Pasta

If you've followed this blog for a while, you're probably aware that I've loved pasta most of my life. To that end, here are six pasta recipes to help you (and me) through the day, including Spicy Creamy Weeknight Bolognese and Easy One-Pot Tuna Casserole. Enjoy!

ONE-POT CREAMY BROCCOLI PASTA BAKE

This is from Olivia Counter at thekitchn. For this recipe, Olivia wrote, "Craving comfort food without the mountain of dishes? Look no further — this one-pot creamy broccoli pasta bake is the answer! It’s easy weeknight comfort and a satisfying crowd-pleaser in one. Not only does it deliver on flavor, but it also uses up the entire broccoli, even the stems, to reduce food waste and sneak in extra fiber (always a plus in my book!).

"The creamy pasta sauce is perfectly rich, thanks to a combination of whole and evaporated milk. As for the broccoli, it’s cooked in two quick steps to deepen its flavor and bulk up the dish while staying tenderly crisp. Finish with melty cheddar cheese (the sharper the better!) to cut through the richness. All in all, this comforting dinner is a delicious and effortless way to end the day."

Ingredients

1 pound broccoli

3 tablespoons olive oil, divided

2 teaspoons kosher salt, divided, plus more as needed

1 small yellow onion, diced (about 1 cup)

4 cloves garlic, thinly sliced

1/2 teaspoon ground mustard

1/2 teaspoon red pepper flakes (optional)

1 pound dried short, small pasta, such as elbow macaroni or small shells

2-1/4 cups water

2 cups whole milk

1 (12-ounce) can evaporated milk

8 ounces sharp cheddar cheese, shredded (about 2 cups)

Freshly ground black pepper

Instructions

Heat the oven to 375°F. Trim 1 pound broccoli. Keeping the stems and florets separate, dice the stems, then cut the florets into 1-inch pieces.

Heat 1 tablespoon of the olive oil in a Dutch oven or broiler-safe large pot over medium heat until shimmering. Add the broccoli florets and 1/4 teaspoon of the kosher salt. Cook until the broccoli brightens in color, about 3 minutes. Transfer to a plate.

Add 1 tablespoon of the olive oil to the pot. When shimmering, add the broccoli stems and 1/4 teaspoon of the kosher salt. Cook until softened and starting to brown, 2 to 3 minutes.

Add the remaining 1 tablespoon olive oil, 1 diced small yellow onion, and 1/4 teaspoon of the kosher salt. Cook, stirring often, until softened but not browned, about 5 minutes. Stir in 4 thinly sliced garlic cloves, 1/2 teaspoon ground mustard, and 1/2 teaspoon red pepper flakes if using. Cook until fragrant, about 1 minute.

Stir in 1 pound dried short pasta, 2-1/4 cups water, 2 cups whole milk, 1 (12-ounce) can evaporated milk, and the remaining 1-1/4 teaspoons kosher salt. Cover and transfer the pot to the oven. Bake, stirring halfway through to break up any clumps of pasta, until the pasta is almost tender, 18 to 20 minutes total.

Remove the pot from the oven. Heat the broiler on high. Stir 6 ounces of the shredded sharp cheddar cheese (1-1/2 cups) and the reserved broccoli florets into the pasta until the cheese is melted. Taste and season with kosher salt and black pepper as needed.

Evenly sprinkle with the remaining 2 ounces shredded cheddar cheese (1/2 cup). Return to the oven and broil uncovered until the cheese on top is melted and brown in spots, 3 to 5 minutes.

Recipe Notes

Refrigerate leftovers in an airtight container for up to 5 days. The pasta will lose some of its creaminess upon refrigeration; add a splash of milk or water during reheating to loosen the sauce.

You can freeze the finished recipe in an airtight container for up to 3 months (I like to freeze in individual portions). Reheat from frozen, adding additional milk or water to help loosen the sauce.

