slicked egg noodles.” Yield: Serves 4 - 6; Time: 1 hour.

Ingredients
3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola
3 tablespoons unsalted butter
1 large yellow or Spanish onion, peeled and diced
3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination
3 tablespoons all-purpose flour
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
3/4 cup sour cream
Preparation
Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.
Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.
Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.
BBQ CHICKEN

Preheat the oven to 375 degrees F.
Melt the butter in a large saute pan over medium heat. Cook the onions, carrots, and celery with salt and pepper, to taste, until the carrots soften, about 10 minutes. Add the garlic and thyme and cook for an additional minute, stirring frequently. Add the flour and cook off the raw flavor, about 1 minute more. Turn up the heat to medium-high and deglaze the pan with the wine. Whisk in the stock and Dijon mustard. Add the peas and chicken and cook on a very low simmer until the sauce thickens up into a gravy, 5 to 10 minutes. Remove from the heat and set aside.
On a lightly floured surface, unfold the pastry dough and cut into 4 even squares (cut once horizontally and once vertically). Gently roll out each square, increasing the size of the square by about 20 percent. Place the squares on a baking sheet and spoon the chicken mixture in the center. Fold the squares diagonally to create triangles. Pinch the edges together to create turnovers (use a little water if needed to bind). Press the edges with a fork to create a decorative border. Whisk the egg with a splash of water and brush the turnovers with the egg wash. Cut a small slit in the top to allow the steam to escape during baking. Bake the turnovers until golden brown, about 30 minutes. Let cool at least 10 minutes before serving as the insides will be very hot.

Along with being the founding editor for NYT Cooking and writing about food in the Sunday Times Magazine, Sam Sifton posts a ton of good food recipes in The New York Times cooking e-newsletters. With this recipe, Sam wrote, “Craig Claiborne was a child of Mississippi who started as food editor of The Times in 1957 and did as much as anyone to help bring home cooking into the spotlight. The dish “belongs in the ‘comfort’ category,” he wrote in 1983, “a food that gives solace to the spirit when you dine on it.” You could give your smothered chicken some European flair with mushrooms and small onions in the gravy, as Claiborne did in his experiments with Pierre Franey, then his kitchen co-pilot. Or you could send yourself south to the Creole tastes of the Delta, with a blend of tomatoes, chopped celery, onion and green peppers added to the sauce. But sometimes the easiest way is the best. Craig Claiborne believed a cast-iron skillet to be essential for the authentic preparation of this dish. Sprinkle the chicken on both sides with salt and pepper. Select a skillet large enough to hold the chicken comfortably when it is opened up, as for broiling. Fold wings under to secure them.
Melt the butter in the pan and add the chicken, skin side down. Cover chicken with a plate that will fit comfortably inside the skillet. Place a heavy can, stone or brick on top of the plate to weigh it down. Cook over low heat, checking the chicken skin, until it is nicely browned, about 25 minutes.
Remove weight and plate. Turn chicken so skin side is up. Replace plate and weight and continue cooking for about 15 minutes more.
Remove chicken and pour off fat from the skillet, leaving about 2 tablespoons in the pan. Add the flour to the fat, stirring with a wire whisk over medium heat. Gradually add the chicken broth and, when thickened, return chicken to the skillet, skin side up. Add salt and pepper to taste. Cover with the plate and weight and continue cooking over low heat about 20 to 30 minutes longer or until the meat is exceptionally tender. Spoon the sauce over it.
Cut chicken into serving pieces, and serve with the sauce and fluffy rice on the side.

