Where's the Beef?

It's time for another Double-Post Thursday. Here are six beefy recipes to help you through the day. Enjoy!

MAKE-AHEAD ITALIAN MEATBALLS

This comes from FamilyTime.com, and begins, “Keep these easy-to-make meatballs on hand for last-minute dinner creations. Tossed with pasta or baked into a casserole, the possibilities are endless!” Serves: makes 30 appetizer meatballs; Prep Time: 15 minutes; Cook Time: 15 minutes

Ingredients

1 pound ground beef

1 medium onion, chopped (1/2 cup)

1/3 cup Progresso® dry bread crumbs, (any flavor)

1/4 cup milk

1 egg

1 teaspoon salt

1/8 teaspoon pepper

1 cup chili sauce

1/2 cup cold water

1 jar (12 ounces) tomato pasta sauce, (any variety)

1 teaspoon yellow mustard

Directions

Heat oven to 400ºF.

Mix ground beef, onion, bread crumbs, milk, egg, salt and pepper. Shape mixture into thirty 1-inch balls. Place in ungreased rectangular pan, 13x9x2 inches.

Bake uncovered about 15 minutes or until no longer pink in center and juice is clear. (To serve immediately, continue as directed in step 5--except decrease simmer time to 15 minutes.)

Place meatballs on ungreased cookie sheet. Freeze uncovered about 20 minutes or until firm. Place partially frozen meatballs in heavy plastic bag or freezer container. Seal, label and freeze no longer than 3 months.

About 25 minutes before serving, mix chili sauce, water, pasta sauce and mustard in 2-quart saucepan. Add meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer about 20 minutes or until meatballs are hot.

SWEDISH MEATBALLS

This comes from PureWow, and begins, “Listen, if you can brave the cafeteria line at Ikea for a taste of those famous meatballs, then you can absolutely make this recipe in your own kitchen. Our version sticks pretty closely to the classic in terms of flavors--but it's how we cook the meatballs that makes all the difference. Serve them as an appetizer (an excuse to bust out those cocktail toothpicks) or over mashed potatoes for a warming dinner.” Makes 6 entree servings; start to finish: 1 hour

Ingredients

Meatballs

1 tablespoon olive oil

1 onion, diced

2 garlic cloves, minced

1 pound ground beef

1 egg

1 1/4 teaspoons salt

1 teaspoon freshly ground black pepper

1/2 teaspoon ground allspice

1/4 teaspoon ground nutmeg

3/4 cup plain bread crumbs

Sauce

2 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 1/2 cups beef broth

Salt and freshly ground black pepper, to taste

Chopped fresh parsley, for garnish

Directions

Preheat the oven to 375°F. Line a baking sheet with aluminum foil and grease it lightly with nonstick spray.

Make the meatballs: In a medium skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, 4 to 5 minutes. Add the garlic and cook until fragrant, 1 minute more. Cool to room temperature.

In a medium bowl, mix the cooled onion mixture with the beef, egg, salt, pepper, allspice and nutmeg to combine. Add the bread crumbs and mix to combine.

Form the mixture into 1-inch meatballs and then transfer the meatballs to the prepared baking sheet. Bake until golden brown and cooked through, 15 to 18 minutes.

Make the sauce: In a medium pot, melt the butter over medium heat. Whisk in the flour and cook, whisking constantly, until the mixture is golden brown, 3 to 4 minutes.

Gradually whisk in the beef broth and bring the mixture to a simmer. Simmer until the sauce is thick enough to coat the back of a spoon. Season with salt and pepper.

When the meatballs are fully cooked, transfer them to the sauce and toss to coat. Serve warm (preferably over mashed potatoes), garnished with parsley.

MEAT LOAF

Ingredients

1 tablespoon good olive oil

3 cups chopped yellow onions (3 onions)

1 teaspoon chopped fresh thyme leaves

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

3 tablespoons Worcestershire sauce

1/3 cup canned chicken stock or broth

1 tablespoon tomato paste

2 1/2 pounds ground chuck (81 percent lean)

1/2 cup plain dry bread crumbs (recommended: Progresso)

2 extra-large eggs, beaten

1/2 cup ketchup (recommended: Heinz)

Directions

Preheat the oven to 325 degrees F.

Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

STUFFED PEPPERS WITH GROUND BEEF AND RICE

This comes from Diana Rattray, About.com’s Southern Food expert. Diana wrote, “These traditional stuffed peppers are filled with ground beef and rice. It's classic comfort food, and it is one of our favorite recipes. This is a tried-and-true old-fashioned favorite. Stuffed bell peppers make a delicious meal with a tossed salad, or served with mashed or baked potatoes.

“Bake these stuffed peppers for a satisfying everyday family meal.”

Prep Time: 25 minutes; Cook Time: 85 minutes; Total Time: 110 minutes; Yield: 6 Servings.

