Holiday Weekend Recipes

Christmas is one week from today. If you're looking for a few more dishes to put on the holiday table, here are six that will help round out the meal, including Raisin Bread Pudding and Triple Fruit Pie, as well as helping you through the weekend. Enjoy!

CROCKPOT LASAGNA

This recipe is from MyDailyMoment, and begins, “Most people don't associate lasagna and healthy eating together, but that's exactly what you get with this dynamic dish. A meat and cheese lover's dream, use your noodle and enjoy this slow-cooked staple that's sure to become your go-to dish when you have a hankering for something Italian.”

Ingredients

1 lb. lean ground beef

1 onion, chopped

2 garlic cloves, smashed

1 (28 oz.) can tomato sauce

1 (6 oz.) can tomato paste

1 1/2 tsp. salt 1 tsp. dried oregano

12 oz. cottage cheese

1/2 cup grated Parmesan cheese

12 oz. lasagna pasta, uncooked

16 oz. shredded mozzarella cheese

Directions

Brown ground beef, onion and garlic in fry pan. Add tomato sauce, tomato paste, salt and oregano. Cook long enough to get it warm. Spoon a layer of meat sauce onto the bottom of the slow cooker. Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses. Repeat with sauce, noodles and cheeses until all are used up. Cover and cook on low for 4 to 5 hours.

Additional Tips

Ready in 4 1/4 hours.

RAISIN BREAD PUDDING

This recipe begins, “Brown sugar, cinnamon and nutmeg will fill your kitchen with sweet aromas and sweet memories of happy faces around your table. Serve this with whipped cream or with milk for breakfast for a change of pace.”

Prep. time: 20 minutes; Serves: 8; Cooking time: 35 minutes

Ingredients

16 slices bread, cubed

1 cup raisins

2 cans (12 oz. each) NESTLÉ ® Carnation ® Evaporated Milk

4 eggs, slightly beaten

3/4 cup firmly packed brown sugar

1/4 cup butter, melted

2 teaspoon vanilla extract

1 teaspoon cinnamon, ground

1/2 teaspoon nutmeg, ground

1 jar caramel sauce, (optional)

Directions

Preheat oven to 350 degrees F. Grease 12 x 8-inch baking dish.

Combine bread and raisins in large bowl. Combine evaporated milk, eggs, sugar, butter, vanilla extract, cinnamon and nutmeg in medium bowl. Pour egg mixture over bread mixture; combine well. Pour mixture into prepared baking dish. Let stand for 10 minutes.

Bake for 35 to 45 minutes or until knife inserted in center comes out clean.

TRIPLE FRUIT PIE

This was in an email from FamilyTime, and begins, “Berries and rhubarb are plentiful and inexpensive. Try making this pie. It is so good!!”

Serves: 6-8; Prep. time: 5 minutes; Cooking time: 30

Ingredients

1-1/4 cups fresh blueberries

1-1/4 cups fresh raspberries

1-1/4 cups chopped rhubarb

1/2 teaspoon almond extract

1-1/4 cups sugar

1/4 cup quick-cooking tapioca

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 tablespoon lemon juice

pastry shell, for double-crust pie (9 inches)

Directions

In a large bowl, combine fruits and extract; toss to coat. In another bowl, combine sugar, tapioca, nutmeg and salt. Add to fruit; stir gently. Let stand for 15 minutes. Line a 9-in. pie plate with bottom crust; trim pastry even with edge. Stir lemon juice into fruit mixture; spoon into the crust. Roll out remaining pastry; make a lattice crust. Seal and flute edges. Bake at 400 degrees for 20 minutes. Reduce heat to 350 degrees; bake 30 minutes longer or until the crust is golden brown and the filling is bubbly.

Note: Frozen berries and rhubarb may be substituted for fresh; thaw and drain before using.

