MODERN CHICKEN POTPIE

This comes from Julia Moskin in The New York Times cooking e-newsletter. Julia wrote, “Here's a radical notion: chicken potpie does not have to be filled with goopy white sauce, carrots and peas. Traditional recipes are long on starch and richness, short on flavor. This updated version is savory with chicken stock, herbs, and wine (no white sauce needed), easier to make, and still familiar. Use thigh meat, for more taste and better texture than breast. And vegetables should be served separately, not forcemarched into the filling. Roasted carrots, peas with mint and buttered steamed asparagus are all nice to serve alongside chicken potpie.” Yield: 6 servings; Time: 1 hour.

Ingredients

1 tablespoon vegetable oil

1 garlic clove, peeled and smashed

6 ounces bacon or pancetta, preferably thick-cut, sliced into strips

1 medium onion, chopped

8 ounces mushrooms, such as button or cremini, thickly sliced

1/4 cup all-purpose flour

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and ground black pepper

1 pound boneless chicken thighs, cut into bite-size pieces

2 tablespoons butter

2 1/2 cups rich chicken stock

1/4 cup Marsala, Madeira or sherry

1 tablespoon sherry vinegar

2 tablespoons finely chopped parsley, more for garnish

1 9-inch pie crust, chilled, or 1 sheet puff pastry

1 egg, beaten with 1 tablespoon water

Preparation

Heat oil and garlic together over low heat. When it sizzles, add bacon and onions and cook, stirring often, until fat is rendered and bacon is golden brown. Adjust the heat so the bacon slowly gives up its fat. Remove garlic clove and add mushrooms. Cook, stirring, until mushrooms are browned and slightly softened.

In a sealable plastic bag, combine flour, thyme, paprika, 2 large pinches salt and 1 large pinch pepper. Add chicken and shake well to coat.

In the skillet with the bacon and mushrooms, add butter and melt over medium heat. Add chicken pieces and any flour that remains in the bag. Cook, stirring, until chicken pieces are golden and the flour on the bottom of the pan is browned. Pour in stock, Marsala and vinegar. Scrape bottom of pan, and let simmer about 5 minutes, until thickened. Taste for salt, pepper and vinegar and adjust the seasonings. Turn off heat and stir in parsley.

Heat oven to 400 degrees.

Transfer chicken and sauce to 9-inch round pie dish or 8-inch square baking dish. Roll out pie crust to desired shape and size. Drape crust over filling, making a few slits or decorative holes on top. Tuck edges down around filling and brush crust with egg wash. If the dish is piled high with filling, place on a baking sheet to catch any overflow before transferring to oven.

Bake until crust is browned and filling is bubbling, 20 to 30 minutes.

Let cool slightly, at least 10 minutes, before serving with a big spoon. If desired, garnish each serving with parsley.

Tips

To make individual potpies, divide the mixture among 6 large ramekins, mini pie pans or ovenproof bowls. Roll the pastry out into a rectangle and cut into 6 squares, each one large enough to cover the filling and drape over the rim of the dish. Lightly place a pastry square over each dish and evenly fold down the four corners on the outside edge. Press gently to seal. Snip or cut a few slits in the top. Place on a cookie sheet for baking.

Leftover cooked chicken (or turkey) can be used instead of raw. Add the flour mixture by itself in step 3. Cut leftover chicken into bite-sized pieces and stir into the pan at the end of step 3 to heat through.

PEAR SNACKING CAKE WITH BROWN BUTTER GLAZE

This is from Melissa Clark, also The New York Times cooking e-newsletter. Melissa wrote, “This moist and tender cake has a similar texture to pumpkin or banana bread, with a delicate pear flavor scented with nutmeg and a touch of clove. But the real star is the brown butter glaze, which is nutty and rich, tasting a little like butterscotch, with a strong vanilla sweetness. The cake keeps well when stored in the refrigerator for up to 3 days, though the glaze will lose its snap from the chill. Or, bake the cake ahead, then glaze it a few hours before serving for the best texture. You can freeze the unglazed cake as well, up to a month ahead.” Yield: 12 servings.

Ingredients

For the Cake:

1 cup unsalted butter (2 sticks), at room temperature, more to grease the pan

1 cup granulated sugar

1/2 cup dark brown sugar

1 1/4 teaspoons baking powder

1 teaspoon fine sea salt

1 teaspoon vanilla extract

1 teaspoon grated nutmeg

1/8 teaspoon ground clove

1/2 teaspoon baking soda

4 large eggs, at room temperature

4 large pears (2 1/4 pounds), peeled, cored and shredded or finely chopped (to yield 2 1/2 cups)

2 3/4 cups all-purpose flour

3/4 cup rolled oats

1/2 cup toasted walnuts or pecans, chopped (optional)

For the Brown Butter Glaze:

5 tablespoons unsalted butter

2 tablespoons dark brown sugar

1 cup confectioners’ sugar

3 tablespoons heavy cream or milk, more as needed

1 teaspoon vanilla extract

Pinch of salt

Preparation

Prepare the cake: Heat oven to 350 degrees. Grease a 9-by-2-inch square or 9-inch-round pan and line bottom with parchment paper.

Using an electric mixer, beat butter until light and fluffy. Add sugars, baking powder, salt, vanilla, nutmeg, cloves and baking soda and beat for 1 minute. Beat in eggs, one at a time.

With the mixer on low, beat in half the pears, and then beat in the flour until smooth. Beat in remaining pears, then the oats, beating until well incorporated. Beat in nuts.

Spread batter in the prepared pan and bake until the top springs back when lightly pressed in the center of the cake, 40 to 50 minutes. Transfer to a wire rack to cool completely.

Prepare the glaze: In a small saucepan, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, about 3 minutes. It will smell nutty and rich when it’s ready.

Whisk in brown sugar until it dissolves. Whisk in confectioners’ sugar, cream, vanilla and salt until you’ve got a thick glaze with the texture of hot fudge sauce. Spread this over the cooled cake. Let the glaze set for at least 2 hours before serving.

FROZEN CARAMEL-APPLE CRUNCH CAKE

This comes from Daring Gourmet in the Tablespoon e-newsletter. She wrote, “A frozen layer of apple pie ice cream laced with caramel and sandwiched between a top and bottom layer of crunchy crushed granola bars.” Prep Time: 15 minutes; Total Time: 3 hours 20 minutes; Makes 8 Servings.

Ingredients

1 box Nature Valley™ granola bars, crushed into coarse crumbs

1/2 cup Gold Medal™ all-purpose flour

1/3 cup packed light brown sugar

6 tablespoons unsalted butter, melted

3 cups softened vanilla or cinnamon ice cream

3/4 can apple pie filling (chop up the apple pieces)

1/4 cup caramel sauce, plus extra for serving

Directions

Preheat the oven to 350ºF.

Place the Nature Valley granola bars in a food processor and process to a coarse crumb consistency. In a large mixing bowl, add the granola bar crumbs, flour, brown sugar and melted butter and stir to mix together. Spread the mixture out onto a pan lined with parchment paper and bake for 20 minutes, stirring occasionally. Let cool completely. Spread half of the crumb mixture onto the bottom of an 8x8-inch baking dish. Reserve the other half of the crumbs.

In a large mixing bowl, add the softened ice cream and stir in the apple pie pieces and caramel sauce. Pour the mixture over the crumbs in the 8x8-inch baking dish. Sprinkle the remaining crumbs over the top, cover with aluminum foil and freeze for at least 3 hours.

