Halloween Recipes

It's almost Halloween. In that spirit, here are six yummy recipes to get you through the mood for Halloween, including Circleville Pumpkin Chili, Baked Eyeballs Casserole, and Pumpkin Pie Milkshake. Enjoy!

"STROKE OF MIDNIGHT" PUMPKIN BREAD

This is from the infamous long-since-forgotten emailing list.

Preparation time: About 1 hr; Serves: 8 - 10

Ingredients

1 1/3 cups, sugar

1/3 cup, shortening (I use Smart Balance *Vegan*)

1/2 cup, applesauce

1 cup, pumpkin

1-2/3 cups, flour (I use a combo of wheat and soy)

1/4 teaspoon, baking powder

1 teaspoon, baking soda

1/3 cup, water

dash of salt

dash of nutmeg, cloves, cinnamon, ginger (Whatever you like)

Directions

Preheat the oven to 350 degrees.

Beat the sugar, shortening and applesauce until 'light and fluffy' or well mixed. Stir in the pumpkin.

Sift together the flour, baking powder, baking soda, salt and spices. Add the batter and water, alternatively.

Spoon into a greased and floured bread pan. Bake about 45 minutes – 1 hour or until done

HALLOWEEN PUNCH

This also comes from the infamous long-since-forgotten emailing list. Makes 10-1/2 cups.

Ingredients

4 cups Apple cider

1 1/2 cup Orange juice

1 cup Pineapple juice

2 tablespoons Sugar

4 cups Ginger ale

Ice cubes

Directions

Stir together the apple cider, orange juice, pineapple juice and sugar in a punch bowl.

Pour in the ginger ale. Add ice cubes.

Data per 1/2-cup serving: 59 calories, 0g protein, 0g fat, 15g carbohydrates, 6mg sodium, 0g saturated fat, 0g monounsaturated fat, 0g polyunsaturated fat, 0mg cholesterol.

CIRCLEVILLE PUMPKIN CHILI

This comes originally from John Mitzewich, who wrote for The Spruce Eats. He wrote, “While this pumpkin chili recipe hails from the Midwest, its use of these spices and chocolate are reminiscent of chilis and moles of the American Southwest region. This chili recipe gets its heat from the chipotle pepper, but if you like your chili hotter you can add a few fresh hot peppers into the pot.”
 Serves 8; Prep Time: 15 minutes; Cook Time: 90 minutes; Total Time: 105 minutes

Ingredients

1 tbsp olive oil

3 cloves chopped garlic

1 chopped onion

2 lbs ground beef

1 tbsp black pepper

1 tsp cinnamon

1 tbsp dried oregano

1 1/2 tbsp salt

1 tbsp cumin

3 tbsp chili powder

2 tbsp ground paprika

1 tbsp ground chipotle pepper

1 cup canned pumpkin puree

2-oz bittersweet chocolate

1 28-oz can crushed tomatoes

1 cup tomato juice

1 15-oz can pinto beans, drained

avocado, sour cream and fresh cilantro (optional)

Directions

In a large pot cook onion and garlic in olive oil over medium-low heat until translucent. Add the ground beef, salt, and all the spices, and cook for 10 minutes, stirring to break up the beef into very small pieces.

Add the pumpkin, chocolate, crushed tomatoes, and tomato juice. Stir and reduce heat to low and simmer for 90 minutes, stirring occasionally. Add the pinto beans and simmer for 15 more minutes. Adjust seasoning and serve.

Garnish with avocado, sour cream and fresh cilantro if so desired.



PUMPKIN CUPCAKES

This is from Diana Rattray in The Spruce Eats. She wrote, "These pumpkin cupcakes are a perfect choice for a Halloween party treat or fall dessert. The moist pumpkin cupcakes are perfectly spiced with a mixture of cinnamon, ginger, and nutmeg, and they get extra texture from chopped walnuts or pecans.

