Pasta

I have loved Pasta most of my life. To that end, here are six pasta recipes to help you through the day, including One-Pan Spaghetti and Meatballs and Pepperoni Pizza Pasta. Enjoy!

SPICY, CREAMY WEEKNIGHT BOLOGNESE

This is from Genevieve Ko at The New York Times cooking enewsletter. For this recipe, Genevieve wrote, "This pasta sauce captures the soul-soothing essence of a long-simmering Bolognese even though it cooks quickly. Searing ground beef gives it a caramelized taste that mimics the depth of slow-cooked meat. Adding a few spoonfuls of red curry paste doesn’t make it taste like curry, but gives it instant nuance and depth. Some rich cream at the end rounds the sharp heat to an enveloping warmth. To save even more time, you can chop the vegetables while the meat is cooking. The sauce tastes great on any type of pasta, but it’s especially nice with varieties that can capture it in their curves."

Prep Time: 10 minutes; Cook Time: 25 minutes; Total Time: 35 minutes

This was featured in "A (Sort-Of) Bolognese Fast and Easy Enough for Hard Nights," and can be viewed online at https://cooking.nytimes.com/recipes/1026551-spicy-creamy-weeknight-bolognese. While you're at it, if you haven't already signed up for The New York Times cooking enewsletter, I highly recommend it. Great recipes, guides, and more.

Ingredients

Salt and black pepper

1 pound ground beef (at least 20 percent fat)

1 large onion, finely chopped

2 carrots, peeled and finely chopped

2 to 3 tablespoons red curry paste

1 (15-ounce) can tomato sauce

1 pound short, curled pasta, such as pipettes

1 cup heavy cream

Preparation

Bring a large pot of salted water to a boil.

Meanwhile, heat a large Dutch oven or heavy pot over high until very hot. Add the beef, and smush and spread in a single layer. Sprinkle with salt and pepper, then cook, stirring, to break into tiny bits and cook through, 4 to 5 minutes.

Push the meat to one side, and add the onion and carrots to the beef fat on the other side. Sprinkle with salt and pepper, and cook, stirring occasionally with the beef, until the onion is translucent, about 5 minutes.

Add the curry paste, 2 tablespoons for a mild spiciness and 3 for more heat, and stir until darkened in color, 2 to 3 minutes. Pour in the tomato sauce, then fill the can a third of the way up with water to swish out the rest of the sauce into the pot. Stir, bring to a simmer, then reduce the heat to low and simmer while the pasta cooks.

Cook the pasta in the boiling water until al dente. Save 1/2 cup pasta cooking water, then drain the pasta and add to the simmering sauce.

Stir the cream into the sauced pasta, taste and season with salt and pepper. For a thinner sauce, stir in a bit of the pasta water. Serve hot.

CHICKEN SPAGHETTI

This comes from Southern Living, and begins, "Give your traditional chicken casserole a break and serve this bright and lively chicken spaghetti. You only need a Dutch oven and a 9-x-13 baking dish to create this delicious meal, meaning there is less clean-up afterwards. Cook and shred your chicken in advance to save time."

Active Time: 30 minutes; Total Time: 1 hour 35 minutes; Serves: 10

To view this online, go to https://www.southernliving.com/recipes/easy-chicken-spaghetti.

Ingredients

6 cups unsalted chicken stock

1 (14-oz.) bone-in, skin-on chicken breast, skin removed

3 (7-oz.) bone-in, skin-on chicken thighs, skin removed

12 ounces uncooked spaghetti

1 (5-oz.) can evaporated milk

2 tablespoons all-purpose flour

1 tablespoon lower-sodium Worcestershire sauce

2 teaspoons hot sauce

2 teaspoons kosher salt

2 tablespoons unsalted butter

1-1/2 cups chopped yellow onion (about 1 medium onion)

1-1/2 cups chopped red bell pepper (about 1 large pepper)

2 cups chopped tomatoes (about 3 medium tomatoes)

4 ounces sharp white Cheddar cheese, shredded (about 1 cup)

Directions

Preheat oven to 400°F. Bring stock to a boil in a Dutch oven over high. Add chicken to stock. Cover; reduce heat to medium. Cook until a thermometer inserted in thickest piece of chicken registers 160°F, about 25 minutes. Remove chicken; let stand until ready to use. (Inner temperature of chicken will rise as it stands.)