Ingredients

6 green peppers, or use a combination of green and red bell peppers or other colors

1 tablespoons butter

1 tablespoon extra virgin olive oil

1/2 cup chopped onion

1/2 cup chopped celery

1 can (14.5 ounces) diced tomatoes

1 can (8 ounces) tomato sauce

1 clove garlic, crushed

1 teaspoon dried leaf oregano

1/2 teaspoon dried leaf basil

2 teaspoons salt, divided

1/2 teaspoon ground black pepper, divided

1 egg, lightly beaten

1 1/2 teaspoons Worcestershire sauce

1 1/2 pounds lean ground beef (at least 85%)

1 1/2 cups cooked long-grain rice

Shredded mild Cheddar cheese, about 1/2 to 3/4 cup, optional

Preparation

Cut the tops off of the bell peppers and rinse them under cold water; remove seeds and cut away the membranes, which might be bitter. Chop the edible part of tops and set aside. Place peppers in a large pot and cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain and set aside.

Heat the olive oil and butter in a large skillet over medium heat until the oil is hot and the butter is foamy. Sauté the chopped bell pepper (from the tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. Add the (undrained) canned diced tomatoes, tomato sauce, crushed garlic, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon of pepper. Bring to a simmer and cook for about 10 minutes.

In a large mixing bowl, combine the egg with the remaining 1 teaspoon of salt, 1/4 teaspoon of pepper, and Worcestershire sauce. Gently stir to blend; add ground beef, cooked rice, and 1 cup of the tomato sauce mixture. Mix well.

Heat the oven to 350° F.

Stuff the peppers loosely with the meat mixture and place in a 13-by-9-by-2-inch baking pan. Pour the remaining tomato mixture over the stuffed peppers.

Bake the peppers for about 45 minutes, or until the meat mixture is thoroughly cooked. To check the internal temperature, use an instant-read thermometer. The temperature should be at least 160° F for ground beef, pork or lamb, or 165° F for ground turkey or chicken.

Tips and Variations

Top stuffed peppers with a little shredded Cheddar cheese just before they are done and then return them to the oven and bake just until the cheese has melted.

Use green bell peppers or red bell peppers, or any combination of colors.

Ground turkey or ground chicken can be substituted for the ground beef in the recipe.

The peppers may also be halved horizontally so you have two halves to fill. You won't have the extra chopped pepper from the tops, but you can chop an extra bell pepper.

HAWAIIAN BURGERS

Ingredients

1 pound extra-lean ground beef

4 slices fresh pineapple, or canned, unsweetened, water packed variety

1 clove garlic, minced

2 scallions, minced

1 teaspoon fresh ginger, minced

1 teaspoon Worcestershire sauce

1 tablespoon low-sodium soy sauce

4 slices- 1 ounce each french bread

Directions

Mix the beef, garlic, scallions, ginger, and soy sauce together and form in 4 patties of equal size about 3/4" thick.

Grill or broil 4" from souce of heat, for 7 minutes for medium-rare turning once. Grill longer for well done burgers.

While burgers are grilling, brush 4 slices of fresh or canned water-packed unsweetened pineapple with 1 teaspoon Worcestershire sauce.

Grill until pineapple is heated through and seared with grill marks, about 6 minutes (2 minutes for canned pineapple).

Serve each patty open-face on a 1 oz toasted slice of French bread, topped with grilled slice, and garnished with 1 tablespoon minced green bell pepper.

CHIPOTLE CRANBERRY MEATBALLS

Ingredients

1 lb fresh ready-to-cook gourmet meatballs (any flavor)

2 tablespoons canola oil

1 (8-oz) package Deli cranberry-orange relish*

2 tablespoons chipotle pepper sauce

1/2 cup presliced green onions

Directions

Prepare meatballs following package instructions for skillet (using the oil). Meanwhile, combine relish, pepper sauce, and onions.

Drain any extra fat from meatballs, if needed. Reduce heat to low. Stir in cranberry mixture; cook 1–2 minutes, stirring often, or until thoroughly heated. Serve.

*This is a seasonal item; you can also use canned whole-berry cranberry sauce.

Friday Recipes

It's finally Friday, time for the weekend to start. For anyone who's dealt with the blizzard the past couple of days, stay safe and warm.

Here are six recipes to help you through the weekend, including Crock Pot Polish Cabbage Rolls and Coconut Cloud Cake. Enjoy!

COCONUT CLOUD CAKE

I’m really not sure where this came from. The only hint is that it was in a folder titled “Recipes from Facebook, etc.”

Ingredients

For the Cake

1 cup sifted cake flour

1 1/2 cups superfine sugar

14 large egg whites (1 3/4 cups), room temperature

1 tablespoon warm water

1/2 teaspoon salt

1 1/2 teaspoons cream of tartar

2 teaspoons vanilla extract

For the Seven-Minute Frosting

3 large egg whites

1 1/4 cups sugar

5 tablespoons cold water

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

For the Topping

3 to 4 cups flaked coconut

Directions

Preheat the oven to 350 degrees. With a fine sieve, sift together flour and 3/4 cups sugar four times.