Preparation
Generously season chicken breasts with salt. Cut each pounded chicken breast in half, so you have 4 pieces of chicken.
You’ll need three shallow bowls or dishes for dredging the chicken. One for the flour, one for the eggs, and one for the panko, salt and cayenne pepper.
Working with one piece of chicken at a time, dredge both sides of the breast in flour, shaking off excess. Next, dip the chicken into the egg, coating both sides and letting excess drip off.
Lastly, dredge through the panko/salt/cayenne mixture, pressing gently so the panko sticks to the chicken. Set the coated chicken pieces aside.
In a food processor, combine the celery (plus celery leaves if you have them), red onion, parsley, 1/4 cup of mayo and the buttermilk. Pulse just a few times until the celery and onion are roughly chopped. Don’t over-process or the mixture will get too mushy. Set aside.
In a small bowl, mix the remaining 1/2 cup of mayo with the hot sauce. Start with 1 teaspoon of hot sauce and then add more according to how spicy you want it. Set aside.
Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 pieces of chicken to the skillet and cook until dark golden brown on both sides, about 8 minutes. Remove from the pan and set aside. Heat the last 2 tablespoons of oil in the same pan and cook the remaining pieces of chicken. (If you have a very large pan, you might be able to cook all the chicken pieces at once)
Return all the chicken to the pan.
Top each piece of chicken with crumbles or slices of blue cheese. Turn the heat to low and put a lid on the pan.
Spread a thin layer of regular mayonnaise evenly on one side of each piece of bread. Flip the slices over and spread the spicy mayo on the other side of each slice of bread.
When the blue cheese on the chicken is warm and very soft, remove the chicken from the pan (use a wide spatula) and set one piece of chicken on the spicy mayo side of 4 slices of bread.
Top each breast with a scoop of celery slaw and another slice of bread, with the side spread with regular mayo on the outside.
Over medium heat cook the sandwiches until the bottom is golden brown. Flip. Brown again. Slice the sandwich in half and serve.
Why Use Mayo on Grilled Cheese Sandwiches?
Spreading the outer slice of bread with mayonnaise instead of butter or oil makes the perfect slice of toasted bread; crispy, flaky and evenly browned.

3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola

3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination

1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
3/4 cup sour cream
Preparation
Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.
Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.
Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.
Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.
Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

BLACKBERRY NECTARINE CRISP
This recipe comes from Matt Lee and Ted Lee in The New York Times cooking e-newsletter. It begins, “This recipe came to The Times in 2003 from Rebecca Charles of Pearl Oyster Bar, an outpost for Maine coastal cooking on Cornelia Street in Greenwich Village. It is easy to whip up on a summer day when company is coming and there’s lots to get done. ‘Use the blackberries more as an accent,’ she said at the time. 'The berries'll bleed out all this fabulous inky color.’” Yield: 6 servings; Time: 1 hour.

For the Topping
1/2 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup firmly packed light brown sugar
1/4 teaspoon ground cinnamon

For the Filling
4 cups nectarines, pitted and cut into 1/2-inch slices (about 3-4 large nectarines)
1/4 cup granulated sugar
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
1 heaping cup whole blackberries (about 6 ounces)
Vanilla ice cream for serving
Preparation
Place a 2-quart baking dish or six 8-ounce ramekins on a baking sheet to catch any drips. Position rack in center of oven and heat to 375 degrees. In a food processor, pulse flour, oats, brown sugar, cinnamon and salt once or twice to mix. Cut butter into small chunks, add to flour mixture and pulse a few more times, until mixture just comes together into small crumbly clumps. Reserve.
In a large bowl, combine nectarines, granulated sugar, cornstarch, and vanilla. Pour nectarines into baking dish or ramekins, scatter blackberries on top and sprinkle with the topping. Bake until the fruit is bubbling and the topping is golden, 45-60 minutes. Serve warm with vanilla ice cream.
SWEET AND SPICY FRUIT SALAD

They are simple and satisfying, but not necessarily special. This one is a more sophisticated take. It calls for a star anise- and chile-infused simple syrup, which adds sweetness and musky, spicy complexity. In addition to fruit, herbs – tarragon and basil – are tossed in for freshness. You can use whatever fruit you like as long as it is sweet and ripe. 8 small wedges seedless watermelon, rind removed
8 ounces halloumi cheese, cut into 8 slices
Directions
Place the shallot and garlic in a mixing bowl and add a pinch of salt. Add the vinegar and honey and whisk. Slowly whisk in 1/2 cup olive oil, then add the almonds and mint.
Place the watermelon in a shallow dish. Pour the dressing on top, cover and let marinate 1 hour in the refrigerator.
Heat a large skillet over medium heat and add the remaining 1 tablespoon olive oil. Sear the halloumi 1 minute per side, then remove from the pan; top each with a piece of marinated watermelon.
