CELEBRATION CAKE

This comes from Seattle’s own Macrina Bakery. I’m on their mailing list (they send out the yummiest recipes!), and I highly recommend signing up.

If I’m ever out in Seattle, I fully intend to pay a visit to any of their bakeries…

According to Macrina’s Leslie Mackie, “This is one of my favorite birthday or special occasion cakes. The natural sweet flavor of toasted coconut layered with fresh summer berries and lemon cream makes for a light yet decadent summer treat.”

INGREDIENTS:

COCONUT CAKE

1 cup shredded, unsweetened coconut 1 cup coconut milk

5 egg whites

1 teaspoon pure almond extract

1 teaspoon pure vanilla extract

2-1/4 cups cake flour

1-3/4 cups granulated sugar

1 tablespoon + 1 teaspoon baking powder 1 teaspoon salt

12 tablespoons (1-1/2 sticks) unsalted butter, room temp.

2 pints fresh raspberries (for assembly)

LEMON CREAM

3 egg yolks

1/2 cup granulated sugar

1/3 cup lemon juice

3 tablespoons unsalted butter 1 cup whipping cream

WHITE CHOCOLATE FROSTING

12 ounces white chocolate chips

8 ounces unsalted butter, room temp. 1 pound cream cheese, room temp.

2 tablespoons fresh lemon juice

DIRECTIONS: COCONUT CAKE

Preheat oven to 325°F. Spread coconut evenly on a rimmed baking sheet and toast for 3 minutes. Toss with tongs to toast evenly and return to the oven for 3 minutes. Remove from oven and transfer to a bowl. Set aside.

In a medium bowl, combine the coconut milk, egg whites, and almond and vanilla extracts. Mix with a whisk and set aside.

Sift flour, sugar, baking powder and salt into the bowl of a stand mixer. Add the toasted coconut and mix on low speed using the paddle attachment for 30 seconds. Cut butter into small cubes and add to the flour mixture. Mix on low speed until it is coarse and crumbly with no visible pieces of butter, approximately 4 minutes. Add half the wet ingredients and mix on medium speed for 30 seconds. Scrape down the sides of the bowl with a spatula and add the remaining wet ingredients, mixing for another 30 seconds. Scrape the bowl again to ensure it is well incorporated.

Prepare a 12" x 18" baking sheet pan with 1/2" rim by brushing it with oil and lining the bottom with parchment paper. Pour batter into prepared pan and bake on the center rack for 25 minutes or until the top is golden brown. When cool, run a knife around the edge of the cake and invert onto another sheet pan. Gently remove parchment paper and then cut three 7" circles of cake. You will have excess cake scraps, which make great trifle with fresh berries and whipped cream. Cover cake circles until ready to assemble layer cake.

LEMON CREAM

Combine egg yolks, sugar and lemon juice in a medium stainless steel bowl and mix well with a whisk. Place the bowl on top of a saucepan filled with 2" of simmering water. Whisking constantly, slowly cook for about 10 minutes. You don’t want to cook this too fast or the egg will scramble. As it thickens you will see ribbons form in the custard. Add the butter and continue whisking until it is dissolved. Remove bowl from the saucepan and whisk to cool slightly. Cover with plastic wrap, allowing it to rest on the surface of the lemon curd.

Cool in the refrigerator for 30 minutes.

Whip the heavy cream to medium stiff peaks and fold into the chilled lemon curd. Set aside in the refrigerator.

WHITE CHOCOLATE FROSTING

Place the white chocolate into a medium stainless steel bowl. Place the bowl over a saucepan filled with 2" of simmering water. Stir with a rubber spatula until it is completely melted. Remove bowl from the saucepan and cool to room temperature.

Place the butter and cream cheese in the bowl of a stand mixer fitted with a paddle attachment. Beat until the mixture is completely smooth, approximately 3-6 minutes. Add the lemon juice and then the melted white chocolate. Mix until all ingredients are fully incorporated. If it is too soft (this can happen if your room temperature is warm) chill in the refrigerator for 20 minutes before using.

ASSEMBLY

Begin layering the cake using a single cut layer at the base. Top with a 1/2" thick layer of lemon cream and a single layer of raspberries. Keep a 1" border at the edge of cake so when the additional layers are added it doesn’t push the filling out. Repeat with the second layer and top with the final layer. Place the cake into the refrigerator or freezer to chill for 20 minutes.

To add a crumb coat (a base coat of frosting that allows for a perfect finish), spread the sides and top with a thin layer of frosting. Chill for 30 minutes.

To add the finishing coat of frosting, start by covering and smoothing the sides before completing the top. You can add some color by taking a small portion of the white chocolate frosting and mixing a little bit of food coloring into it. Then smooth onto the sides to create color blushes. Don’t be afraid to be creative!

Chill this cake for 1-1/2 hours before serving so that it is completely set. Decorate with fresh garden flowers and raspberries.

