Friday Recipes

It's Friday, time to get ready for the weekend. Here are six yummy recipes to help you through the weekend, including Easy Ground Beef Chili, Torrisi Turkey, and Strawberry Cheesecake Bars. Yum! Enjoy!

MEXICORN CHICKEN

One of my inventions from decades ago. It can be found in Off the Wall Cooking, which I'm currently updating.

Ingredients

2-3 lb. chicken, cut up

3 T oil

1 onion, chopped

2 cloves garlic, minced

2 T wheat germ

12 oz. can Mexicorn

1 can condensed tomato soup

1 C water

1 T soy sauce

1 T honey

Directions

Brown chicken to oil. Put in baking dish. Brown onion, garlic & wheat germ, stirring. Pour over chicken. Add mexicorn, soup, water, soy sauce & hone. Bake at 350 degrees for 1 hour.

CRISP GNOCCHI WITH BRUSSELS SPROUTS AN BROWN BUTTER

This is from Ali Slagel in The New York Times cooking e-newsletter. Ali wrote, “For a fantastic meal that can be ready in 20 minutes, toss together seared gnocchi and sautéed brussels sprouts with lemon zest, red-pepper flakes and brown butter. The key to this recipe is how you cook the store-bought gnocchi: No need to boil. Just sear them until they are crisp and golden on the outside, and their insides will stay chewy. The resulting texture is reminiscent of fried dough. Shelf-stable and refrigerated gnocchi will both work here, but the shelf-stable ones do crisp up a bit better.”

Time: 20 minutes; Yield: 4 servings

Ingredients

1 pound brussels sprouts

1 lemon

1/4 cup extra-virgin olive oil

Kosher salt and black pepper

1/2 teaspoon red-pepper flakes

1 (18-ounce) package shelf-stable or refrigerated potato gnocchi

6 tablespoons unsalted butter, sliced into 6 pieces

1/2 teaspoon honey

Freshly grated Parmesan, for serving

Preparation

Trim and halve the brussels sprouts. Using a vegetable peeler, peel thick strips of lemon zest, then coarsely chop. (You should have about 2 teaspoons chopped zest.)

In a large (preferably 12-inch) skillet, heat 3 tablespoons olive oil over medium-high. Add the brussels sprouts, season with 1/2 teaspoon salt and a few grinds of pepper, then arrange the brussels sprouts in an even layer, cut-side down. Scatter the lemon zest over the top and cook, undisturbed, until the brussels sprouts are well browned underneath, 3 to 5 minutes. Add the red-pepper flakes, stir and cook until the brussels sprouts are crisp-tender, 2 to 3 minutes. Transfer to a medium bowl.

In the same skillet, heat the remaining 1 tablespoon olive oil over medium-high. Break up any gnocchi that are stuck together, add them to the pan and cook, covered and undisturbed, until golden brown on one side, 2 to 4 minutes. Add the butter and honey, season with salt and a generous amount of black pepper, and cook, stirring, until the butter is golden, nutty smelling and foaming, 1 to 2 minutes. Stir in the brussels sprouts until warmed through. Serve with grated Parmesan.

TORRISI TURKEY

This is from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “The roast turkey breast that Rich Torrisi and Mario Carbone serve for lunch at their restaurant Parm in New York City is about the moistest, most luxuriously flavorful turkey available on the planet: rich and buttery, deep with rich turkey taste. They wrap a brined breast in plastic wrap and aluminum foil and place it in an intensely humid low-temperature oven that leaves the meat dense with moisture, heavy with flavor. Then they paint a glaze of honey and roasted garlic on the meat and place it in a hot, dry oven to create a crust. The result is turkey that tastes emphatically of turkey. And you can do it at home.”

Time: 4 hours, plus marinating; Yield: 12 servings

Ingredients

For Brining the Turkey:

1 cup kosher salt

1 cup sugar

2 boneless turkey breasts, 3 to 4 1/2 pounds each

For the Glaze:

8 heads garlic, lightly smashed but intact

4 teaspoons extra virgin olive oil

1/2 cup honey

1 tablespoon kosher salt

1 tablespoon pepper

1 tablespoon thyme leaves

Preparation

To brine the turkey: In a medium saucepan, bring 2 quarts water to a boil with the salt and sugar. Pour into a large pot, and add 2 quarts cold water. Once the brine is cool, submerge the turkey breasts and refrigerate overnight, or up to 24 hours.

