Just Desserts!

Here are six yummy dessert recipes you can put on your holiday table - or, really, whip up any time. Enjoy!

DEVIL’S FOOD MARSHMALLOW CUPCAKES

This comes from Nichelle Stephens, About.com’s Cupcakes expert. Nichelle wrote, “Ding Dongs, Ho Hos, and Cocoa Cremes are the chocolate snack cakes that have been the dessert for kids and adults lunches for decades. However, there's a better way to get a chocolate fix by baking the cakes from scratch. The essential components are chocolate cupcake, marshmallow filling and chocolate ganache frosting.

“Tip: An easy way to make chocolate ganache is to use chocolate candy melts. I have used Chocoley's Bada Bing dark chocolate candy melts.

“This chocolate cupcake recipe is from the cookbook, Home Baked Comfort, by Kim Laidlaw.

Prep Time: 20 minutes; Cook Time: 20 minutes; Total Time: 40 minutes; Yield: 18 cupcakes

Ingredients

Devil’s Food Cupcakes

1 3/4 cup all-purpose flour

3/4 cup natural cocoa powder

2/3 cup boiling water

1 cup buttermilk

1 1/2 tsp baking soda

1/2 tsp kosher salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar

3 large eggs

2 tsp pure vanilla extract

Cream Filling

3/4 cup confectioners' sugar

3 tbsp unsalted butter, room temperature

1 tbsp heavy cream

1/2 cup of marshmallow fluff

1/2 tsp pure vanilla extract

Chocolate Ganache

1 cup of dark chocolate candy melts

6 tbsp of heavy cream

Preparation

Preheat oven to 350F degrees. Place one 12 cupcake cavity and one 6 cavity pan with cupcake liners. In a small bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.

In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.

Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. Use a scoop to divide the batter evenly into 18 wells of the baking pans.

Bake until the cupcakes are puffed and slightly springy to the touch and toothpick inserted into one of the cupcakes comes out clean which will be about 20 minutes. Let cool in pans for about 5 minutes. Then remove from pans and let cool completely on a wire rack.

To make the filling, in the mixing bowl, sift the sugar over the butter. Use the paddle attachment and beat on medium speed until light and fluffy. Add the marshmallow fluff, vanilla and cream. Beat until light and fluffy.

Using a paring knife or an apple corer, create a hollow about 1 1/2 inches in diameter and 1 inch deep in the center of each cupcake. Fill each hollow with a spoonful of the filling.

To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.

Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

CHOCOLATE BEAN CAKE

This comes from the MyDailyMoment.com e-newsletter. It begins, “Think you've bean there, done that? Well, you haven't until you try this protein-packed chocolate cake that's a slice of heaven. If you want a dessert that's a deviation from the norm, try this simple slice of heaven. It's a chocolate lover's dream.” Prep Time: 15 minutes; Cook Time: 40 minutes; Ready in: 1 hour 10 minutes; Serves 12.

Ingredients

1 1/2 cups semisweet chocolate chips

1 (15 oz.) can garbanzo beans, rinsed and drained

4 eggs

3/4 cup white sugar

1/2 tsp. baking powder

1 tbsp. confectioners' sugar for dusting

Directions

Preheat the oven to 350 degrees. Grease and flour a 9 in. round cake pan.

Place the chocolate chips into a microwave-safe bowl. Cook in the microwave for about 2 minutes, stirring every 20 seconds after the first minute, until chocolate is melted and smooth. If you have a powerful microwave, reduce the power to 50 percent.

Combine the beans and eggs in the bowl of a food processor. Process until smooth. Add the sugar and the baking powder, and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.

Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.

VICTORIA SPONGE CAKE

This is from Melissa Clark in The New York Times cooking e-newsletter. Melissa wrote, “This traditional British layer cake is made up of two buttery, tender spongecake rounds that sandwich a thick layer of jam and, often, a dollop of sweetened whipped cream. It’s a simple, homey confection that works as well with a cup of afternoon tea as it does for dessert. Feel free to substitute other flavors of tart jam for the raspberry. Apricot and blackberry work particularly well.” Yield: 8 to 10 servings.

Ingredients

12 tablespoons unsalted butter (1 1/2 sticks), softened, more for greasing pan

1 1/3 cups all-purpose flour

3 1/4 teaspoons baking powder

1/2 teaspoon kosher salt

3/4 cups plus 2 tablespoons granulated sugar

3 large eggs, at room temperature

2 tablespoons whole milk

1/2 cup raspberry jam, more to taste

1 cup heavy cream

1 tablespoon confectioners’ sugar, more for dusting

1/4 teaspoon vanilla extract

Preparation

Heat oven to 350 degrees and place a rack in the center. Grease and line the bottoms of two 8-inch round cake pans with parchment paper.

In a medium bowl, whisk together flour, baking powder and salt.

In the bowl of an electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. Beat in eggs, one at a time, until incorporated, then beat in milk, scraping down sides of the bowl as necessary. Mix in flour mixture until combined, then scrape into prepared cake pans, smoothing the top.

Bake cakes until golden brown and springy, and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Let cool for 10 minutes, then unmold them onto a wire rack to cool completely, flat side down.

Transfer one cake (the less attractive one) to a serving platter, and spread jam evenly on top. In the bowl of an electric mixer, whip cream, confectioners’ sugar and vanilla just until it holds stiff peaks. Dollop about half the cream on top of jam, then top with remaining cake. Dust with confectioners’ sugar and serve immediately, with the extra whipped cream on the side.

EASY LAYERED PUMPKIN CHEESECAKE

This is from Diana Rattray, About.com’s Southern Food expert. Diana wrote, “ This cheesecake is completely homemade, and it takes just minutes to prepare.