"Top these cupcakes with fluffy caramel cream cheese frosting or a basic cream cheese frosting. Or top with a dollop of whipped cream or whipped topping and a sprinkling of cinnamon sugar."

Prep Time: 10 minutes; Cook Time: 25 minutes; Total Time: 35 minutes; Servings: 24 servings; Yield: 24 cupcakes

This comes from Family Time.com, and starts off, "The 'eyeballs' that top our spooky casserole are made from mozzarella cheese and sliced olives. But the cheesy, baked pasta that lies below is a real treat that everyone will enjoy." Serves 8 (about 1 1/4 cups each); prep time: 15 minutes; Cook Time: 25 minutes.

Ingredients

Vegetable cooking spray

1 jar (24 ounces) Prego® Italian Sausage & Garlic Italian Sauce

1 container (15 ounces) part-skim ricotta cheese

3/4 cup grated parmesan cheese

7 cups bow tie-shaped pasta, cooked and drained

1 container (8 ounces) small fresh mozzarella cheese balls (about 1-inch)

Directions

2 tablespoons sliced pitted ripe olive

Spray a 13 x 9 x 2-inch shallow baking dish with the cooking spray.

Mix 1 1/2 cups of the sauce, ricotta cheese, 1/2 cup Parmesan cheese and pasta in the prepared dish. Spread the remaining sauce over the pasta mixture. Sprinkle with the remaining Parmesan cheese and cover the dish with foil.

Bake at 400°F. for 25 minutes or until hot and bubbling. Arrange the cheese balls randomly over the pasta mixture. Place a sliced olive on each cheese ball. Let stand for 10 minutes before serving.

Tip: Easy Substitution Tip: If fresh mozzarella cheese balls are not available, substitute 1 package (8 ounces) fresh mozzarella cheese. Cut crosswise into thirds. Cut each third in 6 wedges, for triangle-shaped eyes.





PUMPKIN PIE MILKSHAKE

This recipe is from Sarah Copeland in The New York Times cooking section, and posted in the Times on October 30, 2020. Sarah wrote, "As any true pumpkin lover can attest, there's more than one way to get your pie fix, and I milkshake just might be the most winning substitute: It's creamy and has the same shipped-cream topper. Add the spices you most like in your pie - go heavier on the ginger if that's your thing, or load up on cinnamon - and adjust the sweetness to your crowd's tastes. Even if you don't drink whiskey, there's a time and a place for bourbon, and this is it. Add a spash or two for the adults; they'll thank you."

Note: If you're like me, I don't have whiskey around the house, so I would opt for making this without it - especially since it is optional.

Time: 15 minutes; Yield: 4 milkshakes (about 4-1/2 cups)

1 tablespoon ground cinnamon

1 teaspoon granulated sugar

1 (28-ounce) container premium vanilla ice cream

1/3 cup milk, plus more as needed

1 cup pumpkin puree

2 teaspoons pure maple syrup

1/4 teaspoon ground ginger

5 large ice cubes (about 1 cup)

2 to 4 tablespoons bourbon (optional)

Caramel sauce, for drizzling (optional)

Preparation

Whip the cream in a medium bown until it just holds soft peaks (whip in a chilled bowl for faster results). Place the whipped cream and four glasses in the refrigerator to chill. Stir together 2 teaspoons of cinnamon and 1 teaspoon sugar in a small bowl and set aside.

Scoop the ice bream into a blender and pour 1/3 cup milk over the top. Add pumpkin, maple syrup, ginger, remaining 1 teaspoon of cinnamon and ice in a blender and pulse to combine (use a spoon to stir the ingredients between pulses, if needed). Add a few more tablespoons of milk, if desired, depending on how thick you like your milkshakes, and blend until smooth. (It may seem think at first, but once poured, it will melt fairly quickly.) Pulse in the bourbon, if using, and divided among the four chilled glasses.

Spoon the whipped cream over the top and sprinkle with cinnamon sugar. Drizzle with Caramel sauce, if desired.