CHILI MAC

This is from Ali Slagle in The New York Times cooking enewsletter. For this recipe, Ali wrote, "“Nothing induces a feeling of security and comfort better than the come-hither aroma of an honest pot of chili mac keeping warm on the stove.” Many would agree with what Jane and Michael Stern wrote in “The Lexicon of Real American Food” (Lyons Press, 2011), whether they’ve had the thrifty, hearty combination of macaroni and chili at a family dinner table, around a campfire, bellied up to a bar somewhere near Lake Michigan or even in an M.R.E. in a military dining room. This super savory version is a cinch, requiring just one pot and minimal chopping. (For another common chili pasta, see this Cincinnati chili con carne.)"

Ingredients

1 tablespoon neutral oil (such as vegetable or grapeseed), plus more as needed

1 pound ground beef

1 yellow onion, finely chopped

1 tablespoon store-bought or homemade chili powder

1 tablespoon ground cumin

1 tablespoon garlic powder

Salt and pepper

1 (28-ounce) can crushed fire-roasted tomatoes

1 (14-ounce) can chicken broth

1 (15-ounce) can beans (such as kidney, black or any bean you like in chili), with their liquid

8 ounces elbow macaroni or another small pasta

1 tablespoon Worcestershire sauce or soy sauce

4 ounces grated sharp Cheddar, plus more for serving (both optional)

Hot sauce, thinly sliced scallions and chopped cilantro (all optional), for serving

Preparation

In a large pot or Dutch oven, heat the oil over medium-high. Add the beef and press into an even layer to fill the pot. Sprinkle with the onion. Cook, undisturbed, until the beef is deeply browned underneath, 6 to 8 minutes (the meat won’t be fully cooked). If you don’t see fat sizzling around the edges of the pot, add a teaspoon or two of more oil.

Add the chili powder, cumin and garlic powder and season generously with salt and pepper. Cook, breaking up the beef with a spoon into small pieces, until the onion is softened and the spices are fragrant, 2 to 4 minutes.

Add the tomatoes, chicken broth, beans and their liquid, pasta and Worcestershire sauce and scrape up any browned bits stuck to the bottom of the pot. Simmer, stirring often, until the pasta is al dente, 10 to 12 minutes. If the pot starts to look dry at any point, add water, 1/4 cup at a time.

Turn off the heat and stir in the Cheddar, if using, until melted. Season to taste with salt, pepper and hot sauce (if using). Serve topped with scallions, cilantro, hot sauce and more Cheddar as desired.

EASY ONE-POT TUNA CASSEROLE

This is from Campbell's, and begins, "The magic of this Easy One-Pot Tuna Casserole is that you add the pasta dry and it cooks right in the skillet! Saute some celery in butter for the first layer of flavor, add the soup, water and pasta and simmer! The pasta soaks up some of the creamy sauce for extra flavor. Add the tuna and sprinkle with a topping of cheese and crushed croutons- this Easy One-Pot Tuna Casserole couldn't be easier! Have some leftover turkey? Try this turkey version: Turkey Noodle Casserole."

Ingredients

1 tablespoon butter

2 stalks celery, chopped (about 1 cup)

1 can (10.5 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup

1-1/2 cups water

1 cup uncooked medium shell shaped pasta or rotini

2 cans (about 5 ounces each) solid white albacore tuna, drained

2/3 cup shredded Cheddar cheese (amount divided in recipe steps below)

1 cup seasoned croutons, crushed

Instructions

Heat the butter in a 12-inch skillet over medium heat. Add the celery and cook for 5 minutes or until tender-crisp.

Stir in the soup, water and uncooked pasta and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the pasta is tender, stirring occasionally.

Stir in the tuna and 1/3 cup cheese and cook until the mixture is hot. Season with salt and pepper. Sprinkle with the croutons and the remaining 1/3 cup cheese (the heat from the pasta mixture will melt the cheese).

