Cookies - Double-Post Tuesday

Besides being Taco Tuesday, it's also Double-Post Tuesday. Today's double post deals with cookies.

Is there anything yummier than homemade cookies? The taste, the way they make scent your home with their aroma...yum! I still have wonderful memories of my grandmother bringing over huge batches of her oatmeal cookies and peanut butter cookies - sometimes at the same time - and insisting on sharing them with us over a cup of tea, then regaling us with stories of her childhood.

Here are six cookie recipes to help you through the day, including my grandmother's aforementioned Oatmeal Cookies and Peanut Butter Cookies. There's also a recipe for Chocolate Espresso Oatmeal Cookies and more. Enjoy!

CREAM CHEESE COOKIES

This recipe, from The Food Network, begins, “A triple dose of cream cheese (mixed into the batter, in chunks in the dough and as a glaze on top) makes these pillowy cookies extra tangy. Freezing the cream cheese before stirring it into the dough makes it easier to cut into clean pieces and keeps the chunks from disintegrating when shaping the dough into balls.” Total Time: 3 hr 25 min; Prep: 40 min; Inactive: 1 hr. 30 min; Cook: 1 hr 15 min; Yield: 3 dozen cookies; Level: Easy.

Ingredients

2 3/4 sticks (1 cup plus 6 tablespoons) unsalted butter, at room temperature

1 teaspoon pure vanilla extract or vanilla bean paste

One 8-ounce package cream cheese, 6 ounces at room temperature, 2 ounces frozen

1 1/4 teaspoons kosher salt

4 cups confectioners' sugar, sifted

1 large egg yolk

3 1/2 cups all-purpose flour, plus more for flouring (see Cook's Note)

2 tablespoons whole milk, plus more if needed

Very finely grated lime zest or finely minced cranberries, for garnish, optional

Directions

Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.

Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. Remove the frozen cream cheese from the freezer and chop into 1/4-inch cubes. Add the cubes to the dough, quickly stirring with a rubber spatula to evenly incorporate them into the dough. Refrigerate the dough for 1 hour.

Using a 1-ounce ice cream scoop or 2 tablespoons, scoop 12 portions of dough, roll into balls and transfer to the prepared baking sheet, spacing them evenly apart. Lightly flour the bottom of a 1/2-cup measuring cup and use it to flatten each cookie into a disk about 1/2 inch thick, re-flouring the cup after each cookie.

Bake, rotating the baking sheet halfway through, until the cookies look set but are still pale and barely brown on the bottom, 20 to 24 minutes. Cool the cookies on the baking sheet for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining cookie dough.

Meanwhile, combine the remaining 2 ounces room-temperature cream cheese, 2 cups sugar and 1/4 teaspoon salt in a medium bowl and beat with an electric mixer on low speed until the mixture forms a thick paste. Add the milk and stir slowly until a thick glaze forms.

When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.

Special equipment: a 1-ounce ice cream scoop, optional

Cook's Note: When measuring flour, we spoon it into a dry measuring cup and level off the excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)

GRANDMA'S PEANUT BUTTER COOKIES

This was one of my grandmother's recipes, along with the oatmeal cookie recipe that follows. You can find them in my e-cookbook, Off The Wall Cooking.





Ingredients

1/2 C butter

1/2 C peanut butter

1/2 C sugar

1 egg, well beaten

1 1/4 C flour

3/4 tsp. soda

1/2 tsp. baking powder

1/4 tsp. salt

Directions

Cream butter and peanut butter together. Add sugar gradually and cream thoroughly. Add egg. Sift flour once before measuring. Sift flour, soda, baking powder and salt together and add to creamed mixture. Chill dough well, then form into balls the size of walnuts. Place balls on lightly greased baking sheet. Flatten with fork dipped in flour, making criss-cross pattern. Bake at 375 degrees for 10-12 minutes.

GRANDMA'S OATMEAL COOKIES



Another one of my grandmother's recipes. When it came to baking, cookies were her specialty. You can also find these in my e-cookbook, Off the Wall Cooking

Ingredients

1 C flour

1 C brown sugar

3 C quick cooking oatmeal (NOT the instant oats!)

1 C butter or margarine

1/4 C boiling water

1 1/2 tsp. baking soda

Direcitions

Mix flour and brown sugar. Add oatmeal; stir. Melt butter; add to dry ingredients. Mix baking soda into boiling water; add to other ingredients, stirring well. Place batter into loaf pan, lined with aluminum foil and place in freezer for several hours. Slice and bake at 375 degrees for 10 minutes.

CHOCOLATE ESPRESSO OATMEAL COOKIES

Makes 48 cookies.