“From the homemade cinnamon-spiced graham cracker crust to the luscious double layer pumpkin filling, this cheesecake will look (and taste!) like you spent half the day in the kitchen!

“The cheesecake is made in a 9 1/2- X1 3/4-inch deep dish pie plate. If your pie plate is slightly smaller, you might have a little extra filling. There's very little expansion, so you can fill it nearly to the rim. Just be careful moving it to the oven!

“If you do plan to use a smaller ‘ready’ crust, I listed the measurements for a smaller amount of filling below the recipe.

“Make this cheesecake at least 4 hours before you plan to serve it to give it plenty of chilling time.” Prep Time: 15 minutes; Cook Time: 57 minutes; Total Time: 72 minutes; Yield: Serves 8.

Ingredients

Graham Cracker Crust

2 cups fine graham cracker crumbs

1/4 cup light brown sugar, packed

1/2 teaspoon ground cinnamon

8 tablespoons melted butter (1 stick)

Vanilla and Pumpkin Filling

3 packages (8 ounces each) cream cheese, softened

3/4 cup light brown sugar, packed

1 teaspoon vanilla extract

3 large eggs

1 cup canned pumpkin

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

whipped cream or whipped topping for serving, optional

caramel sauce or butterscotch sauce for serving, optional

Preparation

Heat the oven to 375° F.

For the crust, combine the graham cracker crumbs, 1/4 cup of brown sugar, 1/2 teaspoon of cinnamon, and 8 tablespoons of melted butter in a large bowl. Mix thoroughly until all crumbs are blended into the butter.

Spread the crumbs in a 9- to 10-inch pie plate and tamp down firmly over the bottom and the sides.

Bake for 12 minutes. Remove to a rack to cool.

Reduce the oven temperature to 325° F.

In a large mixing bowl with electric mixer, beat the cream cheese with the 3/4 cup of brown sugar until smooth and creamy. Add the vanilla and eggs and beat until well blended. Pour 1 1/2 cups of the cream cheese mixture into the cooled crust.

Into the remaining cream cheese mixture, beat the pumpkin, 1 teaspoon of cinnamon, and the nutmeg. Spread over the first layer.

Bake the pie for 40 to 50 minutes, until set and just slightly jiggly in the center.

Cool on a rack. Cover and refrigerate until thoroughly chilled (about 3 to 4 hours) before slicing.

Serve topped with whipped cream and drizzle with caramel or butterscotch sauce, if desired.

Serves 8, or up to 12 if slices are quite small.

Filling amounts for a smaller pie:

2 packages (8 ounces each) cream cheese, softened

1/2 cup light brown sugar, packed

1/2 teaspoon vanilla extract

2/3 cup canned pumpkin

3/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

Follow the directions above, using 1 cup of the plain vanilla filling for the bottom layer.

Bake for about 35 to 40 minutes.

Top the whole pie with whipped cream or whipped topping before serving, or add a generous dollop to each serving.

EASY CHERRY COBBLER

This comes from the GE Appliances e-newsletter. Makes 6 servings in 30 minutes.

Ingredients:

1 (20 to 22 ounce) can cherry pie filling

1 (9 ounce - 1 layer size) box yellow cake mix

1/4 cup butter, melted

1/2 cup pecans or walnuts, chopped coarsely

1-teaspoon cinnamon

Directions

Preheat oven to 350 degrees F.

Spread cherry pie filling in an 8-inch square-baking dish that has been sprayed with non-stick cooking spray.

In a small bowl, mix cake mix, melted butter, nuts and cinnamon.

Sprinkle evenly over top of cherries or arrange in rows so that the cherries are visible.

Bake for 25 to 30 minutes until mixture is bubbly.

Serve with vanilla ice cream.

BAKED APPLES

This came from an old Weight Watcher’s email, and had a points value of 3 points each. I have no idea what the new points value each serving would have now, nor do I have the exact email to find the recipe. Very yummy, though.

4 apples, small

1 C applesauce, unsweetened

1/4 tsp ground cinnamon

1 Tbsp brown sugar

1/4 C water

2 C vanilla nonfat yogurt

1/4 ground cinnamon

4 tsp pecans or walnuts, toasted & chopped

Core apples, leaving bottom intact so they can be filled. Place upright in small glace microwaveable baking dish. Stir applesauce, cinnamon & brown sugar. Spoon mixture into apples. Pour water into bottom of baking dish. Cover dish & microwave at medium for 12-15 minutes until apples are soft. Remove from microwave & allow to cool. Spoon yogurt over each apple, garnish with a sprinkle of cinnamon & toasted pecans or walnuts.

Ham and Sides

When I was growing up, turkey was for Thanksgiving, ham for Easter, and Christmas would be a toss-up between the two. Well, except for the one year Mom decided to try fixing duck for Christmas. That was, um, memorable. Let's just say it wasn't exactly the big hit Mom had hoped for.

As for ham: My dad's dad loved ham, so if Dad's parents were coming to our place for Christmas, Mom would fix ham for the big meal.

According to Mom, I wasn't wild about ham as a little kid, and was frequently trying to get out of eating any. One year, I hit on a fool-proof plan. I waited until there were witnesses so Mom couldn't back out of any promises; I was thinking ahead as only a kid can. I then announced in my best drama-queen voice, "Oh, Mom, that ham smells wonderful! That is the most wonderful ham I have ever smelled. I'll bet it's going to taste really yummy!"

By now, Mom was smiling; she'd won me over! Her smile got even bigger when I asked, "Can I have as much ham as I want?"

"Of course, you can!" was her answer.