Return stock to a boil over high. Add pasta to Dutch oven, and cook until just tender, about 9 minutes. Transfer pasta to a medium bowl (reserving stock). Return stock to a boil over high; boil until liquid is reduced to about 2-1/2 cups, about 1 minute. Whisk together evaporated milk and flour in a small bowl. Stir into stock; boil until slightly thickened, 2 minutes. Remove from heat; stir in Worcestershire sauce, hot sauce, and salt. Pour stock mixture over pasta.

Return Dutch oven to medium-high heat. Add butter, onion, and bell pepper. Cook, stirring often, until tender, 5 to 6 minutes. Remove from heat; add pasta mixture back to Dutch oven. Shred chicken, discarding bones. (You should have about 4-1/2 cups meat.) Add chicken and tomatoes to Dutch oven; toss to coat. Pour mixture into a 13- x 9-inch baking dish coated with cooking spray. Top with cheese. Lightly coat aluminum foil with cooking spray. Cover with foil; bake until cheese is melted, 25 to 30 minutes.

Chef's Notes

You don't have to be a food stylist to create a casserole that looks as good as it tastes. Instead of pouring the pasta mixture from the pot into the baking dish, use tongs and a large spoon to twirl the noodles into nests, as shown below.

ONE-POT CHICKEN ALFREDO PENNE

This is also from Pillsbury, and begins, "We love it when a recipe requires just a handful of ingredients and only 20 minutes to come together. But wait, there’s more—you only need one pot to make this simple pasta dish! All of that good news—plus the rich, creamy cheese sauce combined with pasta, peas and rotisserie chicken—make this a meal everyone in the family will applaud for when you bring it to the table."

Prep Time: 20 minutes; Total Time: 20 minutes; Makes 8 servings

To view this online, click here.

Ingredients

1 can (12 oz) evaporated milk

1 lb uncooked penne pasta

1 box (9 oz) frozen sweet peas

2 cups shredded or pulled deli rotisserie chicken

1 jar (15 oz) Alfredo pasta sauce

1 cup grated Parmesan cheese

Directions

In nonstick 5-quart Dutch oven, heat evaporated milk, 4 cups hot water and the pasta to boiling over high heat. Reduce heat to medium-high; cook 7 minutes, stirring frequently; do not drain. Meanwhile, microwave peas as directed on box; drain peas.

Reduce heat to medium. Stir in chicken and Alfredo sauce. Cook 3 minutes longer, stirring frequently.

Remove from heat; stir in peas and cheese.

Tips from the Pillsbury Kitchens

tip 1

Tired of chicken? Substitute chopped ham or cooked shrimp for a delicious twist.

tip 2

A 5-oz bag of baby spinach makes a nice substitution for the peas. Just stir it in with the cheese. Keep stirring until the heat from the pasta wilts the greens.

tip 3

Evaporated milk is a shelf-stable canned cow’s milk-based product where more than 50% of the water has been removed. This makes it thicker and creamier than fresh milk, which is why it’s great for making the alfredo sauce in this pasta dish. You can often find evaporated milk in the baking aisle at the grocery store.

ONE-PAN SPAGHETTI AND MEATBALLS

This recipe comes from Pure Wow, and begins, “Guys, this lazy cook's one-pan spaghetti and meatballs recipe is a total game changer. The next time you want to get dinner on the table with ease—and not deal with a million dirty dishes--we've got you covered.” Makes 8 servings.

PEPPERONI PIZZA PASTA

This is from the long-since-forgotten email list. Serves 4

Ingredients

8oz (2 c) uncooked ziti

1 (14oz) jar pizza sauce

2 oz sliced pepperoni, halved (about 3/4 c)

1/4 c finely chopped bell pepper

1/4 c grated parmesan

1/2 tsp dried oregano leaves

1 clove garlic, minced

4oz (1c) shredded mozzarella cheese

Directions

BROCCOLI PASTA

This is from the Food Network, and begins, "Believe it or not, the star behind this 5-ingredient supper is overcooked broccoli! We over-steam it here to give the broccoli a delicate and creamy texture, making it perfect for mashing, mixing with pasta water and tossing with pasta."