Ingredients

3/4 cup all-purpose flour or oat flour

1/4 cup unsweetened cocoa powder

1/4 tsp. salt

1/2 tsp. baking soda

4 oz. (1 stick) margarine, softened

3/4 cup sugar

1/4 cup cooled espresso or strong coffee

1/2 tsp. vanilla extract

1 1/2 cups oats

1/2 cup mini semisweet chocolate chips

Directions

Whisk together flour, cocoa powder, salt, and baking soda in bowl.

Cream margarine and sugar together with electric mixer in bowl. Beat in espresso and vanilla. Beat in flour mixture 1/2 cup at a time, adding up to 1/2 cup more if necessary to make thick dough. Stir in oats and chocolate chips.

Divide dough in half. Transfer each dough half to large sheet of plastic wrap or wax paper. Use plastic wrap to shape dough into 2 2-inch-diameter logs with plastic wrap or wax paper. Wrap tightly, and chill 2 hours, or overnight.

Preheat oven to 350ºF. Slice dough logs into 1/2-inch-thick slices. Transfer slices to greased or parchment paper–lined baking sheet. Bake 8 to 11 minutes, or until cookies look dry on top. Cool cookies 3 minutes on baking sheet before transferring to wire rack.

CHOCOLATE CHIP ICEBOX COOKIES

This comes from Diana Rattray, who writes for The Spruce Eats. She wrote, “These icebox cookies are filled with ground chocolate chips. Use a small food processor or chopper to grind or chop the chocolate chips for these cookies. The dough is chilled slightly and then it's rolled into logs and thoroughly chilled until it's very firm. Plant to let the dough logs chill for at least four hours, or leave them in the refrigerator overnight.” Prep Time: 15 minutes; Cook Time: 11 minutes; Total Time: 26 minutes; Yield: About 3 dozen

Ingredients

1 cup butter (8 ounces)

1/2 cup granulated sugar

1/2 cup light brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1/4 teaspoon salt

3 cups all-purpose flour, 13 1/2 ounces

1 cup semisweet chocolate chips, ground or finely chopped

Preparation

In large mixing bowl with an electric mixer cream the butter and sugars together until light; add eggs, vanilla and salt and beat until light and fluffy.

With the mixer on low speed, gradually add the flour. Stir in the ground chocolate chips.

Chill the dough for about 30 minutes to 1 hour, or until firm enough to shape.

Divide dough into 2 portions; form each portion into a log and wrap in plastic wrap or waxed paper.

Refrigerate the dough logs for at least 4 hours, or until very firm.

Heat the oven to 350° F (180° C/Gas 4). Line a baking sheet with parchment paper or a silicone baking mat, or lightly grease the pan.

Cut a log into 1/4-inch slices and place on the prepared baking sheet about an inch apart.

Bake for 9 to 12 minutes.

CARAMEL APPLE SNICKERDOODLES

This comes from the Tablespoon newsletter. It begins, “Dulce de leche is the secret ingredients that gives these cookies their gooey hidden center.” Prep Time: 20 min; Total Time: 1 hr 45 min; Servings: 9

Ingredients

1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)

1 roll (16.5 oz) Pillsbury™ refrigerated sugar cookies

3 tablespoons all-purpose flour

1/4 cup sugar

1 teaspoon apple pie spice

Directions

Line cookie sheet with waxed paper. Spoon 9 heaping teaspoons dulce de leche on cookie sheet. Place cookie sheet in freezer 1 hour. Transfer remaining dulce de leche to covered container, and refrigerate for another use.

Heat oven to 350°F. Lightly grease or spray cookie sheet. In large bowl, break up cookie dough. Stir or knead in flour until well combined. Form dough into 9 balls. Flatten each ball into 2-inch round; place 1 frozen dulce de leche dollop on center of each round. Shape dough around dulce de leche, sealing to cover completely. In small bowl, mix sugar and apple pie spice. Roll each ball in sugar mixture. Place 1 inch apart on cookie sheet.

Bake 18 to 20 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheet to cooling rack.

Meatless Monday

It's Meatless Monday, time to explore at least one day a week without meat. Of course, if you're already a vegetarian, you know how easy, healthy, and great-tasting a vegetarian life-style can be.

That said, here are today's six vegetarian recipes for you to try, including Chocolate Espresso Oatmeal Cookies and Baked Ziti. Enjoy!

ZUCCHINI WITH SPICY ROMESCO AND WILTED CHARD

This comes from the April/May 2013 issue of Vegetarian Times, page 28. It begins, “This recipe calls for a spiral slicer, which cuts the zucchini into thin, pasta-like strands for a delicious take on the 'classic' zucchini pasta with marinara. No spiral slicer in your kitchen? Try a julienne vegetable peeler or mandoline.” Serves 4 in 30 minutes or less.

