Soup

One of the more comforting foods, in my opinion, happens to be homemade soup. My mother used to make homemade soup once or twice a month, usually with homemade biscuits or a loaf of crusty garlic bread. Yum!

Today's offerings of six soup recipes include Chicken Soup From Scratch and Hot and Sour Soup. Enjoy!

VEGETARIAN GUMBO

This comes from Vallery Lomas in The New York Times cooking e-newsletter. Vallery wrote, "This meatless gumbo has a distinct Louisiana flavor, thanks to the roux, Creole seasoning and the 'holy trinity' of Creole cooking (onion, celery, bell pepper). Gumbo is traditionally made with a variety of smoked meats and seafood, but this version gets an added bit of smokiness from an optional splash of liquid smoke. Here, the okra is roasted in the oven before being added to the pot, which eliminates the gooey-ness. There is also no skimping on vegetables in this gumbo, and the red lentils thicken it while adding protein. Serving this gumbo over white rice helps make it a complete meal."

Ingredient

1 (10- to 16-ounce) bag frozen sliced okra

Kosher salt and black pepper

5 tablespoons unsalted butter or vegetable oil

1/4 cup all-purpose flour

1 tablespoon extra-virgin olive oil

1 yellow onion, diced

2 celery ribs, thinly sliced

1/2 green bell pepper, diced

3 garlic cloves, minced

1 teaspoon Creole seasoning, plus more to taste

1 teaspoon Old Bay seasoning

1 (14-ounce) can diced tomatoes with their juices

3 cups vegetable or chicken stock, plus more as needed

1/2 cup red lentils

1 tablespoon hot sauce, plus more to taste

2 teaspoons liquid smoke (optional)

Cooked white rice or quinoa, for serving

Preparation

Heat oven to 400 degrees. Place the frozen okra in a single layer on a parchment-lined baking sheet, breaking up any large clumps, and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Roast, until cooked through and just starting to brown, about 15 to 20 minutes.

As okra roasts, prepare the roux: Melt the butter in a cast-iron skillet or Dutch oven over medium heat. (Either vessel will help evenly distribute the heat for a better roux.) If using vegetable oil, simply heat over medium. Using a heatproof rubber spatula or wooden spoon, mix the flour into the fat. Stir continuously, making sure to scrape the bottom of the pot so the roux does not burn (a burned roux cannot be saved), until the roux transforms from pale to peanut butter to a rich cinnamon color, about 7 minutes. Remove the roux from the heat and set aside. (Pull the pot from the heat just as the desired color is reached; the retained heat will continue to cook the roux slightly.)

Add the olive oil to a large skillet over medium heat. Add the onion and cook until softened, stirring occasionally, about 5 minutes. Add the celery and bell pepper, and cook until softened, another 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Lastly, add the Creole and Old Bay seasonings, and stir so that they coat the vegetables and are lightly toasted, about 1 minute.

Stir in the diced tomatoes, stock and lentils. Bring the ingredients to a boil, then reduce the heat to a light simmer. Cover and allow the lentils to cook undisturbed for 15 minutes. (Add more water or stock if needed.)

Add the okra and cook uncovered until softened, another 5 minutes. Stir in the hot sauce, and the liquid smoke, if using. Give the cooled roux a good stir and add it to the pot, making sure to mix it in thoroughly, then simmer for 2 to 3 minutes. Taste and adjust the seasoning by adding salt, pepper, creole seasoning or hot sauce, if desired. Serve warm over white rice or quinoa.

CHICKEN SOUP FROM SCRATCH

This is from Julia Moskin on The New York Times cooking e-newsletter. Julia wrote, “Chicken soup is one of the most painless and pleasing recipes a home cook can master. This soup has all the classic flavors (celery, carrot, parsley) but has been updated for today's cooks, who can't easily buy the stewing hen and packet of soup vegetables that old-fashioned recipes used to call for. A whole bird provides the right combination of fat, salt and flavor. Don't be tempted to use all white meat, as the flavor won't be as round. Because making soup involves the bones and deep tissues of the bird, it is particularly reassuring here to use the highest-quality poultry you can find. This method produces a fragrant, golden, savory soup you want to eat all winter long; it's a perfect backdrop for noodles, rice or matzo balls.”

