Meatloaf

Is there anything easier to fix, or more satisfying, than meatloaf?

Maybe, but let's face it, meatloaf is usually fairly easy to make and pretty satisfying, especially when paired with baked or mashed potatoes and another veggie, and followed by dessert. Today's six meatloaf recipes include Meatloaf Magnifico and Meat Loaf with Sweet and Sour Sauce. Enjoy!

SAVORY MEATLOAF

This is from FamilyTime, and starts off, “Meatloaf is the definition of comfort food and this saucy version shines when the family gathers for a good meal.”

Ingredients

1 1/2 pounds ground beef

1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup

1/2 cup dry bread crumbs

1 egg, beaten

1 small onion, finely chopped (about 1/4 cup)

1 tablespoon Worcestershire sauce

1/8 teaspoon ground black pepper

1/4 cup water

Directions

Thoroughly mix the beef, 1/2 cup soup, bread crumbs, egg, onion, Worcestershire sauce and black pepper in a large bowl. Place the beef mixture into a shallow 3-quart baking pan and shape firmly into an 8 x 4-inch loaf.

Bake at 350°F. for 1 hour or until the meatloaf is cooked through. Let the meatloaf stand for 10 minutes before slicing.

Heat 2 tablespoons pan drippings, remaining soup and water in a 1-quart saucepan over medium-high heat until the mixture is hot and bubbling. Serve the soup mixture with the meatloaf.

SOUTHWEST MEATLOAF

Recipe Yield: Makes 6 to 8 servings

Ingredients

2 pounds ground beef (95% lean)

1 cup soft bread crumbs

3/4 cup finely chopped onion

1/2 cup finely chopped red bell pepper

1/2 cup frozen corn, thawed

1/2 cup milk

1 egg

1 large clove garlic, minced

2 teaspoons salt

1-1/2 teaspoons chili powder

1 teaspoon ground cumin

1/4 teaspoon pepper

1/2 cup thick and chunky salsa

Directions

Heat oven to 350F. Combine all ingredients in large bowl except salsa, mixing lightly but thoroughly.

Shape beef mixture into 10 x 4-inch loaf on rack in broiler pan. Bake in 350F oven 1 hour,15 minutes to 1 hour, 20 minutes, until internal temperature reaches 160F.

Let stand 10 minutes. Top with salsa; cut into slices.

Ingredients

Meatloaf:

1 cup milk

6 bread slices

2 pounds ground beef

1 cup grated Parmesan

1 teaspoon salt

Freshly ground black pepper

1/4 teaspoon seasoned salt, such as Lawry's

1/4 to 1/2 cup minced flat-leaf parsley

4 eggs, beaten

8 to 12 thin bacon slices

Tomato Sauce:

1/2 cup ketchup

6 tablespoons brown sugar

1 teaspoon dry mustard

Dash or 2 hot sauce (more if you like)

Dash or 2 Worcestershire sauce

Directions

For the meatloaf: Preheat the oven to 350 degrees F.

Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.

Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.

Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.

Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.

Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.

Serve with the remaining tomato sauce on the side as a dipping sauce.

MEATLOAF MAGNIFICO

This is from FamilyTime, and begins, “Double the flavor in this wonderful meatloaf by using some of the bountiful sauce inside and some on top of the final dish.”

Ingredients

1 jar (24 ounces) Prego® Chunky Garden Mushroom Supreme Italian Sauce with Baby Portobello

1 1/2 pounds ground beef

1 medium onion, chopped (about 1/2 cup)

1/2 cup dry bread crumbs

1 egg, beaten

Directions

Mix 1/2 cup of the sauce, beef, onion, bread crumbs and egg thoroughly. Shape firmly into an 8 x 4-inch loaf in a 13 x 9 x 2-inch baking pan.

Bake at 350°F. for 1 hour 15 minutes or until cooked through.

Heat the remaining sauce in a 2-quart saucepan over medium heat. Serve with the meatloaf.

CLASSIC MEATLOAF

1 ounce(s) can vegetable soup

2 tablespoon(s) ketchup

1 teaspoon(s) poultry seasoning

1 teaspoon(s) Italian seasoning

1/3 tablespoon(s) milk

1 1/2 cup(s) oatmeal

Directions

Preheat oven to 350 degrees. Combine all ingredients in a bowl and mix well. Form into a loaf and place in baking pan. Bake for 1 hour.

MEAT LOAF WITH SWEET & SOUR SAUCE

This comes from the infamous long-since-forgotten emailing list.

1-1/2 lbs. ground round

small onion, chopped

1 egg

bread crumbs

4 oz. tomato sauce

salt/pepper to taste

Combine all above ingredients and mix well.

Sweet/Sour Sauce

4 oz. tomato sauce

couple oz. water

2 T. mustard

2 T. vinegar

2 T. Worchestershire sauce

3 T. brown sugar

Mix all ingredients for sauce. Pour about half of sauce over meatloaf. Bake meet loaf at 350 for 1 15 min. Pour more sauce over meatloaf about half way thru cooking time.

Leftover meatloaf makes delicious sandwiches.

The ingredients for the sauce aren't exact. I've been making this recipe for so long I just kinda estimate the quantity. My family LOVES this meatloaf recipe and will not eat meatloaf anywhere, but home. Hope you enjoy it!!!