"Good. I don't want any!" I informed her, to everyone's amusement - except Mom's. She did laugh, after a minute, when she realized I'd gotten exactly what I'd wanted without a fight. Go figure!

I later grew up to actually love ham. It's actually one of the things I occasionally miss as a vegetarian.

That said, here are three ham recipes and three sides/desserts. Enjoy!

GLAZED BAKED HAM

Ingredients:

1 12 lb. ham

1 cup firmly packed brown sugar

1 tablespoon mustard

1/4 cup pineapple juice

6 slices fresh or canned pineapple

6 maraschino cherries

Directions

Place ham, fat side up on rack in open roasting pan. Bake in 350 degrees F oven for 3 to 3 1/2 hours. Combine sugar, mustard & pineapple juice. Remove ham from oven 45 minutes prior to completed baking time. Pour off excess fat. Spread 1/3 of the glaze on fat side. Arrange pineapple slices & cherries on the glaze, pressing firmly. Return to oven & baste with remaining glaze at 15 minute intervals.

COLA BAKED HAM

This is from the infamous long-since-forgotten-emailing-list. Makes 6 servings.

Ingredients

1/2 uncooked ham (5-6 lb.)

1 c. brown sugar

1 1/2 c. Coca Cola

1 c. crushed pineapple (optional)

Directions

Wash ham thoroughly. Rub fat side with brown sugar. Pour Coca Cola over ham. Pour crushed pineapple over ham. Bake at 450 degrees F. for 3 hours.

BAKED HAM WITH HONEY GLAZE

This is from the infamous long-since-forgotten-emailing-list. Makes 18 to 20 servings.

Ingredients

10 to 12 lb. fully cooked bone in ham

Whole cloves

1/2 c. honey

1/2 c. brown sugar

1 tsp. dry mustard

1 Tbsp. orange juice

Directions

Preheat oven to 325 degrees F. Place ham, fat side up, on rack in roasting pan. Insert meat thermometer in thickest part. Bake, uncovered, 2 hours.

With sharp knife, remove skin, if any; then score fat into 1 inch diamonds; stud each with a clove.

Combine honey, sugar, mustard and orange juice in 1 quart saucepan. Over medium heat bring to a boil while stirring. Brush half of honey glaze over ham; bake 30 minutes. Brush with rest of glaze; bake 30 minutes until golden and thermometer reads 130 degrees. Let stand 15 to 20 minutes before carving.

PUMPKIN PIE

This came from the December 2004 issue of Runners’ World. Makes 8 servings. Calories: 110 per slice. Unfortunately, I couldn't find the link for the pie on the Runners’ World site...

1 ready-made piecrust

1 10-ounce can mashed pumpkin

1/4 C egg substitute

1 can evaporated fat-free milk

1/3 C brown sugar

1 tsp cinnamon

1/2 tsp cloves

1/4 tsp ginger and nutmeg

Mix ingredients in large bowl using wire whisk. Pour into unbaked piecrust in nine-inch pie pan. Bake at 421 degrees for 15 minutes, then turn oven down to 350 degrees and bake for another 30 minutes. Let cool.

From a long-since-forgotten-emailing-list. Time to make 1 1/2 hours; 20 min prep; 4 servings

3/4 finely chopped onion

3/4 finely chopped green bell pepper

3 1/2 cups hot cooked elbow macaroni (about 1 1/2 cups uncooked)

1 tablespoon all-purpose flour

1/2 teaspoon dry mustard

1/8 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon fresh ground red pepper

1 1/2 cups 1% low-fat milk

1 cup shredded cheddar cheese

2 ounces processed cheese (Velveeta)

1 (2 ounce) jar diced pimentos, drained

Coat large nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion & bell pepper; sauté 5 minutes or until tender. Place onion mixture & macaroni in 3-quart electric slow cooker coated with cooking spray.

Place flour & next 4 ingredients in small bowl; gradually add milk, stirring with whisk until well blended. Add milk mixture, cheeses, & pimiento to slow cooker; stir well. Cover lid; cook on high-heat setting 1-1/2 hours or until thick & creamy, stirring after 1 hour.

Meatless Monday

It doesn't seem possible that it's less than a week until Christmas and less than two until New Year's. Where has this year gone?

CHOCOLATE CHIP ICEBOX COOKIES

This comes from Diana Rattray, About.com's Southern Food expert. She writes, “These icebox cookies are filled with ground chocolate chips. Use a small food processor or chopper to grind or chop the chocolate chips for these cookies. The dough is chilled slightly and then it's rolled into logs and thoroughly chilled until it's very firm. Plant to let the dough logs chill for at least four hours, or leave them in the refrigerator overnight.” Prep Time: 15 minutes; Cook Time: 11 minutes; Total Time: 26 minutes; Yield: About 3 dozen

Ingredients

1 cup butter (8 ounces)

1/2 cup granulated sugar

1/2 cup light brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1/4 teaspoon salt

3 cups all-purpose flour, 13 1/2 ounces

1 cup semisweet chocolate chips, ground or finely chopped

Preparation

In large mixing bowl with an electric mixer cream the butter and sugars together until light; add eggs, vanilla and salt and beat until light and fluffy.

With the mixer on low speed, gradually add the flour. Stir in the ground chocolate chips.

Chill the dough for about 30 minutes to 1 hour, or until firm enough to shape.

Divide dough into 2 portions; form each portion into a log and wrap in plastic wrap or waxed paper.

Refrigerate the dough logs for at least 4 hours, or until very firm.

Heat the oven to 350° F (180° C/Gas 4). Line a baking sheet with parchment paper or a silicone baking mat, or lightly grease the pan.

Cut a log into 1/4-inch slices and place on the prepared baking sheet about an inch apart.