CHEESECAKE-STUFFED RED VELVET COOKIES

Filling:

One 8-ounce package cream cheese, at room temperature

1/3 cup granulated sugar

2 tablespoons sour cream

1 teaspoon pure vanilla extract

Cookies:

1 2/3 cups all-purpose flour, scooped and leveled (see Cook's Note)

1/4 cup unsweetened cocoa powder, scooped and leveled

1 teaspoon baking powder

1/2 teaspoon kosher salt

1/4 teaspoon baking soda

1 1/4 cups granulated sugar

1/2 stick (4 tablespoons) unsalted butter, melted

1 tablespoon buttermilk

1 teaspoon red food coloring

1 teaspoon pure vanilla extract

2 large eggs

Confectioners' sugar, for coating

Make the filling: Line a baking sheet with parchment paper. Beat the cream cheese, granulated sugar, sour cream and vanilla in a large bowl with an electric mixer on medium speed until smooth. Spoon 1 tablespoon of the filling at a time onto the parchment so that you have 12 dollops. Freeze until solid, about 2 hours.

Make the cookies: Sift together the flour, cocoa powder, baking powder, salt and baking soda in a medium bowl. Whisk together the granulated sugar, butter, buttermilk, food coloring, vanilla and eggs in another bowl. Fold the flour mixture into the sugar mixture with a rubber spatula until smooth. Cover the bowl with plastic wrap and refrigerate until chilled, about 30 minutes (it will still be soft).

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.

Coat your hands generously with confectioners' sugar and scoop a heaping tablespoon of the cookie dough into your hand. Put one of the frozen cream cheese dollops in the middle of the dough and place another tablespoon of the dough on top of the cream cheese. Shape the dough around it to completely enclose the cream cheese, and then roll to coat in the confectioners' sugar. Repeat with the remaining dough and cream cheese, coating your hands in confectioners' sugar as needed.

Place the cookies on the prepared baking sheets about 2 inches apart. Bake until the cookies are firm around the edges and can be easily lifted with a spatula, 10 to 12 minutes. Let the cookies cool on the trays for 10 minutes, and then transfer to a cooling rack and cool completely.

Cook's Note

When measuring flour, we spoon it into a dry measuring cup and level off excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)

COZY CROCK COMFORT IN SLOW COOKER

This is from an old (10+ year old) email. Possibly Weight Watchers, according to the email’s header. But very yummy food!

Ingredients

16 ounces gound 90% lean turkey or beef

1/2 cup chopped onion

3 cups (15 ounces) diced raw potatoes

1/3 cup (1 ounce) uncooked regular rice

1 1/2 cups shredded carrots

1 cup finely diced celery

1 1/2 cups Healthy Request tomato juice or any reduced-sodium tomato juice

1 (10 1/4) can Healthy Request Tomato Soup

1/4 teaspoon black pepper

1 teaspoon dried parsley flakes

Directions

In a large skillet sprayed with butter-flavored cooking spray, brown meat.

Place browned meat in a slow cooker container. Add onion, potatoes, uncooked rice, carrots, and celery. Mix well to combine.

Stir in tomato juice, tomato soup, black pepper, and parsley flakes. Cover and cook on LOW for 6 to 8 hours. Mix well before serving. 6 servings ~ 5 points each

Serves 6 - Each serving equals: 2 protein, 1 1/2 vegetables, 2/3 bread, 10 optional calories, 243 calories, 7 gm fat, 16 gm protein, 29 gm carbohydrate, 290 mg sodium, 33 mg calcium, 3 gm fiber

Diabetic: 2 meat, 1 1/2 starch, 1 vegetable

BUTTERNUT SQUASH RISOTTO

This comes from GE Appliances, and begins, “Don't let risotto intimidate you! With a little bit of time and patience you can enjoy this delicious dish. The creamy risotto is combined with sweet butternut squash, fragrant sage and rosemary for a perfect dish to usher in the cool days of fall.”

Makes 6 servings in 40 minutes.

