This is from Lidey Heuck in The New York Times cooking enewsletter. For this yummy recipe, Lidey wrote, "This comforting baked pasta feeds a crowd and is an easy way to upgrade everyday spaghetti with meat sauce. Once baked, the spaghetti casserole slices into neat squares, and the layer of ricotta and Parmesan filling give it the rich flavor of a lasagna. Feel free to play around with the recipe, swapping in Italian sausage or ground turkey for the ground beef and sautéing leftover vegetables and adding them to the sauce. If you’re planning in advance, you can assemble the casserole (through the end of Step 5) and store in the refrigerator, covered, until ready to bake."

Unsalted butter, for greasing the pan
Kosher salt (such as Diamond Crystal) and black pepper
1 pound spaghetti
2 tablespoons olive oil
1 large yellow onion, chopped
2 tablespoons minced garlic (about 5 cloves)
2 teaspoons chopped fresh thyme or rosemary, or 1 teaspoon dried
1-1/2 teaspoons dried oregano, plus more for serving
1/4 teaspoon red-pepper flakes, plus more to taste
1 pound ground beef (at least 85-percent lean)
1 (32- to 35-ounce) jar marinara sauce
1/2 cup fresh basil or parsley leaves, chopped, plus more for serving
1 cup/8 ounces ricotta cheese
3/4 cup grated Parmesan
1 large egg
2 cups/8 ounces shredded low-moisture mozzarella
Preparation
Step 1
Heat the oven to 350 degrees and grease a 9-by-13-inch baking dish with butter. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until 1 minute shy of al dente.
Step 2
While the water comes to a boil, heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium. Add the onion and cook, stirring occasionally, until tender, 6 to 8 minutes. Add the garlic, thyme, oregano, red-pepper flakes, 1-1/2 teaspoons salt and a few grinds of black pepper, and cook until fragrant, about 1 minute.
Step 3
Add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Turn off the heat and stir in the marinara sauce and basil. Drain the spaghetti, add it to the sauce and toss well.
Step 4
In a small bowl, combine the ricotta, 1/2 cup of the Parmesan, the egg and 1/4 teaspoon salt. Mix with a fork until smooth.
Step 5
Transfer half the pasta and sauce to the prepared baking dish and smooth it into an even layer. Dollop the ricotta mixture onto the pasta in large spoonfuls, then sprinkle 1 cup of the mozzarella on top. Add the rest of the pasta and sauce to the pan, again smoothing it into an even layer.
Step 6
Cover the pan with aluminum foil and bake for 40 minutes. Sprinkle the remaining 1 cup mozzarella and the remaining 1/4 cup Parmesan on top, then bake, uncovered, until the mozzarella has melted, 5 to 10 minutes more.
Step 7
Cool for 5 minutes, then serve with more chopped basil, a pinch of dried oregano and more red-pepper flakes, if desired. Slice the baked spaghetti into large squares and serve hot or warm.
CHICKEN FAJITA PASTA

Ingredients
1 tablespoon olive oil
1 lb. chicken breast, sliced thin
1 packet Old El Paso™ taco seasoning mix chicken
1/4 cup water
1/2 red bell pepper, sliced thin
1/2 green bell pepper, sliced thin
1/2 yellow bell pepper, sliced thin
1/2 red onion, sliced thin
1/2 lb. spaghetti (1/2 of a 16 oz. box)
4 oz. cheddar cheese, grated
Salt and pepper
Directions
In a large skillet, add olive oil over medium heat. Once hot, add the chicken and cook, stirring regularly, until chicken is cooked through, around 8 minutes.
Add chicken seasoning to the skillet along with 1/4 cup water and stir together. Add sliced bell peppers and onion and cook until they are softened a bit.
Meanwhile, cook spaghetti according to package until al dente. When pasta is cooked through, use tongs to move it directly from the cooking water to the chicken fajita skillet. Stir to combine, and season with salt and pepper to taste.
Top the skillet with grated cheddar cheese and reduce heat to low until cheese is melted. Serve hot.
SUCCOTASH AND SHELLS
This is from Mark Bittman on the AARP site. It begins, "One-pot pastas — where you cook the sauce and noodles together “risotto-style” by gradually stirring in liquid and other ingredients — are perfect for busy days. You can easily vary the recipe to accommodate all sorts of whims and wants. The batch shown here uses gluten-free shells made from corn, brown rice and quinoa. Or substitute any whole wheat cut pasta. (There are benefits from the fiber and nutrients in whole grain noodles, but regular pasta is always another option.) The vegan topping in the recipe is a savory peanut seasoning. But you can always skip that step and finish the dish with grated Parmesan cheese, leftover chopped grilled or roasted chicken, crumbled cooked bacon, or any plain chopped nuts. And since this is one of those pastas that’s as good at room temperature or slightly chilled, it’s a candidate for making ahead to enjoy later."