NUTELLA MUG CAKE

This easy yumminess is from TheSpruceEats, and begins, “This gloriously simple mug cake recipe puts you just 60 seconds away from a super indulgent dessert for Nutella lovers looking to satisfy a craving in a hurry. With ingredients you probably already have on hand, this is a perfect sweet treat for one.“

Total Time: 7 minutes; Prep: 5 minutes; Cook Time: 2 minutes; Yield: 1 Serving.

1/4 cup whole milk (can also use 2 percent)

1/4 cup all-purpose flour

1/4 teaspoon baking powder

1/4 cup Nutella

Add the Nutella and stir until the batter has no lumps.

Microwave on high for about 45 to 60 seconds.

Microwaves vary but what you’re looking for is to see the cake look set and dry, the edges will pull away from the side of the mug and the cake will feel springy and fluffy to the touch. It will probably take an additional 30 to 60 seconds in total.

Reduce speed to low. Add flour; beat just until moistened. Spoon batter into greased and floured 12-cup bundt or 10-inch tube pan. NAKED CHOCOLATE PEANUT BUTTER LAYER CAKE

This comes from The Baker Chick (otherwise known as Audra). Here’s part of what Audra wrote: “My favorite basic chocolate cake is layered with rich chocolate ganache and fluffy peanut butter frosting. I chose to make a naked cake because I’m so obsessed with the look of them, but many different options would work for this. The cake could be made in a bundt pan with the frosting slathered on and the ganache poured on top. Or, you could frost it more traditionally, frosting it all perfectly smooth and then once again pouring the ganache on top. Whatever you decide, if you are a chocolate/peanut butter lover I know you’ll adore this cake.” Yield: 10-12 servings

To view this online, click here.

Ingredients

For the Cake:

1 cup plus 2 tablespoons unsweetened cocoa powder*

2 and 1/4 cups all-purpose flour

2 and 1/4 cups sugar

2 and 1/4 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

3 large eggs

1 cup plus 2 tablespoons warm water

1 cup plus 2 tablespoons buttermilk

4 1/2 tablespoons safflower oil

1 1/2 teaspoons pure vanilla extract

For the Frosting:

12 tablespoons of butter, softened (1 1/2 sticks)

1 cup creamy peanut butter

3 cups powdered sugar

1/4 cup heavy cream, whipped to stiff peaks

For the Ganache:

4.5 oz dark chocolate, chopped

1/2 cup heavy cream

peanut butter cups to garnish (optional)

Instructions

For the Cake:

Preheat oven to 350F.

Grease and flour your cake pans, lining with a circle of parchment paper. (This can be 6, 8 or 9 inch pans, I would use at least 3 pans if doing 6 inch though.)

In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder and salt.

Stir in the water, buttermilk, oil, vanilla and eggs, continue to stir until batter is smooth.

Divide batter amongst the pans and bake for 25-35 mins, or until a cake tester inserted into the middle of the cake comes out clean. Set aside to cool.

For the Ganache:

Place the chocolate in a heat-proof bowl. Bring the heavy cream to a simmer on the stove-top, and then pour over the chopped chocolate. Whisk until smooth. Allow to cool and thicken before using. (I pop mine in the fridge or freezer.

For the Frosting:

Cream together the butter and peanut butter until smooth. Gradually add the powdered sugar until well combined. Fold in the whipped cream until frosting is smooth and fluffy.

To assemble:

Using a serrated knife, level each cake layer, slicing off the "domed" top to make it even. Place the bottom later on a piece of parchment paper on a cake turntable (if you have one.)

Spread a layer of ganache over the first layer of cake, sticking it into the fridge or freezer if needed to firm it up. (I stuck the whole cake into the fridge between each frosting layer.)

Follow with a layer of frosting, then another layer of cake, more ganache, more frosting etc. Add some frosting to the outside of the cake, smoothing with a spatula. Top with chopped peanut butter cups.

Don’t be afraid to be creative!

Chill this cake for 1-1/2 hours before serving so that it is completely set. Decorate with fresh garden flowers and raspberries.

ENGINE 2 DIET VEGAN LASAGNA

This is from Jolinda Hackett on The Spruce Eats. Jolinda wrote, “Vegetable lasagna is always a good meal choice for a vegan. And if you've heard about the heart-healthy and cholesterol-lowering Engine 2 Diet and want to try an approved recipe, this vegan lasagna is a good place to start.

“From Rip Esselstyn's The Engine 2 Diet, ‘Raise the Roof’ sweet potato vegan lasagna replaces the high fat and cholesterol of cheese and beef with whole-grain noodles, tofu, and antioxidant-rich vegetables including mushrooms, broccoli, bell peppers, and corn crowned with a crunchy good-fat cashew topping. It's so delicious, he says, he served it at his own wedding.

“As if that's enough to be happy about, the lasagna noodles cook in the oven so there is no need to boil them first—what a time saver.”