Bake for 9 to 12 minutes.

FLOURLESS CHOCOLATE CAKE WITH STRAWBERRY COULIS

This comes from the April/May 2012 issue of Vegetarian Times, page 52. It begins, “Similar to a chocolate soufflé, this cake will rise, then fall slightly when cooled, leaving a cracked top. A fresh strawberry sauce balances the richness of the chocolate. The cake can be made up to two days in advance. For perfect, clean-cut cake wedges, dip the knife in hot water before cutting each slice.” Serves 12.

Cake

8.5 oz. bittersweet (60% cacao) chocolate, chopped

3/4 cup unsalted butter

4 large eggs, separated, at room temperature, divided

2 egg whites

1/2 cup sugar

Coulis

1 1/2 cups sliced fresh strawberries (8 oz.)

1 Tbs. sugar

1/2 Tbs. lemon juice

Preheat oven to 300˚F. Coat 9-inch springform pan with cooking spray.

Melt chocolate and butter in double boiler. Remove from heat, and whisk until smooth and glossy. Whisk egg yolks, then stir into chocolate mixture.

Beat all 6 egg whites with electric mixer on high 1 to 2 minutes, or until foamy. Add sugar, and beat 4 minutes, or until stiff peaks form. Gently fold egg white mixture into chocolate mixture until just combined. Pour into prepared pan, and bake 40 minutes, or until toothpick inserted into center comes out mostly clean. Cool.

To make Coulis: Combine strawberries, sugar, and lemon juice in bowl of food processor; let stand 5 minutes. Add 2 Tbs. water, and purée until smooth. Strain through fine-mesh strainer. Serve Cake drizzled with Coulis.

HOLIDAY SEITAN ROAST

This is from the November 2014 issue of Vegetarian Times, page 69, and begins, “Thinly slice the seitan when serving so that each bite gets coated in sauce.” Serves 8.

1 tsp. sea salt

1 tsp. freshly ground black pepper

1 tsp. smoked paprika

1 recipe homemade seitan (recipe follows) or 1 lb. seitan, divided into 2 pieces

2 Tbs. olive oil, divided

1 Tbs. unbleached all-purpose flour

1/4 cup red wine

1/4 cup tomato paste

1/2 cup low-sodium vegetable broth

2 tsp. tamari or soy sauce

1/2 tsp. chopped fresh thyme

1/4 tsp. chopped fresh rosemary

8 oz. baby carrots (1 1/4 cups)

3 stalks celery, chopped (1 cup)

1 large parsnip, chopped (4 oz.)

12 oz. small purple potatoes, halved

2 cups pearl onions, peeled and halved if large

Preheat oven to 350°F.

Combine salt, pepper, and paprika in small bowl. Rub over seitan pieces.

Heat 1 Tbs. oil in large skillet over medium-high heat. Add seitan, and brown 6 minutes, turning to cook all sides. Remove seitan from pan, and set aside.

Add remaining 1 Tbs. oil to pan, sprinkle with flour, and reduce heat to medium. Cook 3 minutes, or until smooth roux forms. Add wine, then tomato paste, broth, tamari, thyme, and rosemary; cook 3 to 5 minutes, or until sauce begins to thicken.

Transfer seitan to roasting pan. Surround with carrots, celery, parsnip, potatoes, and onions. Pour sauce over top. Cover with foil, and roast 35 to 45 minutes. Remove foil, and roast 10 to 15 minutes more. Thinly slice seitan, and serve with vegetables and sauce.

HOMEMADE SEITAN

Also from the November 2014 issue of Vegetarian Times, page 69. It begins, “Seitan is essentially a dough made with vital wheat gluten, a high-protein wheat flour, and liquid. The dough can be rinsed or poached to become a chewy meat substitute that can be added to many different dishes. We've added light seasonings to this recipe so that it will work in any dish, but feel free to play around with flavors and shapes. This tried-and-true favorite can be used in any recipe calling for seitan.” Makes 1 pound.

2 cups vital wheat gluten

1/2 cup nutritional yeast

2 tsp. garlic powder

5 cups low-sodium vegetable broth, divided

2 Tbs. low-sodium soy sauce

1/2 small onion, diced

Combine wheat gluten, yeast, and garlic powder in large bowl. Stir in 1 cup broth and soy sauce until dough forms, adding more broth if necessary. Knead dough in bowl with spoon 3 minutes, or until elastic. Shape into 2 loaves.

Place loaves in large saucepan, and add remaining 4 cups broth, onion, garlic, and enough water to cover seitan. Cover, and bring to a boil over medium heat. Reduce heat to medium-low, and simmer 30 to 45 minutes, or until seitan is firm. Remove from heat, and cool in broth.

EASY CRANBERRY SAUCE

This comes from One Green Planet's newsletter. The recipe states, “My Easy Cranberry Sauce is not very sweet. It has a tangy tartness and makes a beautiful side dish for your holiday table.”

12 oz. Bag of fresh or frozen cranberries, with 1/2 cup set aside

1 cup sugar

zest of 1 orange

2 Tbs. Water or orange juice

Set aside 1/ 2 cup cranberries in a bowl. Put the rest of the cranberries into a saucepan. Add sugar, orange zest and water or orange juice and cook over low heat. Stir until sugar dissolves and cranberries soften, about 10 minutes. Raise the heat to medium high and cook until cranberries burst, about another 10 minutes. Reduce heat back to low and add in the cranberries you set aside. Add more sugar if you want, and salt and pepper to taste. Let cool (you can refrigerate it if you like your cranberry sauce cold) before serving.