Time: 2 hours, plus chilling; Yield: 6 to 8 servings

Ingredients

For the Broth:

1 chicken, 3 to 3 1/2 pounds, with skin, cut up

3 stalks celery, with leaves, cut into chunks

2 large carrots, cut into chunks

2 yellow onions, peeled and halved

1 parsnip or parsley root (optional)

About 1 dozen large sprigs parsley

About 1 dozen black peppercorns

2 bay leaves

2 teaspoons kosher salt, more to taste

To Finish The Soup:

3 tablespoons reserved chicken fat, more if needed

3 leeks, trimmed, halved lengthwise, rinsed and sliced crosswise into thin half-moons

3 large carrots, peeled and cut into small dice

Kosher salt and ground black or white pepper

Egg noodles (fresh or dried), such as packaged wide noodles, spaetzle, fettuccine or pappardelle cut into short lengths (see note)

Finely chopped herbs, such as parsley, scallions, dill or a combination

Preparation

Place the chicken, celery, carrots, onions, parsnip (if using), parsley, peppercorns, bay leaves and salt in a large soup pot and cover with cold water by 1 inch.

Bring to a boil over high heat, then immediately reduce the heat to very low. Adjust the heat until the soup is “smiling”: barely moving on the surface, with an occasional bubble breaking through. Cook uncovered, until the chicken is very tender and falling off the bone, 1 to 1 1/2 hours.

When cool enough to handle, use tongs to transfer chicken from the pot to a container. Taste the broth and continue to simmer it until it is concentrated and tasty. Strain broth through a fine sieve (or a colander lined with cheesecloth) into a separate container. Discard all the solids from the strainer (or reserve the vegetables, chill and serve with vinaigrette, if you wish).

Refrigerate chicken pieces and broth separately for at least 8 hours (or up to 3 days), until a thick layer of yellow fat has risen to the top of the broth.

When ready to finish the soup, use your fingers to separate chicken breast meat from bones and skin. Discard bones and skin. Use two forks to pull the breast meat apart into soft chunks, or use a knife and cut into bite-size pieces. (Reserve dark meat for another use.)

Skim chicken fat from top of broth and set aside. Place 3 tablespoons of the fat in a soup pot with a lid. Add leeks, stir to coat, and heat over medium heat until leeks begin to fry. Then reduce the heat to a gentle sizzle and cook, stirring often, until slightly softened, about 3 minutes.

Add carrots, sprinkle with salt, stir, and cover the pot. Cook until vegetables are just tender, about 5 minutes more. (Keep in mind that vegetables will continue to cook in the soup.) Do not brown.

Pour broth into pot with vegetables and heat to a simmer. Add noodles and simmer until heated through, soft and plumped with chicken broth. Add the breast meat, then taste broth and add salt and pepper to taste. For best flavor, soup should have some golden droplets of fat on top; if needed, add more chicken fat one teaspoon at a time.

Serve immediately, in a tureen or from the pot, sprinkling each serving with herbs.

Tip

Instead of noodles, almost any starchy garnish can be used here: matzo balls; partly cooked dry pasta, rice or other grains; or cooked white beans. Add them when you would add the noodles and simmer until heated through.

HERBED CARROT SOUP

Ingredients

2 pounds of carrots, chopped

1 large onion, diced

6 sprigs of fresh parsley, 3 sprigs of fresh thyme or 1 teaspoon of dried thyme, and 6 six black peppercorns, bundled together so that they can be easily removed after cooking

2 cloves garlic, crushed

4 Tbs of butter

6 C of vegetable stock

Freshly grated mace or nutmeg

Salt & pepper to taste

Directions

Lightly sauté the onion & garlic in the butter. Add the stock & carrots & simmer for about 15 minutes. Add the bundle of herbs & continue to simmer for another 20 minutes. Remove the herbs, allow the soup to cool, & put it through the blender in batches. Reheat the soup over low heat while adding the mace or nutmeg & salt & pepper to taste. Serve with some fresh, homemade bread & garnish with some fresh parsley & a little chopped fresh thyme.

Note: The original recipe called for vegetable or chicken stock.

TURKEY BEAN SOUP

This comes from The Mayo Clinic Diet, and can be found online here.

I highly recommend checking out the site. Good food, tied in with the Mayo Clinic, so you can figure it’s not some fly-by-night junk food, but good tasting food that’s good for you.