Active Time: 10 minutes; Total Time: 30 minutes; Yield: 4 servings; Level: Easy

To view this online, go to https://www.foodnetwork.com/recipes/food-network-kitchen/broccoli-pasta-12375930.

Ingredients

1 bunch broccoli (about 1 pound), trimmed and cut into large florets

4 tablespoons (1/2 stick) unsalted butter

Kosher salt and freshly ground pepper

12 ounces spaghetti

2 cloves garlic, minced

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

Directions

Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.

Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.

Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.

In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.

Chicken - Double-Post Monday

Besides Meatless Monday, it's also Double-Post Monday. Today's double post deals with Chicken. Today's offerings include Grilled Chicken Torta Sliders and One-Pot Chicken Alfredo Penne. Enjoy!

PAN SEARED RANCH CHICKEN

This is from Ali Slagle in The New York Times cooking enewsletter. For this recipe, Ali wrote, "In this recipe, America’s favorite salad dressing serves double-duty: as a creamy, herbaceous sauce and as a marinade. But don’t reach for bottled ranch. Instead, make your own brighter, tangier version using Greek yogurt. Unlike lemon or vinegar-based marinades, which can toughen meat, yogurt tenderizes even the leanest of chicken breasts. When the chicken is seared in a hot pan, the yogurt-mayo coating forms a flavorful, caramelized crust. (It also makes an excellent marinade for fish, pork, shrimp or sturdy vegetables.)"

Time: About 35 minutes; Yield: 4 servings

To view this online, go to https://cooking.nytimes.com/recipes/1020660-pan-seared-ranch-chicken. And while you're at it, if you haven't signed up for The New York Times cooking enewsletter, now would be a good time to do so. If you're like me, you won't regret it.

Ingredients

3/4 cup Greek yogurt

1/4 cup mayonnaise

3 tablespoons finely chopped fresh chives, or 1/2 teaspoon dried, plus more for serving

3 tablespoons finely chopped fresh dill or parsley (or 1/2 teaspoon dried), plus more for serving

3/4 teaspoon garlic powder

Kosher salt (such as Diamond Crystal) and black pepper

1-1/2 to 2 pounds boneless, skinless chicken breasts or thighs

2 tablespoons extra-virgin olive oil

Preparation

In a measuring cup or small bowl, stir together the yogurt, mayonnaise, chives, dill and garlic powder; season with 1-1/2 teaspoons salt and a few grinds of pepper. Transfer half the ranch to a medium bowl.

Pat the chicken dry. If thickness varies greatly, pound to an even thickness of about 1/2 inch. Season both sides with salt and pepper, then transfer the chicken to the medium bowl with the ranch and toss to coat. Let sit at least 15 minutes, or refrigerate overnight. (Let it come to room temperature before cooking.)

Heat the oil in a large (12-inch) nonstick skillet over medium-high. Working in batches if necessary, cook the chicken (with the marinade still on it) until deeply caramelized on the outside, the chicken releases from the pan and its juices run clear, 4 to 6 minutes per side. Turn down the heat if the chicken is browning too quickly.

If the ranch in the measuring cup is too thick, add a little bit of water to loosen it. (You should be able to drizzle it easily.) Serve chicken with the ranch passed at the table and more herbs as desired.

SMASHED AVOCADO-CHICKEN BURGERS

This is from Yasmin Fahr in The New York Times cooking enewsletter. Yasmin wrote, "These zippy chicken burgers are loaded with ginger, garlic, cilantro and scallions for fresh flavor and some textural crunch. The secret ingredient is a little mashed avocado that’s added to the ground chicken before cooking, which keeps the burgers tender and light. A citrusy soy mayonnaise is used both inside the patties and slathered on top. (Fish sauce could be used in place of the soy. Decrease the amount and adjust to taste.) Kewpie is a Japanese mayonnaise made with rice wine vinegar and egg yolks rather than distilled vinegar and whole eggs, but you can just as easily use your preferred mayonnaise. Fresh jalapeños offer a satisfying crunch when biting into the burger, though pickled ones could be used for extra acidity."