Ingredients

Wilted Chard

4 oz. Swiss chard leaves, stems removed (4 cups)

1 Tbs. olive oil

1 Tbs. grated lemon zest

1 Tbs. lemon juice

Zucchini with Spicy Romesco

4 large red bell peppers, chopped (6 cups)

3 Roma tomatoes, chopped (3 cups)

2 Tbs. olive oil

2 Tbs. lemon juice

1 clove garlic, peeled

1 tsp. chili powder

1/8 tsp. red pepper flakes

1/4 cup raw almonds

1/4 cup raw hazelnuts

4 large zucchini, peeled

Directions

To make Wilted Chard: Toss together all ingredients in large bowl, and season with salt and pepper, if desired. Set aside to marinate.

To make Zucchini with Spicy Romesco: Blend bell peppers, tomatoes, oil, lemon juice, garlic, chili powder, and red pepper flakes in food processor until smooth. Add almonds and hazelnuts, and process until well combined but still chunky. Season with salt and pepper, if desired.

Slice zucchini into noodles with spiral slicer, and add to sauce.

Divide Wilted Chard among individual serving plates. Top each serving with 2 cups Zucchini with Spicy Romesco.

This comes from country star Trisha Yearwood, who also has her own show on The Food Network (called Trisha's Southern Kitchen). The recipe starts off, “Trisha Yearwood's vegetarian take on chicken pot pie is just as decadent without the meat. Although the luscious vegetable filling with peas, carrots and potatoes could be a meal on its own, wrapping it in premade pie dough seals in flavor with a crispy crust.” Total Time: 1 hr 25 min; Prep: 25 min; Inactive: 10 min; Cook: 50 min; Yield: 8 servings; Level: easy

Ingredients

1 cup thinly sliced carrots

1 cup frozen green peas

1 cup small diced potatoes

1/2 cup thinly sliced celery

1/3 cup finely chopped onion

1/2 cup butter substitute, such as Earth Balance

1/3 cup unbleached, all-purpose flour

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon celery seed

1/4 teaspoon garlic powder

1 3/4 cups vegetable broth

2/3 cup almond milk

Two 9-inch unbaked pie crusts, lard free

Directions

Preheat the oven to 425 degrees F. Line a jelly-roll pan or baking sheet with foil to place the pie on before cooking; it will keep any filling from dripping into the oven and burning.

In a medium saucepan, combine the carrots, peas, potatoes and celery. Cover with water, bring to a boil and cook until the potatoes are tender, about 15 minutes. Remove from the heat, drain and set aside.

In a large skillet over medium heat, cook the onions in the butter substitute until they are soft and translucent, about 5 minutes. Stir in the flour, salt, pepper, celery seed and garlic powder. Cook for 2 minutes to get the flour taste out. Slowly stir in the broth and then add the milk. Reduce the heat to medium-low and simmer until thick, about 5 minutes. Remove from the heat and stir in the drained vegetables.

Roll out one of the unbaked crusts to a 13-inch diameter and place in a 9-inch deep-dish pie plate. Pour the mixture into the bottom crust. Roll out the second pie crust and place on top. Seal the edges and cut small slits in the top to allow steam to escape. Bake until the pastry is golden brown and the filling is bubbly, 30 to 35 minutes. If the top of the pie becomes too dark, loosely cover with foil and continue cooking. Cool for 10 minutes before serving.

BISCUITS AND GRAVY

From the April/May 2012 issue of Vegetarian Times, page 46. It starts off, “Trust us, no one will miss the flour (or the meat!) in this gluten-free indulgence.” Serves 8 in 30 minutes or less.

Biscuits

1 cup white rice flour, plus more for dusting work surface

1/2 cup chickpea flour

1/2 cup potato starch

1 1/2 Tbs. sugar

1 Tbs. baking powder

1/2 tsp. salt

1/4 tsp. baking soda

2 oz. (1/2 stick) butter or trans-fat-free margarine, cut into small pieces

3/4 cup fat-free buttermilk

Gravy

1 1/2 cups cooked chickpeas, or 1 15-oz. can chickpeas, rinsed and drained

2 1/2 tsp. paprika

2 tsp. poultry seasoning

1 tsp. onion powder

1/2 tsp. salt

1/4 tsp. ground black pepper

1 pinch cayenne pepper

2 Tbs. vegetable oil

4 Tbs. butter or trans-fat-free margarine

1/4 cup potato starch

1/4 cup chickpea flour

4 cups fat-free milk, warmed

To make Biscuits: Preheat oven to 375°F. Coat large baking sheet with cooking spray.

Whisk together rice flour, chickpea flour, potato starch, sugar, baking powder, salt, and baking soda in large bowl. Cut butter into flour mixture with pastry blender or two knives until no large pieces remain. Stir in buttermilk.

Pat dough into flat 1-inch-thick disk on rice flour–dusted work surface. Cut dough into 16 rounds with 2-inch cutter, and place on prepared baking sheet. Bake 12 to 15 minutes, or until golden-brown on top.

To make Gravy: Pulse chickpeas, paprika, poultry seasoning, onion powder, salt, pepper, and cayenne in food processor 8 times, or until crumbly.