Cut into squares and serve with whipped cream and caramel sauce.

DYLAN DREYER’S PIEROGI CASSEROLE

This comes from TODAY’s Dylan Dreyer and was in TODAY’s food email. This begins, “You only need six-ingredients for Dylan's easy creamy pierogi casserole that's made with layers of store-bought pierogi and fresh spinach and topped with gooey melted cheese. She can't get over how good it is, so we had to share the recipe on TODAY Food!” Makes 8 servings.

Ingredients

2 16-ounce packages store-bought potato and onion pierogi

1 tablespoon olive oil

10 ounces fresh spinach

1 small onion, diced

2 cans condensed cream of mushroom soup

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Salt and pepper

Preparation

Preheat the oven to 350ºF.
Boil the pierogi according to the package's instructions. Drain.

In the meantime, in a large pan, heat the olive oil over medium high neat. Add the onion, spinach, salt and pepper. Sauté until the onion is cooked through and the spinach is wilted.

In an 8-by-8-inch casserole dish, spread a good dollop of the canned cream of mushroom soup. Add half of the pierogi. Add half of the cooked spinach and onions. Top with the cream of mushroom soup. Add a layer of mozzarella cheese and a sprinkle of Parmesan. Repeat the layers with the remaining ingredients in this order: pierogi, spinach, soup, mozzarella cheese, and Parmesan cheese. Bake until the top is golden and bubbly. Enjoy!

BAKED APPLES STUFFED WITH WILD RICE AND QUINOA

This is from Vegetarian Times. It starts off, “The stuffing for these baked apples can be made up to two days ahead.” Yield: Serves 8.

Ingredients:

1 cup mushroom broth

1/2 cup wild rice

1/4 cup red quinoa

2 Tbs. olive oil

1 cup finely chopped shiitake mushrooms

1/4 cup finely chopped red onion

1 Tbs. chopped fresh sage

1/2 cup low-fat cream cheese, cut into small pieces

1/4 cup dried cranberries, chopped

4 medium Red Delicious apples

1/2 cup grated sharp white Cheddar cheese, optional

Instructions:

Preheat oven to 350°F. Bring broth and 1 cup water to a boil in saucepan. Add wild rice, cover, reduce heat to medium-low, and cook 50 minutes. Stir in quinoa, and cook 20 minutes more, or until most of water is absorbed.

Heat oil in skillet over medium heat. Add mushrooms and onion, and sauté 7 minutes. Stir in sage and wild rice, and increase heat to medium-high. Cook 2 to 3 minutes, or until liquid has evaporated. Remove from heat, and stir in cream cheese. Fold in cranberries.

Halve apples through stem, and scoop out core and seeds, leaving 1/4-inch-thick wall around sides. Fill apple halves with 1/3 cup rice mixture. Place in 11- x 7-inch baking dish. Fill baking dish with 1 cup water, cover tightly with foil, and bake 45 minutes. Uncover apples, sprinkle with Cheddar (if using), and bake 15 minutes more, or until apples are soft and tops are beginning to crisp.

VEGAN PUMPKIN RISOTTO

This is from Jolinda Hackett, About.com’s Vegetarian Food expert. Jolinda wrote, “A vegetarian and vegan twist on classic Italian risotto - pumpkin! Why not? Pumpkin adds a sweet and unique flavor perfect for fall, as a vegetarian Thanksgiving entree, or anytime. Whether or not you're actually vegetarian or vegan, pumpkin risottos is a delicious, unique and creative entree choice for a fall, Halloween or Thanksgiving meal. It's also a great way to use up any leftover pumpkin you might happen to have on hand from the holidays.

“This Italian risotto recipe is both vegetarian and vegan, as long as you use a vegan margarine instead of butter. If you need it to be gluten-free as well, just be sure that the vegetable broth that you use is gluten-free, since all the other ingredients - including the rice, white wine, pumpkin and seasonings - are all gluten-free.” Prep Time: 10 minutes; Cook Time: 25 minutes; Total Time: 35 minutes; Yield: 4 - 6 servings.

Instructions:

1 onion, diced

1 tbsp olive oil

2 cups arborio (risotto) rice

1 cup white wine

4 cups vegetable broth

1 cup canned pumpkin

1 tsp fresh ginger, grated or minced

1 tsp nutmeg

1 tbsp chopped fresh basil

1 tbsp vegan margarine or butter

salt and pepper to taste

Preparation

Sautee the diced onion in the olive oil over medium heat for about three to five minutes, or until the onion is mostly soft. Next, add in the rice. Allow to cook, stirring, for a minute or two, just to lightly toast the rice, and being carefuly that it doesn't burn. Slowly add in the white wine.

Next, start to add the vegetable broth, 1/2 cup at a time. Allow the moisture to cook off before adding the next 1/2 cup.

Stir frequently, and continue adding the vegetable broth 1/2 cup at a time. Many chefs advise keeping the vegetable broth heating on the stove so that it is already simmering and hot when you add it to the rice.

Once you've added all the vegetable broth and the rice is nearly cooked, add in the canned pumpkin, fresh ginger, nutmeg, fresh basil and vegan margarine or butter. Stir well to combine everything well, and season lightly with a bit of salt and pepper, to taste.

All everything to heat, just for another minute or two, until everything is thoroughly heated through, and stirring frequently.

PENNE WITH SUN-DRIED TOMATO PESTO

This comes from Giade De Laurentiis, star of The Food Network’s Everyday Italian. Total Time: 25 min; Prep: 10 min; Cook: 15 min; Yield: 4 servings; Level: Easy

Ingredients

12 ounces penne pasta

1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil

2 garlic cloves

Salt and freshly ground black pepper

1 cup (packed) fresh basil leaves

1/2 cup freshly grated Parmesan

Directions

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.

Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan.

Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

CHICKEN AND VEGETABLE LO MEIN

This comes from Katie Chin, and was posted on The Today Show’s site. The recipe begins, “TV host and blogger Katie Chin shares how to turn store-bought rotisserie chicken and pre-cut veggies into a super easy restaurant redo main course.” Cook Time: 10 minutes; Prep Time: 20 minutes; Servings: 4.

Ingredients

8 ounces dried egg noodles or 14 oz fresh egg noodles

2 ounces snow peas, tips and strings removed

2 ounces broccoli florets

3 tablespoons all-purpose cornstarch

3 tablespoons cold water

2 tablespoons oil

1 teaspoon peeled and minced fresh ginger

1 clove garlic, minced

2 ounces sliced carrots

2 ounces fresh shiitake mushrooms, stemmed and thinly sliced

2 ounces thinly sliced red bell pepper

8 ounces shredded cooked chicken breast or store-bought rotisserie chicken

4 tablespoons oyster sauce

1 cup store-bought vegetable stock or chicken stock

1 teaspoon salt

2 green onions (scallions), green and white parts, cut into 1-in pieces

Preparation

Preheat oven to 300°F.

Bring a large pot of water to a boil over high heat. Add the noodles and cook until almost al dente, about 5 minutes for dried noodles, 3 minutes for fresh. Drain well and set aside.

Blanch the snow peas and broccoli florets in boiling water until tender, about 1 minute. Using a slotted spoon, transfer to an ice water bath to cool, then drain and set aside.