Ingredients

3 cups butternut squash, cut into 1/2 inch cubes

3 tablespoons butter, divided

1 tablespoon olive oil

3 shallots, minced (about 1/2 cup)

1-1/2 cups Arborio rice

1/2 cup dry white wine (see my note)

7-1/2 cups vegetable stock, heated (see my note)

5-6 fresh sage leaves, chopped

1 sprig fresh rosemary, chopped

1/4 cup and 2 tablespoons grated Parmesan cheese

Salt and ground black pepper to taste

Directions

Heat olive oil and 2 tablespoons of the butter in a large sauti pan. Add squash. Sauti for about 5 minutes, then cover; cook on medium heat until almost tender, stirring often, about 10 minutes. Add shallots; cook and stir for 5 minutes until the shallots begin to soften, then stir in the rice. Continue cooking until the rice is glossy and begins to turn translucent on the edges, about 5 minutes. Mix in sage and rosemary. Cook for an additional minute.

Pour in the white wine; cook, stir until it is absorbed. Add a large ladleful of the hot chicken stock (about 1/2 cup) reduce heat to medium. Cook until most of the liquid has been absorbed by the rice, stirring occasionally. Continue adding the chicken stock to the rice 1/2 a cup at a time until the rice is creamy but is still slightly firm when tasted, approximately 25-30 minutes.

Finish by stirring in the Parmesan cheese, remaining tablespoon of butter, and seasoning to taste with salt and pepper.

CHEF'S NOTES:

You can cut up your own squash or use pre-cubed butternut squash from your favorite grocery store. Just make sure the squash is cut into 1/2" cubes so it gets tender enough in the risotto.

My note: If, like me, you don’t have alcohol around your house, feel free to use either non-alcohol white wine or just plain water.

Also, the recipe also called for chicken stock. I substituted vegetable stock for the chicken stock.

Make the filling: Line a baking sheet with parchment paper. Beat the cream cheese, granulated sugar, sour cream and vanilla in a large bowl with an electric mixer on medium speed until smooth. Spoon 1 tablespoon of the filling at a time onto the parchment so that you have 12 dollops. Freeze until solid, about 2 hours.

Make the cookies: Sift together the flour, cocoa powder, baking powder, salt and baking soda in a medium bowl. Whisk together the granulated sugar, butter, buttermilk, food coloring, vanilla and eggs in another bowl. Fold the flour mixture into the sugar mixture with a rubber spatula until smooth. Cover the bowl with plastic wrap and refrigerate until chilled, about 30 minutes (it will still be soft).

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.

Coat your hands generously with confectioners' sugar and scoop a heaping tablespoon of the cookie dough into your hand. Put one of the frozen cream cheese dollops in the middle of the dough and place another tablespoon of the dough on top of the cream cheese. Shape the dough around it to completely enclose the cream cheese, and then roll to coat in the confectioners' sugar. Repeat with the remaining dough and cream cheese, coating your hands in confectioners' sugar as needed.

Place the cookies on the prepared baking sheets about 2 inches apart. Bake until the cookies are firm around the edges and can be easily lifted with a spatula, 10 to 12 minutes. Let the cookies cool on the trays for 10 minutes, and then transfer to a cooling rack and cool completely.

When measuring flour, we spoon it into a dry measuring cup and level off excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)

COZY CROCK COMFORT IN SLOW COOKER

This is from an old (10+ year old) email. Possibly Weight Watchers, according to the email’s header. But very yummy food!

16 ounces gound 90% lean turkey or beef

1/2 cup chopped onion

3 cups (15 ounces) diced raw potatoes

1/3 cup (1 ounce) uncooked regular rice

1 1/2 cups shredded carrots

1 cup finely diced celery

1 1/2 cups Healthy Request tomato juice or any reduced-sodium tomato juice

1 (10 1/4) can Healthy Request Tomato Soup

1/4 teaspoon black pepper

1 teaspoon dried parsley flakes

In a large skillet sprayed with butter-flavored cooking spray, brown meat.

Place browned meat in a slow cooker container. Add onion, potatoes, uncooked rice, carrots, and celery. Mix well to combine.

Stir in tomato juice, tomato soup, black pepper, and parsley flakes. Cover and cook on LOW for 6 to 8 hours. Mix well before serving. 6 servings ~ 5 points each

BUTTERNUT SQUASH RISOTTO

This comes from GE Appliances, and begins, “Don't let risotto intimidate you! With a little bit of time and patience you can enjoy this delicious dish. The creamy risotto is combined with sweet butternut squash, fragrant sage and rosemary for a perfect dish to usher in the cool days of fall.”