Ingredients

1 tbsp olive oil

3 cloves chopped garlic

1 chopped onion

2 lbs ground beef

1 tbsp black pepper

1 tsp cinnamon

1 tbsp dried oregano

1 1/2 tbsp salt

1 tbsp cumin

3 tbsp chili powder

2 tbsp ground paprika

1 tbsp ground chipotle pepper

1 cup canned pumpkin puree

2-oz bittersweet chocolate

1 28-oz can crushed tomatoes

1 cup tomato juice

1 15-oz can pinto beans, drained

avocado, sour cream and fresh cilantro (optional)

Directions

In a large pot cook onion and garlic in olive oil over medium-low heat until translucent. Add the ground beef, salt, and all the spices, and cook for 10 minutes, stirring to break up the beef into very small pieces.

Add the pumpkin, chocolate, crushed tomatoes, and tomato juice. Stir and reduce heat to low and simmer for 90 minutes, stirring occasionally. Add the pinto beans and simmer for 15 more minutes. Adjust seasoning and serve.

Garnish with avocado, sour cream and fresh cilantro if so desired.



SPOOKY GHOST CUPCAKES

Ingredients

For the cupcakes:

1/2 cups sugar

3/4 cups unsweetened cocoa powder

1 1/2 teaspoons baking soda

3/4 teaspoons baking powder

3/4 teaspoons salt

3/4 cups buttermilk, room temperature

3 tablespoons vegetable oil

2 large eggs

3/4 cup warm water

1 teaspoon pure vanilla extract

Seven Minute Frosting:

3/4 cups sugar

1 tablespoon light corn syrup

2 tablespoons water

3 large egg whites

1/2 teaspoon pure vanilla extract

mini & regular chocolate chips for the face!

Instructions

For the Cupcakes:

Preheat oven to 350F. Line cupcake tins with liners, set aside.

In a large bowl, whisk together the sugar, flour, cocoa powder, baking soda, baking powder and salt.

Make a small well in the middle of the bowl and add the buttermilk, oil, eggs, water and vanilla. Whisk the wet ingredients together and then incorporate the dry until smooth and lump-free.

Fill cupcake liners 2/3 of the way full and bake for 20-23 minutes. Allow cupcakes to cool while you make the frosting.

Frosting:

Place egg whites in the clean bowl of a stand mixer with a whisk attachment. In a small saucepan with a candy thermometer attached, combine the sugar, corn syrup and water.

On medium-high heat cook the sugar mixture until boiling. At that point- turn the mixer on medium high speed to get the egg whites to soft peaks. When the sugar mixture has reached 230F, slowly pour it down the side of the bowl in a steady stream while the mixture continues to run.

Beat on medium-high for about 7 minutes or until the bottom of the bowl is cool to the touch and stiff glossy peaks have formed. Add the vanilla right before you finish beating the frosting.

Pipe frosting onto the cupcakes right away (it gets a bit firm otherwise.) and decorate with the chocolate chips!

Bread

If you've ever had homemade bread, you know how yummy it can be. Not just the taste, but it also smells wonderful, making your house or apartment just smell delicious.

While it may seem like a lot of work for something you can buy already sliced at the grocery store, it's well worth the work. (Hint: If you really get into kneading the bread, it also helps relieve stress! At least, it does for me.)

Here are six yummy bread recipes to try, including Classic Southern Buttermilk Cornbread and Egg Cinnamon Bread. Enjoy!

MAGIC CATERPILLAR PEANUT BUTTER BREAD

Years ago, I got hooked on Breaking Bread with Father Dominic on (if I remember correctly) the Food Network. Unfortunately, the show has since left the air, at least where I live. However, you might be able to check out a few episodes by Google-ing his name for the latest places that show him, or on YouTube. Check out his website, The Bread Monk, at http://www.breadmonk.com/. This recipe yields 1 loaf.