Heat oil in skillet over medium-high heat. Add chickpea mixture, and sauté 3 to 5 minutes, or until fragrant and crisp. Transfer to plate.

Add butter to skillet, and melt over medium heat. Whisk in potato starch and chickpea flour, and cook 1 to 2 minutes. Gradually whisk in milk, and cook 3 to 5 minutes, or until sauce is thickened, whisking constantly. Stir in chickpea mixture. Season with salt and pepper, if desired.

To serve: Place 2 Biscuits on each plate. Ladle 1/4 cup Gravy over top.

APPLE-CRANBERRY CRISP

I'm not sure where I originally found this; probably on an old emailing list.

2 pounds Granny Smith apples - peeled, cored and thinly sliced

3/4 cup cranberries

1/4 cup white sugar

3 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1/3 cup quick-cooking oats

1/3 cup all-purpose flour

1/2 cup packed light brown sugar

1/4 cup butter, cut into pieces

1/2 cup chopped pecans

Preheat oven to 375 degrees F. Butter an 8 inch square baking dish.

In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.

In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.

Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

BAKED ZITI

This was originally posted on April 2, 2010. Great for a yummy, easy meal.

What to fix when you've just gotten home from work and you want something good, hot and with a minimum amount of effort? Baked Ziti fits the bill on all three counts. And if you're like me, chances are you have all the makings in your cupboard and fridge.

Here's what it takes:

16 ounce box of ziti
26 ounce jar of spaghetti sauce
1 jar-full of water
2 C shredded cheese

Okay, I can hear you asking, "What brand of spaghetti sauce? What type of sauce? And the cheese...Cheddar? Mozzarella? Can it be the stuff already shredded and in a bag or does it have to be a block of cheese that I grate and measure?" Here's the good part: Use what you have.

Pre-heat oven to 350 degrees F.

Take a 9 X 13 inch baking pan. Dump the dried ziti into the pan. (No, no, do NOT cook the ziti first. Dump the ziti uncooked straight from the box.) Pour the spaghetti sauce into the pan and add one jar-full of water into the pan. Stir to mix. Add most of the shredded cheese, reserving 1/4-1/2 cup of cheese. Stir to mix. Bake in pre-heated oven for 35 minutes. Top with remaining cheese and bake for another 5 minutes for a total time of 40 minutes.

Serve with a salad and possibly garlic bread.

See? Simple, hot, good and with at minimum amount of energy. What could be better for an after-work or weekend dinner?

WHITE CHOCOLATE CHERRY BARS

This also comes from the Mr. Food newsletter, and starts off, “Scrumptious! That's the best word our Test Kitchen team could come up with to sum up these easy-to-make yummy White Chocolate Cherry Bars. This flavorful marriage of textures and tastes is a winning combination!” Makes 36 bars; Cook Time: 25 minutes.

Ingredients

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup firmly packed brown sugar

2 eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda Coupons

2 cups white chocolate chips, divided

1/2 cup flaked coconut

1/2 cup chopped maraschino cherries

Directions

Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking pan with cooking spray.

In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Mix in flour and baking soda and beat until well blended. Stir in 1 cup white chocolate chips, the coconut, and chopped cherries. Spread dough evenly in prepared baking pan. Sprinkle remaining white chocolate chips over dough.

Bake 25 to 30 minutes, or until toothpick inserted in center comes out clean. Cool and cut into bars.

RASPBERRY-HAZELNUT THUMBPRINT COOKIES

From the December 2014 Vegetarian Times, p.65. This one starts off, “Oat flour, rice flour, and toasted nuts make a tender gluten-free cookie with a little crunch.” Makes 24 cookies

1 1/2 cups oat flour

1/2 cup finely chopped roasted hazelnuts

1/2 cup coarsely chopped roasted hazelnuts

1/2 cup white rice flour

1/2 tsp. baking powder

8 oz. (2 sticks) unsalted butter, softened

1/2 cup sugar

1 large egg

1/4 cup raspberry jam

Confectioners’ sugar, for dusting

Preheat oven to 350°F. Line baking sheets with parchment paper.

Stir together oat flour, hazelnuts, rice flour, and baking powder in medium bowl. Set aside.

Cream butter and sugar in large bowl with electric mixer until smooth. Add egg, and beat until soft and creamy. Reduce mixer speed to low, and add oat flour mixture. Beat until just combined.

Use 1-oz. (2 Tbs.) ice cream or cookie scoop to shape dough into walnut-size balls, and place on baking sheet 3 inches apart. Gently press each ball in center with thumb to make small wells. Spoon 1/2 tsp. raspberry jam into each thumbprint well.