SPICY, CREAMY WEEKNIGHT BOLOGNESE

This is from Genevieve Ko at The New York Times cooking enewsletter. For this recipe, Genevieve wrote, "This pasta sauce captures the soul-soothing essence of a long-simmering Bolognese even though it cooks quickly. Searing ground beef gives it a caramelized taste that mimics the depth of slow-cooked meat. Adding a few spoonfuls of red curry paste doesn’t make it taste like curry, but gives it instant nuance and depth. Some rich cream at the end rounds the sharp heat to an enveloping warmth. To save even more time, you can chop the vegetables while the meat is cooking. The sauce tastes great on any type of pasta, but it’s especially nice with varieties that can capture it in their curves."

Salt and black pepper

1 pound ground beef (at least 20 percent fat)

1 large onion, finely chopped

2 carrots, peeled and finely chopped

2 to 3 tablespoons red curry paste

1 (15-ounce) can tomato sauce

1 pound short, curled pasta, such as pipettes

1 cup heavy cream

Preparation

Bring a large pot of salted water to a boil.

Meanwhile, heat a large Dutch oven or heavy pot over high until very hot. Add the beef, and smush and spread in a single layer. Sprinkle with salt and pepper, then cook, stirring, to break into tiny bits and cook through, 4 to 5 minutes.

Push the meat to one side, and add the onion and carrots to the beef fat on the other side. Sprinkle with salt and pepper, and cook, stirring occasionally with the beef, until the onion is translucent, about 5 minutes.

Add the curry paste, 2 tablespoons for a mild spiciness and 3 for more heat, and stir until darkened in color, 2 to 3 minutes. Pour in the tomato sauce, then fill the can a third of the way up with water to swish out the rest of the sauce into the pot. Stir, bring to a simmer, then reduce the heat to low and simmer while the pasta cooks.

Cook the pasta in the boiling water until al dente. Save 1/2 cup pasta cooking water, then drain the pasta and add to the simmering sauce.

Stir the cream into the sauced pasta, taste and season with salt and pepper. For a thinner sauce, stir in a bit of the pasta water. Serve hot.

MEXICAN PASTA

This is from allrecipes, and was submitted by someone named Mimi. The recipe begins, "Mexican pasta is a great vegetarian dish with a kick!"

Ingredients

1/2 pound seashell pasta

2 tablespoons olive oil

2 onions, chopped

1 green bell pepper, chopped

1/2 cup sweet corn kernels

1 (15 ounce) can black beans, drained

1 (14.5 ounce) can peeled and diced tomatoes

1/4 cup salsa

cup sliced black olives

1-1/2 tablespoons taco seasoning mix

salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and bell pepper in oil until lightly browned, about 10 minutes.

Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives, seasoning mix, and salt and pepper and cook until thoroughly heated, about 5 minutes.

Toss sauce with cooked pasta and serve.

BAKED CHEESY ENCHILADA CHICKEN PENNE

12 oz uncooked penne pasta (3-3/4 cups)

12 oz Kraft™ Velveeta™ Original Cheese Product, cut in 1/2-inch cubes (from 16-oz package)

1 package (8 oz) Old El Paso™ Shredded Mexican 4-Cheese Blend (2 cups)

1 cup milk

3 cups shredded cooked chicken

1 can (19 oz) Old El Paso™ Enchilada Sauce

1 can (4.5 oz) Old El Paso™ Chopped Green Chiles

4 tablespoons butter, melted

1 package (0.85 oz) Old El Paso™ Chicken Taco Seasoning Mix

Preparation

Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook pasta as directed on package, using minimum cook time; drain, and set aside.

Meanwhile, in large microwavable bowl, mix cheese cubes, 1 cup of the shredded cheese and the milk. Microwave uncovered on High 4 minutes; stir, then microwave in 30-second increments until cheese melts and mixture is easily stirred smooth.

Gently stir pasta into cheese sauce. Pour mixture into baking dish.

In large bowl, mix chicken, enchilada sauce, green chiles, butter and taco seasoning mix. Spoon over pasta mixture in baking dish.