Mix the cornstarch and the cold water together and set aside.

Heat the oil in the wok or skillet over medium-high heat. Add the ginger and garlic and stir-fry until fragrant, about 30 seconds. Mix in the carrots and mushrooms and stir-fry for 3 minutes. Add the red bell pepper and shredded chicken and stir-fry for 1 minute.

Pour in the oyster sauce, vegetable or chicken stock and the salt. Cook until the stock comes to a boil, then add the cornstarch mixture and stir until the sauce thickens and all the ingredients are nicely coated. Add the drained snow peas and broccoli and the green onions and stir-fry for 30 seconds. Dish out over the noodles and serve immediately.

CREAMY CHICKEN ENCHILADAS

This comes from Reynolds Kitchens, and begins, “Enchiladas are simple and delicious when you line your pans with Reynolds Wrap® Aluminum Foil.” Prep Time: 15 - 25 minutes; Cook Time: 25 minutes; Servings: 6; Course: Main Dish.

Ingredients

2 1/2 cups chopped cooked chicken

1 can (10 3/4 oz.) cream of chicken soup

1 cup sour cream, divided

1 1/2 cups shredded cheese

1/4 cup chopped cilantro

12 (6-inch) flour tortillas

1 1/2 cups salsa

Reynolds Wrap® Aluminum Foil

Directions

Preheat oven to 350 degrees F. Line a large baking pan with Reynolds Wrap® 18-inch Wide Heavy Duty Aluminum Foil. Grease or spray foil to prevent sticking. Combine chicken and soup with half of sour cream, cheese and cilantro.

Spoon 1/4 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in foil-lined pan. Top with salsa and remaining cheese. Cover with foil.

Bake for 15 minutes; remove foil. Continue baking 10 minutes or until cheese is melted. Top with cilantro and sour cream.

VERY BLUEBERRY SUNDAES

Yield: 4 servings

Ingredients

Sauce:

1 cup frozen blueberries

3 tablespoons orange juice OR 2 tablespoons orange juice plus 1 tablespoon orange liqueur

Sugar substitute equal to 2 tablespoons sugar

Rest of ingredients:

2 cups low-fat vanilla ice cream

1/4 cup chopped toasted pecans or sliced toasted almonds

Directions

To make the sauce, place the blueberries, orange juice, and sugar substitute in a mini food processor and process until smooth. Set aside for about 15 minutes, until the mixture has thawed. Or transfer to a covered container and chill until ready to use.

To assemble the sundaes, place a 1/2 cup scoop of ice cream in each of 4 dessert dishes. Top the ice cream in each dish with a quarter of the sauce and a sprinkling of the nuts. Serve immediately.

CHICKEN PAPRIKASH

This comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn’t terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It’s a dish that pairs beautifully with butter-slicked egg noodles.” Yield: Serves 4 - 6; Time: 1 hour.

Ingredients

3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs

Kosher salt and freshly ground black pepper to taste

1 tablespoon neutral oil, like canola

3 tablespoons unsalted butter

1 large yellow or Spanish onion, peeled and diced

3 cloves garlic, peeled and minced

3 tablespoons Hungarian paprika, sweet or hot, or a combination

3 tablespoons all-purpose flour

1 cup canned crushed tomatoes or 1 large ripe tomato, chopped

1 cup chicken broth, homemade or, if not, low-sodium

1 pound egg noodles

3/4 cup sour cream

Preparation

Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.

Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.

Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.

Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.

Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

FRENCH GREEN BEANS AND SHALLOTS

This is from Jacques Pepin, also in The New York Times cooking e-newsletter. Jacques wrote, “These are perfect green beans: simple flavors combined into an elegant dish that goes with almost anything. Mr. Pepin suggests a roast chicken, but they would pair equally well with a celebratory roast.” Yield: 4 servings; Time: 21 minutes.

Ingredients

4 cups water

1 pound very small, firm green beans, cleaned

3 tablespoons butter

3 tablespoons peeled and chopped shallots

1/4 teaspoon salt, or to taste

1/4 teaspoon freshly ground black pepper, or to taste

1 teaspoon lemon juice

Preparation

Bring the water to a boil. Add the beans and cover the pot. Continue cooking the beans, covered, for 3 to 5 minutes until tender but firm. Drain and rinse under cold water.

At serving time, heat the butter in a skillet, add the shallots and saute for about 1 minute, until the shallots start to brown.

Add the beans, salt and pepper, and saute briefly. Sprinkle with lemon juice and serve with the chicken.

COLD CHICKPEA-TAHINI SOUP

This is from Mark Bittman in The New York Times cooking e-newsletter. Mark wrote, “Chickpeas have an irresistibly robust and nutty flavor, and a texture that can run from crunchy to tender. Dried chickpeas take longer to cook than other beans (two hours is a likely cooking time); use enough water, and the process is stress-free.

“One major benefit to cooking chickpeas yourself — aside from the superior flavor and texture — is that the water you cook them in becomes particularly rich and flavorful by the time they’re done. Save it for soups like the cold one here, which is a refreshing riff on hummus.” Yield: 4 to 6 servings; Time: 15 minutes.

1 cup chopped tomatoes

1 cup chopped cucumber

1/4 cup chopped red onion

1/4 cup chopped pitted olives

1/4 cup chopped fresh parsley

1 tablespoon olive oil, plus more for drizzling

Combine the chopped tomatoes, cucumber, red onion, olives, parsley and a sprinkle of salt and pepper in a small bowl; set aside.

In a blender, combine the chickpeas, lemon juice, 1 tablespoon olive oil, cumin, garlic, tahini and a sprinkle of salt and pepper. Gradually add water (start with 1 cup) and blend until smooth and thin enough to pour. Taste and adjust seasoning. Pour into bowls, and top with the chopped-vegetable mixture, some crumbled feta, a sprinkle of cumin (if you like) and a generous drizzle of olive oil.

FASTEST PASTA WITH SPINACH SAUCE

“Allow at least a gallon of water to a pound of pasta, because you need a large pot to accommodate the greens and because, if there is too little water, the addition of the greens will slow the cooking too rapidly.” Yield: 3 to 4 servings; Time: 25 minutes.

Ingredients

1 clove garlic

1/2 teaspoon crushed red pepper flakes, or to taste (optional)

About 15 calamata or other olives, pitted and roughly chopped

1/4 cup plus 1 tablespoon extra virgin olive oil

1 pound spinach, washed, tough stems removed, roughly chopped

Preparation

Bring a large pot of water to a boil, and salt it. Meanwhile, mince the garlic as finely as possible and combine it in the bottom of a warm bowl with the red pepper flakes, olives and olive oil.

Place the pasta in the pot, and cook until it is nearly done (test it for doneness by tasting). Plunge the spinach into the water, and cook until it wilts, less than a minute. Drain quickly, allowing some water to cling to the pasta, and toss pasta and spinach in the bowl with the garlic and olive mixture. Season with salt and pepper, and serve.

2 tsp. apple cider vinegar

1 cup cream-style corn

1/2 cup shredded soy Cheddar cheese

1/3 cup canola oil

4 green onions, finely chopped

1 cup cornmeal

1/2 cup all-purpose flour

2 Tbs. maple sugar or light brown sugar

1/2 tsp. salt

Preheat oven to 350°F. Coat 8×8-inch square baking dish with cooking spray.