Directions
Put the oil in a 3-quart pot over medium-high heat. When it’s hot, add the onion and garlic, sprinkle with salt and pepper, and cook, stirring occasionally, until soft, 3 to 5 minutes.
Add the pasta and lima beans and 1/2 cup water. Stir and bring to a boil. Reduce the heat so the mixture bubbles enthusiastically and cook, stirring frequently and adding more water 1/4 cup at a time so the mixture stays saucy and the pasta just begins to get tender, 5 to 10 minutes, depending on the kind you use. (Figure you’ll need another 1 to 1-1/2 cups of water.)
While you’re minding the pasta, chop the peanuts as finely as you can manage and toss them in a small bowl with the nutritional yeast and smoked paprika. Taste and add salt and pepper if you’d like. (Or pulverize the seasonings together in a small food processor or with a mortar and pestle.) Then core and chop the bell pepper and mince the fresh sage leaves.
Stir the corn into the pasta along with the bell pepper and sage and cook, stirring occasionally and adding water 1 tablespoon at a time, until the vegetables are hot and the pasta is tender but still has some bite, another 3 to 5 minutes Taste, adjust the seasoning, and serve hot or warm, garnished with the seasoned peanuts.

24 uncooked jumbo pasta shells
1 lb ground beef (at least 80% lean)
1 jar (25.5 oz) Muir Glen™ organic chunky tomato & herb pasta sauce
1/4 cup water
1 container (8 oz) chive and onion cream cheese spread
1-1/2 cups shredded Italian cheese blend (6 oz)
1/2 cup grated Parmesan cheese
1 egg
1 to 2 tablespoons chopped fresh parsley, if desired
Instructions
Heat oven to 350°F. Cook and drain pasta shells as directed on package.
In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Cool slightly, about 5 minutes.
In large bowl, mix pasta sauce and water. Pour 1 cup of the pasta sauce mixture in bottom of ungreased 13x9-inch (3-quart) glass baking dish. In medium bowl, mix cheese spread, 1 cup of the Italian cheese, the Parmesan cheese, egg and cooked beef. Spoon heaping tablespoon mixture into each shell. Arrange stuffed shells over sauce in baking dish. Pour remaining sauce over top, covering shells completely. Cover with foil.
Bake 40 to 45 minutes or until bubbly and cheese filling is set. Sprinkle with remaining 1/2 cup Italian cheese. Bake uncovered about 10 minutes or until cheese is melted. Sprinkle with parsley.
MILLION DOLLAR SPAGHETTI