Serves 4

Ingredients

1 pounds turkey, lean ground breast meat

2 medium onions, chopped

2 stalks celery, chopped

1 cloves garlic, minced

1/4 cup ketchup

1 can tomatoes (14.5 ounces), diced, no salt added

3 pieces bouillon, chicken, low-sodium

7 cups water

1 1/2 teaspoon basil, dried, crushed

1/4 teaspoon pepper, black ground

2 cups cabbage, shredded

1 cans cannellini beans (15 ounces), no-salt-added, drained

Directions

In a large saucepan, cook the ground turkey, onion, celery and garlic until the vegetables are softened and the turkey is cooked.

Drain off the fat and add the ketchup, tomatoes, bouillon, water, basil, pepper, cabbage and beans.

Bring to a boil and reduce heat. Cover and simmer for 30 minutes.

HOT AND SOUR SOUP

1/2 cup tree ear fungi

1/3 tiger lily stems (golden needles)

2 tablespoons cornstarch

3 tablespoons water

3/4 diced uncooked chicken breast

1 teaspoon olive oil

1 tablespoon soy sauce

1 can (8 oz.) bamboo shoots, sliced

6 cups chicken stock, or 3 cans (10-3/4 oz each) chicken broth, defatted, + 2 cans water

3 tablespoons white vinegar

1 tablespoon double black soy sauce

2 cakes tofu (fresh bean curd), cubed

2 teaspoons chili oil

2 egg whites, beaten

4 green onions, sliced

Directions

Place mushrooms, tree ears, and tiger lily stems in a small bowl and cover with boiling water.

In about 15 minutes or when they are soft, drain off the water and chop off stems or any hard parts.

Slice mushrooms and tree ears and pull tiger lily stems into shreds. Set aside.

Combine cornstarch and water into a smooth paste. Set aside.

In a heated wok or skillet, saute chicken in oil until chicken is cooked through.

Stir in regular soy sauce.

Stir in mushrooms, tree ears, tiger lily stems, and bamboo shoots.

Add chicken stock, vinegar, and double black soy sauce.

Stir cornstarch mixture into soup. Let thicken.

Add tofu and bring soup to a boil.

Stir in the chili oil and white pepper.

Turn off the heat for 1 minute and then slowly pour the egg whites into the soup, stirring constantly.

Garnish each bowl of soup with chopped green onions.

TURKEY TACO SOUP

This comes from Laurel Randolph, one of the writers on The Spruce. Laurel wrote, “Taco soup is an easy, one-bowl version of everyone's favorite dinner: taco night. All of the ingredients simmer together to make a robust, flavorful soup that's especially good with a side of crispy tortilla chips. And with only one dirty pot and a few dirty soup bowls, it's totally carefree. The typical ground beef is replaced with shredded turkey for a lighter meal—or you can replace it with cooked chicken, if that's what you have on hand.

“We love to make this soup after Thanksgiving, when we have leftover turkey to use up and we want to do as little cooking as possible. It's a great way to repurpose cooked, shredded breast or dark meat to create a totally different dish. No one will be complaining of leftover fatigue with this recipe.”

Prep Time: 5 minutes; Cook Time: 15 minutes; Total Time: 20 minutes; Yield: Serves 3 - 4.

1 tablespoon canola (or grapeseed oil)

1 small red onion (diced)

1 green bell pepper (diced)

1 jalapeño (seeded and minced)

3 garlic cloves (minced)

1 tablespoon chili powder

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1 (14.5 ounce) can diced tomatoes (with juice)

1 (15 ounce) can pinto beans (rinsed and drained)

1 cup packed shredded cooked turkey

3 cups turkey or chicken broth

Salt and pepper

1 avocado (diced, or sour cream for serving)

Optional: Chips (for serving)

Directions

Preheat a large, heavy-bottomed pot over medium heat. Add the oil followed by the onion. Sauté for 2 minutes.

Add the bell pepper, jalapeño and garlic. Sauté for 2 more minutes.

Add the chili powder, cumin, and oregano and cook, stirring, for 1 minute.

Add the tomatoes and juice, pinto beans, turkey and broth, and stir. Season with salt and pepper.

Turn up the heat and bring to a simmer.

Turn the heat to low and let simmer, uncovered, for 10 minutes.