SPICE TEA

This comes from my e-cookbook, titled Off the Wall Cooking, found on Amazon.com. I used to make this every year for Christmas presents. Nice-tasting, and everyone seemed to enjoy getting this. If you think you may need any last-minute presents, this can fit the bill.

8 oz loose tea

1 1/2 – 2 sticks cinnamon

3 orange peels

2 T chopped cloves

Cut orange peels into small pieces. Bake at 350 degrees for 15 minutes, stirring occaionally. Let cool, add to loose tea, along with broken cinnamon sticks & cloves. Store in tight containers.

Cookies!

If you've checked in here with any regularity, you know I usually don't post here over the weekend. That said, since my internet was down for just over a week, and Christmas is exactly a week away - yes, next Sunday! - I figured I'd get some cookie recipes in here for those who'd like to do some baking before the big day. Enjoy!

OAT AND RAISIN COOKIES (GLUTEN-FREE)

This comes from The Vegan Society, and starts off, “These easy oat and raisin cookies are healthy, quick to make and taste great. Serves 12.”

Ingredients

1 cup gluten-free oats

1 cup golden raisins

1 cup shredded coconut

2 bananas, mashed

1/2 cup coconut milk

Method

Preheat oven to 350 degrees and line a baking tray.

Combine all ingredients in a medium sized bowl.

Using your hands, form balls and place them on the prepared tray (the mixture will be running, so be careful).

Bake in oven for 15-20 minutes, or until cookies are brown and firm to the touch.

Leave to cool and enjoy!

CLASSIC SUGAR COOKIES

This is from The Food Network Kitchen. It begins, “These are the familiar cookies, with crispy edges and a slightly soft middle. Superfine sugar gives them their crunchiness. The small amount of baking powder ensures that they puff just a little without spreading too much and losing their shape.” Total Time: 3 hr 55 minutes; Inactive: 2 hr 45 minutes; Cook Time: 25 minutes.

Cookies:

2 1/2 cups all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon fine salt

3/4 cup superfine sugar

Royal Icing:

Directions

Special equipment: cookie cutters in desired shapes

For the cookies: Whisk together the flour, baking powder and salt in a small bowl.

Beat the superfine sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.

Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.

Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with cookie cutters and arrange about 2 inches apart on the prepared baking sheets.

Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.

Gently gather any scraps of dough into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll, about 1 hour. Cut out as many cookies as possible and bake.

For the royal icing: Beat the confectioners' sugar, meringue powder and 1/3 cup water with an electric mixer on medium-high speed in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)

Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.

3 tablespoons ground ginger

1 tablespoon ground cinnamon

1 tablespoon freshly ground black pepper

1 stick (1/2 cup) unsalted butter cut into 1-inch pieces, at room temperature

3/4 cup granulated sugar

1/2 cup molasses

1 large egg

2 cups confectioners' sugar

1/4 cup meringue powder (egg white powder)

Cinnamon candies, such as Red Hots, chocolate chips, raisins or other candies for decorating

Directions

Make the cookies: Whisk together the flour, ginger, cinnamon, black pepper, salt, baking soda, allspice, nutmeg, cayenne, and baking powder in a medium bowl.

Beat the butter and granulated sugar in a large bowl with an electric mixer on medium speed until pale and fluffy, about 3 minutes (scrape down the sides of the bowl, as needed). Beat in the molasses until combined, then the egg (the mixture will look curdled). Add the flour mixture and beat on low speed until the dough comes together. Divide the dough in 2 pieces, flatten each half into a disk and wrap each disk in plastic wrap. Refrigerate at least 2 hours or up to overnight.

Position 2 racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.

Keeping one disk refrigerated, roll the other disk on a well-floured work surface to 1/4 inch thick, sprinkling flour on and under the dough as needed and sliding a spatula underneath every so often to prevent sticking (If the dough looks crackly or breaks apart, press it back together from the outside edge in). Using cookie cutters, cut out gingerbread shapes as close together as possible. Pull away the extra dough around each shape then use a small offset spatula to transfer the shapes to the prepared cookie sheets, spacing them 1 inch apart. Reroll the scraps and cut out more cookies. Freeze the cookies until firm, about 15 minutes.

Bake the cookies, rotating the baking sheets from top to bottom and from front to back halfway through cooking, until they are slightly firm to the touch but not browned at the edges, about 12 minutes. Repeat the rolling, cutting and baking with the remaining dough disk.

Cool the cookies for 5 minutes on the baking sheet then transfer them to a cooling rack to cool completely, about 20 minutes (The cookies will continue to firm as they cool).

Make the icing: Combine the confectioners' sugar, meringue powder and 3 tablespoons water in a large bowl and beat with an electric mixer on low speed until the frosting thickens, trying not to incorporate too much air. (The icing should be pure white and thick, but not fluffy and bubbly.)

Scrape the icing into a resealable plastic bag and snip the corner to the desired size. Pipe the icing onto the cookies to decorate, as desired, sticking the candy onto the icing while it is still wet. Let the cookies stand at room temperature until the icing hardens, at least 1 hour.

Tip

You can add some fun to these by sprinkling on a little flaked coconut, colored sprinkles, or chopped candy bars before allowing to cool.

1/2 cup finely chopped roasted hazelnuts

1/2 cup coarsely chopped roasted hazelnuts

1/2 cup white rice flour

1/2 tsp. baking powder

8 oz. (2 sticks) unsalted butter, softened

1/2 cup sugar

1 large egg

1/4 cup raspberry jam

Confectioners’ sugar, for dusting

Preheat oven to 350°F. Line baking sheets with parchment paper.

Stir together oat flour, hazelnuts, rice flour, and baking powder in medium bowl. Set aside.