Ingredients

1/2 cup chopped hazelnuts

1/2 cup canola oil

2/3 cup Splenda No Calorie Sweetener, Granulated

3 tablespoons white granulated sugar

2 eggs

3 tablespoons sugar free hazelnut syrup

2 cups all-purpose flour

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/3 cup nonfat dry milk

2 tablespoons Mini Chocolate Chips, melted (optional)

Directions

Preheat oven to 350 degrees F. Spray a cookie sheet or jellyroll pan with baking spray and set aside.

Spread hazelnuts in a shallow pan and toast in preheated 350 degrees F oven for 7-10 minutes. Remove hazelnuts from the oven and cool.

Mix the oil, Splenda Granulated Sweetener and sugar together in a large mixing bowl. Add eggs, one at a time, mixing well after each addition. Add hazelnut syrup and mix well. Set aside.

Mix flour, baking powder, baking soda, and nonfat dry milk in a medium mixing bowl.

Pour the flour mixture into the oil and egg mixture and stir until blended. Add hazelnuts and mix until just blended. Refrigerate dough 1 hour or until stiff.

Divide dough in half. Roll each half into a log approximately 3 1/2 inches wide by 12 inches long. Place the logs on the prepared sheet 2 inches apart.

Bake in a preheated 350 degrees F oven for 20-25 minutes.

Remove from oven and cool for 5 minutes. Cut the loaves with a sharp knife into 48 slices, approximately 1/2 inch wide. Cool completely.

If desired, lay slices on their sides and drizzle with melted chocolate chips.

Store in airtight containers. Cookies will stay fresh up to 5 days.

2 tablespoons whole milk, plus more if needed

Very finely grated lime zest or finely minced cranberries, for garnish, optional

Directions

Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.

Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.

Divide dough in half. Transfer each dough half to large sheet of plastic wrap or wax paper. Use plastic wrap to shape dough into 2 2-inch-diameter logs with plastic wrap or wax paper. Wrap tightly, and chill 2 hours, or overnight.

Preheat oven to 350ºF. Slice dough logs into 1/2-inch-thick slices. Transfer slices to greased or parchment paper–lined baking sheet. Bake 8 to 11 minutes, or until cookies look dry on top. Cool cookies 3 minutes on baking sheet before transferring to wire rack.

NO-BAKE COOKIE CLUSTERS

Ingredients

1 (12-ounce) package white chocolate chips

2 tablespoons peanut butter

1 1/4 cups crispy toasted rice cereal

1 cup Spanish peanuts

1 cup miniature marshmallows

Directions

Line baking sheets with wax paper.

In a large saucepan over low heat, melt white chocolate with peanut butter, stirring constantly. Let mixture cool slightly, then stir in cereal and peanuts. Fold in marshmallows.

Drop mixture by tablespoonfuls onto prepared baking sheets. Let cool until firm. Serve, or refrigerate until ready to serve.

Tip

You can add some fun to these by sprinkling on a little flaked coconut, colored sprinkles, or chopped candy bars before allowing to cool.

Cookies!

Is there anything yummier than homemade cookies? The taste, the way they make scent your home with their aroma...yum! I still have wonderful memories of my grandmother bringing over huge batches of her oatmeal cookies and peanut butter cookies - sometimes at the same time - and insisting on sharing them with us over a cup of tea, then regaling us with stories of her childhood.

Here are six cookie recipes to help you through the day, including my grandmother's aforementioned Oatmeal Cookies and Peanut Butter Cookies. There's also a recipe for Chocolate Espresso Oatmeal Cookies and more. Enjoy!

CREAM CHEESE COOKIES

GRANDMA'S PEANUT BUTTER COOKIES

This was one of my grandmother's recipes, along with the oatmeal cookie recipe that follows. You can find them in my e-cookbook, Off The Wall Cooking.





1/2 C butter

1/2 C peanut butter

1/2 C sugar

1 egg, well beaten

1 1/4 C flour

3/4 tsp. soda

1/2 tsp. baking powder

1/4 tsp. salt

Cream butter & peanut butter together. Add sugar gradually & cream thoroughly. Add egg. Sift flour once before measuring. Sift flour, soda, baking powder & salt together & add to creamed mixture. Chill dough well, then form into balls the size of walnuts. Place balls on lightly greased baking sheet. Flatten with fork dipped in flour, making criss-cross pattern. Bake at 375 degrees for 10-12 minutes.

GRANDMA'S OATMEAL COOKIES



Another one of my grandmother's recipes. When it came to baking, cookies were her specialty. You can also find these in my e-cookbook, Off the Wall Cooking

1 C flour

1 C brown sugar

3 C quick cooking oatmeal (NOT the instant oats!)

1 C butter or margarine

1/4 C boiling water

1 1/2 tsp. baking soda

Mix flour & brown sugar. Add oatmeal; stir. Melt butter; add to dry ingredients. Mix baking soda into boiling water; add to other ingredients, stirring well. Place batter into loaf pan, lined with aluminum foil & place in freeze for several hours. Slice & bake at 375 degrees for 10 minutes.