Yield: 4 servings; Time: 25 minutes

To view this online, go to https://cooking.nytimes.com/recipes/1023132-smashed-avocado-chicken-burgers.

While you're at it, check out Sam Sifton's guide, "How to Make Burgers". Very helpful!

Ingredients

1/3 cup Kewpie or other mayonnaise

1 teaspoon soy sauce

1 lime, cut into wedges

Kosher salt

1 packed cup cilantro leaves and tender stems, roughly chopped, plus more for serving

1/4 cup mashed, ripe Hass avocado (from about 1/2 avocado; slice the other half for serving) (see Tip)

2 scallions, light green and white parts only, thinly sliced

3 large garlic cloves, grated or minced

1 (2-inch) piece ginger, grated or minced (about 2 teaspoons)

1/4 to 1/2 teaspoon red-pepper flakes, according to taste

1 pound ground chicken, preferably dark meat

2 tablespoons neutral oil, such as canola oil, or ghee

4 brioche or burger buns, lightly toasted

Butter lettuce or other tender lettuce, for serving

1 jalapeño, thinly sliced, for serving (optional)

Preparation

In a small serving bowl, combine the mayonnaise and soy sauce. Season with the juice of 1 lime wedge and salt as needed.

In a medium mixing bowl, use a fork to mash and thoroughly combine the chopped cilantro, mashed avocado, scallions, garlic, ginger, red-pepper flakes, 1 teaspoon salt and 1 tablespoon of the soy-lime mayonnaise. Add the chicken and gently combine. Form into 4 large balls.

Heat a large (12-inch) cast-iron or heavy skillet over medium heat until very hot, 1-1/2 to 2 minutes. Add the neutral oil or ghee, then add the chicken meatballs, spacing them out in the pan. Use a metal spatula to press them until they form 1/2-inch-thick patties. Cook without moving for 3-1/2 to 4 minutes, until a deep golden crust has formed and they easily release from the pan. Flip the patties using the spatula and cook until done with a nice crust on the other side, about 3 minutes more. If the patties need more time, cover the pan and cook for 1 to 2 more minutes, adjusting the heat as needed to avoid scorching.

Squeeze a lime wedge over the patties and serve sandwiched between the buns topped with lettuce, a healthy slathering of the lime-mayonnaise, avocado slices, jalapeño slices if using, and cilantro sprigs, if desired. Serve with the remaining lime wedges and mayonnaise on the side.

Tip

Resist the urge to add more than 1/4 cup mashed avocado to the ground chicken, as the burgers will get too soft and fall apart during cooking.

SLOW-COOKER WHOLE ORANGE CHICKEN

This is from Betty Crocker, and begins, "Bird is the word! This easy spin on classic orange chicken is so beautiful, no one will believe it came from your slow cooker."

Prep Time: 30 minutes; Total Time: 4 hours 30 minutes; Makes 4 servings

To view this online, click here.

Ingredients

1 jar (12 oz) sweet orange marmalade

1/2 cup packed brown sugar

1/4 cup soy sauce

2 tablespoons chili garlic sauce

1 teaspoon salt

1 whole chicken (3-1/2 to 4-1/2 lb)

1-inch piece fresh gingerroot, peeled

1/4 cup cornstarch

1/4 cup orange juice

6 thin slices of orange, halved

2 tablespoons chopped fresh cilantro leaves

Cooked white rice, if desired

Directions

Spray 5-quart oval slow cooker with cooking spray. In small bowl, mix marmalade, brown sugar, soy sauce, chili garlic sauce and salt. Add chicken and marmalade mixture to slow cooker, spreading marmalade mixture over chicken, inside and out. Place chicken breast side down; add gingerroot.

Cover; cook on Low heat setting 4 to 5 hours, until instant-read thermometer inserted in thickest part of chicken thigh muscle and not touching bone reads at least 165°F (legs should move easily when lifted or twisted). Do not uncover slow cooker before 4 hours.

Remove gingerroot, and discard. Transfer chicken to cutting board; let stand about 5 minutes or until cool enough to handle. Cut into 8 pieces.

Meanwhile, in small bowl, mix cornstarch and orange juice; stir into liquid mixture in slow cooker. Cover; cook on High heat setting 10 to 15 minutes or until sauce thickens.