Cream butter and sugar in large bowl with electric mixer until smooth. Add egg, and beat until soft and creamy. Reduce mixer speed to low, and add oat flour mixture. Beat until just combined.

Use 1-oz. (2 Tbs.) ice cream or cookie scoop to shape dough into walnut-size balls, and place on baking sheet 3 inches apart. Gently press each ball in center with thumb to make small wells. Spoon 1/2 tsp. raspberry jam into each thumbprint well.

Bake cookies 15 to 20 minutes, or until golden brown. Cool on baking sheet. Dust with confectioners’ sugar, then transfer to storage container.

AWESOME SLOW COOKIER POT ROAST PLUS EXTRAS

As a single parent to girls, I am always trying to get the food groups into my abbreviated meals. I threw in potatoes, carrots, yellow squash, and zucchini to add to the original base recipe. They love stew, so this leads them in that direction, but is still a roast. It was a hit. I hope you enjoy it!" Time: 3 hours 15 minutes; makes 16 servings.

Ingredients

2 (10.75 ounce) cans condensed cream of mushroom soup

1 1/4 cups water

1 (1 ounce) package dry onion soup mix

5 1/2 pounds pot roast

2 potatoes, cut into cubes

2 carrots, sliced and halved

1 yellow squash, sliced

1 zucchini, halved lengthwise and sliced

Directions

Stir cream of mushroom soup, water, and dry onion soup mix together in a slow cooker. Set pot roast into the soup mixture and spoon liquid over the meat. Add potatoes, carrots, yellow squash, and zucchini.

Cook on High until the beef is cooked through, 3 to 4 hours. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). You can also cook on Low for 5 to 6 hours.

DEVIL’S FOOD MARSHMALLOW CUPCAKES

Devil’s Food Cupcakes

1 3/4 cup all-purpose flour

3/4 cup natural cocoa powder

2/3 cup boiling water

1 cup buttermilk

1 1/2 tsp baking soda

1/2 tsp kosher salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar

3 large eggs

2 tsp pure vanilla extract

Cream Filling

3/4 cup confectioners' sugar

3 tbsp unsalted butter, room temperature

1 tbsp heavy cream

1/2 cup of marshmallow fluff

1/2 tsp pure vanilla extract

Chocolate Ganache

1 cup of dark chocolate candy melts

6 tbsp of heavy cream

Preparation

Preheat oven to 350F degrees. Place one 12 cupcake cavity and one 6 cavity pan with cupcake liners. In a small bowl, whisk the cocoa powder into the boiling water. Let cool to lukewarm, then whisk in the buttermilk. In a small bowl, pour the cocoa powder into the boiling water and whisk. Let cool and set aside. Using another bowl, sift together the flour, baking soda and salt.

In the mixing bowl of a stand mixer, use the attachment to butter and sugars together on medium until well combined.

Add the eggs one at a time, beating well with each addition. Add the vanilla along with the final egg. Reduce speed to low to add the dry ingredients ins 3 additions alternately with the cocoa buttermilk mixture in 2 additions. Beat until just combined. Scrape the sides of the bowl with a spatula. Use a scoop to divide the batter evenly into 18 wells of the baking pans.

Bake until the cupcakes are puffed and slightly springy to the touch and toothpick inserted into one of the cupcakes comes out clean which will be about 20 minutes. Let cool in pans for about 5 minutes. Then remove from pans and let cool completely on a wire rack.

To make the filling, in the mixing bowl, sift the sugar over the butter. Use the paddle attachment and beat on medium speed until light and fluffy. Add the marshmallow fluff, vanilla and cream. Beat until light and fluffy.

Using a paring knife or an apple corer, create a hollow about 1 1/2 inches in diameter and 1 inch deep in the center of each cupcake. Fill each hollow with a spoonful of the filling.

To make the ganache, in a heatproof bowl set over barely simmering water in a saucepan. Melt the butter and chocolate with the corn syrup and cream, stirring constantly with a whisk until smooth. Remove from the heat and whisk until smooth. Let cool slightly.

Spread the filled cupcakes with the ganache. The filled and frosted cupcakes can be refrigerated in an airtight container for up to 4 days. Bring to room temperature before serving.

APPLE CINNAMON MUFFINS

Fill prepared muffin cup almost full. Bake 15-20 minutes or until golden brown. Serve warm.

2 (1 pound) boneless, skinless chicken breasts

1 pound Yukon Gold or red potatoes, cut into 1-inch chunks

Kosher salt

2 cloves large garlic, thinly sliced

Freshly ground black pepper

1 medium shallot, thinly sliced

1 tablespoon unsalted butter

1 teaspoon minced fresh rosemary

1 tablespoon olive oil

1 teaspoon minced fresh sage

Preparation

Preheat the oven to 375.

Pat the chicken breasts dry and sprinkle with salt and pepper.

Heat the butter and oil in an ovenproof 10- to 12-inch skillet or 4-quart saute pan over medium-high heat until bubbling and steaming. Add the chicken breasts and cook about 2-3 minutes per side until just golden brown.

Remove the chicken from the skillet and add the potatoes, garlic, shallot, rosemary, and sage, tossing to coat in the butter and oil.

Place the chicken on top of the potatoes and transfer to the oven. Bake for 30 minutes or until a thermometer inserted into the thickest part of the chicken reads 165.

Let the chicken rest for 5 minutes before serving.

SKILLET PUMPKIN CORNBREAD

1 c. pumpkin purée

1 c. buttermilk

1 egg, room temperature

1/2 c. brown sugar

1/4 c. plus 2 tbsp. unsalted butter, divided

1 1/2 c. cornmeal

1/2 c. all-purpose flour

1 tsp. ground cinnamon

1/4 tsp. ground nutmeg

1 tbsp. baking powder

1 tsp. baking soda

1 tsp. salt

Directions

Preheat oven 375 degrees F. Grease 10" cast iron skillet with 1 tablespoon butter, set aside.