Ingredients:

1 package Fleischmann's Active Dry Yeast

1/4 cup warm water

1 cup milk

3/4 cup chunky peanut butter

1/4 cup granulated sugar

1 teaspoon salt

3 1/4 to 3 1/2 cups all-purpose flour, divided

For decoration: tubes of colored frosting, candies, gumdrops, licorice, etc.

Directions:

Sprinkle yeast over warm water in large bowl; stir to dissolve yeast. Let stand about 10 minutes, or until foamy.

Combine milk, peanut butter, sugar and salt in small saucepan. Cook over medium heat, stirring constantly, until mixture is smooth. Let cool to lukewarm, then add to yeast mixture. Stir in flour, 1 cup at a time, mixing after each addition until flour is thoroughly incorporated.

Turn out dough onto lightly floured surface. Knead 5 minutes, adding small amounts of the remaining flour as needed to keep dough manageable. Rinse and dry bowl, then lightly oil surface of dough and place dough in bowl. Cover with a dry cloth and let rise in a warm, draft-free place 1 hour.

Punch down dough. Knead briefly to expel large air bubbles. Roll dough into a rope about 24 inches long. Form rope into a large S shape on a lightly greased 18x12-inch baking sheet. Using a butter knife or dough scraper, chop rope into 3-inch sections, but do not separate completely. Cover with a cloth and let rise about 30 minutes. (The caterpillar will magically grow back together during rising and baking.)

About 15 minutes before end of rising time, preheat oven to 375 degrees. Bake loaf 25 minutes, or until top is golden brown. Let cool on baking sheet 15 minutes, then carefully transfer to a wire rack to cool completely.

Decorate cooled loaf with frosting and gumdrops or other candy. Poke holes in the sides with a wooden pick and insert sections of licorice for legs.

Note: Decorating gel doesn't work as well as frosting as a glue for the candy decorations, so make sure you pick up the right tube at the store. Any candies will work to make spots for the caterpillar's sections. Thin red licorice makes the perfect legs and antennae, unless you know your youngsters prefer the flavor of black licorice.

EGG CINNAMON BREAD



I've been making this for years – actually, for decades – and almost always gotten rave reviews on this recipe. It got to the point that several people have specifically requested this recipe – and, if I'm visiting, it's pretty much expected that I'll bake up a batch. This recipe makes three loaves.





Ingredients

2 envelopes yeast

1 C warm water

1-2 T honey

1 C milk (Note: 1 cup soy milk can be used in place of the milk)

1/2 C margarine (1 stick)

2 eggs, beaten

6-7 C unbleached white flour

1/4-1/2 C margarine (1 stick)

2-3 C cinnamon sugar

1/8 teaspoon salt

Directions

Stir honey into warm water. Stir in yeast. Set aside.

Heat milk until warm. Pour into large bowl and add 1/2 C margarine, cut into 4 pieces. Stir, allowing margarine to melt. Cool to room temperature. Stir in salt, yeast mixture and eggs. Add flour, 2 cups at a time until stiff. Place dough on floured towel and knead for 4-5 minutes.

Wash and dry bowl. Oil dough, place in bowl, cover with clean towel and place out of draft in a warm place. Allow to rise for 1 to 1 1/2 hours, until double.

Melt 1/4-1/2 C margarine. Grease 3 loaf pans. Punch dough down, then divide into three sections. Roll out with rolling pin, then brush with melted margarine. Spread cinnamon sugar over melted margarine, then roll all three sections into loaves. Place in pans, place clean towel over pans, and allow to rise again for 1 to 1 1/2 hours.

Remove towel, then place loaf pans into preheated 350 degree F oven. Bake for 40-45 minutes.

CLASSIC SOUTHERN BUTTERMILK CORNBREAD

This is from Diana Rattray on The Spruce Eats. Diana wrote, "This is an excellent cornbread to serve freshly baked in wedges with beans or greens or a big bowl of chili. It makes great stuffing, too!