Position oven rack 4 inches from broiling element. Set oven control to broil. Line large rimmed baking pan with foil; carefully transfer chicken, skin side up, to pan. Place orange slices around chicken; brush oranges and chicken with sauce. Broil 3 to 5 minutes or until skin is golden brown and crisp; sprinkle with cilantro, and serve with more of the sauce over rice.

Tips from the Betty Crocker Kitchens

tip 1

Trouble getting every last bit of marmalade out of the jar? Submerge sealed jar in a bowl of very hot water for about 5 minutes.

tip 2

One large navel orange will provide enough orange slices and juice for this recipe. Cut the thin slices from the center, then squeeze 1/4 cup of fresh orange juice from the remaining ends.

SHEET-PAN CHICKEN FAJITAS WITH THE WORKS

This is from WW (formerly Weight Watchers), and begins, "Sheet-pan dinners are popular for a reason: They cook everything in one place and keep cleanup minimal. The pans can be surprisingly versatile too—here, we use one like a fajita skillet. The key to getting that signature sear on the seasoned veggies and meat? Heating the empty pan in the oven until it’s screaming-hot. This ensures the ingredients start sizzling the second they hit the surface."

Prep Time: 20 minutes; Cook Time: 20 minutes; Total Time: 40 minutes; Serves: 4; Difficulty: Easy; 9 points

View this online here.

Ingredients

4 sprays cooking spray

1 pound uncooked boneless skinless chicken breast, thinly sliced

1 large onions, yellow, sliced

2 medium red bell peppers, sliced

1 large poblano chile, sliced

2 Tbsp canola oil

2 tsp chili powder

1 tsp garlic powder

1 tsp ground cumin

1 tsp kosher salt

1 tsp paprika, smoked

8 tortillas (6-inch), low carb, high fiber tortilla wraps

1 cup pico de gallo

1/2 cup cilantro leaves

1/4 cup reduced fat sour cream

1 avocado, medium, thinly sliced (optional)

1 medium jalapeño pepper, thinly sliced (optional)

1 lime, cut into wedges (optional)

Directions

Place a large sheet pan in the oven. Preheat the oven to 450°F.

In a large bowl, combine the chicken, onion, bell peppers, and chile. Drizzle with the oil and toss to coat. Sprinkle with the chili powder, garlic powder, cumin, salt, and paprika and toss to coat.

Carefully remove the hot pan from the oven and coat with cooking spray. Spread the chicken and vegetables into an even layer on the pan. Roast until the chicken is cooked through, about 20 minutes, stirring halfway through.

Meanwhile, wrap the tortillas in foil. Place the tortillas in the oven to warm during the last 5 minutes of roasting.

Divide the chicken and vegetables among the tortillas. Serve with the pico de gallo, cilantro, sour cream, avocado, jalapeño, and lime wedges (if using).

Serving size: 2 filled tortillas

GRILLED CHICKEN TORTA SLIDERS

This comes from Old El Paso, and begins, "Get your torta on with these simple, fresh, party-sized chicken sandwiches."

Prep Time: 40 minutes; Total Time: 40 minutes; Makes 8 servings

To view this online, go to https://www.oldelpaso.com/recipes/grilled-chicken-torta-sliders.

Ingredients

2 tablespoons vegetable oil

1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix

2 boneless skinless chicken breasts (3/4 lb)

8 slider buns, split

1 tablespoon butter, melted

1/2 cup Old El Paso™ refried beans (from 16-oz can)

1/2 medium avocado, pitted, peeled, thinly sliced

2 slices (1 oz each) Monterey Jack cheese, quartered

2 green onions, thinly sliced on the bias

Chopped fresh cilantro, if desired

Old El Paso™ Thick 'n Chunky salsa, if desired

Directions

Heat gas or charcoal grill. In small bowl, mix oil and taco seasoning mix. Rub chicken breasts with oil mixture.

Place chicken on grill over medium heat. Cover grill; cook 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Let stand 5 minutes. Cut each breast in quarters.