In the bowl of a stand mixer on medium speed, beat together egg whites and water until foamy. Add salt, cream of tartar, and vanilla; beat until soft peaks form. Increase speed to medium-high and sprinkle in remaining sugar, 1 tablespoon at a time. Beat until stiff but not dry.

Transfer to a large bowl. In six additions, sift dry ingredients over meringue, folding in quickly but gently.

Pour batter into an ungreased 10-inch tube pan with removable bottom. Smooth top with an offset spatula. Run a knife through batter to release air bubbles. Bake for 35 to 40 minutes, until golden brown and springy to touch.

Invert pan on its legs or over the neck of a glass bottle, and let cool completely, about 1 hour.

Make the frosting: In the heatproof bowl of an electric mixer set over a saucepan of simmering water, combine egg whites, sugar, water, and cream of tartar. Cook over medium heat, whisking frequently, until sugar is dissolved and mixture is foamy, about 5 minutes.

Attach the bowl to a stand mixer fitted with the whisk attachment. Beat the mixture on high speed until glossy and voluminous, about 7 minutes. Beat in the vanilla.

Carefully run a long offset spatula or knife around the inner and outer perimeter of the cake pan to release cake.

Place on a plate, bottom side up. Using a long serrated knife, carefully slice off 1 1/2 inches from the top of the cake, being sure not to break the layer. Set aside. Cut out a 1-inch-wide, 1-inch-deep channel halfway between the center and edge of cake. Spread icing into channel and over entire layer. Sprinkle with coconut.

Gently place reserved layer on top and ice with remaining frosting. Sprinkle with coconut and serve immediately.

CROCK POT POLISH CABBAGE ROLLS

This comes from a long-since-forgotten-emailing-list. Serves 6 to 8.

Ingredients

1 green cabbage

1 lb. ground beef, browned

1/4 c. uncooked rice

1 egg, beaten

1 onion, minced

1 carrot, minced

1 tsp. salt

1/2 tsp. pepper

1/4 c. cider vinegar

1/2 c. brown sugar

8 oz. can tomato sauce

Directions

Mix ground beef, rice, egg, onion, carrot, salt & pepper. Mix together vinegar, brown sugar & tomato sauce. Drop cabbage in boiling water for 5 to 10 minutes. Remove 10 large leaves. Chop remaining cabbage. Place in bottom of crock pot. Place 2 to 4 tablespoons of meat mixture in center of each leaf. Roll up & use toothpick to hold. Place stem side down in crock pot. Pour on tomato mixture. Cover & cook on low for 8 to 10 hours.

INA GARTEN’S SKILLET-ROASTED LEMON CHICKEN

This was sent in a TODAY Show’s email. It begins with this from Ina Garten, “I can't tell you how many times I've made this! I have the butcher butterfly the chicken so all I do is grind the thyme, fennel seeds, salt, and pepper, mix it with olive oil, and brush it on the chicken. When the lemon slices are roasted and caramelized, you can eat them with the chicken.

Notes: Remove the ends of the lemon, cut in half through the stem ends, and slice thinly crosswise. Sometimes I sprinkle the chicken with minced fresh rosemary before allowing it to rest.

Make-ahead tip: Assemble the chicken in the pan and refrigerate for a few hours before roasting.”

Note: The recipe calls for 1/2 cup dry white wine, such as Pinot Grigio. I don’t keep alcohol around the house. Whenever I want to try a new recipe that has any kind of alcohol as an ingredient, I either use an alcohol-free version or, if it’s not available or I decide not to go that way, I substitute water. Ina, if you’re reading this, sorry! I still love your recipes!

Ingredients

2 teaspoons fresh thyme leaves

1 teaspoon whole fennel seeds

Kosher salt and freshly ground black pepper

1/3 cup good olive oil

1 lemon, halved and sliced 1/4-inch thick (see note)

1 yellow onion, halved and sliced 1⁄4-inch thick

2 large garlic cloves, thinly sliced

1 (4-pound) chicken, backbone removed and butterflied

1/2 cup dry white wine, such as Pinot Grigio

1 lemon, juiced

Preparation

Preheat the oven to 450ºF.

Place the thyme, fennel seeds, 1 tablespoon salt, and 1 teaspoon pepper in a mini food processor and process until ground. Pour the olive oil into a small glass measuring cup, stir in the herb mixture, and set aside.

Distribute the lemon slices in a 12-inch cast-iron skillet and distribute the onion and garlic on top. Place the chicken, skin side down, on top of the onion and brush with about half the oil and herb mixture. Turn the chicken skin side up, pat it dry with paper towels (very important!), and brush it all over with the rest of the oil and herb mixture.

Roast the chicken for 30 minutes. Pour the wine into the pan (not on the chicken!) and roast for another 10 to 15 minutes, until a meat thermometer inserted into the thickest part of the breast registers 155 to 160 degrees.