Prep Time: 15 minutes; Cook Time: 60 minutes; Total Time: 75 minutes; Yield: 10 to 12 minutes.

Ingredients

1 onion (chopped)

1 head garlic (small, all cloves chopped or pressed)

8 ounces mushrooms (sliced)

1 head broccoli (chopped)

2 carrots (peeled and chopped)

2 red bell peppers (seeded and chopped)

1 can corn (rinsed and drained)

1 package silken lite tofu

1/2 teaspoon cayenne pepper

1 teaspoon oregano

1 teaspoon basil

1 teaspoon rosemary

2 (24-ounce) jars pasta sauce

2 (13.25-ounce) boxes whole-grain lasagna noodles (uncooked)

16 ounces frozen spinach (thawed and drained)

2 sweet potatoes (cooked and mashed)

6 Roma tomatoes (sliced thin)

1 cup raw cashews (ground)

Directions

Prepare the FillingHeat oven to 400 F.

Sauté the onion and garlic on high heat for 3 minutes in a wok or nonstick pan without any oil.

Add the mushrooms and cook until the onions are limp and the mushrooms give up their liquid. Remove them to a large bowl with a slotted spoon and leave the mushroom liquid in the pan.

Add the broccoli and carrots to the pan and sauté for 5 minutes, remove, and add them to the bowl containing the onion, garlic, and mushrooms, leaving any liquid in the pan.

Add the peppers and corn, and sauté until the peppers are just beginning to soften. Add them and any liquid to the vegetable bowl.

Drain the silken tofu by wrapping in paper towels. Break it up directly in the towel and mix into the vegetable bowl.

Add cayenne pepper, oregano, basil, and rosemary to the vegetable bowl and combine thoroughly.

Assemble the Lasagna

Cover the bottom of a 9-by-13-inch casserole with pasta sauce. Add a single layer of uncooked noodles (do not overlap) and cover completely with a generous portion of sauce.

Spread the vegetable-tofu mixture over the sauced noodles. Cover with a second layer of noodles and another generous portion of sauce.

Add a layer of thawed and drained spinach followed by a layer of mashed sweet potatoes. Top with another generous portion of sauce, a final layer of noodles, and the remainder of the sauce.

Cover the lasagna with thinly sliced Roma tomatoes.

Bake and Serve

Cover with foil and bake in the heated oven for 45 minutes. Remove the foil, sprinkle with the ground cashews, and return to the oven for 15 minutes.

Remove from oven and let the lasagna sit for 15 minutes before serving.

More About the Engine 2 Diet

Jolinda wrote, “Rip Esselstyn developed the Engine 2 Diet, he says, to help a person rid their diet of what he considers junk (meat, dairy, refined and processed foods) while still enjoying tasty, nutritious, whole plant-based foods.

“His vegan diet with a twist (no vegetable oils) theory is that plant-based foods and unrefined grains are superior to animal products.

“His regimen includes fitness ideas and recipes like Engine 2 Diet black bean and hummus wrap sandwich and Rip's oil-free, tahini-free almost fat-free hummus.

EASY WHOLE WHEAT VEGETARIAN SPINACH LASAGNA

This also comes from Jolinda Hackett on The Spruce Eats. Jolinda wrote, “Easy whole wheat vegetarian lasagna with spinach baked in the oven with three kinds of cheeses. What's not to love? This is the perfect classic spinach lasagna recipe for the whole family!

“Make your vegetarian lasagna just a bit healthier by using this recipe, which calls for whole wheat lasagna noodles and spinach. Even though it uses whole wheat noodles, this Italian spinach lasagna is incredibly rich and creamy as it uses plenty of mozzarella, Parmesan, and low-fat cottage cheese. Of course, you don't have to use whole wheat lasagna noodles if you prefer the regular kind.

“This spinach lasagna recipe is courtesy of the Wheat Foods Council.”

Prep Time: 15 minutes; Cook Time: 75 minutes; Total Time: 90 minutes; Yield: 10 servings

To view this online, click here.

Ingredients

1 8-ounce package whole wheat lasagne noodles, cooked slightly (al dente)

1 9-ounce package frozen raw spinach (well thawed and drained)

1/2 cup grated Parmesan cheese

3 eggs

3 cups low-fat cottage cheese

3 cups pre-made or store-bought pasta sauce

3 cups grated low-moisture part skim mozzarella cheese

Directions

Pre-heat the oven to 325 degrees F.

In a medium mixing bowl, beat the eggs then add the cottage cheese and Parmesan cheese. Spray a 13 x 9-inch glass baking dish with non-stick cooking spray or a homemade olive oil spray.

Put one layer of the slightly cooked lasagna noodles flat across the bottom of the baking dish. Add about half of the spinach, pressing down lightly and evenly over the noodles. Top with another layer of lasagna noodles. Top this layer of noodles with the cottage cheese mixture then add the remaining spinach. Then add the last of the lasagna noodles laid evenly on top of spinach.