Makes 6 servings in 40 minutes.

Ingredients

3 cups butternut squash, cut into 1/2 inch cubes

3 tablespoons butter, divided

1 tablespoon olive oil

3 shallots, minced (about 1/2 cup)

1-1/2 cups Arborio rice

1/2 cup dry white wine (see my note)

7-1/2 cups vegetable stock, heated (see my note)

5-6 fresh sage leaves, chopped

1 sprig fresh rosemary, chopped

1/4 cup and 2 tablespoons grated Parmesan cheese

Salt and ground black pepper to taste

Directions

Heat olive oil and 2 tablespoons of the butter in a large sauti pan. Add squash. Sauti for about 5 minutes, then cover; cook on medium heat until almost tender, stirring often, about 10 minutes. Add shallots; cook and stir for 5 minutes until the shallots begin to soften, then stir in the rice. Continue cooking until the rice is glossy and begins to turn translucent on the edges, about 5 minutes. Mix in sage and rosemary. Cook for an additional minute.

Pour in the white wine; cook, stir until it is absorbed. Add a large ladleful of the hot chicken stock (about 1/2 cup) reduce heat to medium. Cook until most of the liquid has been absorbed by the rice, stirring occasionally. Continue adding the chicken stock to the rice 1/2 a cup at a time until the rice is creamy but is still slightly firm when tasted, approximately 25-30 minutes.

Finish by stirring in the Parmesan cheese, remaining tablespoon of butter, and seasoning to taste with salt and pepper.

CHEF'S NOTES:

You can cut up your own squash or use pre-cubed butternut squash from your favorite grocery store. Just make sure the squash is cut into 1/2" cubes so it gets tender enough in the risotto.

My note: If, like me, you don’t have alcohol around your house, feel free to use either non-alcohol white wine or just plain water.

Also, the recipe also called for chicken stock. I substituted vegetable stock for the chicken stock.

STRAWBERRY SALSA

Strawberry Salsa? Ewwww! But really, what's wrong with using strawberries in salsa? According to Delish.com, “It's hard to believe that this salsa would be good, but trust us—it's amazing. Use it exactly how you would a tomato-based salsa: with chips, as a condiment on fish, or, frankly, with a spoon.” Total Time: 25 minutes; Prep Time: 5 minutes; Level: Easy; Serves: 8.

Ingredients

3 cups fresh strawberries, chopped

2 cup fresh kiwi, peeled and chopped

1/2 cup red onion, chopped

1 jalapeno, seeded and chopped

3 tbsp. honey

3 tbsp. fresh lime juice

1 pinch kosher salt

Directions

Combine strawberries, kiwi, onion, and jalapeno in a bowl. Mix to combine. Add in honey, lime juice, and pinch of salt, and gently toss to coat. Refrigerate for 20 minutes. Serve with chips.

1/2 red bell pepper, seeded and cut into 1-inch squares

1 pound ripe tomatoes, seeded and chopped

3 tablespoons minced fresh basil

1 tablespoon minced fresh sage

1 tablespoon minced fresh oregano

Freshly ground black pepper

Preparation

Preheat the oven to 400°F. Put the eggplant in a colander and sprinkle with the salt. Let stand until moisture begins to bead on the surface of the eggplant, about 15 minutes. Pat the eggplant dry. Spread on a sided baking sheet and pour 1/4 cup of the olive oil over the eggplant. Toss to coat evenly. Sprinkle with the 1 teaspoon salt. Bake, turning once or twice, until tender, 25 to 30 minutes.

In a large skillet, heat the remaining 1/4 cup olive oil over medium-high heat.