"This cornbread is the classic buttermilk cornbread you'll find throughout the South. There's generally no sugar added to Southern cornbread, but if you prefer sweeter cornbread, add a few tablespoons of sugar or honey."

Prep Time: 10 minutes; Cook Time: 22 minutes; Total Time: 32 minutes; Makes 6 to 8 servings

Ingredients

2 cups white or yellow cornmeal

1/4 cup all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

1 1/4 cups buttermilk

1 large egg

3 tablespoons melted shortening (plus more for the skillet)

Directions

Gather the ingredients.

Preheat the oven to 425 F. Position the rack in the center of the oven.

Put about 1 tablespoon of shortening in a 9- to 10-inch cast-iron skillet and put the skillet in the oven.

In a large bowl, combine the cornmeal, flour, baking powder, soda, and salt. Whisk to blend thoroughly.

In another bowl, whisk together the buttermilk, egg, and shortening.

Add the buttermilk mixture to the dry mixture and stir just until blended. Carefully remove the hot cast iron pan from the oven and set it on a metal rack. Pour the batter into the sizzling shortening in the hot skillet.

Return the skillet to the oven, reduce the oven temperature to 375 F, and bake for about 20 to 24 minutes, until golden brown.

Cut the cornbread into wedges and serve hot with soups, stew, chili, beans, or greens. Many people like to crumble their cornbread in a glass and fill it with cold milk. A pan of cornbread also makes a great dressing to go with chicken, pork, or turkey.

Recipe Variations

For a little extra flavor, add some bacon drippings to the cast iron skillet, or duck fat, if you have it.

For sweeter cornbread, add a few tablespoons of sugar or honey.

TEXAS MOPPIN' ROLLS

Yield: 12 rolls.

I frequently make these (from Breaking Bread with Father Dominic) to go with chili or homemade spaghetti. Definitely yummy!



Ingredients:

1 teaspoon honey

2 cups lukewarm water

1 teaspoon salt

1 1/2 teaspoons crushed red pepper

1/2 cup minced onion

1 cup shredded Monterey Jack cheese

1/2 cup shredded Cheddar cheese

6 1/2 to 7 cups all-purpose flour, divided

Directions:

Combine yeast, honey and warm water in large bowl; stir until completely dissolved. Add salt, hot red pepper flakes, onion, Monterey Jack cheese and Cheddar cheese; stir until thoroughly mixed. Add 6 cups of the flour, 2 cups at a time, mixing after each addition until the flour is completely incorporated.

Turn out dough onto a lightly floured surface. Knead 6 to 8 minutes, adding enough of remaining flour to form a fairly stiff dough. Rinse and dry the bowl, then oil surface of dough and place dough in bowl. Cover with a clean, dry cloth and let rise in a warm, draft-free place about 1 hour, or until doubled.

Punch down dough. Knead briefly to expel large air bubbles. Divide dough into 12 equal pieces. Roll each piece into a fat oval. Place rolls in a lightly greased 13x9x2-inch baking pan (three rolls across, four down). Let rise about 20 minutes, or until nearly doubled.

While rolls are rising, preheat oven to 375 degrees. Place on middle rack of oven and bake 35 to 40 minutes, or until top crust is browned. Remove rolls from pan and let cool on racks.

Note: "With so many different palates to please, our abbey cooks are usually pretty cautious about spicy seasonings. As a result, sometimes monastery food is a bit bland, so I like to create breads with strong flavors. Every time I serve these rolls, one of the brothers is sure to comment on how he expected "just another roll" and got a mouthful of pepper-and-cheese-bread-with-an-attitude. These rolls are actually pretty mild compared to a lot of Tex-Mex food, so feel free to increase the amount of crushed red pepper.

"I used ordinary dried crushed red pepper (hot red pepper flakes) for this recipe, but if you keep fresh jalapenos or other hot peppers in the fridge, by all means use them. Three 3-inch jalapenos, minced fine, provide moderate heat. You can experiment with other peppers as well." (All notes after the recipes are Father Dominic's notes.)