Once you've layered everything, spread the pasta sauce evenly over the top and sprinkle the whole thing with mozzarella cheese. Press down lightly.

Cover baking dish with foil, using foil sprayed with cooking spray and keeping foil off the center of the lasagna. Secure sides tightly over baking dish.

Bake about 1 hour 15 minutes in oven. To lightly brown the top, remove foil for a few minutes at the end of baking time.

Allow to sit for 10 to 15 minutes before serving.

To view this online, click here.

INGREDIENTS: COCONUT CAKE

KATHARINE HEPBURN'S BROWNIES

This came in a recent New York Times Cooking e-newsletter. It begins, “Much like its author, this recipe is a no-fuss classic. It calls for just 1/4 cup of flour, which yields an incredibly rich and gooey brownie, and it's super easy to make. So easy, in fact, that baking a batch of these might just become part of your weekend routine.” Time: about 45 minutes; makes 12 brownies

To view this recipe online, click here.

Ingredients

1/2 cup cocoa

1/2 cup butter (1 stick)

2 eggs

1 cup sugar

1/4 cup flour

1 cup chopped or broken-up walnuts or pecans

1 teaspoon vanilla

Pinch of salt

Preparation

Heat oven to 325 degrees.

Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes, then transfer to a large bowl. Whisk in eggs, one at a time. Stir in vanilla.

In a separate bowl, combine sugar, flour, nuts and salt. Add to the cocoa-butter mixture. Stir until just combined.

COCONUT CREAM TARTLETS

This yummy recipe comes from Seattle's Macrina Bakery. If I ever take a road trip and end up in Seattle, I'll have to drop by. In the meantime, I'll keep checking out their e-newsletter.

This recipe's intro is by Leslie Mackey, who writes, “A few years ago I challenged our pastry team to come contemporary take on the ever popular coconut cream pie. After making adjustments both large and small, we came up with something I’m super proud to offer at Macrina: Coconut Cream Tartlets. I have friends that make a 9”version of this. The pie holds a special place on their Christmas table each year. This recipe is also featured in my More From Macrina cookbook. I am positive you will enjoy it as much as we do.

“There are many different tartlet pan sizes and styles, and I encourage you to use what you have. For the quantities in this recipe, however, the ideal size is 4 inches wide.” Makes six 4” tartlets.

To view this online, click here.

Ingredients

Dough

1-1/4 cups unbleached all-purpose flour

1/2 cup sugar

1/2 cup finely shredded unsweetened coconut, toasted

1/2 cup (1 stick) chilled unsalted butter, cut into 1/4 inch pieces

1 large egg, beaten

Coconut Custard Cream

1/2 cup sugar

1/2 teaspoon kosher salt

2 tablespoons plus 1/2 teaspoon cornstarch

3 large egg yolks

1/2 cup whole milk

1 cup unsweetened coconut milk

1/2 cup finely shredded unsweetened coconut

1 1/2 teaspoons pure vanilla extract

Whipped Cream Topping

1 cup heavy cream

3 tablespoons sugar

1-1/2 teaspoons pure vanilla extract

Garnish

1/2 cup large flake unsweetened coconut, toasted

6 fresh raspberries

6 edible flowers, such as Johnny jump-ups or nasturtiums

Directions

To make the tart dough, in the bowl of a stand mixer fitted with the paddle attachment, mix the flour, sugar, and coconut on low speed. Add the butter and mix for 1 to 2 minutes, until the flour is coarse and crumbly. Add the egg all at once and mix just until the dough comes together.

Turn dough out onto a piece of plastic wrap. Form the dough into a 1-inch thick block by pulling the sides of the wrap toward the center and patting. Wrap the dough well, then refrigerate until completely chilled, about 2 hours.

Meanwhile, to make the custard, mix the sugar, salt, cornstarch, and egg yolks in a medium bowl. I use a stiff wire whisk; the mixture is thick, so it takes a little effort. Set aside.

Cook the milk, coconut milk, coconut, and vanilla in a medium saucepan over medium heat, stirring occasionally, and scald the mixture by bringing it just to a boil. Take the pan off the heat. The next step is to temper the hot liquid into the sugar mixture: whisking constantly, pour the hot mixture in a slow stream into the bowl of sugar and yolks. Continue whisking and pouring slowly, until about three-quarters of the milk has been added. Then pour all of the sugar mixture back into the saucepan.

Return the saucepan to the burner over low heat and continue whisking to thicken the custard. This will take about 2 minutes: make sure you are constantly mixing (you don’t necessarily have to stir fast, but it’s important to be moving the mixture at all times). If the custard sticks to the bottom of the pot and scorches, it will give it a burned taste.

Using a rubber spatula, scrape the custard into a medium bowl. Cover with plastic wrap placed directly on the custard’s surface and refrigerate until cold, about 2 hours.

Position a rack in the center of the oven and preheat to 325 degrees F.