In a medium mixing bowl whisk together cornmeal, flour, cinnamon, nutmeg, baking powder, baking soda, and salt.

In a large mixing bowl whisk together pumpkin, buttermilk, egg, brown sugar and 1/4 cup melted butter. Pour in cornmeal mixture and whisk together. Transfer to skillet and bake 25 to 30 minutes. (Test doneness by pricking center with a toothpick—it should come out clean.) Immediately spread remaining tablespoon butter all over.

Cool for 5 minutes and serve immediately.

GARLICKY GREEN BEANS WITH CRISPY ONIONS

Ingredients

Canola oil, for frying

1 large onion, thinly sliced using a mandoline

1/4 c. all-purpose flour

kosher salt

3 tbsp. unsalted butter

3 garlic cloves, minced

1 lb. green beans, trimmed

1/2 c. low-sodium chicken broth

Freshly ground black pepper

1 c. Grated Cheddar

Directions

Heat a large pot with 2" oil over medium-high heat. In a large mixing bowl separate onions into rings and toss with flour and 1/4 teaspoon salt. Shake onions and discard excess flour. When oil is hot but not smoking, add handful of onions; fry until golden brown. Transfer to a paper towel-lined plate. Repeat with additional batches.

Meanwhile in a large sauté pan over medium-high heat melt butter with garlic. Add green beans and chicken broth; season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir and cover with lid to steam; cooked until al dente, about 5 to 7 minutes. Sprinkle cheese all over and cover with lid until melted.

Top with crispy onions and serve immediately.

Chicken - and Computer Back Up

Finally, I'm back online! It only took several calls, including one that lasted almost 35 minutes (shortly after noon) and one that lasted 55 minutes! Ouch! But now that we're back in business...

There was a time when chicken was relegated to Sunday dinner. Now, it's an anytime meal. Chicken fast food restaurants seem to be everywhere; even burger places frequently have chicken sandwiches and nuggets. And many picnics and pot luck dinners have at least one or two chicken dishes, whether fried or baked, with or without gravy – hundreds of ways to have chicken.

As you probably guessed by now, today's post gives you six tasty ways to fix chicken. Enjoy!

KUNG PAO CHICKEN

This was posted by Daring Gourmet in tbsp. (tablespoon)’s website. She wrote, “One of the most popular dishes throughout China and the Western world alike, this sweet and spicy chicken dish is not for the faint of taste buds. 1 1/2 tablespoons soy sauce

1 tablespoon Chinese rice wine or sherry

3/4 teaspoon cornstarch

For the Sauce:

1/4 cup black Chinese vinegar or dark balsamic vinegar

3 tablespoons soy sauce

1 1/2 tablespoons toasted sesame oil

3 tablespoons white sugar

2 tablespoons hoisin sauce

2 teaspoons cornstarch

Directions

Combine the marinade ingredients in a small bowl and pour over the chicken pieces. Toss to coat and let the chicken sit while you prepare the rest of the ingredients.

Combine all the sauce ingredients in a bowl, stirring until the cornstarch and sugar is dissolved. Set aside.

Heat the oil in a wok or skillet over high heat. Fry the chilies for a few seconds until they turn darker in color.

Add the chicken and marinade and fry until no longer pink. Add the garlic, ginger, and white parts of the green onions and fry for two minutes. Add the sauce and stir until thickened. Reduce the heat to medium-high and stir in the peanuts. Simmer for one minute. Remove from heat and stir in the green onions. Serve immediately with steamed rice.

Ingredients

1 cup sliced mushrooms

1 cup tomato sauce

1 16-ounce can whole plum tomatoes

1/2 cup white wine (or cooking wine)

1/4 tsp. basil

1/4 tsp. oregano

1 bay leaf

2 tsp. minced garlic

1 chopped onion

4 half chicken breasts, skinned, boned

2 Tbsp. fat-free chicken broth

Directions

Heat liquid chicken broth in a non-stick skillet and brown chicken, onion, and garlic.

Add all other ingredients except mushrooms. Bring to a boil, then cover and simmer about 30 minutes.

Add mushrooms, cook 10 minutes more.

Remove chicken from pan, boil down sauce until slightly thickened.

Serve over cooked rice.

Ingredients

2 skinless, boneless chicken breasts, pounded to 1/8-inch thickness. Or, make your life easier and buy 4 thin chicken breasts

1/2 cup all-purpose flour

2 eggs, whisked

1 cup panko

1/2 teaspoon kosher salt

1/4 teaspoon cayenne pepper

1 cup celery, very thinly sliced (plus any leaves you can pull from the stalks)

1/4 of a red onion, thinly sliced

1 tablespoon finely chopped parsley

3/4 cup mayonnaise, divided, plus more for spreading on the outside of the bread slices

1 tablespoon buttermilk

2 teaspoons hot sauce, or more to taste

4 tablespoons vegetable oil

4 ounces blue cheese

8 slices of sourdough or country bread

Preparation

Generously season chicken breasts with salt. Cut each pounded chicken breast in half, so you have 4 pieces of chicken.

You’ll need three shallow bowls or dishes for dredging the chicken. One for the flour, one for the eggs, and one for the panko, salt and cayenne pepper.

Working with one piece of chicken at a time, dredge both sides of the breast in flour, shaking off excess. Next, dip the chicken into the egg, coating both sides and letting excess drip off.