Bake 28 to 32 minutes or until bubbling at edges (165°F in center). Top with remaining 1 cup shredded cheese. Let stand 5 minutes. Top with green onions. Serve with remaining ingredients.

Expert Tips

The quick microwaved cheese sauce in this chicken enchilada pasta recipe is great for many other applications. Toss with cooked pasta and serve as is, drizzle over cooked potato nuggets, or lay it out alongside tortilla chips as an easy nacho cheese sauce.

To keep this casserole family friendly, we used Old El Paso™ Mild Enchilada Sauce. If you want to give your chicken enchilada pasta bake more of a kick, opt for Old El Paso™ Medium or Hot Enchilada Sauce.

If you love Pasta as much as I do, today's post is sure to please. Check out the Million Dollar Spaghetti, the Three-Cheese Beef Pasta Shells, and the rest of today's yumminess. Enjoy!

BAKED SPAGHETTI

This is from Lidey Heuck in The New York Times cooking enewsletter. For this yummy recipe, Lidey wrote, "This comforting baked pasta feeds a crowd and is an easy way to upgrade everyday spaghetti with meat sauce. Once baked, the spaghetti casserole slices into neat squares, and the layer of ricotta and Parmesan filling give it the rich flavor of a lasagna. Feel free to play around with the recipe, swapping in Italian sausage or ground turkey for the ground beef and sautéing leftover vegetables and adding them to the sauce. If you’re planning in advance, you can assemble the casserole (through the end of Step 5) and store in the refrigerator, covered, until ready to bake."

Unsalted butter, for greasing the pan

Kosher salt (such as Diamond Crystal) and black pepper

1 pound spaghetti

2 tablespoons olive oil

1 large yellow onion, chopped

2 tablespoons minced garlic (about 5 cloves)

2 teaspoons chopped fresh thyme or rosemary, or 1 teaspoon dried

1-1/2 teaspoons dried oregano, plus more for serving

1/4 teaspoon red-pepper flakes, plus more to taste

1 pound ground beef (at least 85-percent lean)

1 (32- to 35-ounce) jar marinara sauce

1/2 cup fresh basil or parsley leaves, chopped, plus more for serving

1 cup/8 ounces ricotta cheese

3/4 cup grated Parmesan

1 large egg

2 cups/8 ounces shredded low-moisture mozzarella

Preparation

Step 1

Heat the oven to 350 degrees and grease a 9-by-13-inch baking dish with butter. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until 1 minute shy of al dente.

Step 2

While the water comes to a boil, heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium. Add the onion and cook, stirring occasionally, until tender, 6 to 8 minutes. Add the garlic, thyme, oregano, red-pepper flakes, 1-1/2 teaspoons salt and a few grinds of black pepper, and cook until fragrant, about 1 minute.

Step 3

Add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Turn off the heat and stir in the marinara sauce and basil. Drain the spaghetti, add it to the sauce and toss well.

Step 4

In a small bowl, combine the ricotta, 1/2 cup of the Parmesan, the egg and 1/4 teaspoon salt. Mix with a fork until smooth.

Step 5

Transfer half the pasta and sauce to the prepared baking dish and smooth it into an even layer. Dollop the ricotta mixture onto the pasta in large spoonfuls, then sprinkle 1 cup of the mozzarella on top. Add the rest of the pasta and sauce to the pan, again smoothing it into an even layer.

Step 6

Cover the pan with aluminum foil and bake for 40 minutes. Sprinkle the remaining 1 cup mozzarella and the remaining 1/4 cup Parmesan on top, then bake, uncovered, until the mozzarella has melted, 5 to 10 minutes more.

Step 7

Cool for 5 minutes, then serve with more chopped basil, a pinch of dried oregano and more red-pepper flakes, if desired. Slice the baked spaghetti into large squares and serve hot or warm.

CHICKEN FAJITA PASTA

This comes from Machismo, an avid cook on tbsp.com. The recipe begins, “Tex-Mex meets Italian in this awesomely easy weeknight dinner dish.” Prep Time: 20 minutes; Total Time: 40 minutes; makes 4 servings.