For this yumminess, Melissa wrote, "Unapologetically indulgent, this hearty potluck- and family-friendly baked pasta, popular throughout the South and Midwest, likely earned its name from the rich, dairy-packed ingredient list. 1 tablespoon olive oil
1 pound ground beef (90-percent lean)
1/2 pound Italian sausage, sweet or hot, casings removed if necessary
1 small yellow onion, chopped
4 large garlic cloves, finely chopped
2 teaspoons Italian seasoning
1/4 cup water
1 pound spaghetti
3 tablespoons butter
1 (15-ounce) container whole-milk ricotta (about 1-3/4 cups)
8 ounces cream cheese, softened
8 ounces low-moisture shredded mozzarella cheese (2 cups)
3 ounces shredded Parmesan (3/4 cup)
Fresh basil or parsley, for serving (optional)
Crushed red pepper, for serving (optional)
Preparation
Heat oven to 375 degrees. Bring a large pot of salted water to a boil. Set aside 1 cup of the marinara.
Heat oil in a large (12-inch) nonstick skillet over medium-high. Add beef and sausage, breaking up the meat into small pieces, then cook, undisturbed, until browned on the one side, 3 to 4 minutes. Stir in onion and garlic. Cook until the meat is no longer pink and the onion has started to soften, 3 to 4 minutes more. Stir in Italian seasoning, the remaining marinara and 1/4 cup water. Bring to a boil, adjust heat to medium-low and simmer, stirring occasionally, for 5 minutes. Turn off heat.
Meanwhile, add spaghetti to the pot when the water comes to a boil. Cook a few minutes shy of al dente, according to the package instructions. Drain pasta and return to the empty pot. Stir in the reserved 1 cup of the marinara and the butter, until melted.
In a medium bowl, mix ricotta, cream cheese, 1/2 cup of the mozzarella and 1/2 cup of the Parmesan until well combined. Season with salt and pepper.
Spread half of the spaghetti in the bottom of a 9-by-13-inch baking dish. Layer with the ricotta mixture, followed by the remaining spaghetti, all of the meat sauce and finally the remaining mozzarella and Parmesan.
Cover the baking dish tightly with aluminum foil. Bake for 25 minutes. Remove foil and bake until bubbling and golden brown, 15 minutes more. (To make ahead, refrigerate the covered casserole up to overnight; bring to room temperature then bake for 1 hour.)
Remove the dish from the oven and let it cool for 10 minutes. Sprinkle with basil and crushed red pepper, if using. Cut into portions with a sharp or serrated knife and serve.
ONE-POT CREAMY BROCCOLI PASTA BAKE

1 pound dried short, small pasta, such as elbow macaroni or small shells
2-1/4 cups water
2 cups whole milk
1 (12-ounce) can evaporated milk
8 ounces sharp cheddar cheese, shredded (about 2 cups)
Freshly ground black pepper
Instructions
Heat the oven to 375°F. Trim 1 pound broccoli. Keeping the stems and florets separate, dice the stems, then cut the florets into 1-inch pieces.
Heat 1 tablespoon of the olive oil in a Dutch oven or broiler-safe large pot over medium heat until shimmering. Add the broccoli florets and 1/4 teaspoon of the kosher salt. Cook until the broccoli brightens in color, about 3 minutes. Transfer to a plate.
Add 1 tablespoon of the olive oil to the pot. When shimmering, add the broccoli stems and 1/4 teaspoon of the kosher salt. Cook until softened and starting to brown, 2 to 3 minutes.
Add the remaining 1 tablespoon olive oil, 1 diced small yellow onion, and 1/4 teaspoon of the kosher salt. Cook, stirring often, until softened but not browned, about 5 minutes. Stir in 4 thinly sliced garlic cloves, 1/2 teaspoon ground mustard, and 1/2 teaspoon red pepper flakes if using. Cook until fragrant, about 1 minute.
Stir in 1 pound dried short pasta, 2-1/4 cups water, 2 cups whole milk, 1 (12-ounce) can evaporated milk, and the remaining 1-1/4 teaspoons kosher salt. Cover and transfer the pot to the oven. Bake, stirring halfway through to break up any clumps of pasta, until the pasta is almost tender, 18 to 20 minutes total.
Remove the pot from the oven. Heat the broiler on high. Stir 6 ounces of the shredded sharp cheddar cheese (1-1/2 cups) and the reserved broccoli florets into the pasta until the cheese is melted. Taste and season with kosher salt and black pepper as needed.
Evenly sprinkle with the remaining 2 ounces shredded cheddar cheese (1/2 cup). Return to the oven and broil uncovered until the cheese on top is melted and brown in spots, 3 to 5 minutes.
Recipe Notes
Refrigerate leftovers in an airtight container for up to 5 days. The pasta will lose some of its creaminess upon refrigeration; add a splash of milk or water during reheating to loosen the sauce.
You can freeze the finished recipe in an airtight container for up to 3 months (I like to freeze in individual portions). Reheat from frozen, adding additional milk or water to help loosen the sauce.