Add the onion and sauté until browned, 5 to 7 minutes. Add the zucchini, bell pepper, and garlic. Reduce the heat to medium and sauté until the pepper is tender, about 10 minutes. Stir in the tomatoes and tomato paste. Cook, stirring often, until the tomatoes have melted, about 20 minutes. Add the eggplant and cook until the flavors meld, about 10 minutes. CREAMY MACARONI AND CHEESE

This comes from Diana Rattray, About.com's Southern Food expert. She writes, "A creamy macaroni and cheese recipe, made with Cheddar cheese sauce, cooked macaroni, and seasonings. Top this with buttered bread crumbs, if you wish." Serves 6.

Ingredients:

5 cups cooked macaroni (8 ounces raw)

4 tablespoons butter

4 tablespoons flour

1/4 teaspoon salt

1/8 pepper, or to taste

2 cups milk

3/4 cup shredded sharp Cheddar cheese

paprika, optional

Preparation:

In a saucepan, melt butter over medium-low heat. Stir flour into the butter until smooth and bubbly. Stir in salt. Gradually add milk, stirring constantly. continue to cook, stirring constantly, until thickened. Add cheese and continue to cook and stir until melted. In an 8x10-inch baking dish, alternate layers of macaroni and cheese sauce. Sprinkle with paprika, if desired. Bake in a preheated 350° oven for 20 minutes, or until hot and bubbly

CHOCOLATE COFFEE TIRAMISU

1-1/2 cups 5% ricotta cheese

1/2 cup light cream cheese

1/2 cup granulated sugar

3 tablespoons cocoa

1 egg yolk

1 teaspoon vanilla

3 egg whites

1/3 cup granulated sugar

3/4 strong, prepared coffee

3 tablespoon chocolate or coffee-flavored liqueur

16 lady finger cookies

Directions

Spray a 9-inch square baking dish with vegetable spray.

In a food processor, combine ricotta cheese, cream cheese, 1/2 cup sugar, cocoa, egg yolk and vanilla until smooth; transfer to a bowl.

In bowl, beat egg whites until soft peaks form. Gradually add 1/3 cup sugar and continue to beat until stiff peaks form. Gently fold the whites into the ricotta mixture.

Combine coffee and liqueur in a small bowl.

Put half of lady fingers in bottom of dish. Sprinkle with half of coffee-liqueur mixture. Spread half of ricotta mixture on top. Repeat layers. Cover and chill for at least 3 hours, or overnight.

ZELDA'S (AND SHELLA'S) CLAM CHOWDER

I'd "met" Shella on a feminist bulletin board that has long since closed. She and her other half, Zelda, on a bulletin board that they then put together that also has long since closed. This was one of the recipes they shared.

Zelda wrote, "I found this recipe at allrecipes.com and altered it slightly." She also added at the end of the recipe, "This tastes really good with toasted sourdough bread! Yum!"

Also, since I lean towards vegetarianism, I'd probably forgo the clams and just make this into a potato soup.

1 cup chopped onion

3 cloves garlic

2 teaspoons dried thyme

4 cups peeled and diced potatoes

1 cup diced celery

1 teaspoon salt

1/2 teaspoon ground black pepper

2 (10 ounce) cans minced clams, drained with juice reserved

1 quart half-and-half cream

1/2 cup butter, melted

1/4 cup all-purpose flour

Sauté onion and garlic in 1 tablespoon of butter for about 8 minutes or until tender. Add dried thyme and sauté another two minutes. Let cool about ten minutes and then blend with enough water to make a smooth paste.

In a large pot, combine potatoes, celery (I like a lot of celery so I usually add more), salt, pepper, onion mixture, and juice from clams. Augment with enough water to cover. Bring to a boil, then reduce the heat and simmer until the potatoes are soft, about 20 minutes.

With the flour and the rest of the butter you will make a roux. This will do away with the raw flour taste and help to thicken the chowder. To make the roux, melt the butter in a skillet (I prefer cast iron), add the flour. Cook for about 2 minutes on a medium to high heat, stirring constantly. The color of the roux will be a light cream color when it is finished. Set aside.

Stir the half-and-half into the pot. Whisk roux into the chowder. Cook and stir until thickened. Stir in clams and adjust seasonings. Cook another 5 minutes or until the clams are heated though.