Serve topped with diced avocado or a dollop of sour cream and tortilla chips.

LENTILS ITALIANO

2 eggs

1 teaspoon vanilla

3/4 cup all-purpose flour

1 cup Equal Spoonful*

1/2 cup semi-sweet chocolate chips or mini chocolate chips

Directions

Beat butter, applesauce, eggs, and vanilla until blended.

Bake in a preheated 350F oven 18 to 20 minutes or until top springs back when gently touched.

Cool completely on wire rack. Cut into squares.

Ingredients

4 medium to large skinless chicken thighs (1-1/2 pounds)

One 8-ounce container plain low-fat yogurt

1/4 cup hot salsa or picante sauce

1 tablespoon curry powder

1 teaspoon ground cumin

Directions

Place the chicken in a glass dish. In a small bowl, combine the yogurt, salsa, curry powder, and cumin. Pour over the chicken, turning to coat. Cover and refrigerate at least 6 hours or up to 24 hours.

Heat the oven to 375 degrees F. Transfer the chicken and sauce to an oven proof dish prepared with nonstick pan spray. Bake, uncovered, 40 to 45 minutes, or until the chicken is tender and cooked through.

LENTILS ITALIANO

Recipe Yield: Makes: 6 Servings (1 Serving = 2/3 Cup)

Ingredients

3/4 cup chopped onion

1 clove garlic, minced

1 tablespoon olive oil

2 cups Vegetable broth or one 14-ounce can beef or vegetable broth

3/4 cup dried lentils, washed

One 16-ounce can diced tomatoes with juice

1/4 to 1/2 teaspoon crushed red pepper flakes

1/2 teaspoon salt

1 tablespoon chopped fresh basil, or 1 teaspoon dried basil

1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano

1/4 teaspoon freshly ground pepper

Directions

In a heavy saucepan, saute the onion and garlic in the olive oil for 5 minutes, until the onion is tender.

Add the broth and lentils. Cover and simmer for 30 minutes.

Add the tomatoes with their liquid, 1/2 cup water, and the remaining ingredients; simmer over low heat, uncovered, for about 45 minutes, stirring occasionally. Add water if the mixture becomes too dry.

CHICKEN WITH PEPPERS

Ingredients

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1/2 teaspoon minced garlic

1 tablespoon olive oil

2 cups frozen stir-fry pepper blend

1 can (15 ounces) chunky Italian-seasoned tomato sauce

Salt and pepper, to taste

2 tablespoons grated Parmesan cheese

Directions

Saute chicken and garlic in oil in large skillet until lightly browned. Push chicken to side of pan; add stir-fry pepper blend and cook until softened, 3 to 4 minutes. Stir in tomato sauce. Heat to boiling; reduce heat and simmer, covered, until chicken is cooked through, about 10 minutes. Season to taste with salt and pepper; sprinkle with Parmesan cheese.

Ingredients

6 tablespoons stick butter, softened

1/2 cup unsweetened applesauce

2 eggs

1 teaspoon vanilla

3/4 cup all-purpose flour

1 cup Equal Spoonful*

1/2 cup semi-sweet chocolate chips or mini chocolate chips

6 tablespoons unsweetened cocoa

1 teaspoon baking powder

1/4 teaspoon salt

Optional: Chopped Walnuts

* May substitute 24 packets Equal sweetener

Directions

Beat butter, applesauce, eggs, and vanilla until blended.

Stir in combined flour, Equal, chocolate chips, cocoa, baking powder, nuts (optional) and salt until blended.

Spread batter in sprayed 8-inch square baking pan.

Bake in a preheated 350F oven 18 to 20 minutes or until top springs back when gently touched.

Cool completely on wire rack. Cut into squares.

Store in airtight containers at room temperature.

10 large dried black mushrooms

1/2 cup tree ear fungi

1/3 tiger lily stems (golden needles)

2 tablespoons cornstarch

3 tablespoons water

3/4 diced uncooked chicken breast

1 teaspoon olive oil

1 tablespoon soy sauce

1 can (8 oz.) bamboo shoots, sliced

6 cups chicken stock, or 3 cans (10-3/4 oz each) chicken broth, defatted, + 2 cans water

3 tablespoons white vinegar

1 tablespoon double black soy sauce

2 cakes tofu (fresh bean curd), cubed

2 teaspoons chili oil

2 egg whites, beaten

4 green onions, sliced

Directions

Place mushrooms, tree ears, and tiger lily stems in a small bowl and cover with boiling water.