SOFT GINGER COOKIES

This is from Gesine Bullock-Prado in the January 2013 issue of Runners' World, page 36 (“The Athlete's Palate”). Genise writes, “Dates keep these whole-grain cookies moist without using butter or oil. 'Crystallized ginger adds the perfect bite--spicy and chewy at the same time,' says Bullock-Prado.” Makes 30 cookies.

3/4 cup hot coffee

1 cup chopped, pitted dates

1/2 teaspoon baking soda

2 eggs at room temperature

1/4 cup organic blackstrap molasses

1 1/2 cups organic spelt flour or whole-wheat flour

1/2 teaspoon salt

1 tablespoon ground ginger

1/2 teaspoon cinnamon

1/2 teaspoon ground white pepper

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 cup chopped crystallized ginger

1/4 cup turbinado sugar

Preheat oven to 350°F. Combine coffee and dates and stir in baking soda. Let it sit for 10 minutes. Put mixture in a food processor; process until nearly smooth. In a bowl, whisk eggs and molasses. Continue whisking and add date puree. In a small bowl, whisk flour, salt, and spices. Stir into date mixture. Stir in ginger pieces until just combined. Freeze till very firm but scoopable (30 minutes). Using a teaspoon, drop dough into little mounds, a few inches apart, on a parchment-lined tray. Sprinkle sugar over cookies. Bake 10 minutes or until they feel spongy yet firm and spring back when gently poked.

CHOCOLATE CHIP ICEBOX COOKIES

This comes from Diana Rattray, About.com's Southern Food expert. She writes, “These icebox cookies are filled with ground chocolate chips. Use a small food processor or chopper to grind or chop the chocolate chips for these cookies. The dough is chilled slightly and then it's rolled into logs and thoroughly chilled until it's very firm. Plant to let the dough logs chill for at least four hours, or leave them in the refrigerator overnight.” Prep Time: 15 minutes; Cook Time: 11 minutes; Total Time: 26 minutes; Yield: About 3 dozen

Ingredients

1 cup butter (8 ounces)

1/2 cup granulated sugar

1/2 cup light brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1/4 teaspoon salt

3 cups all-purpose flour, 13 1/2 ounces

1 cup semisweet chocolate chips, ground or finely chopped

Preparation

In large mixing bowl with an electric mixer cream the butter and sugars together until light; add eggs, vanilla and salt and beat until light and fluffy.

With the mixer on low speed, gradually add the flour. Stir in the ground chocolate chips.

Chill the dough for about 30 minutes to 1 hour, or until firm enough to shape.

Divide dough into 2 portions; form each portion into a log and wrap in plastic wrap or waxed paper.

Refrigerate the dough logs for at least 4 hours, or until very firm.

Heat the oven to 350° F (180° C/Gas 4). Line a baking sheet with parchment paper or a silicone baking mat, or lightly grease the pan.

Cut a log into 1/4-inch slices and place on the prepared baking sheet about an inch apart.

Bake for 9 to 12 minutes.

Vegetarian Cookies

Most of us love cookies. I know I do. These offerings are vegetarian cookies. Enjoy!

SPICY GINGERBREAD PEOPLE

From the December 2012 issue of Vegetarian Times, page 57.

The recipe starts, "Fresh ginger gives these dark, molasses-laced cookies a spicy kick."

Cookies

2 1/2 cups whole-wheat pastry flour

1 tsp. baking soda

1 Tbs. minced fresh ginger

1 tsp. ground cinnamon

1 tsp. ground allspice

1/2 tsp. salt

3 oz. Earth Balance margarine

2/3 cup dark brown sugar

1 tsp. vanilla extract

1 Tbs. egg replacer, such as Ener-G

1/3 cup molasses

Frosting

1/4 cup confectioners’ sugar

1/4 tsp. arrowroot powder

To make Cookies: Whisk together flour, baking soda, ginger, cinnamon, allspice, and salt in bowl. Set aside.

Cream margarine, sugar, and vanilla with electric mixer 3 minutes, or until smooth.

Combine egg replacer and 2 Tbs. water in bowl, and add to sugar mixture. Add molasses, and beat until smooth. Beat in flour mixture until soft dough forms. Wrap in plastic wrap, and chill 2 hours.

Preheat oven to 350°F. Line 2 baking sheets with parchment paper, or coat with cooking spray.

Place dough between two sheets of parchment or wax paper, and roll out to 1/4-inch thick.

Cut with 3-inch gingerbread-man cutter, and transfer to prepared baking sheets. Bake 10 to 12 minutes, or until edges of Cookies begin to brown. Cool on baking sheets.

To make Frosting: Whisk together confectioners’ sugar, arrowroot, and 2 Tbs. water in small bowl. Transfer to pastry bag fitted with small round tip, and decorate Cookies with Frosting. Allow to set 30 minutes, then transfer to airtight container.