Remove the chicken from the oven, sprinkle it with the lemon juice, cover the skillet tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Cut the chicken into quarters or eighths, sprinkle with salt, and serve hot with the pan juices, cooked lemon, and onion.

CREAMY MACARONI AND CHEESE

This comes from Julia Moskins in The New York Times cooking e-newsletter. The recipe begins, “Here is Julia Moskin's fantasy of what this dish should be: nothing more than tender elbows of pasta suspended in pure molten cheddar, with a chewy, golden-brown crust of cheese on top.” Yield: 6 to 8 servings; Time: 1 hour 40 minutes.

Ingredients

2 tablespoons butter

1 cup cottage cheese (not lowfat)

2 cups milk (not skim)

1 teaspoon dry mustard

Pinch cayenne

Pinch freshly grated nutmeg

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 pound sharp or extra-sharp cheddar cheese, grated

1/2 pound elbow pasta, uncooked

Preparation

Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to butter a 9-inch round or square baking pan.

In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper together. Reserve 1/4 cup grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.

Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

BAKED APPLES

This came from an old Weight Watcher’s email, and had a points value of 3 points each. I have no idea what the new points value each serving would have now, nor do I have the exact email to find the recipe. Very yummy, though.

4 apples, small

1 C applesauce, unsweetened

1/4 tsp ground cinnamon

1 Tbsp brown sugar

1/4 C water

2 C vanilla nonfat yogurt

1/4 ground cinnamon

4 tsp pecans or walnuts, toasted & chopped

Core apples, leaving bottom intact so they can be filled. Place upright in small glace microwaveable baking dish. Stir applesauce, cinnamon & brown sugar. Spoon mixture into apples. Pour water into bottom of baking dish. Cover dish & microwave at medium for 12-15 minutes until apples are soft. Remove from microwave & allow to cool. Spoon yogurt over each apple, garnish with a sprinkle of cinnamon & toasted pecans or walnuts.

CREAM OF WILD MUSHROOM SOUP

While many of us think of cream of mushroom soup as a canned soup, something to stock on your shelf, this yummy recipe is anything but. This rich-based recipe comes from Ina Garten, star of The Food Network's Barefoot Contessa. Total Time: 1 hr 50 min; Prep: 20 min; Cook: 1 hr 30 min; Yield: 5 to 6 servings; Level: Intermediate

Ingredients

5 ounces fresh shiitake mushrooms

5 ounces fresh portobello mushrooms

5 ounces fresh cremini (or porcini) mushrooms

1 tablespoon good olive oil

1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided

1 cup chopped yellow onion

1 carrot, chopped

1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided

Kosher salt

Freshly ground black pepper

2 cups chopped leeks, white and light green parts (2 leeks)

1/4 cup all-purpose flour

1 cup dry white wine

1 cup half-and-half

1 cup heavy cream

1/2 cup minced fresh flat-leaf parsley

Directions

Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if there are big, cut them into bite-sized pieces. Set aside.

To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water.

Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. Serve hot.

SLOW COOKER TORTILLA SOUP

This comes from The Food Network's Melissa d'Arabian, who writes, “This Mexican-inspired chicken, tomato, and bean soup practically cooks itself. I pile the ingredients into a slow cooker while I'm off doing far more glamorous things (like working, picking up dry cleaning, or dropping off a forgotten lunch at school!). My weekday cheat is to use tortilla chips instead of fresh tortillas. My favorite kind are the better-for-you baked white tortilla chips with a hint of lime, but any kind will do. If I'm feeling fancy, I'll add cubed avocado and sour cream before serving. If you have leftover cooked rice in the fridge, a spoonful in the soup is a nice touch, and for a less spicy flavor remove the jalapeno seeds and ribs.” Total Time: 3 hr 10 min; Prep Time: 10 min; Cook Time: 3 hr; Yield: 4 servings.

3 chicken thighs, skin removed

10 -ounce can diced tomatoes with green chiles

1 1/2 cups cooked black beans

1 1/2 cups chicken broth

1 1/2 cups water

1 yellow onion, finely chopped

3 garlic cloves, finely minced

1 jalapeno, finely chopped

Directions

Place the chicken, tomatoes (and juices), beans, broth, water, onion, garlic, jalapeno, cumin, and chili powder in a slow cooker. Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours.

Uncover the slow cooker and use tongs to remove the chicken from the pot. Once cool enough to handle, remove the meat from the bones and shred, then return the meat to the pot. Stir in the lemon juice. Crumble a few tortilla chips into each bowl and cover with some soup. Serve sprinkled with cilantro and grated cheese.

BAKED BEANS

This comes from Sam Sifton of The New York Times' Cooking e-newsletter. Sam writes, “Proper Boston baked beans would have salt pork instead of the bacon. James Beard cooked them with ribs. The key is to use the little white pea beans known as navy beans, and to allow time to do most of the work. (Or to cheat: Canned white beans make fantastic baked beans in about an hour. If you use them, you'll need four 15-ounce cans. Drain and then follow the directions from step 2 on to the end. Please understand that you’ll need much less water and much less time to get them where you want them to be.) The combination of molasses and dry mustard is a taste as old as America itself, and takes well to both ham and soft brown bread.” Makes 6 to 8 servings.