In about 15 minutes or when they are soft, drain off the water and chop off stems or any hard parts.

Slice mushrooms and tree ears and pull tiger lily stems into shreds. Set aside.

Combine cornstarch and water into a smooth paste. Set aside.

In a heated wok or skillet, saute chicken in oil until chicken is cooked through.

Stir in regular soy sauce.

Stir in mushrooms, tree ears, tiger lily stems, and bamboo shoots.

Add chicken stock, vinegar, and double black soy sauce.

Stir cornstarch mixture into soup. Let thicken.

Add tofu and bring soup to a boil.

Stir in the chili oil and white pepper.

Turn off the heat for 1 minute and then slowly pour the egg whites into the soup, stirring constantly.

Garnish each bowl of soup with chopped green onions.

4 medium to large skinless chicken thighs (1-1/2 pounds)

One 8-ounce container plain low-fat yogurt

1/4 cup hot salsa or picante sauce

1 tablespoon curry powder

1 teaspoon ground cumin

Directions

Place the chicken in a glass dish. In a small bowl, combine the yogurt, salsa, curry powder, and cumin. Pour over the chicken, turning to coat. Cover and refrigerate at least 6 hours or up to 24 hours.

Heat the oven to 375 degrees F. Transfer the chicken and sauce to an oven proof dish prepared with nonstick pan spray. Bake, uncovered, 40 to 45 minutes, or until the chicken is tender and cooked through.

Soup's On

Hope your 4th was nice. Mine was, if a bit hectic.

Here are six soup recipes to get you through the day, including Old-Fashioned Tomato Soup and Chicken Soup with Lime and Cilantro. Enjoy!

HERBED CARROT SOUP



From the December 2005 issue of Runner's World; reprinted from HerbWise: Growing, Cooking, WellBeing, by Bruce Burnett



2 pounds of carrots, chopped

1 large onion, diced

6 sprigs of fresh parsley, 3 sprigs of fresh thyme or 1 teaspoon of dried thyme, and 6 six black peppercorns, bundled together so that they can be easily removed after cooking

2 cloves garlic, crushed

4 Tbs of butter

6 C of vegetable stock (see Note)

Freshly grated mace or nutmeg

Salt & pepper to taste

Lightly sauté the onion & garlic in the butter. Add the stock & carrots & simmer for about 15 minutes. Add the bundle of herbs & continue to simmer for another 20 minutes. Remove the herbs, allow the soup to cool, & put it through the blender in batches. Reheat the soup over low heat while adding the mace or nutmeg & salt & pepper to taste. Serve with some fresh, homemade bread & garnish with some fresh parsley & a little chopped fresh thyme.

Note: The original recipe called for vegetable or chicken stock. I've opted to list only the vegetable stock here.

FIVE BEAN SOUP

This comes from Eden Kitchens

Serves 10. Prep Time 10 minutes. Cook Time 40 minutes.

2 Tbs Eden Extra Virgin Olive Oil

3 cloves garlic, minced

1 medium onion, diced

1/4 C celery, diced

1/2 C carrots, diced

3 Tbs barley, rinsed

3 C water

1 can Eden Organic Pinto Beans

1 can Eden Organic Black Beans

1 can Eden Organic Kidney Beans

1 can Eden Organic Navy Beans

1 can Eden Organic Garbanzo Beams

1 C sweet corn, fresh or frozen

1 can Eden Organic Diced Tomatoes with Roasted Onion

1/2 tsp dried basil

1 1/2 tsp crushed bay leaf

1 tsp Eden Sea Salt – French Celtic

Heat oil in soup pot, sauté garlic & onion until onion is translucent. Add water, celery, carrot & barley, beans, corn, tomatoes & herbs. Add salt, cover & simmer 30 minutes. Serve.

HOT AND SOUR SOUP

This comes from Publix Supermarket's Aprons. Makes 6 servings.