Ingredients

1 tablespoon olive oil

1 lb. chicken breast, sliced thin

1 packet Old El Paso™ taco seasoning mix chicken

1/4 cup water

1/2 red bell pepper, sliced thin

1/2 green bell pepper, sliced thin

1/2 yellow bell pepper, sliced thin

1/2 red onion, sliced thin

1/2 lb. spaghetti (1/2 of a 16 oz. box)

4 oz. cheddar cheese, grated

Salt and pepper

Directions

In a large skillet, add olive oil over medium heat. Once hot, add the chicken and cook, stirring regularly, until chicken is cooked through, around 8 minutes.

Add chicken seasoning to the skillet along with 1/4 cup water and stir together. Add sliced bell peppers and onion and cook until they are softened a bit.

Meanwhile, cook spaghetti according to package until al dente. When pasta is cooked through, use tongs to move it directly from the cooking water to the chicken fajita skillet. Stir to combine, and season with salt and pepper to taste.

Top the skillet with grated cheddar cheese and reduce heat to low until cheese is melted. Serve hot.

SUCCOTASH AND SHELLS

This is from Mark Bittman on the AARP site. It begins, "One-pot pastas — where you cook the sauce and noodles together “risotto-style” by gradually stirring in liquid and other ingredients — are perfect for busy days. You can easily vary the recipe to accommodate all sorts of whims and wants. The batch shown here uses gluten-free shells made from corn, brown rice and quinoa. Or substitute any whole wheat cut pasta. (There are benefits from the fiber and nutrients in whole grain noodles, but regular pasta is always another option.) The vegan topping in the recipe is a savory peanut seasoning. But you can always skip that step and finish the dish with grated Parmesan cheese, leftover chopped grilled or roasted chicken, crumbled cooked bacon, or any plain chopped nuts. And since this is one of those pastas that’s as good at room temperature or slightly chilled, it’s a candidate for making ahead to enjoy later."

2 tablespoons olive oil

1/2 red onion, chopped

2 teaspoons chopped garlic

4 ounces any whole grain or legume-based shells or cut pasta

1 cup frozen lima beans (about 5 ounces)

1/4 cup roasted peanuts (salted or unsalted)

1/2 teaspoon smoked paprika

1 cup fresh corn kernels (or use frozen)

1/2 red bell pepper

Several fresh sage leaves (or 1/2 teaspoon crumbled dried sage)

Directions

Put the oil in a 3-quart pot over medium-high heat. When it’s hot, add the onion and garlic, sprinkle with salt and pepper, and cook, stirring occasionally, until soft, 3 to 5 minutes.

Add the pasta and lima beans and 1/2 cup water. Stir and bring to a boil. Reduce the heat so the mixture bubbles enthusiastically and cook, stirring frequently and adding more water 1/4 cup at a time so the mixture stays saucy and the pasta just begins to get tender, 5 to 10 minutes, depending on the kind you use. (Figure you’ll need another 1 to 1-1/2 cups of water.)

While you’re minding the pasta, chop the peanuts as finely as you can manage and toss them in a small bowl with the nutritional yeast and smoked paprika. Taste and add salt and pepper if you’d like. (Or pulverize the seasonings together in a small food processor or with a mortar and pestle.) Then core and chop the bell pepper and mince the fresh sage leaves.

Stir the corn into the pasta along with the bell pepper and sage and cook, stirring occasionally and adding water 1 tablespoon at a time, until the vegetables are hot and the pasta is tender but still has some bite, another 3 to 5 minutes Taste, adjust the seasoning, and serve hot or warm, garnished with the seasoned peanuts.