To make the glaze: Heat oven to 375 degrees. Toss the garlic heads with the olive oil in a small casserole dish, cover and roast until the garlic is soft, about 1 hour and 10 minutes. Leave covered until cool enough to handle, then squeeze the garlic cloves from their skins into a food processor and purée. Add the honey, salt and pepper. Cover until ready to use.

To cook the turkey: Heat oven to 250 degrees. Remove the breasts from the brine and wrap each one four times in plastic wrap and once in aluminum foil. Insert an oven-safe thermometer into the center of one breast and place both on a wire rack in a roasting pan. Add water to reach to just below the rack. Cook until the internal temperature reaches 135 degrees, 2 to 3 hours. Near the end of cooking time, fill a large bowl halfway with ice water.

Remove the turkey from oven and raise temperature to 425 degrees. Without removing thermometer or wrapping, submerge the turkey in the ice bath for 5 minutes. Remove foil, plastic wrap and turkey skin. Pat dry and brush glaze liberally on all sides of the breasts. Roast until glaze is golden, 15 to 20 minutes. Sprinkle with fresh thyme and serve thinly sliced, hot or cold.

EASY GROUND BEEF CHILI

This is from Diana Rattray, who writes for The Spruce Eats. Diana wrote, “This hearty beef and bean chili is a comforting dish that will warm you up on cold fall and winter days.

“We can thank Texas for introducing the rest of us to this fabulous dish. The typical Texas chili does not include beans, but there are many variations with kidney beans, pinto beans, or black beans. It's the complex blend of ingredients that makes the best chili. You'll find this all-American dish in cans, on restaurant menus ("chili joints"), served on hot dogs or hamburgers, and used as a pasta sauce.

“Browned ground beef provides most of the protein, while vegetables, beans, tomatoes, and seasonings unite for a spicy and delicious long-simmered dish.

“The dish is versatile as well. The amount of jalapeno pepper can be adjusted up or down, depending on your heat tolerance. Unless it's labeled hot or spicy, most chili powders are fairly mild. For a spicier chili, taste and add some extra cayenne pepper. Some shredded carrots will add some natural sweetness to the chili, and they can easily be "hidden" in the chili for those picky kids.

“Condiments are another way to personalize your chili. Serve the chili with little dishes of shredded or grated cheddar or Monterey Jack cheese, lime wedges, diced onions, pickled jalapeno rings, avocado wedges or guacamole, or chopped cilantro. A fresh tossed green salad or homemade coleslaw can round out a chili meal nicely.

Prep Time: 15 minutes; Cook Time: 2 hours 10 minutes; Total Time: 2 hours 25 minutes; Yield: 6 servings.

Ingredients

1 tablespoon vegetable oil

1 pound ground beef

1 large onion (chopped)

1 green bell pepper (chopped)

2 1/2 tablespoons chili powder

1 clove garlic (large, minced)

1 jalapeño pepper (seeded and minced)

1 (28-ounce) can tomatoes (diced, with juices)

1 (8-ounce) can tomato sauce

1/2 teaspoon ground cumin

1/2 teaspoon dried marjoram

1/4 teaspoon dried thyme

1 (15-ounce) can beans (e.g., chili beans, small red beans, black beans, kidney beans, pinto beans)

Directions

Gather the ingredients.

Heat the vegetable oil in a large skillet over medium heat. Crumble the ground beef into the skillet and add the onion and bell pepper. Cook until the vegetables are tender and the beef is no longer pink. Drain off excess fat.

Add chili powder, minced garlic, jalapeno pepper, tomatoes and tomato sauce, cumin, marjoram, and thyme. Stir to blend and bring to a boil. Cover the pan and reduce the heat to low; simmer for about 1 1/2 to 2 hours, stirring occasionally.

Pour the canned beans into a colander; rinse and drain well. Add the beans to the chili and heat through.

For serving, consider freshly baked cornbread or cornbread muffins.

Tip

Serve with saltines or fresh cornbread. Tex-Mex cornbread or no-knead jalapeño and cheese bread would be fantastic with this chili, or bake a pan of buttermilk biscuits to serve on the side.