1/4 cup green onions (2 – 3 onions)

1 (28-ounce) can chop suey vegetables (drained)

4 1/4 cups water

1 cup sliced fresh mushrooms

1/2 cup hoisin sauce

1 tablespoon miso paste

1/2 cup shredded carrots

2 teaspoons chili bean sauce

1 tablespoon vegetable base

1/4 cup Oriental salad dressing

2 tablespoons cornstarch

Wash onions and remove any wilted portions. Chop enough green onions into 1/4-inch pieces to measure 1/4 cup, including up to half of green tops. Discard tops or reserve for another use. Set aside.

Open can of vegetables and drain liquid by squeezing lid against vegetables. Set aside.

Place in large saucepan: 4 cups water, onions, vegetables, mushrooms, hoisin sauce, miso paste, carrots, bean sauce, vegetable base and salad dressing. Bring to boil on medium-high heat. Place 1/4 cup water and cornstarch in 2-cup measuring cup. Stir together until creamy. When boiling, stir in cornstarch mixture. Reduce heat to low and simmer 10 minutes. Serve.

OLD-FASHIONED TOMATO SOUP

Ingredients

1 Tbsp. butter

1 onion, finely chopped

2 large garlic cloves, chopped

1 can (28-oz.) diced tomatoes

1 Tbsp. sugar

1 tsp. dried thyme

1/8 tsp. ground mace

Pinch of cayenne pepper

1/2 cup fat-free half-and-half cream

Salt and freshly ground black pepper

3 Tbsp. snipped dill, for garnish (optional)

Directions

Melt the butter in a small Dutch oven over medium-high heat.

Saute the onion until translucent, 4 minutes. Add the garlic and saute until the onions are golden, 5 to 6 minutes.

Add the tomatoes with their juices, the sugar, thyme, mace and cayenne. Bring to a boil, cover, and simmer the soup until the tomatoes and onion are soft, about 15 minutes.

Let the soup sit 20 minutes, uncovered. Transfer it to a blender (or use an immersion blender) and reduce the mixture to a puree, either pulpy or completely smooth, as desired.

Blend in the half-and-half. Season the soup to taste with salt and pepper.

Serve the soup hot, sprinkling one-fourth of the dill over each bowl, if using.

1 quart Homemade Chicken Broth or canned reduced-sodium chicken broth

1 whole chicken breast, skinned, boned, and split, or 2 skinless, boneless breast halves (about 3/4 pound)

3 tablespoons fresh lime juice

1/4 cup coarsely cilantro leaves

Directions

Bring the broth to a simmer in a large saucepan.

Add the chicken; cover and simmer over low heat until it is just cooked through, about 8 to 10 minutes.

Remove and shred the chicken. Return it to the broth; add the lime juice and bring the soup to a boil.

Ladle into soup bowls; sprinkle with cilantro.

RAINBOW SOUP

This comes from Laura Dolson, Low Carb diet expert for VeryWell. Laura wrote, “Rainbow soup is a great way to follow so many nutritionists' advice to ‘eat a rainbow.’ In fact, that's what makes rainbow soup unique. While it is generally hard to eat all of the colors of fruits and vegetables at one meal, rainbow soup makes it possible. This is one of those soups that people tend to love, despite the unusual seasoning combination. I often put leftover turkey or chicken in it, but it can stand on its own without meat. It is also good with beans or chickpeas if your diet allows. The idea is that it has vegetables from all the ‘color groups,’ so it has lots of antioxidants and other nutrients for your family. If you have any fresh herbs around, feel free to throw them in as well.”

Ingredients

1 medium onion (2 1/2 inches in diameter), chopped

2 large stalks celery, chopped

4 cloves garlic, pressed

1 medium red bell pepper

1 cup chopped carrot (you can use chopped pumpkin, if available)

1 heaping tbsp. sweet paprika

3 tsp. turmeric

1/2 tsp. cinnamon

1 bay leaf

A little hot sauce

1 15 oz. can tomatoes, chopped

1 large leaf of chard, about 1 and 1/2 cups – can use spinach or other dark leafy green such as kale – cut into thin strips

10 oz. frozen green beans (or fresh)

Salt and pepper

5 cups stock or broth (I like vegetable or chicken better than bouillon—but watch the saltiness)

Preparation

In a large soup pot, simmer oil, onion, and celery. Cook on low heat for 5 to 10 minutes to develop more sweetness in the onion.

Add garlic and turn up the heat to medium. Cook for a minute or so and add the peppers and carrots. Cook another minute or two and add the spices. Stir and cook until fragrant—another minute or so.