Combine soymilk and vinegar. Let stand 5 minutes to develop a buttermilk-like consistency. Whisk in corn, soy Cheddar, oil, and onions; set aside.

Combine all dry ingredients, and make a well in the middle. Pour wet mixture into well, and stir until mixed. Pour batter into prepared baking dish, and bake 35 to 40 minutes, or until a toothpick inserted in the middle comes out clean.

1 1/2 cups black-eyed peas, sorted and rinsed

4 cloves garlic, crushed (4 tsp.)

6 sprigs fresh thyme

2 sprigs fresh rosemary

1 1/2 tsp. salt

4 medium carrots, peeled and cut into 1/2-inch dice

1/2 lb. rutabaga, peeled and cut into 1/2-inch dice

1/2 lb. parsnips, peeled and cut into 1/2-inch dice

2 Tbs. olive oil

1 medium red onion, diced

2 tsp. fresh lemon juice

1/4 cup chopped fresh parsley

Preheat oven to 400F. Combine peas with 6 cups water, garlic, thyme and rosemary in saucepan. Cover, bring to a boil and add 1 tsp. salt. Reduce heat, and simmer, partially covered, until peas are tender, about 40 minutes.

Meanwhile, toss carrots, rutabaga and parsnips with 1 Tbs. oil, 1/2 tsp. salt and black pepper to taste. Spread vegetables on foil-lined baking sheet, and roast about 40 minutes, or until tender, stirring every 15 minutes.

Heat remaining 1 Tbs. oil in skillet over medium heat. Add onion, and cook, stirring often, about 8 minutes, or until softened. Add onions to peas. Stir in roasted vegetables, and simmer, partially covered, 10 minutes. Remove herb sprigs. Stir in lemon juice; season with salt and pepper to taste. Serve hot, sprinkled with parsley.

1 small jalapeño pepper, stemmed, seeded, and minced

1 medium head escarole (3/4 lb.), leaves rinsed and chopped

Heat oil in large, deep skillet over medium-high heat. Add bell pepper and jalapeño, and cook, stirring often, 5 minutes, or until softened. Add escarole, kale and garlic, and cook, tossing often, over medium heat until wilted, about 4 minutes.

Add 1/2 cup water, and cook 5 to 10 minutes, or until almost dry. Stir in another 1/2 cup water, and cook 5 to 10 minutes, or until almost dry. Add another 1/2 cup water, and simmer 5 minutes more. (Greens should be tender and moist, but not soupy. If not tender, cook a bit longer in a little more liquid.) Season to taste with salt and pepper. Serve hot.

It's finally Friday, time for the weekend. I don't know about you, but weekends never seem long enough - except when they last too long. (This is sure to make sense with too many of us!)

APPLE CINNAMON EMPANADAS

It seems that there are quite a few good websites for finding delicious, yet simple recipes. One of the ones I’ve found is FamilyTime. This recipe begins, “Serve these warm with vanilla ice cream and caramel sauce for a great finale to a Mexican meal. Paired with steaming mugs of hot chocolate, these make a wonderful breakfast as well!” Serves: 36 servings; Prep Time: 25 minutes; Cook Time: 15 minutes

Ingredients

2 packages(12 ounces each) STOUFFER'S® Frozen Harvest apples, cooked according to pkg. directions, chilled

1 (8 oz.) package cream cheese, softened

3/4 cup granulated sugar, divided

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 (36 ct.) package frozen roll dough, defrosted according to pkg. directions

1/4 cup milk

1/3 cup butter, melted

Directions

Preheat oven to 375° F. Lightly grease 2 baking sheets.

Combine cream cheese, 1/4 cup sugar and vanilla extract in medium bowl; mix until smooth. Combine remaining sugar and cinnamon in small bowl.

Place dough for 1 roll on lightly floured surface; roll into 4-inch circle. Spoon about 1 tablespoon cream cheese mixture and 1 tablespoon Harvest Apples onto lower half; brush edges with milk. Fold dough in half; crimp edges with fork. Repeat with remaining dough.

Brush each empanada with butter; sprinkle with cinnamon-sugar. Place on prepared baking sheets.

Bake for 15 minutes or until golden brown; serve warm.

LOADED NACHOS

This is from Sam Sifton, in The New York Times cooking e-newspaper. Sam wrote, “Nachos are among the most ubiquitous of America’s pastime foods. At ballgames, carnivals or bowling alleys you can expect a pile of limp tortilla chips, drowned in warm yellow cheese product. But nachos should, and can, be better than this.

“Try them showered in good shredded cheese and accompanied by a fragrant meat sauce, the fire of jalapeños, the chill and silkiness of sour cream, the tart excellence of a good tomato, with shredded lettuce and thin-sliced radishes. Here is avocado; there, the awesome funk of chopped cilantro.

“Want some bacon on there as well, or a slash of hot sauce? Go to! Some will add beans. Others black olives, chopped raw onion. Please do.

“But take care to layer well. Layering is the key to loaded nacho perfection.” Yield: 6 to 8 servings; Time: 30 minutes.

Ingredients

1/4 pound slab or thick-cut bacon, diced

1 medium yellow onion, peeled and diced

1 1/2 pounds ground beef, like chuck or sirloin

3 cloves garlic, peeled and minced

2 tablespoons ancho chile powder

1 tablespoon ground cumin

2 teaspoons kosher salt

2 teaspoons smoked paprika, hot or mild

1 1/2 teaspoons black pepper

1 teaspoon light brown sugar

1 teaspoon cornstarch

1/2 teaspoon red pepper flakes

1/2 to 2/3 cup chicken stock, homemade or low-sodium, or water

1 12- to-16-ounce bag corn tortilla chips

1/2 head iceberg or romaine lettuce, shredded

1/2 cup pickled jalapeños

2 avocados, pitted and sliced

2 cups shredded Monterey Jack cheese

1 1/2 cups shredded sharp Cheddar cheese

1/2 cup crumbled Cotija cheese

3 radishes, cleaned and thinly sliced

2 cups cherry tomatoes, sliced into quarters

1/2 cup sour cream

1/2 cup roughly chopped cilantro leaves

2 limes, cut into eighths, for garnish

Hot sauce, if desired

Preparation

Heat oven to 400 degrees. Put a large sauté pan with high sides over medium-high heat and add the bacon. Cook, stirring occasionally, until the fat has rendered and the pieces are crisp, about 5 to 7 minutes, then remove the bacon and set aside.

Add the onions to the bacon fat and sauté, stirring occasionally, until they have softened and started to go brown around the edges, about 3 to 5 minutes. Add the ground beef and garlic and cook, breaking up the meat with a spoon, until browned, about 5 minutes. Add the chile powder, cumin, salt, paprika, black pepper, sugar, cornstarch and red pepper flakes and stir to combine and toast the spices. Add enough chicken stock or water to loosen the mixture, and allow it to simmer, uncovered, until the sauce is slightly thickened, about 5 to 6 minutes. (Add a little more stock or water if mixture is too thick.)

Assemble the nachos on a half sheet pan: Put a layer of tortilla chips on the pan and cover with about 1/3 of the meat sauce, then add about 1/3 of the lettuce, 1/3 of the jalapeños, some avocado slices and a handful of the Monterey Jack and Cheddar cheeses. Top with more tortilla chips, more meat sauce, more lettuce, jalapeños, avocado and cheese, then make a final layer of chips, meat, bacon, jalapeños, avocado and cheese. Top with crumbled Cotija cheese and slide the sheet pan into the oven to bake until the cheeses have melted through, about 10 to 12 minutes.