Remove the dough from the refrigerator and let stand at room temperature for 10 minutes to soften slightly. On a floured work surface, roll the dough out from the center of the square to about 1/8-inch thickness. (Check frequently to make sure the dough isn’t sticking; add flour as needed to the dough and work surface.) Cut out 6 tartlet shells by inverting a tartlet pan onto the dough and cutting a circle slightly larger than its diameter with a paring knife. (This dough is fragile, so handle it with care.) Use an offset spatula to lift each circle into a tartlet pan. Press the dough evenly into the bottom and up the sides of the pans. Trim the outer edge with scissors, or simply use your fingers to pinch the dough off at the pan’s edge. Place the pans on a baking sheet and chill for 20 minutes in the freezer.

Bake the tartlet shells for 25 to 30 minutes, or until they are deep golden brown. Make sure they are fully baked and not spongy. Cool on the baking sheet for 30 minutes – the shells will continue to firm and crisp as they cool.

Meanwhile, to make the topping, in a bowl of a stand mixer fitted with the whisk attachment, whip the heavy cream, sugar, and vanilla on low speed until the cream forms medium-firm peaks. Cover and refrigerate until needed.

Pull the custard from the refrigerator and use a rubber spatula to mix and smooth it. Divide it among the tartlet shells; they should be slightly heaping. (I like to use an ice cream scoop.) Using a small off-set spatula or the rounded side of a teaspoon, smooth the edges of the custard and form a slight dome in the center. Top each tartlet with an equal volume of whipped cream, smooth, and sprinkle the entire top evenly with toasted coconut.

Garnish each with a raspberry and edible flower. Keep chilled until ready to serve. These decadent tartlets will keep, wrapped and refrigerated, for up to 2 days.

This comes from The Food Network Kitchen, and starts, “This soup is just as good for dinner as it is for lunch -- it's warming and comforting and perfect for a rainy day.” Total Time: 30 min; Prep: 10 min; Cook: 20 min; Yield: 4 servings, about 4 cups; Level: Easy

Read more at: http://www.foodnetwork.com/recipes/food-network-kitchens/vegetable-noodle-soup-recipe.html?oc=linkback

Ingredients

2 tablespoons extra-virgin olive oil

1 rib celery, sliced (about 1 cup)

1 medium carrot, sliced (about 3/4 cup)

1 clove garlic, smashed

1/4 medium onion, about 1/2 cup

1/4 teaspoon kosher salt

1/3 cup orzo or other small pasta or egg noodles or broken up spaghetti

4 cups low-sodium chicken broth (1 quart box, or 2 cans)

Small handful fresh parsley leaves, basil or dill, chopped (about 2 tablespoons)

1/2 lemon, juiced (about 1 tablespoon)

Freshly ground black pepper

Serving suggestion: Whole-wheat crackers and cheese sticks

Directions

Heat the olive oil in a medium saucepan over medium heat; add all the vegetables, garlic and onion. Season with the salt, and cook until tender, about 6 minutes. Add the pasta and cook until slightly toasted and golden, about 2 minutes. Add broth, and bring to a boil over high heat. Cook, covered, until pasta is just tender, about 8 minutes.

Stir in whatever herb suits you (or your young eater) and lemon juice. Season with pepper and additional salt, to taste. Fill thermos, pack in a lunch sack with crackers and cheese sticks and send off to school.

Tip: This soup freezes well, so freeze any leftovers or make a double batch to have plenty on hand. Also, you can stir in some cooked chicken or mini-meatballs, if desired, for another meal.

CHOCOLATE CHERRY SILK TART

This comes from Seattle's Macrina Bakery. If I ever take a road trip, I want to stop here. The recipe begins, “This rich chocolate tart is simply irresistible. Long before warm chocolate cakes became fashionable, rustic bakeries like ours were preparing velvety just-set brownies and tortes, a tradition that inspired this recipe.” Makes Three 5" Heart-shaped Tarts

Ingredients:

5 oz unsweetened chocolate, coarsely chopped

12 Tbsp (1-1/2 sticks) unsalted butter, at room temperature

1-1/2 cups granulated sugar

1 Tbsp unbleached all-purpose flour

6 eggs

1/2 cup Plumped Cherries (soaked in warm water 20 min.)

Powdered sugar

1 bunch spray roses (washed to remove any chemicals)

Preparation:

Preheat oven to 300°F.

Combine chocolate and butter in a medium stainless steel bowl. Place bowl on top of saucepan filled with two inches of simmering water, making sure that the bottom of the bowl does not come in contact with the water. It’s important that the water be just simmering; if it’s too hot it will scorch the ingredients. Stir the chocolate and butter with a rubber spatula until they are completely melted and combined. Remove the bowl from heat and let cool to room temperature.

In a separate medium bowl, combine granulated sugar, flour and eggs. Mix well with a whisk. Add to the bowl of cooled chocolate and mix with a rubber spatula until all ingredients are thoroughly combined and the mixture has thickened.