Lastly, dredge through the panko/salt/cayenne mixture, pressing gently so the panko sticks to the chicken. Set the coated chicken pieces aside.

In a food processor, combine the celery (plus celery leaves if you have them), red onion, parsley, 1/4 cup of mayo and the buttermilk. Pulse just a few times until the celery and onion are roughly chopped. Don’t over-process or the mixture will get too mushy. Set aside.

In a small bowl, mix the remaining 1/2 cup of mayo with the hot sauce. Start with 1 teaspoon of hot sauce and then add more according to how spicy you want it. Set aside.

Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add 2 pieces of chicken to the skillet and cook until dark golden brown on both sides, about 8 minutes. Remove from the pan and set aside. Heat the last 2 tablespoons of oil in the same pan and cook the remaining pieces of chicken. (If you have a very large pan, you might be able to cook all the chicken pieces at once)

Return all the chicken to the pan.

Top each piece of chicken with crumbles or slices of blue cheese. Turn the heat to low and put a lid on the pan.

Spread a thin layer of regular mayonnaise evenly on one side of each piece of bread. Flip the slices over and spread the spicy mayo on the other side of each slice of bread.

When the blue cheese on the chicken is warm and very soft, remove the chicken from the pan (use a wide spatula) and set one piece of chicken on the spicy mayo side of 4 slices of bread.

Top each breast with a scoop of celery slaw and another slice of bread, with the side spread with regular mayo on the outside.

Over medium heat cook the sandwiches until the bottom is golden brown. Flip. Brown again. Slice the sandwich in half and serve.

Why Use Mayo on Grilled Cheese Sandwiches?

Spreading the outer slice of bread with mayonnaise instead of butter or oil makes the perfect slice of toasted bread; crispy, flaky and evenly browned.

CHICKEN PAPRIKASH

This comes from Sam Sifton in The New York Times cooking e-newsletter. Sam wrote, “Spices lose their flavor over time but few as quickly as paprika, which starts out tasting of pepper and sunshine but deteriorates in but a few months to sawdust and bitterness. For this recipe, get some new at the market: sweet or hot Hungarian paprika is best, but the generic article isn’t terrible and the smoky Spanish varieties known as pimentón de La Vera would not be out of place either, lending a deep, woodsy aroma reminiscent of cooking over an open fire. It’s a dish that pairs beautifully with butter-slicked egg noodles.” Yield: Serves 4 - 6; Time: 1 hour.

Ingredients

3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs

Kosher salt and freshly ground black pepper to taste

1 tablespoon neutral oil, like canola

3 tablespoons unsalted butter

1 large yellow or Spanish onion, peeled and diced

3 cloves garlic, peeled and minced

3 tablespoons Hungarian paprika, sweet or hot, or a combination

3 tablespoons all-purpose flour

1 cup canned crushed tomatoes or 1 large ripe tomato, chopped

1 cup chicken broth, homemade or, if not, low-sodium

1 pound egg noodles

3/4 cup sour cream

Preparation

Heat oven to 400. Season the chicken aggressively with salt and pepper. Heat the oil and 1 tablespoon of the butter in a large, heavy, oven-safe sauté pan or Dutch oven set over high flame, until the butter is foaming. Sear the chicken in batches, skin-side down, until it is golden and crisp, approximately 5 to 7 minutes. Then turn the chicken over, and repeat on the other side, approximately 5 to 7 minutes. Remove chicken to a plate to rest.

Pour off all but a tablespoon or 2 of the accumulated fat in the pot. Return the pot to the stove, over medium heat, and add the onion. Cook, stirring frequently with a spoon to scrape off any browned bits of chicken skin, until the onion has softened and gone translucent, approximately 5 minutes. Add the garlic, and stir again, cooking it until it has softened, approximately 3 to 4 minutes. Add the paprika and the flour, and stir well to combine, then cook until the mixture is fragrant and the taste of the flour has been cooked out, approximately 4 to 5 minutes.

Add tomatoes and broth, whisk until smooth and then nestle the chicken back in the pan, skin-side up. Slide the pan or pot into the oven, and cook until the chicken has cooked through and the sauce has thickened slightly, approximately 25 to 30 minutes.

Meanwhile, set a large pot of heavily salted water to boil over high heat. Cook noodles in the water until they are almost completely tender, approximately 7 to 8 minutes. Drain the noodles, and toss them in a bowl with the remaining butter, then toss again to coat.

Place the chicken on top of the noodles, then add the sour cream to the sauce, stir to combine and ladle it over the whole.

SPICY THAI CHICKEN

Ingredients

1 small red bell pepper, chopped

2 tbsp white vinegar

1/4 tsp crushed red pepper flakes

1 packet Equal sugar substitute (or similar substitute)

2-4oz boneless chicken breasts, skinned

1 lime, sliced into 6 wedges

Directions

Puree red bell pepper with vinegar in a food processor.

Pour puree into a saucepan. Add red pepper flakes and bring to a boil.

Reduce heat to simmer and cook for 3 minutes more.

Remove from the heat and let stand til cool.

Once the red pepper puree is cooled, stir in the Equal sugar substitute.

In a preheated oven, broil the chicken breasts for about 10 minutes (or until browned). Turn chicken and broil approximately 5 minutes more.

Prepare a serving platter with a bed of hot, cooked, white rice, brown rice, or couscous.

Remove chicken from oven and place breasts atop the bed of rice/couscous. Spoon the spicy red pepper sauce atop the chicken breasts, garnish with the lime wedges, and serve at once.

1 cup fresh snow pea pods, halved

1/2 cup julienne baby carrot strips

1/2 cup low-fat Oriental salad dressing or low-fat vinaigrette

4 cups shredded Napa cabbage