Ingredients

2 cups navy beans

Salt

1/2 pound slab bacon, cut into cubes

1 medium onion, peeled and chopped

1/3 cup molasses

2 teaspoons dry mustard

Preparation

Soak beans in a large bowl of water for 6 hours or overnight. Drain beans and put them in a large oven-safe pot with a heavy bottom and a tightfitting lid. Add 1 teaspoon salt and enough cool water to cover 2 inches above the beans. Bring to a boil, then lower the heat and simmer gently, stirring occasionally, until the beans are just tender, approximately 30 to 40 minutes. Drain and remove beans.

Heat the oven to 250 degrees. Bring a kettle full of water to a boil on the stove. Return the heavy-bottomed pot to the stove and turn the heat to medium high. Cook the bacon in the bottom of the pot until it begins to brown, then turn off the heat and add the chopped onion and, on top of it, the beans. Mix together molasses, mustard and black pepper, and add the mixture to the pot. Pour in enough boiling water to cover beans, put the lid on and bake, occasionally adding more water to keep beans covered, until they are tender but not falling apart, 4 to 5 hours.

Remove beans from oven, uncover, stir and season with salt. With the lid off, return pot to oven and let beans finish cooking, uncovered and without additional water, until the sauce has thickened and the top is deeply crusty, about 45 minutes more.

CRANBERRY COFFEE CAKE

This comes from the infamous long-since-forgotten-emailing-list. Serves 6 to 8.

2 cups fresh or thawed frozen cranberries

1 3/4 cups sugar

2 cups flour

2 tsp baking powder

3/4 tsp salt

1/2 cup unsalted butter, softened

2 large eggs

1 tsp vanilla

1/2 cup whole milk

Preheat oven to 350 degrees.

Pulse cranberries with 1/2 cup sugar in a food processor until finely chopped (do not puree). Transfer to a sieve and let drain while making batter.

Sift together flour, baking powder & salt. Beat together butter and remaining sugar in a large bowl with an electric mixer at medium high speed until light and fluffy, about 5 to 8 min. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Reduce speed to low and add flour mixture and milk alternating in batches, beginning and ending with flour and mixing until just incorporated.

Spread 1/3 of batter evenly in well buttered 9x5-inch loaf pan, then spoon half of drained cranberries evenly over batter, leaving a 1/2-inch border along sides. Top with another 1/3 of batter and remaining cranberries, leaving a 1/2-inch border along sides, then cover with remaining batter. Bake in middle of oven until golden brown and a tester comes out without crumbs, 1 to 1 1/4 hours. Cool cake in pan on a rack 30 min. Invert cake onto rack. Serve warm or at room temperature.

BEVERLY'S CREAMY BROCCOLI CHICKEN

boneless chicken breasts (as many as you need) - I buy the frozen ones with 6-7 in a bag - approx. 3 pounds

1 bag (12 to 16 ounces) frozen broccoli

salt and pepper

1 cup milk

Preparation

Place chicken pieces in the crock pot. Cover with the frozen broccoli and spoon the cream of broccoli soup over all. Add salt and pepper to taste.

Cover and cook on LOW 6 to 8 hours or on HIGH 3 to 4 hours. (Boneless chicken breasts might be dry if cooked too long.) Add milk about 45 minutes before done, or 30 minutes if cooking on high.

Serve poured over rice!!! Yummy!

CRANBERRY APPLE CRISP

Since Thanksgiving is a week from tomorrow, don't be surprised to see more and more recipes sneak in here to help with the holiday meal. Of course, that doesn't mean you can't cook some of these yummy recipes throughout the year. Enjoy!

15-MINUTE FRIED HERBED CHICKEN

This comes from Mark Bittman of the New York Times' cooking newsletter. Mark writes, “This chicken takes so little time but tastes so good that it raises the bar for weeknight cooking. Chicken pieces are smothered in an herb and onion paste, dredged in flour and fried in the amount of time needed to make a salad. The amount of oil you need to crisp up the chicken is minimal, and the flavor is terrific.” Time: 15 minutes; makes 4 servings.

Ingredients

2 to 3 cloves garlic

1 medium onion, roughly chopped

1 to 2 tablespoons mixed fresh herbs, like tarragon and sage

2 tablespoons tahini or peanut butter

1/4 cup olive oil, more for frying

Flour for dredging

6 boneless, skinless chicken thighs or 4 half-breasts

Chopped fresh parsley leaves for garnish

Lemon wedges for serving

Salt to taste

Preparation

In a blender or the container of a food processor, combine garlic, onion, herbs and tahini. As you purée the mixture, slowly add just enough olive oil through the feed tube to make a thick, smooth paste; do not let it get too thin.