TURKEY AND RICE QUICHE

This comes from the semi-infamous long-since-forgotten-emailing-list. Yield: Makes 8 servings (2 triangles each)

Ingredients

3 cups cooked rice, cooled to room temperature

1 1/2 cups cooked turkey cubes

3/4 cup finely diced fresh tomatoes

1/4 cup sliced green onions

1/4 cup finely diced green pepper

1 tablespoon chopped fresh basil

1/2 teaspoon seasoned salt

1/8 to 1/4 teaspoon ground red pepper

4 eggs, beaten

1/2 cup milk

3/4 cup (3 ounces) shredded Cheddar cheese

3/4 cup (3 ounces) shredded mozzarella cheese

Directions

Combine rice, turkey, tomatoes, onions, green pepper, basil, salt, red pepper, eggs and milk in greased 9x13-inch pan.

Top with cheeses.

Bake at 350 degrees 20 to 25 minutes or until knife inserted near center comes out clean.

To serve, cut quiche into 8 squares; cut each square diagonally into 2 triangles.

CHEESE VEGETABLE CHOWDER

Another from a long-since forgotten emailing list.

1/4 c. butter

2 c. chopped green cabbage

1 c. sliced onions

1 c. diced celery

1 c. thinly sliced carrots

2 1/2 c. shredded Cheddar cheese

9 oz. pkg. peas, partially thawed

17 oz. can creamed corn

2 1/2 c. milk

1 tsp. salt

1/2 tsp. pepper

1/2 tsp. thyme leaves

In large saucepan, melt butter; add cabbage, onions, celery, carrots, and peas. Saute 8-10 minutes or until crisp-tender. Add corn, milk, salt, and pepper and thyme. Reduce heat and simmer 20 minutes, stirring occasionally. Add cheese; stir until melted. Serves 6 (1 1/3 cups). Great with some homemade biscuits.

DECADENT TROPICAL FRUIT SALAD

Not sure where this one came from, but it would almost make for a nice dessert or afternoon treat.

1 (8 oz.) package cream cheese, softened

2 (6 oz.) containers lemon yogurt

3/4 cup sugar

3 bananas, diced

1 (20 oz.) can crushed pineapple in juice, drained

1 (10-oz.) jar maraschino cherries, chopped and drained (reserve one whole cherry for garnish)

1/2 cup sweetened flaked coconut

1 cup chopped pecans

Mint leaves (for garnish)

In a large bowl, beat together first three ingredients until well mixed. Stir in remaining ingredients, except mint. Spoon into a 1 1/2-quart glass bowl. Garnish by putting reserved cherry in center and arranging mint leaves around it to form a flower. Cover and chill 1 to 2 hours before serving.

Number of Servings: 10-12

GRILLED SUMMER VEGETABLE SALAD WITH CHICKPEAS AND BASIL

Serves 4 to 6

Another one that I'm not sure on its origins. It had been on some recipe list that I'd once subscribed to, years ago. The writer, though, has added, "Enjoy the summer harvest with this delicious salad. Freshly grated parmesan provides the best flavor but experiment with other cheeses like feta, gruyère or Manchego, if you like."

2 tablespoons extra virgin olive oil, plus more for oiling the grill

1 yellow bell pepper, cored, seeded and quartered

1 red bell pepper, cored, seeded and quartered

1 small red onion, cut into thick rings

2 zucchini, thickly sliced lengthwise

2 yellow squash, thickly sliced lengthwise

2 cloves garlic, chopped

2 tablespoons red wine vinegar

2 tablespoons chopped basil

1 (15-ounce) can chickpeas, rinsed and drained

Salt and pepper to taste

1/2 cup grated parmesan cheese

Oil grill grates, then preheat grill to medium high heat. Working in batches, grill peppers, onions, zucchini and squash, flipping once, until just charred in parts and tender, 6 to 8 minutes total; transfer to a large platter as done. Set aside to let cool before cutting into bite-size pieces.

In a large bowl, combine grilled vegetables, garlic, vinegar, oil, basil, chickpeas, salt and pepper. Garnish with parmesan and serve immediately or cover and chill until ready to serve.