Top cooked nachos with the sliced radishes and tomatoes, and dot the tray with teaspoons of sour cream. Scatter the cilantro over the top and serve, accompanied by limes and hot sauce.

ALL-PURPOSE BISCUITS

This also comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Biscuits are what take us into the kitchen today to cook: fat, flaky mounds of quick bread, golden brown, with a significant crumb. Composed of flour, baking powder, fat and a liquid, then baked in a hot oven, they are an excellent sop for sorghum syrup, molasses or honey. They are marvelous layered with country ham or smothered in white sausage gravy, with eggs, with grits. Biscuits are easy to make.” Yield: 6 to 8 servings; Time: 1 hour.

Ingredients

2 cups all-purpose flour, plus more for dusting

2 tablespoons baking powder

1 scant tablespoon sugar

1 teaspoon salt

5 tablespoons cold, unsalted butter, preferably European style

1 cup whole milk

Preparation

Preheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball.

Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes.

Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise.

Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes.

SIRI’S ONE-POT MEXICAN PASTA

This comes from Siri Daly in a recent TODAY Show Recipes email. It begins, “Give the dish some color and style it your way with a variety of toppings like chopped avocado, thinly sliced scallions and spicy jalapeños.” Makes 6-8 servings.

1 tablespoon olive oil

1 pound ground turkey

1/2 package store-bought taco seasoning

12 ounces frozen squash, thawed

8 ounces pasta

2 cups chicken stock

8 ounces store-bought jarred taco sauce

1 1/2 cups shredded Mexican cheese blend, plus more for serving

Chopped avocado, scallions and jalapeños, for serving (optional)

Preparation

In a large pot, heat the olive oil over medium heat.

Add the ground turkey and cook until no longer pink.

Add the taco seasoning and squash, and cook for a few more minutes, until everything is combined.

Add the pasta, chicken stock and taco sauce and bring to a boil.

Stir everything up, cover the pot, lower to a simmer and cook for another 10 minutes.

Uncover, add the cheese, and simmer until the cheese has melted and sauce has thickened. Add a little more cheese on the top before serving, plus your favorite garnishes like chopped avocado, scallions and jalapeños.

CLASSIC BEEF CHILI WITH BEANS

2 tablespoons extra-virgin olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, cored, seeded and medium diced

1 pound ground grass-fed beef

2 tablespoons chile powder

2 cups beef broth

15 ounces canned diced fire-roasted tomatoes

15 ounce canned pinto beans, drained and rinsed

1/4 cup shredded cheddar cheese

2 scallions, white and green parts, chopped

1 tablespoon chopped fresh cilantro

Tortilla chips, for serving

Preparation

In a large Dutch oven, heat the oil over medium heat. Add the onion, garlic and red pepper. Cover and cook for 5 minutes, stirring occasionally, until the onion is translucent.

Add the ground beef. Using a wooden spoon, break up the beef, cover the pot, and cook for 5 minutes, until the beef is browned.

Stir in the chile powder, cumin, coriander, salt and cayenne. Cook for 1 minute. Stir in the beef broth, tomatoes and salsa. Bring to a simmer, then add the kidney and pinto beans. Cover and simmer for 20 minutes.

Serve the chili garnished with the cheese, scallions, and cilantro. Accompany with tortilla chips.

DEVIL’S FOOD MARSHMALLOW CUPCAKES

Nichelle wrote, “Ding Dongs, Ho Hos, and Cocoa Cremes are the chocolate snack cakes that have been the dessert for kids and adults lunches for decades. However, there's a better way to get a chocolate fix by baking the cakes from scratch. The essential components are chocolate cupcake, marshmallow filling and chocolate ganache frosting.

Devil’s Food Cupcakes

1 3/4 cup all-purpose flour

3/4 cup natural cocoa powder

2/3 cup boiling water

1 cup buttermilk

1 1/2 tsp baking soda

1/2 tsp kosher salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar

3 large eggs

2 tsp pure vanilla extract

Cream Filling

3/4 cup confectioners' sugar

3 tbsp unsalted butter, room temperature

1 tbsp heavy cream

1/2 cup of marshmallow fluff

1/2 tsp pure vanilla extract

Chocolate Ganache

1 cup of dark chocolate candy melts

6 tbsp of heavy cream

Preparation

Preheat oven to 350F degrees. Place one 12 cupcake cavity and one 6 cavity pan with cupcake liners. In a small bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.

In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.

Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. Use a scoop to divide the batter evenly into 18 wells of the baking pans.

Bake until the cupcakes are puffed and slightly springy to the touch and toothpick inserted into one of the cupcakes comes out clean which will be about 20 minutes. Let cool in pans for about 5 minutes. Then remove from pans and let cool completely on a wire rack.

To make the filling, in the mixing bowl, sift the sugar over the butter. Use the paddle attachment and beat on medium speed until light and fluffy. Add the marshmallow fluff, vanilla and cream. Beat until light and fluffy.

Using a paring knife or an apple corer, create a hollow about 1 1/2 inches in diameter and 1 inch deep in the center of each cupcake. Fill each hollow with a spoonful of the filling.

To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.

Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

CHOCOLATE CREAM PIE

A rich chocolate pie that has 43% less calories than a traditional recipe.

Serves: 8

Ingredients

Pastry for single-crust 9-inch pie

1-1/2 cups Equal Spoonful or Granulated*

1/2 cup cornstarch

1/3 cup European or Dutch-process cocoa

1/4 teaspoon salt

3 cups 2% milk

2 eggs

1 teaspoon vanilla

Light whipped topping (optional)

Chocolate curls (optional)

* May substitute 36 packets Equal sweetener

Directions

Roll pastry on floured surface into circle 1 inch larger than inverted 9-inch pie plate.

Ease pastry into plate; trim and flute edge. Pierce bottom and side of pastry with fork.

Bake in preheated 375F oven 10 to 12 minutes or until crust is golden. Cool on wire rack.

Combine Equal, cornstarch, cocoa and salt in medium saucepan. Stir in milk. Heat to boiling over medium-high heat, whisking constantly. Boil and stir until thickened, about 1 minute.

Beat eggs in small bowl; whisk about 1 cup chocolate mixture into eggs. Whisk egg mixture into chocolate mixture in saucepan. Cook over very low heat, whisking constantly, 30 to 60 seconds. Remove from heat. Stir in vanilla.

Spread hot filling in baked crust. Refrigerate until chilled and set, about 6 hours. Garnish top of pie with dollops of whipped topping and chocolate curls, if desired. Cut pie into wedges.

1/4 cup white wine or water

1 (14.5 ounce) can diced tomatoes with juices

1/4 cup pimento-stuffed green olives, roughly chopped

2 tablespoons capers, rinsed

2 tablespoons red wine vinegar

1 teaspoon sugar

2 tablespoons parsley, minced

Directions

In large skillet over medium high-heat, warm 2 tablespoons olive oil. Season leg quarters with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add leg quarters to pan, skin-side down. Brown chicken, turning once, 8 to 10 minutes per side. Remove chicken to plate and drain off all but 2 tablespoons oil.

Add eggplant to hot pan and cook, stirring, 5 minutes. Add remaining tablespoon olive oil, along with zucchini, onion and garlic. Cook 5 minutes, stirring occasionally.