Put flour in a shallow bowl. Place chicken in another bowl. Rub puréed mixture over chicken, then dredge each piece in flour. Gently shake off any excess flour, coat again with paste and dredge once more in flour.

Heat 1/4 inch olive oil in a skillet; when it is hot, fry chicken for about 4 minutes each side, until well browned and cooked through; it will take longer if you use chicken with the bone in. Garnish with parsley and serve hot or warm, with lemon wedges.

GARLIC MASHSED POTATOES

Is there anything more comforting than mashed potatoes? This comes from Florence Fabricant, also from the New York Times' cooking newsletter. Florence writes, “These are classic mashed potatoes, brightened up with a substantial amount of garlic. Feel free to adjust the garlic to taste, and to deepen the flavor, try roasting the cloves before mixing them in with the potatoes. (For everything you need to know to make perfect potatoes, visit our potato guide.)” Time: 40 minutes; makes 6 servings.

Ingredients

3 pounds Idaho potatoes, peeled

6 cloves garlic, peeled

3/4 cup hot milk

Salt and freshly ground black pepper

6 tablespoons unsalted butter, softened, or 2 tablespoons olive oil

Preparation

Cut the potatoes into uniform two-inch chunks and place in a heavy saucepan along with the garlic. Cover with water, bring to a boil, lower heat to medium and cook until the potatoes are tender, about 20 minutes.

Drain the potatoes and garlic and mash the potatoes and garlic together. Stir in the hot milk, season to taste with salt and pepper and add the butter (less if desired) or oil. Serve at once.

PARKER'S SPLIT PEA SOUP

1 cup chopped yellow onions

2 cloves garlic, minced

1/8 cup good olive oil

1/2 teaspoon dried oregano

1 -1/2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

2 cups medium-diced carrots (3 to 4 carrots)

1 cup medium-diced red boiling potatoes, unpeeled (3 small)

1 pound dried split green peas

8 cups chicken stock or water

Directions

In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

CREAM OF PUMPKIN SOUP

Ingredients

2 tbsp butter

1/2 yellow onion, sliced thin

1/2 cup peeled, thinly sliced carrots

1 rib celery, trimmed and chopped

2 cups canned pure pumpkin (not pumpkin pie filling!)

3 cups chicken broth

Ground white pepper, to taste

1/4 tsp ground ginger

1 1/2 tsp salt

1 cup cream or half-and-half

Shelled pumpkin seeds for garnish, optional

Preparation

In a 4-qt saucepan, saute the onions in butter until transparent. Add all the other ingredients, except the cream. Bring to a simmer and cook, stirring occasionally, until the vegetables are very soft.

Place in a blender and carefully puree until completely smooth. Pour back into the saucepan and add the cream. Bring back to a gentle simmer, turn off heat, and adjust the seasoning if necessary.

Serve in warm bowls, and garnish with pumpkin seeds.

WICKED-GOOD CRANBERRY SAUCE

This comes from Kathy Kingsley, another of About.com's American Food experts. Kathy writes, “There's probably no condiment more associated with a holiday than cranberry sauce. 1 /2 cups sugar

2 teaspoons grated orange zest

1/2 cup fresh orange juice

1 teaspoon grated fresh ginger

4 cups fresh cranberries

1/2 cup chopped toasted pecans

Preparations

In a medium saucepan, combine the sugar, orange zest, orange juice and ginger. Cook over medium heat, stirring occasionally, until the sugar is dissolved.

Add the cranberries and cook, stirring occasionally, unit they pop and burst and the sauce has thickened, 5 to 10 minutes. Remove from the heat and let cool slightly. Stir in the pecans.

PUMPKIN SPICE LATTE

2 tablespoons canned pumpkin

1/2 teaspoon pumpkin pie spice

1 1/2 tablespoons brown sugar

2 teaspoons vanilla extract

1 1/2 cups whole milk

1/2 cup heavy or whipped cream

2 shots fresh-brewed espresso (about 1/4 cup)

Preparation

In a medium bowl, combine the pumpkin, pumpkin pie spice, brown sugar, vanilla extract, milk and cream and whisk until the mixture is well blended.

Pour the mixture into a medium saucepan and heat over medium-low heat, whisking occasionally, until the mixture is heated through, do not boil. Remove the pan from the heat and whisk vigorously until frothy (you can also do this with a hand blender).

Divided the espresso among 2 mugs and top with the frothed pumpkin spice mixture. Sprinkle the top with a little pumpkin spice mix and serve.

MAC AND CHEESE

Vegetable oil

Kosher salt

1 pound elbow macaroni or cavatappi (see Note)

1 quart milk

8 tablespoons (1 stick) unsalted butter, divided

1/2 cup all-purpose flour

12 ounces Gruyere cheese, grated (4 cups)

8 ounces extra-sharp cheddar, grated (2 cups)

1/2 teaspoon freshly ground black pepper

1/2 teaspoon grated nutmeg

3/4 pound fresh tomatoes (4 small)

1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Directions

Preheat the oven to 375 degrees F.

Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.

Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, cheddar, 1 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3-quart baking dish.

Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Note: To make ahead, put the macaroni and cheese in the baking dish, cover, and refrigerate until ready to bake. Put the tomatoes and bread crumbs on top and bake for about 40 to 50 minutes.

PERFECT PEACH PIE

This is from Sam Sifton, founding editor of NYT Cooking. He wrote, “Eat a perfect peach under the summer sun and you'll experience the fruit at its messy, dripping, sugar-bright best. Rinse your chin and understand that no melon, apricot or blackberry can compete. But how often does this happen? For most of us, a great and truly perfect peach is a rare event. We can expect but one or two a season, for all our trying. Enter the pie. A peach pie can elevate good peaches to excellence and great ones to the sublime. Even a peach pie made with frozen fruit is a terrific thing. The addition of sugar helps; so, too, do a dash of lemon juice and a light sprinkle of nutmeg, which offers a slight bitterness to offset the sweet. Add a crown of vanilla ice cream for a perfect diner-style à la mode effect.” Serves 6 to 8 in 2 hours.

Ingredients

For The Pie Dough:

2 1/2 cups or 300 grams all-purpose flour

12 tablespoons or 169 grams unsalted butter, cold, cut into 1/2-inch cubes

1 teaspoon kosher salt

Yolk of 1 egg, beaten

1 teaspoon cider vinegar

1/4 cup water, from 3/4 cup ice water

White of 1 egg, beaten

Pinch granulated sugar

For The Filling:

6 or 7 ripe peaches, peeled and sliced, approximately 5 cups

2 tablespoons lemon juice

1 cup granulated sugar

1/4 cup or 30 grams all-purpose flour

Pinch of ground nutmeg

Preparation

Make the pie dough. Using your fingertips or the pulse function of a food processor, blend together the flour, butter and salt until the mixture resembles a coarse meal. There should be pebbles of butter throughout the mixture.

Add egg yolk and vinegar to 1/4 cup ice water, and stir to combine. Drizzle 4 tablespoons of this mixture over the dough, and gently stir or pulse to combine. Gather a golf-ball-size bit of dough, and squeeze to combine. If it does not hold together, add a little more of the liquid, and stir or pulse, then check again. Repeat as necessary.

Turn the dough out onto a lightly floured surface, and gather together into a rough ball. Divide the ball in half with a knife or a pastry scraper, then divide each portion in half again, and again, to create 8 portions. Using the heel of your hand, flatten each portion of dough once or twice to expand the pebbles of butter, then gather the dough together again in one ball. Divide this ball in half.

Flatten each ball into a 5- or 6-inch disc, one slightly larger than the other. Wrap the discs in plastic wrap, and place in the refrigerator for at least 60 minutes.

Preheat oven to 425. Make the pie filling: Combine sliced peaches, lemon juice, sugar and flour in a large bowl, and gently mix to combine. Set aside.

Take the larger of the pastry discs out of the refrigerator, roll it out on a lightly floured surface and place in a 9-inch pie plate. Add the peaches. Sprinkle them with the ground nutmeg.

Roll out second disc of pastry. Place on top of filling. Wet edges of the bottom pastry disc with some cold water. Trim pastry, pinch bottom and top edges together and cut a few slits to allow steam to escape from the pie. Brush the egg white on the top, particularly around the edges, and sprinkle with a pinch of granulated sugar.

Bake the pie for 15 minutes, then reduce heat to 375. Cook until peaches bubble and pastry is golden, approximately 45 minutes to an hour.

BONELESS BUFFALO WINGS

Yield: 4 servings

Serving Size: 2 oz. chicken per serving

Dressing Ingredients:

1/2 cup reduced-fat blue cheese dressing

1/4 cup low-fat mayonnaise

3 tablespoons crumbled blue cheese

Celery Sticks

Directions

Preheat the oven to 375 degrees F.

In a shallow bowl, combine the hot sauce, cayenne, and paprika. Roll the chicken tenders in the mixture.

Place the chicken tenders on a small nonstick baking sheet.

Bake, uncovered, for 15 minutes until chicken is tender.

Combine the dressing ingredients.

Serve the dressing with the chicken and celery sticks.

CHERRY TOMATO FOCACCIA

This is from the July/August 2012 issue of Vegetarian Times, page 61. The recipe starts out with, “This bread is hearty enough to be served with a salad for a light lunch or supper.” Serves 8.

Topping

1/4 cup shelled roasted pistachios

1/4 cup olive oil

1 clove garlic, minced (1 tsp.)

1/2 tsp. finely chopped fresh rosemary

2 cups heirloom cherry tomatoes, halved

Focaccia

3 1/2 cups bread flour

1 Tbs. sugar

2 1/2 tsp. instant yeast

2 tsp. salt

Olive oil, for greasing baking sheet

To make Topping: Pulse pistachios in food processor until ground, but with some larger pieces. Transfer to bowl, and stir in olive oil, garlic, and rosemary.