Add tomatoes and stock, and simmer for 15 minutes. Add frozen beans and chard and simmer for another 5 minutes or until the beans are cooked.

If adding cooked cubed meat such as chicken or turkey, add at this time.

Adjust seasonings as needed.

Serving Suggestions for Rainbow Soup

As a main course, this soup is perfect, but be sure that you add other items for adults to eat before they get to the main dish, so that they won't be over or underfed. A nice starter salad with a vinaigrette dressing is appetizing before soup. You might also try adding meat to the soup as an option for those who are not vegetarian. To cook a great seafood option to accompany the soup, you could make chicken, fish, beef or sausage kabobs and place them on separate plates for those who are interested in making the meal a little more hearty.

Double-Post Monday

ROASTED APPLE AND RAISIN PIE WITH ORANGE YOGURT CUSTARD

This is from the fall issue of UnitedHealthCare's magazine, Renew. This recipe begins, “Many pie recipes rely on sugar and starch to thicken up a pie filling. Roasting the fruit before filling the pie reduces excess moisture and concentrates the natural sugars in the fruit so adding sugar isn’t necessary. A light, creamy yogurt custard balances the fruit and spice. The oatmeal crust holds up well with the addition of ground flax seed, which acts as a binder and adds fiber and crunch.”

Filling:

6 medium Granny Smith apples, peeled, cored and cubed

2 teaspoons cinnamon

1/4 teaspoon salt

zest and juice of one orange, zest used for custard topping

2 tablespoons raisins

Oatmeal Pie Crust:

1 cup quick oats

4 tablespoons ground golden flax seed

1/2 cup walnuts

1/4 teaspoon salt

1/3 cup unsweetened applesauce

Custard:

3/4 cup plain Greek non-fat yogurt

2 eggs, beaten

reserved orange zest

1 teaspoon vanilla extract

1 tablespoon sugar substitute

1 teaspoon cornstarch

Preheat oven to 375 degrees. Toss cubed apples with cinnamon, salt and orange juice in a 9-by-9-inch baking pan and roast until tender, about 35– 40 minutes. While apples are roasting, prepare crust by blending the oats, flax seed, walnuts and salt together in a food processor (or blender) until crumbly. Stir in applesauce and mix until oats are evenly moistened.

Butter a 9-inch glass or ceramic pie plate. Press all but 2 tablespoons of the crust mixture into the dish, evenly along the bottom and up the sides. Reserve remaining 2 tablespoons of crust for the streusel topping.

Bake crust at 375 for 10–12 minutes, until lightly browned. When the roasting apples have softened, remove from the oven and stir in the raisins. Allow it to cool for 15 minutes before spooning into the pre-baked pie crust.

Whisk yogurt, eggs, orange zest, vanilla, sugar substitute and cornstarch together in a small bowl and pour over the apple filling. Bake until custard is set, about 20–25 minutes. Allow pie to cool for at least an hour before cutting.

EGGPLANT LASAGNA

Ingredients

Pam Original No-Stick Cooking Spray

1 cup part-skim ricotta cheese

3/4 cup grated Parmesan cheese

3/4 teaspoon dried Italian seasoning

1 large eggplant (about 1 pound), cut into 1/4-inch thick lengthwise slices

1/4 cup extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 package (20 ounces) ground turkey

3/4 cup chopped yellow onion

1 tablespoon finely chopped garlic

1 can (14.5 ounces) Hunt's Original Diced Tomatoes, No Salt Added, drained

1/4 cup Hunt's Tomato Paste (or Hunt’s Organic)

1/4 cup thinly sliced fresh basil

1-1/2 cups shredded part-skim mozzarella cheese

Directions

Heat oven to 350F.

Spray 8-by-8-inch glass baking dish with cooking spray.

In small bowl, combine ricotta cheese, Parmesan cheese and Italian seasoning; set aside.

Heat grill pan over medium-high heat. Brush eggplant slices with oil; sprinkle both sides with salt and pepper.

In batches, place eggplant on grill pan. Cook each side 1-2 minutes or until lightly browned and tender. Remove and place on baking sheet lined with paper towels; pat to remove excess moisture.

Spray large skillet with cooking spray; heat over medium-high heat. Add turkey and cook 3 minutes, stirring occasionally. Add onion and garlic; cook 2-3 minutes more or until onion is tender and turkey is crumbled and no longer pink. Drain.