Raise heat to high and add white wine to pan, stirring to scrape up any browned bits. Add all other ingredients, except parsley, and place chicken legs in mixture.

Bring to boil, reduce heat to medium-low, cover and simmer for 35 to 40 minutes or until cooked through or until an instant read thermometer reads 170F.

To serve, place some of the eggplant ragout onto plates, top with a leg quarter and sprinkle with parsley.

MOCHA SWIRL CHEESECAKE

Crust Ingredients:

1 cup chocolate wafer crumbs

1/2 cup chopped pecans or almonds

3 tablespoons stick butter or margarine, melted

3 tablespoons Equal Spoonful or Granulated*

Cheesecake Ingredients:

3 packages (8 ounces each) reduced-fat cream cheese, softened

3/4 cup Equal Spoonful or Granulated**

2 eggs

2 egg whites

1-1/2 tablespoons cornstarch

1/4 teaspoon salt

1 cup reduced-fat sour cream

2 teaspoons vanilla

3 tablespoons Equal Spoonful or Granulated***

1-1/4 teaspoons instant coffee crystals

1 teaspoon unsweetened cocoa powder

* May substitute 4-1/2 packets Equal sweetener

** May substitute 18 packets Equal sweetener

Directions

For Crust, combine chocolate crumbs, pecans, butter and 3 tablespoons Equal. Press onto bottom of a 9-inch springform pan. Set aside while preparing cheesecake.

For Cheesecake, beat cream cheese and 3/4 cup Equal in mixing bowl on medium speed of mixer until smooth and well combined. Mix in eggs, egg whites, cornstarch and salt. Fold in sour cream and vanilla until combined.

Remove 1/2 cup cheesecake batter. Stir in 3 tablespoons Equal, instant coffee crystals and cocoa until well combined. Pour half of plain batter over crust. Top with 5 spoonfuls of coffee batter. Using tip of knife or spatula, gently swirl coffee batter into cheesecake. Repeat with remaining batters.

Bake in preheated 325F oven 45 to 50 minutes or until center of cake is almost set. Cool on wire rack. Gently run metal spatula around rim of pan to loosen cake. Let cheesecake cool completely. Cover and refrigerate several hours or overnight before serving. To serve, remove side of pan. Cut cake into wedges.

1-3/4 cups all-purpose flour

1/2 cup yellow cornmeal

1-1/4 teaspoons baking powder

1/2 teaspoon baking soda

3/4 cup Splenda No Calorie Sweetener, Granulated

1/2 cup unsalted butter, softened

1/3 cup egg substitute

2 teaspoons vanilla

1 cup buttermilk

1 cup blueberries (frozen or fresh)

Directions

Preheat oven to 350 degree F.

Spray a muffin pan with nonstick spray or line muffin cups with paper liners. Set aside.

Blend dry ingredients together in a medium mixing bowl. Set aside.

Blend butter in a large mixing bowl until light and fluffy. Add egg substitute slowly. Scrape sides and continue to mix until butter forms small lumps. Add vanilla and buttermilk. Mix well. Add dry ingredients in three batches. Mix well and scrape the sides of the bowl after each addition.

Fold blueberries gently into batter. Scoop batter into prepared muffin cups, filling cups to the top.

Bake in preheated 350 degree F oven 20-25 minutes or until done.

BAKED CHICKEN PARMESAN

Ingredients

Vegetable oil spray

4 slices whole-wheat bread

1/4 cup plus 2 tablespoons grated Parmesan cheese

1-1/2 tablespoons finely snipped fresh parsley

1-1/2 teaspoons paprika

3/4 teaspoon garlic powder

1/2 teaspoon dried thyme, crumbled

1/2 cup nonfat or low-fat buttermilk

Vegetable oil spray

6 boneless, skinless chicken breast halves, about 4 ounces each, all visible fat removed

Directions

Preheat oven to 450 degrees F. Lightly spray a rectangular baking sheet and slightly smaller cooling rack with vegetable oil spray. Put rack on baking sheet. Set aside.

In a food processor or blender, process bread into fine crumbs. Pour into a shallow bowl. Stir Parmesan, parsley, paprika, garlic powder, and thyme into crumbs.

Pour buttermilk into a shallow bowl.

Rinse chicken and pat dry with paper towels. Dip chicken into buttermilk, shake off excess liquid, dredge in crumbs, and shake off excess crumbs. Put chicken on cooling rack. Spray each breast with vegetable oil spray.

Bake for 15 minutes, turn chicken, and bake for 10 minutes, or until done.

APPLE CINNAMON EMPANADAS

It seems that there are quite a few good websites for finding delicious, yet simple recipes. One of the ones I’ve found is FamilyTime. This recipe begins, “Serve these warm with vanilla ice cream and caramel sauce for a great finale to a Mexican meal. Paired with steaming mugs of hot chocolate, these make a wonderful breakfast as well!” Serves: 36 servings; Prep Time: 25 minutes; Cook Time: 15 minutes

Ingredients

2 packages(12 ounces each) STOUFFER'S® Frozen Harvest apples, cooked according to pkg. directions, chilled

1 (8 oz.) package cream cheese, softened

3/4 cup granulated sugar, divided

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 (36 ct.) package frozen roll dough, defrosted according to pkg. directions

1/4 cup milk

1/3 cup butter, melted

Directions

Preheat oven to 375° F. Lightly grease 2 baking sheets.

Combine cream cheese, 1/4 cup sugar and vanilla extract in medium bowl; mix until smooth. Combine remaining sugar and cinnamon in small bowl.

Place dough for 1 roll on lightly floured surface; roll into 4-inch circle. Spoon about 1 tablespoon cream cheese mixture and 1 tablespoon Harvest Apples onto lower half; brush edges with milk. Fold dough in half; crimp edges with fork. Repeat with remaining dough.

Brush each empanada with butter; sprinkle with cinnamon-sugar. Place on prepared baking sheets.

Bake for 15 minutes or until golden brown; serve warm.

LOADED NACHOS

This is from Sam Sifton, in The New York Times cooking e-newspaper. Sam wrote, “Nachos are among the most ubiquitous of America’s pastime foods. At ballgames, carnivals or bowling alleys you can expect a pile of limp tortilla chips, drowned in warm yellow cheese product. But nachos should, and can, be better than this.

“Try them showered in good shredded cheese and accompanied by a fragrant meat sauce, the fire of jalapeños, the chill and silkiness of sour cream, the tart excellence of a good tomato, with shredded lettuce and thin-sliced radishes. Here is avocado; there, the awesome funk of chopped cilantro.

“Want some bacon on there as well, or a slash of hot sauce? Go to! Some will add beans. Others black olives, chopped raw onion. Please do.

“But take care to layer well. Layering is the key to loaded nacho perfection.” Yield: 6 to 8 servings; Time: 30 minutes.