THREE-CHEESE BEEF PASTA SHELLS

This is from Betty Crocker, and begins, "These Three-Cheese Beef Pasta Shells can be ready to impress in no time at all. Perfect for company and cozy nights at home, this hearty dish only looks like you spent all day in the kitchen. In fact, you can pull stuffed pasta shells with ground beef together with just 25 minutes of prep time, then get the rest of the meal ready while it bakes. These stuffed shells with cream cheese, ground beef, melty cheese and pasta sauce bring a whole new meaning to the term "comfort food." No matter the occasion, nothing satisfies quite like a warm dish of Three-Cheese Beef Pasta Shells."

24 uncooked jumbo pasta shells

1 lb ground beef (at least 80% lean)

1 jar (25.5 oz) Muir Glen™ organic chunky tomato & herb pasta sauce

1/4 cup water

1 container (8 oz) chive and onion cream cheese spread

1-1/2 cups shredded Italian cheese blend (6 oz)

1/2 cup grated Parmesan cheese

1 egg

1 to 2 tablespoons chopped fresh parsley, if desired

Instructions

Heat oven to 350°F. Cook and drain pasta shells as directed on package.

In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Cool slightly, about 5 minutes.

In large bowl, mix pasta sauce and water. Pour 1 cup of the pasta sauce mixture in bottom of ungreased 13x9-inch (3-quart) glass baking dish. In medium bowl, mix cheese spread, 1 cup of the Italian cheese, the Parmesan cheese, egg and cooked beef. Spoon heaping tablespoon mixture into each shell. Arrange stuffed shells over sauce in baking dish. Pour remaining sauce over top, covering shells completely. Cover with foil.

1 pound ground beef (90-percent lean)

1/2 pound Italian sausage, sweet or hot, casings removed if necessary

4 large garlic cloves, finely chopped

2 teaspoons Italian seasoning

1/4 cup water

1 pound spaghetti

3 tablespoons butter

1 (15-ounce) container whole-milk ricotta (about 1-3/4 cups)

8 ounces cream cheese, softened

8 ounces low-moisture shredded mozzarella cheese (2 cups)

3 ounces shredded Parmesan (3/4 cup)

Fresh basil or parsley, for serving (optional)

Crushed red pepper, for serving (optional)

Preparation

Heat oven to 375 degrees. Bring a large pot of salted water to a boil. Set aside 1 cup of the marinara.

Heat oil in a large (12-inch) nonstick skillet over medium-high. Add beef and sausage, breaking up the meat into small pieces, then cook, undisturbed, until browned on the one side, 3 to 4 minutes. Stir in onion and garlic. Cook until the meat is no longer pink and the onion has started to soften, 3 to 4 minutes more. Stir in Italian seasoning, the remaining marinara and 1/4 cup water. Bring to a boil, adjust heat to medium-low and simmer, stirring occasionally, for 5 minutes. Turn off heat.

QUICK CHANA MARSALA

I almost never have the time to soak dried chickpeas the night before I make this dish, or the simmering time required when you start from dried—but then again, who does? What I do have is a trick that will make them taste like you made this dish the slow way: Boiling the canned chickpeas with their liquid helps them mimic the texture you would get from soaking dried ones overnight. (And another trick from my sister-in-law—grating the tomatoes—saves you tons of chopping.)

Preparation

Bring two 15-oz. cans chickpeas with their liquid to a boil in a medium saucepan; cook, stirring occasionally, until chickpeas swell slightly and are a bit lighter in color, 10–15 minutes. Remove from heat. Meanwhile, heat 3 Tbsp. vegetable oil in a large skillet over medium. Cook 1 tsp. cumin seeds, swirling pan, until seeds start to pop and sputter, 10–20 seconds. Heat a large nonstick skillet over medium-high heat. Add the beef, season with salt and pepper and cook, breaking the beef into small pieces with a wooden spoon, until well browned, about 5 minutes. Transfer to a medium bowl, leaving behind any drippings, and reduce the heat to medium.

To the same skillet, add the mushrooms, season with salt and cook until golden brown, 8 to 10 minutes. Transfer the cooked mushrooms to the bowl with the beef.