MAPLE PECAN SWEET POTATO SCONES

This comes from United HealthCare, and begins, "Tender and fluffy, these spiced scones are full of veggies, whole grains and maple syrup and are best served warm. Even better? They’re easy enough to whip up for brunch or afternoon coffee."

2 3/4 cups whole-wheat pastry flour

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon ginger

1/4 teaspoon nutmeg

1 stick cold butter, diced

2/3 cup sweet potato, cooked and mashed

1/3 cup real maple syrup

2 eggs

Glaze

1/2 cup powdered sugar

1 tablespoon real maple syrup

2–3 teaspoons milk

1/4 cup pecans, chopped

Directions:

Preheat oven to 425 degrees. In a large mixing bowl, combine flour, baking powder, cinnamon, salt, ginger and nutmeg. Cut in the butter with two knives or a pastry blender until crumbly. In a medium mixing bowl, whisk together the sweet potato, maple syrup and eggs until blended.

Add the wet ingredients to the dry and combine until a soft dough forms. Divide the dough in half and turn out onto a lightly floured surface. Pat each half into a 6-inch circle about 1 inch thick. Transfer the two circles to a parchment-lined baking sheet. Using a knife, cut each circle into 6 wedges, gently separating the wedges with the knife until they are about 1/4 inch apart.

Bake the scones for 16–18 minutes or until golden. Whisk together the glaze ingredients and drizzle over the warm scones. Sprinkle with chopped pecans.

In a large bowl, sift the flour, baking powder, baking soda, nutmeg, and salt.

In a separate large bowl, whisk together the stevia sweetener, oil, vanilla, egg, and yogurt. Add the dry ingredients. Stir together until the mixture is just moistened but no flour is visible. Gently fold in the blueberries, reserving 24 to 36 blueberries to garnish the tops.

Spoon the batter into the muffin cups. Using the reserved blueberries, sprinkle 2 or 3 berries on top of each muffin.

Bake for 25 to 30 minutes, or until a wooden toothpick inserted into the center comes out clean.

Transfer the pan to a cooling rack. Let cool completely.

TEX-MEX CORNBREAD

This yummy recipe is from Diana Rattray, who has contributed to About.com and The Spruce Eats for years. For this recipe, she wrote, "This is a moist and delicious cornbread, perfect to serve with beans, a bowl of chili, or a hearty soup or stew. Add more or less minced jalapeño to suit your taste. SOUTHERN-STYLE CORNBREAD

This yummy recipe is from Diana Rattray, who has contributed to About.com and The Spruce Eats for years. For this recipe, she wrote, "Cornbread is a staple in the South. It is absolutely essential with bean dishes, black-eyed peas, greens, hearty stews, and, of course, country-style ribs. Put the shortening in a 10-inch cast-iron skillet and place in the oven to preheat while making the batter.

In a mixing bowl, combine the cornmeal, flour, salt, baking powder, baking soda, and sugar.

In another bowl, whisk together the eggs, milk, and butter.

Combine with dry ingredients and stir until all ingredients are moistened. The batter will be similar to a thick pancake batter.

Carefully, with heavy oven mitts, lift the skillet out of the oven and turn to coat the bottom and sides with the melted shortening.

Pour the cornbread batter into the skillet and return it to the oven.

Bake for about 20 to 25 minutes, until browned. A toothpick inserted in the center should come out clean. Serve and enjoy.

Tips

Baking powder starts acting quickly, so have the oven preheated and the skillet ready before you combine the wet and dry ingredients. As soon as the batter is combined, pour it into the skillet and get it into the oven.

If you don't have a cast-iron skillet, a greased 8-inch or 9-inch baking pan may be substituted.

This same recipe can be used to make cornbread muffins. Be sure to grease and flour the muffin pan thoroughly.

Recipe Variations

Replace the sugar with honey or cane syrup if you like.