Ingredients

1/4 pound slab or thick-cut bacon, diced

1 medium yellow onion, peeled and diced

1 1/2 pounds ground beef, like chuck or sirloin

3 cloves garlic, peeled and minced

2 tablespoons ancho chile powder

1 tablespoon ground cumin

2 teaspoons kosher salt

2 teaspoons smoked paprika, hot or mild

1 1/2 teaspoons black pepper

1 teaspoon light brown sugar

1 teaspoon cornstarch

1/2 teaspoon red pepper flakes

1/2 to 2/3 cup chicken stock, homemade or low-sodium, or water

1 12- to-16-ounce bag corn tortilla chips

1/2 head iceberg or romaine lettuce, shredded

1/2 cup pickled jalapeños

2 avocados, pitted and sliced

2 cups shredded Monterey Jack cheese

1 1/2 cups shredded sharp Cheddar cheese

1/2 cup crumbled Cotija cheese

3 radishes, cleaned and thinly sliced

2 cups cherry tomatoes, sliced into quarters

1/2 cup sour cream

1/2 cup roughly chopped cilantro leaves

2 limes, cut into eighths, for garnish

Hot sauce, if desired

Preparation

Heat oven to 400 degrees. Put a large sauté pan with high sides over medium-high heat and add the bacon. Cook, stirring occasionally, until the fat has rendered and the pieces are crisp, about 5 to 7 minutes, then remove the bacon and set aside.

Add the onions to the bacon fat and sauté, stirring occasionally, until they have softened and started to go brown around the edges, about 3 to 5 minutes. Add the ground beef and garlic and cook, breaking up the meat with a spoon, until browned, about 5 minutes. Add the chile powder, cumin, salt, paprika, black pepper, sugar, cornstarch and red pepper flakes and stir to combine and toast the spices. Add enough chicken stock or water to loosen the mixture, and allow it to simmer, uncovered, until the sauce is slightly thickened, about 5 to 6 minutes. (Add a little more stock or water if mixture is too thick.)

Assemble the nachos on a half sheet pan: Put a layer of tortilla chips on the pan and cover with about 1/3 of the meat sauce, then add about 1/3 of the lettuce, 1/3 of the jalapeños, some avocado slices and a handful of the Monterey Jack and Cheddar cheeses. Top with more tortilla chips, more meat sauce, more lettuce, jalapeños, avocado and cheese, then make a final layer of chips, meat, bacon, jalapeños, avocado and cheese. Top with crumbled Cotija cheese and slide the sheet pan into the oven to bake until the cheeses have melted through, about 10 to 12 minutes.

Top cooked nachos with the sliced radishes and tomatoes, and dot the tray with teaspoons of sour cream. Scatter the cilantro over the top and serve, accompanied by limes and hot sauce.

ALL-PURPOSE BISCUITS

This also comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Biscuits are what take us into the kitchen today to cook: fat, flaky mounds of quick bread, golden brown, with a significant crumb. Composed of flour, baking powder, fat and a liquid, then baked in a hot oven, they are an excellent sop for sorghum syrup, molasses or honey. They are marvelous layered with country ham or smothered in white sausage gravy, with eggs, with grits. Biscuits are easy to make.” Yield: 6 to 8 servings; Time: 1 hour.

Ingredients

2 cups all-purpose flour, plus more for dusting

2 tablespoons baking powder

1 scant tablespoon sugar

1 teaspoon salt

5 tablespoons cold, unsalted butter, preferably European style

1 cup whole milk

Preparation

Preheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball.

Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes.

Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise.

Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes.

SIRI’S ONE-POT MEXICAN PASTA

This comes from Siri Daly in a recent TODAY Show Recipes email. It begins, “Give the dish some color and style it your way with a variety of toppings like chopped avocado, thinly sliced scallions and spicy jalapeños.” Makes 6-8 servings.

Ingredients

1 tablespoon olive oil

1 pound ground turkey

1/2 package store-bought taco seasoning

12 ounces frozen squash, thawed

8 ounces pasta

2 cups chicken stock

8 ounces store-bought jarred taco sauce

1 1/2 cups shredded Mexican cheese blend, plus more for serving

Chopped avocado, scallions and jalapeños, for serving (optional)

Preparation

In a large pot, heat the olive oil over medium heat.

Add the ground turkey and cook until no longer pink.

Add the taco seasoning and squash, and cook for a few more minutes, until everything is combined.

Add the pasta, chicken stock and taco sauce and bring to a boil.

Stir everything up, cover the pot, lower to a simmer and cook for another 10 minutes.

Uncover, add the cheese, and simmer until the cheese has melted and sauce has thickened. Add a little more cheese on the top before serving, plus your favorite garnishes like chopped avocado, scallions and jalapeños.

CLASSIC BEEF CHILI WITH BEANS

This comes from Danny Seo, also in a recent TODAY Show Recipes email. This begins, “Green lifestyle guru Danny Seo uses grass-fed beef in his delicious classic chili. Since there are no strict standards for grass fed beef in the United States, the next best thing is to look for a mark on the package from a third party operation. The best mark is from the American Grassfed Association, which most sustainability experts agree has the best definition, procedures and certification methods for ensuring you're getting real grass fed products.” Prep Time: 1 hour 10 minutes; Servings: 6

Ingredients

2 tablespoons extra-virgin olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, cored, seeded and medium diced

1 pound ground grass-fed beef

2 tablespoons chile powder

1 tablespoon ground cumin

1 teaspoon ground coriander

1/4 teaspoon salt

1/4 teaspoon cayenne pepper

2 cups beef broth

15 ounces canned diced fire-roasted tomatoes

16 ounces jarred store-bought tomato salsa

15 ounces canned kidney beans, drained and rinsed

15 ounce canned pinto beans, drained and rinsed

1/4 cup shredded cheddar cheese

2 scallions, white and green parts, chopped

1 tablespoon chopped fresh cilantro

Tortilla chips, for serving

Preparation

In a large Dutch oven, heat the oil over medium heat. Add the onion, garlic and red pepper. Cover and cook for 5 minutes, stirring occasionally, until the onion is translucent.

Add the ground beef. Using a wooden spoon, break up the beef, cover the pot, and cook for 5 minutes, until the beef is browned.

Stir in the chile powder, cumin, coriander, salt and cayenne. Cook for 1 minute. Stir in the beef broth, tomatoes and salsa. Bring to a simmer, then add the kidney and pinto beans. Cover and simmer for 20 minutes.

Serve the chili garnished with the cheese, scallions, and cilantro. Accompany with tortilla chips.

DEVIL’S FOOD MARSHMALLOW CUPCAKES

This comes from Nichelle Stephens, About.com’s Cupcakes expert. Nichelle wrote, “Ding Dongs, Ho Hos, and Cocoa Cremes are the chocolate snack cakes that have been the dessert for kids and adults lunches for decades. However, there's a better way to get a chocolate fix by baking the cakes from scratch. The essential components are chocolate cupcake, marshmallow filling and chocolate ganache frosting.

“Tip: An easy way to make chocolate ganache is to use chocolate candy melts. I have used Chocoley's Bada Bing dark chocolate candy melts.

Ingredients

Devil’s Food Cupcakes

1 3/4 cup all-purpose flour

3/4 cup natural cocoa powder

2/3 cup boiling water

1 cup buttermilk

1 1/2 tsp baking soda

1/2 tsp kosher salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar

3 large eggs

2 tsp pure vanilla extract

Cream Filling

3/4 cup confectioners' sugar

3 tbsp unsalted butter, room temperature

1 tbsp heavy cream

1/2 cup of marshmallow fluff

1/2 tsp pure vanilla extract

Chocolate Ganache

1 cup of dark chocolate candy melts

6 tbsp of heavy cream

Preparation

Preheat oven to 350F degrees. Place one 12 cupcake cavity and one 6 cavity pan with cupcake liners. In a small bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.