Add drained tomatoes, tomato paste and basil to skillet; stir to combine. Reduce heat and simmer 2 minutes more.

Assemble lasagna by spreading 3/4 cup meat mixture over bottom of dish. Place 3 eggplant slices over meat mixture, top with 3/4 cup meat mixture, half of ricotta cheese mixture and 1/2 cup mozzarella cheese.

Repeat layers, ending with a layer of eggplant slices topped with meat mixture and remaining mozzarella cheese.

Spray underside of aluminum foil with cooking spray; cover dish tightly with foil. Bake 30 minutes. Let stand 10 minutes before serving.

MEXICORN CHICKEN

This is one of my inventions, and can be found in my e-book, Off the Wall Cooking.

2 – 3 lb. chicken, cut up

12 oz. can Mexicorn

3 T oil

1 can condensed tomato soup

1 onion, chopped

1 C water

2 cloves garlic, minced

1 T soy sauce

2 T wheat germ

1 T honey

Brown chicken in oil. Put in baking dish. Brown onion, garlic & wheat germ, stirring. Pour over chicken. Add mexicorn, soup, water, soy sauce & hone. Bake at 350 degrees for 1 hour.

SUPER CHILI

Another one of my inventions, this can also be found in my e-book, Off the Wall Cooking.

2 C pinto beans

2 T oil or butter

4 C water

1 lb. ground beef

4 – 8 cloves garlic, minced

1/4 lb. bacon, chopped

2 – 4 onions, chopped

28 oz. can tomatoes (undrained)

2 T chili powder

6 oz. can tomato paste

1 tsp. oregano

1 T chili powder

Soak beans in water for several hours. Drain & place in 4 C water. Add 2-4 cloves garlic, 1 onion & 1 T chili powder. Bring to boil, stir, reduce heat, cover & simmer several hours, or until soft & creamy. Add tomato paste & 1 T chili powder & water as needed. Stir, cover & let simmer 30 more minutes. While beans are simmering, brown 1-3 onions, 2-4 cloves garlic & ground beef in butter. Add to beans. Cook bacon & add to beans. Add tomatoes, oregano & 1 T chili powder. Cook for 1-1 1/2 hours. Great for anyone who likes good, hot chili. Better the next day.

AU GRATIN POTATOES

This was in a Weight Watchers' email years ago. The recipe begins, “Our cheesy potato dish is the perfect crowd pleaser: rich enough for your spouse and kids, yet light enough to keep your waistline slim.”

The POINTS® Value at that time listed this as 3 points.

Servings: 8; Preparation Time: 20 min; Cooking Time: 90 min; Level of Difficulty: Moderate

Ingredients

1 sprays cooking spray

1 Tbsp butter

1 medium onion, thinly sliced

2 Tbsp all-purpose flour

2 cup fat-free skim milk

2 pound Yukon Gold potatoes, thinly sliced

1 cup low-fat shredded cheddar cheese

1 tsp table salt

1/4 tsp black pepper

Instructions

Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.

Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper. Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.

Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

HOT AND SOUR SOUP

This comes from Publix Supermarket's Aprons. Makes 6 servings.

1/4 cup green onions (2 – 3 onions)

1 (28-ounce) can chop suey vegetables (drained)

4 1/4 cups water

1 cup sliced fresh mushrooms

1/2 cup hoisin sauce

1 tablespoon miso paste

1/2 cup shredded carrots

2 teaspoons chili bean sauce

1 tablespoon vegetable base

1/4 cup Oriental salad dressing

2 tablespoons cornstarch

Wash onions and remove any wilted portions. Chop enough green onions into 1/4-inch pieces to measure 1/4 cup, including up to half of green tops. Discard tops or reserve for another use. Set aside.

Open can of vegetables and drain liquid by squeezing lid against vegetables. Set aside.

Place in large saucepan: 4 cups water, onions, vegetables, mushrooms, hoisin sauce, miso paste, carrots, bean sauce, vegetable base and salad dressing. Bring to boil on medium-high heat. Place 1/4 cup water and cornstarch in 2-cup measuring cup. Stir together until creamy. When boiling, stir in cornstarch mixture. Reduce heat to low and simmer 10 minutes. Serve.