To make Focaccia: Stir together flour, sugar, yeast, salt, and 1 1/4 cups water in bowl. Knead dough in bowl 5 minutes. Cover bowl with towel, and let rise 1 hour, or until doubled in size.

Generously grease rimmed baking sheet with olive oil. Stretch dough into 12- x 11-inch rectangle in sheet pan. Let dough rise 1 hour.

Preheat oven to 450°F. Dimple dough with fingers. Whisk 2 Tbs. water into pistachio mixture, and brush onto dough. Press tomato halves cut-side up into dough. Bake 25 to 30 minutes, or until golden brown on top and bottom.

CLASSIC BLUEBERRY PIE

This recipe comes from Seattle's Macrina Bakery. The recipe starts out, “Few things in life are as wonderful as homemade blueberry pie. It is heaven on earth! I recommend using slightly tart organic blueberries whenever possible.”

Makes one 9-inch double-crusted pie

7 cups (3-1/2 pints) organic blueberries

3/4 cup granulated sugar

1/4 cup light brown sugar

2 teaspoons freshly grated lemon zest

1 teaspoon cinnamon

1 teaspoon pure vanilla extract

3 tablespoons unbleached all-purpose flour

One top and bottom pie crust, chilled

1 tablespoon unsalted butter, cut into small pieces

Egg wash made with 1 egg and 1 teaspoon water

Coarse raw sugar


Vanilla ice cream, for serving

Sort through the blueberries, removing any stems and leaves. Gently rinse the berries and lay them out on paper towels to air dry.

Combine 3-1/2 cups of the blueberries, granulated sugar, brown sugar, lemon zest, cinnamon, vanilla extract and flour in a medium saucepan. Mix with a spoon. Cook over medium heat until the fruit juices have been released and the mixture has thickened, 5 to 8 minutes, stirring frequently to keep the mixture from burning. Pour the cooked fruit into a large stainless steel bowl and add the remaining blueberries. Stir with a spoon and set aside until the fruit has cooled to room temperature.

Divide the chilled pie dough into 2 pieces, making one piece slightly larger than the other. Coat your hands with flour and shape the larger piece of dough into a ball. Working on a floured surface, flatten the ball slightly, then roll it into a 12-inch circle, about 1/8-inch thick. Fit the rolled dough into a 9-inch pie pan. Trim the edges of the dough to leave a 1-inch overhang around the pan. Roll out the remaining piece of dough 1/8-inch thick and trim it into a 10-inch circle. Set aside. This will be the top crust.

Pour the cooled fruit into the pie shell and dot with butter. Brush the top side of the overhanging dough with a little egg wash. Lift the top crust onto the pie, folding it in half to make it easier to accurately position. Lift the overhanging dough onto the top crust and crimp with your fingers. Mark the crimped edges with a fork, then brush all of the crust with egg wash. Sprinkle with coarse raw sugar and chill in the refrigerator for at least 30 minutes.

Preheat oven to 375 degrees F. Line rimmed baking sheet with parchment paper.

Place the pie on the prepared baking sheet. Using a sharp knife cut 4 slits in the center of the crust. Bake pie for 50 to 55 minutes. The crust will be golden brown and the fruit will be bubbling in the center of the pie. Let cool for 30 to 40 minutes. Serve with vanilla ice cream.

BROCCOLI CHOWDER

From Diabetic Gourmet. Yield: 6 servings, 1 cup each

1 tablespoon extra-virgin olive oil

1 large onion, chopped (1-1/2 cups)

1 large carrot, diced (1/2 cup)

2 stalks celery, diced (1/2 cup)

1 large potato, peeled and diced (1-1/2 cups)

2 cloves garlic, minced

1 tablespoon all-purpose flour

1/2 teaspoon dry mustard

1/8 teaspoon cayenne pepper

3-1/2 cups vegetable broth (two 14-ounce cans)

8 ounces broccoli crowns, cut into 1-inch pieces, stems and florets separated (3 cups)

1 cup grated reduced-fat Cheddar cheese

1/2 cup reduced-fat sour cream

1/8 teaspoon salt, or to taste

Directions

Heat oil in a Dutch oven or large saucepan over medium-high heat. Add onion, carrot and celery; cook, stirring often, until the onion and celery soften, 5 to 6 minutes. Add potato and garlic; cook, stirring, for 2 minutes. Stir in flour, dry mustard and cayenne; cook, stirring often, for 2 minutes. Add broth and broccoli stems; bring to a boil. Cover and reduce heat to medium. Simmer, stirring occasionally, for 10 minutes. Stir in florets; simmer, covered, until the broccoli is tender, about 10 minutes more.

Transfer 2 cups of the chowder to a bowl and mash; return to the pan. Stir in Cheddar and sour cream; cook over medium heat, stirring, until the cheese is melted and the chowder is heated through. Season with salt.