Meanwhile, brush cut sides of buns with melted butter and place, cut sides down, on grill. Cook 30 to 60 seconds or until cut sides are browned. Turn, and grill 30 to 60 seconds longer or until grill marks appear. Place beans in small microwavable bowl. Microwave uncovered on High 60 to 90 seconds or until softened and easy to stir. Spread bottom bun halves with beans. Top with avocado, then top with chicken.

Top chicken with cheese, remaining ingredients and tops of buns.

Expert Tips

Craving a little more heat? Opt for pepper Jack cheese.

Cutting green onions on the bias is easier (since they don’t roll around your cutting board) and are more beautiful, providing a slender slaw-like appearance.

EASY CHICKEN ENCHILADAS

ARROZE CHAUFA (FRIED RICE WITH CHICKEN AND BELL PEPPER)

This is from Ham El-Waylly in The New York Times cooking enewsletter. For this recipe, Ham wrote, "After laborers flocked from China to Peru in the mid-1800s, a blend of Chinese and Peruvian cuisine known as Chifa was born. This simple version of arroz chaufa (fried rice) focuses on chicken thighs and red bell pepper, but other varieties might embrace sliced hot dogs, shrimp or strips of meat. The key to this recipe, and other fried rice recipes, is keeping the cooking surface hot. This is easy to achieve when using a powerful wok burner in a professional kitchen, but at home, this means cooking things in smaller batches. If you need to serve more people, multiply the recipe as needed, but make sure to cook the rice in several batches to allow it to crisp rather than steam. (You can hold the prepared rice covered in foil in a warm oven.)"

Time: 45 minutes; Yield: 2 to 4 servings

Ingredients

4 tablespoons neutral oil, like grapeseed

2 large eggs, beaten

Kosher salt

1 medium red bell pepper, stem and seeds removed, roughly chopped

1/2 pound boneless, skinless chicken thighs, cut into 1/2-inch cubes

1 (2-inch) piece fresh ginger, peeled and finely chopped

4 garlic cloves, finely chopped

1 bunch scallions, trimmed and thinly sliced, white and green portions separated

1 tablespoon ground cumin

1 teaspoon ground white pepper, plus more for seasoning

1 teaspoon granulated sugar

1/4 teaspoon MSG (optional)

2 cups cooked white rice, cooled

2 tablespoons soy sauce or tamari, plus more for seasoning

1 tablespoon sesame oil

Preparation

In a large skillet or wok, heat 1 tablespoon neutral oil over high until shimmering. Add the eggs, season with a pinch of salt and cook until fully cooked, flipping over once halfway through, about 2 minutes. Transfer to a cutting board, roughly chop it into small pieces and set aside.

Return the pan to high heat and add another tablespoon of neutral oil. Add the bell pepper, season with a pinch of salt and cook, frequently stirring, until lightly charred along the edges and softened, 3 to 5 minutes; transfer to a bowl.

Return the pan to high heat and add the remaining 2 tablespoons neutral oil. Add the chicken, season with a pinch of salt and cook, frequently stirring, until golden brown and cooked through, about 5 minutes.

Add the ginger, garlic and scallion whites; cook, frequently stirring, until fragrant and softened, 2 to 4 minutes. Add the cumin, white pepper, sugar and MSG (if using) and stir to combine.

Break up the cooled rice with your hands, so the grains are separate, then add to the pan. Stir frequently so all the ingredients are well incorporated and each grain of rice is coated in fat. Add the soy sauce and sesame oil along the outside perimeter of the pan and toss to combine. Cook, frequently stirring, until some of the rice starts to crisp and turn toasty, 5 to 8 minutes. Add the eggs, bell pepper and scallion greens to the rice; toss to combine.

Cook for another minute, then taste and adjust seasoning with salt, soy sauce and white pepper as needed. Serve immediately.

ONE-POT CHICKEN ALFREDO PENNE

This is from Pillsbury, and begins, "We love it when a recipe requires just a handful of ingredients and only 20 minutes to come together.

ANGEL HAIR PASTA

I had something similar to this at a local Italian restaurant several times, and decided to try making it. A hint for making this: wait until all the veggies have been cut up, then start the water boiling for the angel hair pasta. The veggies should be cooked for 2-4 minutes, and the pasta cooked for 2 minutes before the pasta is drained and then allowed to finish cooking for another 2 minutes with the veggies. Timing is important—unless you like disgustingly soggy pasta.