DOUBLE CHOCOLATE VEGAN COOKIES

Jolinda Hackett, from About.com's vegetarian blog, writes, "If you can't find vegan chocolate chunks, use regular chocolate chips."

Ingredients:

2 cups flour

2/3 cup cocoa

1 teaspoon baking soda

1/2 teaspoon salt

2/3 cup vegetable oil

1 1/4 cup sugar

egg replacer for 1 egg, prepared

1/2 cup soy milk

1 teaspoon vanilla

1/2 cup vegan chocolate chunks

Preparation:

Pre-heat oven to 350 degrees.

Combine the flour, cocoa, baking soda and salt in a small bowl.

In a separate large bowl, whisk together the sugar and vegetable oil until well mixed, then add the prepared egg replacer, soy milk and vanilla.

Add flour mixture to sugar and oil mixture, mixing just until well combined, then stir in vegan chocolate chunks.

Drop dough by spoonfuls onto a cookie sheet, then gently flatten. Baked for 8-10 minutes, until done, being careful not to over-bake.

PEANUT BUTTER CHOCOLATE CHIP COOKIES

Jolinda writes, "Vegan peanut butter cookies with chocolate chips - no eggs, no dairy, just delicious cookies! It's been said that whomever was the first person to mix together chocolate and peanut butter deserves an award for their contribution to humanity, and I couldn't agree more. Yum. Period. Nuff said."

Ingredients:

1 cup vegan margarine

1/2 cup sugar

1/2 cup brown sugar

1/4 cup soft (silken) tofu

1/2 tsp vanilla

1 1/2 cups flour

3/4 tsp baking soda

1/4 tsp salt

1/2 cup peanut butter

1 cup chocolate chips

Preparation:

Pre-heat the oven to 400 degrees.

In a large bowl, cream together the margarine, sugar and brown sugar. Add the tofu and vanilla and whisk until smooth and creamy.

In a separate bowl, combine the flour, baking soda and salt. Add to the margarine mixture and combine well.

Add the peanut butter and mix well, then fold in the chocolate chips.

Roll the dough into 1 inch balls and place on a baking sheet. Bake for 5 to 8 minutes, until cookies are golden brown.

VEGAN SNICKERDOODLES

This recipe is from the September 2007 issue of Vegetarian Times (page 79) and can be found online at http://www.vegetariantimes.com/recipe/vegan-snickerdoodles/. The recipe makes 45 cookies, and starts, "Snickerdoodles are just sugar cookies rolled in cinnamon sugar. Try adding 1/2 teaspoon ground nutmeg or allspice to the cinnamon sugar to boost flavor."

Cookie Dough

1 3/4 cup all-purpose flour

1/4 cup cornstarch

1 tsp. baking powder

1 stick (4 oz.) vegan margarine, softened

3/4 cup sugar

1/4 cup vanilla soymilk

1 tsp. vanilla extract

Cinnamon Sugar

1/2 cup sugar

3 Tbs. ground cinnamon

Preheat oven to 350°F. Coat baking sheet with cooking spray.

To make Cookie Dough: Whisk together flour, cornstarch, and baking powder in bowl. Beat margarine in separate bowl with electric mixer until soft. Add sugar, and beat until fluffy. Beat in soymilk and vanilla extract 30 seconds or until smooth. Add flour mixture, and beat 30 seconds or until smooth.

To make Cinnamon Sugar: Combine sugar and cinnamon on large plate.

Shape dough into 1-inch balls. Roll each ball in Cinnamon Sugar, and place 1 1/2 inches apart on prepared baking sheet. Bake 10 to 12 minutes, or until cookies look dry on tops and are lightly browned on bottoms. Transfer to wire rack to cool. Store in airtight container.

PEANUT BUTTER SANDWICH COOKIES

This yummy recipe is from the December 2012 issue of Vegetarian Times (page 55), and can be found at http://www.vegetariantimes.com/recipe/peanut-butter-sandwich-cookies/ and makes 24 sandwiches. The recipe states, "These sandwich cookies are held together by a rich (and ridiculously easy) chocolate filling."

Cookies

2 cups smooth natural-style peanut butter

4 oz. Earth Balance margarine (1 stick)

1 cup dark brown sugar

1/2 cup evaporated cane sugar

2 tsp. vanilla extract

1/2 cup plain soymilk or almond milk

3 1/3 cups all-purpose flour

2 tsp. baking soda

2 tsp. baking powder

1/4 tsp. salt

1/3 cup roasted unsalted peanuts, chopped

Filling

1/2 cup coconut creamer or soy creamer

8 oz. vegan chocolate chips (1 1/4 cups)

To make Cookies: Preheat oven to 350°F. Line 2 baking sheets with parchment paper, or coat with cooking spray.