The salt may be reduced to 1 teaspoon.

Add 1 cup of well-drained, cooked corn kernels to the batter.

Brown about 1/2 pound of crumbled sausage in the skillet. Add the cornbread batter and bake. As soon as the cornbread comes out of the oven, run a knife around the edge to loosen and invert it onto a plate.

Add 1 to 2 cups of Mexican-style cheese and green chile peppers for Tex-Mex flavor.

What's the Difference Between Southern and Northern Cornbread?

It's difficult to generalize recipes because every cook has their own way of making popular dishes. However, there tend to be some regional preferences when it comes to cornbread. One of the most controversial is the sugar, though Northern cornbread also tends to be more cake-like and less crumbly because it uses more flour. Southern cornbread often skips the sugar, includes more cornmeal, and is baked in a piping hot cast-iron pan for that signature crispy crust on the bottom and sides.

What's the Best Fat to Grease the Skillet?

One key to great Southern cornbread is the fat that greases the skillet. Vegetable shortening is just one option. You can use the same amount of oil as long as it has a high smoke point that can handle the oven's temperature. Canola and vegetable oils are good choices. To give the cornbread even more flavor, use bacon grease (some people insist it's the only way to go):

Dice 3 or 4 strips of bacon and cook it in the skillet. Use 1 tablespoon of bacon grease instead of the oil or shortening and replace some of the butter with the rest. Add the cooked diced bacon to the batter, if you like.

Why Does Cornbread Get Crumbly?

Cornbread is inherently crumbly to some degree, particularly Southern-style cornbread. A few factors may produce really dry cornbread that simply falls apart, though. Over baking will dry it out, so be sure to check for doneness with a toothpick. Another consideration is if a recipe has too much cornmeal and not enough (or no) flour or eggs. Fortunately, this recipe includes those three elements in proportions that result in tender, not-too-crumbly cornbread.

CHOCOLATE-RASPBERRY MUFFINS

You may remember me posting about Rollin' Oats, one of my favorite places to shop. It has two stores in the Tampa Bay (Florida) area, one in Tampa, the other in St. Petersburg. Ingredients

1/4 cup coconut flour

1/4 cup unsweetened cocoa powder

1/4 tsp salt

1/2 tsp baking soda

4 large eggs

1/4 cup oil, plus additional for greasing pan

1/2 cup honey

1 tsp vanilla extract

1/2 cup fresh or frozen raspberries

Directions

Preheat oven to 350°. Grease 9 of the muffin cups in a muffin pan.

In a large bowl, combine coconut flour, cocoa powder, salt, and baking soda.

In a medium bowl, whisk together eggs, oil, honey, and vanilla extract. Mix wet ingredients into dry ingredients until fully incorporated. Gently fold in raspberries.

Scoop approximately 1/4 cup of batter into each greased muffin cup.

Bake approximately 20 minutes, until a cake tester inserted into center of muffin comes out clean. Cool muffins in pan for 1/2 hour.

FESTIVE SWEET CORN BREAD

Ingredients

1 1/2 cup all purpose flour

1/4 cup granulated sugar

1/2 cup yellow cornmeal

1 tbsp. baking powder

1 1/4 cups milk

1/2 tsp. salt

2 large eggs

1/3 cup vegetable oil

3 tbsp. melted unsalted butter or margin

2 tbsp. honey

1/2 cup whole corn

1 small red bell pepper, deseeded and chopped

1 small green chili, deseeded and chopped

Directions

Preheat an oven to 400 degrees. Grease an 8-inch square baking pan with butter. In a large bowl, mix together the sugar, cornmeal, flour, salt and baking powder. In a large measuring cup, whisk together the milk, honey and eggs. Stir the egg mixture into the cornmeal mixture, mixing well. Stir in the melted butter and then gently mix in the corn kernels, chili and red bell pepper. Pour the batter into the baking pan. Bake until firm, 18-20 minutes. Cut into squares and serve hot.