Ingredients

1/2 C water

2 T balsamic vinegar

1 onion, diced

2 cloves garlic, minced

1/2 red pepper, diced

1/2green pepper, diced

1 T oregano

1 lb. angel hair pasta

Directions

Cut up veggies while heating the pasta water. DO NOT PUT PASTA INTO WATER UNTIL THE VEGGIES BEGIN COOKING. (There. I said it.) In veggie pot, heat 1/2 C water & balsamic vinegar until it begins to bubble; add onion, garlic, pepper & oregano and stir once or twice. NOW ADD PASTA TO POT OF BOILING PASTA WATER. (Boy, what a bossy broad.) Simmer veggies on low-medium heat for 2-4 minutes, covered. Cook pasta for only 2 minutes, then drain in colander. As soon as pasta is drained, remove cover from veggies, dump pasta into veggie pot, and cook for another 2 minutes, stirring several times. Remove from heat. DIG IN!!! (Now, isn’t that good?)

Preparation

Heat garlic and crushed pepper in oil in a deep skillet or pot over medium heat until garlic sizzles. Add peppers, onion, eggplant, zucchini, olives, capers, salt and pepper. Add tomatoes and parsley, and heat through. Toss with pasta, and top with toasted pine nuts.

Chicken

There was a time when chicken was reserved for Sunday dinner. (Think early- to mid-twentieth century.)

Now, it's an any time meal. Check out today's six chicken recipes, including Stovetop Barbecue Chicken and Slow-Cooker Arroz con Pollo (Chicken & Rice). Enjoy!

CHICKEN BACON RANCH CASSEROLE

This is from the Pillsbury emailing list. It begins, "Level up your casserole game in the easiest way with a yummy Chicken Bacon Ranch Casserole. Simple, hearty and guaranteed to please, this creamy chicken pasta dish will have the whole family asking for seconds. Prep your casserole in just 20 minutes, then let your oven do all the heavy lifting—this chicken bacon ranch pasta bake is the definition of comfort food!"

Prep Time: 20 minutes; Total Time: 45; Makes 6 servings

To view this online, click here.

Ingredients

1 lb penne pasta, cooked and drained

2 cups shredded cooked chicken

1 jar (15 oz) Alfredo pasta sauce

1/2 cup ranch dressing

6 slices chopped cooked bacon

2 cups shredded mozzarella cheese (8 oz)

Chopped parsley, if desired

Directions

Heat oven to 350°F. Grease or spray 13x9-inch pan.

In large bowl, place 1 lb cooked and drained penne pasta, 2 cups shredded cooked chicken, 1 jar (15 oz) Alfredo pasta sauce and 1/2 cup ranch dressing. Stir to combine. Pour mixture in pan; spread evenly.

Sprinkle 6 slices chopped cooked bacon evenly over top, then sprinkle with 2 cups shredded mozzarella cheese (8 oz).

Bake 15 to 20 minutes or until hot and bubbly. Let stand 5 minutes before serving. Sprinkle with chopped parsley.

Tips from the Pillsbury Kitchens

tip 1

Don't skimp on the optional sprinkle of chopped parsley. It adds bright color and a fresh taste to your bacon ranch chicken bake.

Tip 2

If you don't have any leftover chicken, pick up a rotisserie chicken at your grocery store. A 2-lb bird will provide about 3 cups of meat.

Tip 3

To add a more distinct cheesy flavor to your chicken bacon casserole, use cheddar cheese instead of the mozzarella.

Tip 4

You can use any short pasta, including fusilli or rotini, in this Chicken Bacon Ranch Casserole recipe. The short noodles make the casserole easy to scoop up and serve.

STOVETOP BARBECUE CHICKEN

This is from Ali Slagle in The New York Times cooking enewsletter. For this recipe, Ali wrote, "Nothing compares to live fire, but even if you don’t have a grill, you can make chicken that’s burnished and sticky with barbecue sauce. To achieve a similar smokiness on the stovetop, paint boneless, skinless chicken with some barbecue sauce and sear it so the sugars in the sauce caramelize and char. The sauce here leans tangy and spicy, but adjust it as you like. Once the chicken is cooked, let the sauce bubble until glossy enough to slather onto the chicken. Since that only took 30 minutes, consider your sides: perhaps a green goddess slaw, potato chips or pickles. (If you’d like to use bone-in chicken, try this oven method.)"