LOW CALORIE CROCK-POT RICE PUDDING

I found this recipe on My Daily Moment. It begins, “You won't take this delicious dessert with a grain of rice. It's creamy, dreamy and prepared in a crockpot. One bite and you're sure to love every mouthwatering spoonful.” It serves 6.

Ingredients

3 cups skim milk

3/4 cup rice

3/4 cup sugars, granulated

1 tablespoon vanilla

1 Pam cooking spray

4 tablespoons butter, light, stick, melted

1 teaspoon cinnamon, ground

Directions

Spray crock-pot with Pam. Pour all ingredients into pot and stir, then add melted butter and stir again. Cover and cook on high for 2-3 hours, or until rice absorbs all liquid. Cook until soft and stir often. Garnish with raisins and whipped cream, if desired.

STRAWBERRY CHEESECAKE BARS

This is from Erin Jeanne McDowell in The New York Times cooking newsletter. Erin wrote, “Great for picnics or potlucks, these portable cheesecake bars incorporate cooked berries directly into the custard, which means they take on a rosy hue. You can even add a few drops of red food coloring if you want to make up for out-of-season berries, which are less vibrantly colored, or if you just want a livelier result. Feel free to use frozen berries in place of fresh, though you’ll need to thaw them fully before beginning the process.”

Yield: One 9-by-13-inch pan (about 15 bars); Time: 1 hour 45 minutes, plus chilling

Ingredients

For the Crust:

Nonstick cooking spray

10 1/2 ounces shortbread cookies

1/2 teaspoon fine sea salt

4 tablespoons unsalted butter (1/2 stick), melted

For the Filling:

1 1/2 pounds strawberries, hulled and halved (about 4 cups)

1 1/2 cups granulated sugar

3 (8-ounce) packages cream cheese, at room temperature

5 large eggs, at room temperature

1 tablespoon vanilla extract

Red food coloring, as needed

For the Topping:

1 1/4 cups heavy cream

1/2 cup confectioners’ sugar

3/4 pound strawberries, hulled and thinly sliced (about 2 cups)

Preparation

Heat the oven to 350 degrees and grease a 9-by-13-inch pan with nonstick cooking spray.

Make the crust: In a food processor, pulse the cookies until they form fine crumbs (you should have about 2 1/2 cups). Add the salt and pulse briefly to combine, then add the melted butter and pulse until uniformly incorporated. Press the crust into an even layer on the bottom of the prepared pan and wipe out the bowl of the food processor. Transfer the pan to the oven and bake until the crust has browned slightly and appears set, 10 to 12 minutes. Cool completely. Reduce oven temperature to 325 degrees.

Make the filling: In a medium pot, toss the strawberries with 1/4 cup granulated sugar. Cook over medium heat, stirring occasionally, until the strawberries begin to soften and the mixture becomes juicy, 4 to 8 minutes, depending on the firmness of the berries. Cool for 15 minutes.

Transfer the strawberries and their juices to the food processor and purée until smooth, about 1 minute. Transfer the berry purée to a large bowl and set aside. Add the remaining 1 1/4 cups granulated sugar and the cream cheese to the food processor bowl and blend until smooth. Add the eggs one at a time and pulse until incorporated, scraping down the sides of the food processor bowl as needed.

Add the vanilla and pulse to combine. Scrape the custard into the berry purée and stir to combine. The batter should be a pale pink. If it’s not, add 3 to 5 drops red food coloring and mix to combine. Pour the cheesecake custard into the cooled crust.

Bake the cheesecake until the edges appear set and the center still appears slightly jiggly, 45 to 50 minutes. Cool at room temperature for 45 minutes, then refrigerate until firm (at least 4 hours, and up to overnight).

Make the topping: In an electric mixer fitted with the whisk attachment, whip the cream and confectioners’ sugar to medium peaks, 3 to 4 minutes. Spread the whipped cream on the chilled cheesecake in an even layer. Arrange the sliced strawberries on top. (Arranging them in stripes makes it a bit easier to cut rows out of the bars later.) Use a sharp knife to release the edges of the cheesecake from the pan. Slice into 15 even pieces, wiping the knife clean between cuts for the clean, sharp edges.