Place heart shaped paper baking molds on a rimmed baking sheet. Scatter 1 Tbsp of drained cherries over the bottom of each paper mold, pour the chocolate mixture over the cherries, filling the mold 2/3s full. Place baking sheet on center rack of oven and bake for about 30 minutes, or until the center is just set. Let cool on a wire rack for 30 minutes. Decorate the top of the silk cake with a few roses and sprinkle with powdered sugar.

Note:

We will package these with a clear cello bag and pretty ribbon…makes a perfect Valentine’s Present!

If this goes into the refrigerator it will turn hard like fudge…it’s best at room temperature for a silklike texture.

SKILLET LASAGNA

This comes from the Tablespoon's e-newsletter. It begins, “This ground beef and pasta skillet recipe is the quick-fix version of the all-time dinner favorite - with the classic Italian flavors and cheese filled layers of authentic lasagna.” Prep Time: 15 min; Total Time: 50 min; makes 5 servings

To view this online, click here.

Ingredients

1/2 lb ground beef round

1/4 cup chopped onion

1/2 teaspoon finely chopped garlic

2 tablespoons balsamic vinegar

2 teaspoons Italian seasoning

1 cup part-skim ricotta cheese

4 precooked lasagna noodles, broken into large pieces

1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained

1 cup roasted red bell peppers (from a jar), chopped

5 teaspoons refrigerated basil pesto (from 7-oz container)

1/2 cup shredded mozzarella-Parmesan cheese blend (2 oz)

Directions

In 12-inch nonstick skillet, cook beef, onion and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Add vinegar and 1 teaspoon of the Italian seasoning. Spoon ricotta cheese evenly over beef. Top with noodles, making 1 flat layer (noodles will overlap).

In small bowl, mix tomatoes and roasted peppers; spread over noodles, making sure noodles are completely covered. Sprinkle with remaining 1 teaspoon Italian seasoning. Dollop pesto evenly over top. Heat to boiling; reduce heat to low. Cover; simmer 30 minutes or until noodles are soft. Uncover; sprinkle with cheese blend. Let stand 5 minutes. Cut into wedges. Serve from skillet with slotted spatula.

EASY HOMEMADE CHEESY ONION RINGS

Another recipe from the Tablespoon's e-newsletter. This one begins, “Thick cut onion rings that are extra crunchy and flavorful!” Prep Time: 10 min; Total Time: 30 min; makes 4 servings

To view this online, click here.

Ingredients

1 large white onion

1 1/3 cup flour

1/2 teaspoon salt

1 cup milk

1 egg

1 1/2 cups Progresso™ panko bread crumbs

1/2 cup grated Parmesan cheese

Oil, for frying

Directions

Heat 3 inches of oil over medium high heat to 375ºF.

While the oil is heating, cut the root and tip off the onion and discard. Slice the onion into 1/4 inch thick slices and separate the rings.

Add the flour and salt to a shallow dish and coat each onion ring in the flour. Shake off and set aside.

Once all the onions are coated in flour, beat together the milk and egg and stir into the flour. Whisk until smooth.

Coat the onions in the batter and shake excess off before placing on a cooling rack set over a baking sheet.

Mix together the panko and Parmesan cheese and coat each onion ring in the breadcrumb mixture. Return to the cooling rack.

Drop the onion rings, 3 or 4 at a time depending on the size of your pot, into the oil and cook for 2-3 minutes or until golden brown.

Remove the onion rings from the oil to a paper towel-lined dish for the grease to drain. Repeat with the remaining onion rings until all are cooked.

CHICKEN IN MUSTARD SAUCE

This comes from Jacques Pepin in The New York Times' Cooking e-newsletter. The recipe begins, “This healthy yet elegant weeknight chicken dish came to The Times in 1988, courtesy of Jacques Pépin. It's simple but loaded with flavor, and you can throw it together in about a half hour. Just sauté the chicken until golden, then make a quick sauce from onions, water and mustard and reduce until thick. Serve with rice to soak up the sauce, and a crisp green salad. If white meat is not your thing, it would be equally delicious made with boneless chicken thighs (just be sure to add a few minutes of cooking time).” Time: 35 minutes; Makes 8 servings.

To view this online, click here.

Ingredients

8 5-ounce chicken breasts, skinless and boneless

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 tablespoon vegetable oil

1 cup onion, finely chopped

2 tablespoons flour

2 cups water

1 1/2 teaspoons dry mustard

1 tablespoon Dijon mustard

Preparation

Sprinkle the meat with the salt and pepper.

Heat the oil in a large skillet over medium-high heat. When it is hot, brown the chicken for one-and-a-half minutes on each side.

Mix in the onion and continue cooking for one minute.

Sprinkle the flour on the chicken pieces, turning them so that all the pieces are coated. Cook one minute to lightly brown the flour.

Add the water and stir to dissolve the flour until the mixture comes to a boil. Lower the heat, cover the skillet and boil gently for five minutes.

Remove the meat to a serving platter and keep warm.