Cream peanut butter, margarine, brown sugar, cane sugar, and vanilla 2 to 3 minutes with electric mixer, or until smooth. Beat in soymilk and 1/4 cup water.

Whisk together flour, baking soda, baking powder, salt, and peanuts in separate bowl. Add flour mixture to peanut butter mixture, and beat just until dough forms.

Scoop 1 Tbs. dough onto prepared baking sheets 2 to 3 inches apart. Make crisscross pattern on top of each Cookie by pressing down with fork. Bake 9 to 11 minutes or until edges of Cookies begin to brown. Cool on baking sheet.

To make Filling: Heat creamer in top half of double boiler over medium heat until steaming. Pour hot creamer over chocolate chips in bowl, and let stand 30 seconds. Mix creamer and chocolate with wooden spoon until chocolate is melted, then whisk until smooth.

Spread 2 tsp. Filling on flat sides of 24 Cookies. Top with remaining Cookies.

Vegan Delights

One of my favorite magazines is Vegetarian Times. Other magazines may come and go on my I-like/love-this-magazine list, but this is one of three that always makes the list.

Decadent Dairy-Free Chocolate Truffles

Serves 10 (makes about 30 truffles)

The recipe comes with this disclaimer: "Truffles are usually made with heavy cream, but you'll never miss the dairy in these luscious vegan chocolates."

6 oz. high-quality dark chocolate (60% cocoa), finely chopped

1/4 cup walnut, almond or canola oil

1/2 cup unsweetened cocoa

1/2 cup chopped nuts

1. Place chocolate, oil and 1/3 cup water in microwave-safe bowl. Heat on high in microwave 1 minute. Stir; heat 1 minute more, or until chocolate has melted. Whisk until smooth. Cover with plastic wrap and chill 6 hours, or overnight.

2. Place cocoa and nuts on separate plates. Shape truffle mixture by heaping teaspoonfuls into small, 3/4-inch balls. Roll in cocoa or chopped nuts. Chill until ready to serve.

Fabulous Vegan Fudge Cake with Bittersweet Icing

Serves 8

From the website: “I’ve tried vegan cake recipes in the past, but didn’t like the sour taste of the vinegar that is usually used to activate the leavening,” says single mom and café manager Shelly Platten. “I tinkered with some recipes that didn’t use vinegar to come up with a fudgy, satisfying cake.”

1 1/4 cups Bob’s Red Mill organic unbleached white flour

1 2/3 cups Florida Crystals organic cane sugar, divided

1 1/3 cups Chatfield’s cocoa powder, divided

1 tsp. baking soda

1/2 tsp. salt

1 cup Silk vanilla soymilk, divided

1/3 cup plus 1/4 cup canola oil, divided

1 cup toasted chopped hazelnuts

Preheat oven to 350°F. Line 9-inch round pan with parchment paper, and spray with cooking spray.

Whisk together flour, 1 cup sugar, 2/3 cup cocoa, baking soda, and salt in bowl. Whisk together 2/3 cup soymilk, 1/3 cup oil, and 1/2 cup water in separate bowl. Stir soymilk mixture into flour mixture. Spread in prepared pan, and bake 25 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Unmold onto plate.

Warm remaining 2/3 cup cocoa, 2/3 cup sugar, and 1/4 cup oil in saucepan over medium heat. Pour in remaining 1/3 cup soymilk, and cook 1 minute, or until smooth. Spread icing over warm cake, and sprinkle with hazelnuts.

Chocolate Espresso Oatmeal Cookies

Makes 48 cookies

from the recipe: "Take chocolate chip cookies to the next level with this espresso-spiked dough that's laced with chewy oats."

3/4 cup all-purpose flour or oat flour

1/4 cup unsweetened cocoa powder

1/4 tsp. salt

1/2 tsp. baking soda

4 oz. (1 stick) margarine, softened

3/4 cup sugar

1/4 cup cooled espresso or strong coffee

1/2 tsp. vanilla extract

1 1/2 cups oats

1/2 cup mini semisweet chocolate chips

Whisk together flour, cocoa powder, salt, and baking soda in bowl.

Cream margarine and sugar together with electric mixer in bowl. Beat in espresso and vanilla. Beat in flour mixture 1/2 cup at a time, adding up to 1/2 cup more if necessary to make thick dough. Stir in oats and chocolate chips.

Divide dough in half. Transfer each dough half to large sheet of plastic wrap or wax paper. Use plastic wrap to shape dough into 2 2-inch-diameter logs with plastic wrap or wax paper. Wrap tightly, and chill 2 hours, or overnight.

Preheat oven to 350ºF. Slice dough logs into 1/2-inch-thick slices. Transfer slices to greased or parchment paper–lined baking sheet. Bake 8 to 11 minutes, or until cookies look dry on top. Cool cookies 3 minutes on baking sheet before transferring to wire rack.