Time: 30 minutes; Yield: 3 to 4 servings

Ingredients

1/2 cup ketchup

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire or soy sauce

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon ground cayenne

1-1/2 to 2 pounds boneless, skinless chicken breasts or thighs

Salt and black pepper

1 tablespoon unsalted butter

Preparation

In a large bowl, stir together the ketchup, vinegar, Worcestershire, paprika, garlic powder and cayenne.

Pat the chicken dry and pound to an even ½-inch thickness, if necessary. Season all over with salt and pepper, then add to the bowl of barbecue sauce and turn to coat. (You can marinate the chicken, covered and refrigerated, up to 2 hours ahead.)

Melt the butter in a large (12-inch) nonstick skillet over medium heat. Shake the chicken to remove excess sauce, then add to the skillet. Cook until cooked through and charred in spots, 6 to 8 minutes per side. (Some sauce might collect and brown in the pan; that’s OK.) Meanwhile, stir 1/4 cup of water into the remaining bowl of sauce, scraping the sides to get every bit.

Transfer the chicken to a plate, pour the sauce into the pan and scrape any browned bits off the skillet. Boil until the sauce is thick and glossy, 2 to 4 minutes. Turn off the heat, add the chicken and any juices from the plate and turn to coat. If you find the sauce is too thin to coat the chicken, simmer it over medium-low. If it’s too thick to coat the chicken, add a tablespoon of water.

Ingredients

1 tablespoon olive oil

1 medium yellow onion, finely chopped

2 cloves garlic, finely chopped

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)

3/4 cup uncooked elbow macaroni

2 cans (15 oz each) Progresso™ cannellini beans, drained, rinsed

1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained

1/2 lb ground Italian sausage, browned and drained

Grated Parmesan cheese, fresh thyme and crushed red pepper flakes, if desired

Directions

In 5-quart stockpot, heat oil over medium-high heat. Add onion; cook 3 to 5 minutes or until tender and translucent. Add garlic; cook 1 minute longer, stirring frequently.

Add thyme, rosemary and 3-1/2 cups of the chicken broth. Heat to boiling. Add macaroni; boil 5 to 7 minutes or until macaroni is almost tender but retains a bit of bite.

In blender, blend remaining 1/2 cup chicken broth, 1 can of the beans and the tomatoes. Blend until smooth. Add mixture to stockpot along with remaining can of beans and the sausage. Reduce heat to medium-low; simmer 10 minutes to blend flavors and heat through.

To serve, ladle soup into bowls. Top each serving with remaining ingredients.

Freezer Directions: Make as directed through step 3, but do not simmer 10 minutes to heat through. Ladle soup mixture into quart-size resealable plastic freezer bags; let out any excess air, and seal. Place bags flat in freezer. When ready to eat, thaw overnight in refrigerator. Place in 5-quart stockpot, and reheat over medium heat until heated through.

Tips from the Betty Crocker Kitchens

tip 1

Kidney beans can be substituted for the cannellini beans, if desired.

ONE-POT CHICKEN ALFREDO PENNE

This is from Pillsbury, and begins, "We love it when a recipe requires just a handful of ingredients and only 20 minutes to come together.

Ingredients

6 cups unsalted chicken stock

1 (14-oz.) bone-in, skin-on chicken breast, skin removed

3 (7-oz.) bone-in, skin-on chicken thighs, skin removed

12 ounces uncooked spaghetti

1 (5-oz.) can evaporated milk

2 tablespoons all-purpose flour

1 tablespoon lower-sodium Worcestershire sauce

2 teaspoons hot sauce

2 teaspoons kosher salt

2 tablespoons unsalted butter

1 1/2 cups chopped yellow onion (about 1 medium onion)

1 1/2 cups chopped red bell pepper (about 1 large pepper)

(You should have about 4- 1/2 cups meat.) Add chicken and tomatoes to Dutch oven; toss to coat.