Cook the sauce to reduce it to about one-and-a-half cups. Mix the dry mustard with the Dijon mustard and stir until smooth. Stir the mustard mixture into the sauce and heat, but do not allow the sauce to boil after the mustard has been added.

Place the chicken pieces in the sauce and warm over low heat for 10 to 15 minutes to develop the flavor.

Serve the chicken with the sauce.

SEMOLINA SESAME COOKIES

This recipe comes from Seattle's Macrina Bakery. The recipe starts off, “These cookies are inspired by acclaimed baker Carol Field, who gathered a collection of wonderful regional recipes from bakers, grandmothers, and chefs on her travels through Italy. The essence of this recipe came from one of her books (I have them all!), and is so typically Italian. The semolina, a coarsely ground wheat flour used widely for making pasta, lends a beautiful crisp texture, and the sesame seeds make them a classic accompaniment to a sweetened shot of espresso. Buttery and not too sweet, they'll totally satisfy the 4 p.m. nosh need!” Makes eighteen 3-inch cookies

3/4 cup plus 2 tablespoons unbleached all-purpose flour

1/3 cup plus 1 tablespoon semolina flour

1/4 teaspoon kosher salt

7 tablespoons unsalted butter, at room temperature

1/3 cup plus 1 tablespoon sugar

1 large egg

1/4 cup sesame seeds

Position 2 racks in the center of the oven and preheat to 325°F. Line 2 rimmed baking sheets with parchment paper. Set aside.

Sift together the flours and salt in a medium bowl. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using an electric mixer, cream the butter and sugar. Start on low speed and increase to medium for a total of 5 to 8 minutes, stopping to scrape down the bowl with a rubber spatula as needed. The mixture will be light, fluffy, and pale. Add the egg and mix on low speed until fully incorporated, then scrape the bowl down again. Gradually add the dry ingredients mixing until they're just incorporated and the dough is smooth, about 1 minute. Be careful not to overmix: the cookies may become tough.

Turn the dough out onto a lightly floured work surface. Divide it into 4 equal pieces, then roll each piece into a 1/2-inch-wide rope. Use a ruler to measure and then cut the rope into 5-inch segments. Each segment will become a cookie. If the dough is too soft, chill for 10 minutes to make it easier to handle.

Lay each rope in an S shape, 1 inch apart, on the prepared baking sheets. Tuck the ends under and compress slightly. Chill the sheets in the freezer for 20 minutes to help the cookies hold their shape while baking. (You may also freeze the cookies at this point, covered tightly, for up to 1 week. Let them thaw for about 20 minutes before baking.)

Brush each cookie with a little bit of water and top with the sesame seeds. Bake for 18-20 minutes, or until the cookies are light golden brown. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely. Stored in an airtight container at room temperature, these cookies keep their great flavor for at least 1 week.

MEATBALL SANDWICH

This is from Macrina Bakery's emailing list. The bakery, located in Seattle, is one of those places I wouldn't mind visiting, if I ever take a road trip. But since that road trip isn't in the near future, I'll stay on their Recipe of the Month emailing list.

The meatball sandwich recipe starts off with the following: "Meatball sandwiches are a fun way to shake up your weeknight dinner rotation. We play up the flavors in our Italian-style meatballs with a generous slather of pesto and toothsome slices of fresh mozzarella. Our Fresh Herb Roll is strong enough to hold in all of the juices while adding the earthiness of freshly picked herbs and coarse sea salt. Warning: This sandwich can be messy, but it is guaranteed to get a thumbs-up from the whole family!"

Ingredients

For the meatballs:

1/2 cup day-old bread, trimmed of crust and diced into 1/4-inch cubes

1/2 cup milk

2 cloves garlic, minced

3 tablespoons olive oil, divided

8 ounces ground turkey

8 ounces ground pork

2 tablespoons tomato paste or ketchup

1/2 teaspoons red pepper flakes

1 teaspoon kosher salt

1 tablespoon fresh basil, chopped

1/2 cup Parmesan, shredded

1 large egg

For the sandwiches:

4 Macrina Fresh Herb Sandwich Rolls, 5 ounces each

1/4 cup pesto

12 ounces fresh mozzarella, sliced into 8 to 12 pieces

2 cups tomato sauce

Preparation

Makes 4 Sandwiches

Assembling the meatballs:

Preheat the oven to 400°F, and line a baking sheet with parchment paper.

Place the diced bread into a medium bowl. In a small saucepan over low heat, warm the milk until it starts to boil. Remove from heat and pour over the diced bread. Let the bread mixture stand and cool to room temperature. As it cools, the bread will absorb the milk.

In a skillet over medium, heat 1 tablespoon of olive oil. Add the garlic and sauté just until fragrant. Set aside.

Add the garlic, turkey, pork, tomato paste, red pepper flakes, salt, basil, Parmesan and egg to the bread mixture. Use a spatula to thoroughly combine the ingredients.