In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.

Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. Use a scoop to divide the batter evenly into 18 wells of the baking pans.

Bake until the cupcakes are puffed and slightly springy to the touch and toothpick inserted into one of the cupcakes comes out clean which will be about 20 minutes. Let cool in pans for about 5 minutes. Then remove from pans and let cool completely on a wire rack.

To make the filling, in the mixing bowl, sift the sugar over the butter. Use the paddle attachment and beat on medium speed until light and fluffy. Add the marshmallow fluff, vanilla and cream. Beat until light and fluffy.

Using a paring knife or an apple corer, create a hollow about 1 1/2 inches in diameter and 1 inch deep in the center of each cupcake. Fill each hollow with a spoonful of the filling.

To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.

Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

Chili!

We've survived another Halloween. But the holiday season has begun.

With the weather cooling off - it's even a little cooler here in Florida (yay!) - it's time for some cool-weather food. Chili fits the bill nicely. Here are six chili recipes for almost chilly weather. Enjoy!

COMFORTING CROCK POT CHILI

This recipe begins, “This classic and simple crock pot chili is sure to please your taste buds!”

Ingredients

1 pound ground turkey breast or very lean ground beef

1 large onion — finely chopped

5 oz pinto beans — rinsed and drained

8 1/2 oz corn — rinsed and drained

15 oz tomato sauce

14 1/2 oz diced tomatoes

10 oz diced tomato and green chilies

1 tbs. chili powder

1 tsp. ground cumin

1/2 tsp. garlic powder

1/2 tsp. salt

Directions

In nonstick skillet over medium heat, cook ground meat until meat is no longer pink; drain. Transfer meat to Crock Pot. Add remaining ingredients and stir until combined. Cook on "high" for 4 hours; remove lid and stir quickly halfway through.

LOW-CALORIE, ALMOST FAT-FREE VEGETABLE CHILI

Jolinda Hackett, About.com's vegetarian blog's guide, wrote, "Using extra vegetables, tomato juice and tomatoes with fewer beans keeps this vegetarian chili lower in calories. Though meatless chili is already a healthy and low-fat choice, this version is extra low-cal. It's really more like a chili-spiced tomato soup than a hearty chili. This was one of those recipes that came about purely because of what I had on hand in my kitchen, which happened to be lots of veggies, and not so many beans. But I really wanted chili."

Ingredients:

1/2 medium onion, chopped

2-3 cloves garlic, minced

2 tbsp water

1 large carrot, sliced thin

1 green bell pepper, chopped small

1 red bell pepper, chopped small

2 tbsp soy sauce

1/2 cup corn kernels

1 15-ounce can kidney beans

1 28-ounce can diced tomatoes (do not drain)

1 12-ounce can tomato juice or V8

water

1 jalapeno or other small spicy pepper, minced

1 tbsp chili powder

1/2 tsp oregano

1/2 tsp seasoned salt

1/2 tsp cayenne pepper

green onions for garnish, optional

Preparation:

In a large non-stick pot, heat the garlic and onions for 3-4 minutes. Add the water and carrots and heat, stirring, for another 3-4 minutes. Add green bell pepper, red bell pepper and soy sauce, stirring to combine well. Heat for just another minute or two. Reduce heat to medium low and add all the remaining ingredients, except for the green onions. Cover and allow to slowly simmer for at least 25 minutes and up to 40 minutes.

Adjust the seasonings to taste, garnish with some green onions or even a bit of cheese or sour cream if you're not eating vegan.

Add onion, jalapenos and garlic to drippings in pot; cook over medium-low heat until onion is very tender, about 8 minutes. Stir in chili powder, cumin, salt, and red pepper; cook 1 minute.

Return meat to pot. Stir in broth, tomatoes, beer and bay leaf. Heat to boiling. Lower heat; simmer with cover slightly ajar until meat is tender, about 1-1/2 hours. For last 20 minutes, uncover to thicken chili.

To serve, ladle chili into bowls. Garnish each bowl with lime wedge.

BLACK BEAN CHILI

Ingredients

1 Tbsp olive oil

1 medium yellow onion, finely chopped

1 medium green, yellow, orange or red bell pepper, finely chopped with stem and seeds removed

3 Tbsp chili powder

1 tsp ground cumin

1 bay leaf

1/2 tsp sea salt

1 (28-oz) can diced tomatoes, with juice

1/4 cup Silk Original Cashewmilk

2 (15-oz) cans black beans, drained and rinsed

1 (15-oz) can kidney beans, drained and rinsed

1 cup uncooked quinoa

2 3/4 cups vegetable stock

Whole cilantro leaves or parsley, if desired

6 scallions, chopped, if desired

Preparation

Heat olive oil in a large pot over medium-high heat. Add onions and pepper, reducing the heat to medium. Cook, stirring occasionally, until very soft (about 10 minutes).

TEXAS CHILI

One of my dad’s recipes. Note: Actually, it is the one he said he found in the airline magazine. Whenever Dad fixed this, he’d have to make 2 batches of chili: this for those brave enough to try it, another for everyone else, somewhat cooler.

A funny anecdote: Dad had been involved in Civil Defense when we lived in New York. He had a friend who was also in C.D. who swore that since he'd grown up in New Mexico, he could eat anything spicy hot without it bothering him; in fact, the hotter it was, the better he liked it.

One evening, Larry and his wife came to dinner. Dad had invited them, fixing up a batch of this chili, along with the milder batch. Larry was served the hot stuff. Next time Dad went to a C.D. meeting, he overheard Larry state, "I can eat anything hot - except John S's chili!" Be forewarned!

3 balls ground beef suet

4 slices bacon, cut up

2 lbs. stew beef, cut small

2 lbs. chopped chuck

3 cloves garlic, minced

2 Bernudea onions, chopped

1 T paprika

3/4 tsp. black pepper

1/4 tsp. cayenne

6-9 T chili powder

2-4 walnut-size pieces suet

1 can beef broth

1 tsp. oregano

3 cans measured water

3/4 tsp. cumin

6 C tomatoes & juice

1 2/3 T salt

1 1/2 lbs. drained kidney beans

In heavy pot place 3 balls suet with bacon. Cook out fat. Add & brown beef & chopped chuck. After browning, add garlic. Cook lightly. Add remainder of spices. In another pot, heat 2-4 pieces of suet. Add onions. Cook until almost burned. Add to meat pot. Deglaze pot with meat broth. Add water, tomatoes & juice. Mash tomatoes into chili. Cover & simmer slowly 1 1/2-2 hours. Uncover. Cook down for about 1/2 hour, adding kidney beans. Serves 6-8.

QUICK AND EASY CHILI

I first had this at my former in-laws' house. It is about as quick and simple as you can get. It took me a while to warm up to this chili, after eating Dad's Texas Chili. No matter; my younger two love it, and I've grown to like it.

Note:The beans were pretty much required for this recipe. I usually don't push certain brands, and I suppose that other cans of chili beans could be used. But when I fix their dad's/paternal grandparents' chili, I use the beans listed. I've also added the oil to this, but this was not an original part of the recipe.

2 T olive oil

1 pound ground beef

4 cans Ranch Style beans

1 can tomato soup

Chili powder, to taste

Brown ground beef in oil. Add beans, soup, and chili powder. Stir, heat, eat.