Using a small ice cream scoop or your hands, form 12 golf ball-size meatballs. Place the meatballs on the prepared baking sheet, and bake for 25 to 30 minutes.

Assembling the sandwiches:

Slice each roll lengthwise and place cut side up on a baking sheet. Brush each half with the remaining olive oil and spread with 1 tablespoon of pesto. Top the bottom halves with 2 to 3 slices of mozzarella.

Warm the bread in the 400°F oven for 5 to 8 minutes, or until the cheese is melted.

In a small saucepan over low heat, warm the tomato sauce.

Once the bread is removed from the oven, top each bottom half with three meatballs and ladle them with tomato sauce.

Enjoy these sandwiches with a side of mixed greens - and don’t forget a few napkins!

FRESH ASPARAGUS SALAD

Another Macrina Bakery offering, this one from the April, 2014 email. The recipe starts with, "The days are longer, flowers are blooming, and markets are stocking produce bins with the trappings of the season. Spring has arrived! We're celebrating the season's fresh flavors with this delicious salad accented with truffle salt and toasted walnuts. The slight bitterness of endive pairs well with asparagus but any favorite green can be substituted."

Ingredients

2 tbsp walnut oil

1 tbsp lemon juice

1 tsp lemon zest

1/4 tsp kosher salt, plus more for seasoning

1/2 cup walnuts

1 1/2 lbs fresh asparagus

1 spear endive or 1 cup of another favorite spring green

1/4 tsp truffle salt

Preparation

Serves 4

Preheat the oven to 325°F.

In a small mixing bowl add the oil, lemon juice, lemon zest and kosher salt. Whisk well to combine and set aside.

Place the walnuts on a baking sheet and toast in the oven for 10 to 15 minutes until golden brown and fragrant. Remove the walnuts from the oven and toss them with about 1/2 teaspoon of the prepared dressing and a sprinkle of kosher salt. Coarsely chop the walnuts and set aside.

Thoroughly wash and dry the asparagus and endive. Using a vegetable peeler, shave the asparagus spears into long ribbons. Cut the endive spear in half and then into 1/4-inch strips.

Place the vegetables on a salad platter, drizzle with dressing and toss gently with salad tongs. Top the salad with the toasted walnuts and truffle salt and enjoy with your favorite rustic loaf!

CLASSIC LEMON MERINGUE PIE

Kathy Kingsley, About.com's American Food blog's guide, writes, "This two-layer lemon meringue pie is a year-round American favorite. Take one bite and you'll know why, the tangy lemon filling topped with billowing puffs of meringue is a heavenly combination. This pie is best served on the day it is made."

Yield: Serves 6 to 8

Ingredients:

Pastry for single-crust pie (purchased or homemade)

Lemon Filling

1 1/4 cups sugar

1/3 cup cornstarch

Yolks from 4 large eggs

1/2 cup fresh lemon juice

2 cups water

3 tablespoons butter, cut into small pieces

1 1/2 teaspoons grated lemon zest

Meringue

Whites from 3 large eggs

1/4 teaspoon cream of tartar

1/3 cup granulated sugar

Preparation:

Preheat the oven to 425°F.

Roll out dough on a lightly floured surface with a lightly floured rolling pin to a 12-inch circle. Fold in quarters, place into pie plate, and unfold Trim the edge of the pastry to 3/4 inch. Fold the pastry edge under to form a rim. Crimp or flute the rim. Prick the bottom and sides at 1-inch intervals with a fork.

Bake for 25 minutes or until the crust is golden brown. Set the pie crust on a wire rack to cool.

Reduce the oven temperature to 350°F.

Make the lemon filling: Whisk 1 1/4 cups of sugar and the cornstarch in a medium saucepan. Whisk in the egg yolks and lemon juice until smooth. Stir in the water with a wooden spoon and continue stirring over medium heat until the mixture comes to a full boil. Boil for about 1 minute, stirring constantly, until the filling is translucent and thick. Remove the pan from the heat. Add the butter and lemon zest and stir until the butter melts. Pour the hot filling into baked pie shell.

Make the meringue: Using an electric mixer on medium-high speed, beat the egg whites and cream of tartar in a medium bowl until soft peaks form. Gradually beat in the sugar, 1 tablespoon at a time, beating well after each addition until the sugar dissolves. Beat for 2 minutes longer or until stiff peaks form when beaters are lifted.

Spoon the meringue around edge of filling. Spread to edge of crust. Spoon the remaining meringue in the center and spread and swirl with back of a teaspoon to evenly cover the filling.

Bake the pie until the meringue is browned, about 20 minutes.

Set the pie on a wire rack to cool completely, then refrigerate for at least 2 hours or up to 8 hours. To serve, cut with a long-bladed knife dipped in cold water.

Recipe Notes and Tips

To keep meringue from shrinking or weeping, drop teaspoonfuls around edge of pie, spread to touch crust all around, then spread remaining meringue in center
