I have to admit, I love veggies.
There, I said it. And while I do tend to favor some of them more than others, I'm willing to give most veggies a try at least once. Who knows where one's next favorite will come from?
If you're like me, I think you'll find these a nice variety to get you started, including the Twice Baked Potatoes and Onion Supreme. Enjoy!

BAKED BUTTER CARROTS
These are from my Grandma Hallock, who was a fantastic cook. She wrote, “Good with Veal Birds (Beef Rolls).” Eat & enjoy!
2 1/2 lbs. carrots
2 T oleo or butter
dash of pepper
1 T salt
1 1/2 tsp. sugar
2 tsp. lemon juice
Peel carrots. Cut into lengthwise slices. Put them & rest of ingredients into casserole. Cover & bake at 275 degrees for 3 hours. Uncover & brown on top for 15 minutes. Serves 6.
SWEET POTATO SOUFFLE
My mom’s recipe. Really good with baked ham.
4-5 sweet potatoes
1 small can pineapple
2 T orange juice concentrate
cinnamon
1/2 C brown sugar
1 egg
1 C nuts
1/2 tsp. salt
dash pepper
9 large marshmallows
Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.
ONION SUPREME
My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.
2 leeks (discard green), sliced thin
4 bunches scallions (discard green), sliced thin
2 cloves garlic, sliced thin
3-4 yellow onions, sliced thin
1 stick butter or margarine
20 small white onions
1 1/2 C half & half
Melt butter over low heat & sauté leeks, scallions, garlic & yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet & pour in half & half. Cook over low heat for 10 minutes more & serve.
JASON'S HOME FRIES
This is one of my oldest son's inventions. He fixed this on one of his many trips back home.
3-4 potatoes, scrubbed, not peeled
3-4 T butter or oil (or both)
1 pepper (red, green or yellow), diced
1 onion, chopped
1 clove garlic, minced (optional)
Cut potatoes across (not length-wise). Heat oil or butter. Add potatoes, onions, pepper & garlic. Cover, cook over medium heat, turning occasionally with a spatula, until brown & crusty.
JEAN'S SPECIAL POTATOES
Jean and I used to spend many hours on the phone together. One afternoon, we spent the better part of 30 minutes talking about food. I told her about Dad’s Onion Supreme; she, in turn, gave me this recipe.
8-10 potatoes
8 oz. cream cheese
8 oz. sour cream
1/2 C butter
2 tsp. chives
Peel & cook potatoes. Whip cream cheese & add potatoes. Mix sour cream, butter & chives. Add to potato mix. Cover & chill overnight (or several hours). Put in greased 2-quart casserole & cover; bake in oven at 350 degrees for 1 hour.
TWICE BAKED POTATOES

Total Time: 1 hr 35 minutes; Active Time: 15 minutes; Yield: 4 servings; Level: Easy
Ingredients
4 large russet potatoes, each about 3/4 pound each, scrubbed and dried
2 to 4 tablespoons unsalted butter
1/3 cup sour cream
1 scallion, finely chopped
Freshly grated nutmeg, optional
1/2 cup shredded sharp cheddar
Kosher salt and freshly ground black pepper
Directions
Preheat the oven to 400 degrees F.
Place the potatoes directly on the rack in the center of the oven and bake for 30 minutes. Pierce each potato in a couple spots with a fork and continue to bake until tender, about 30 minutes more. Remove potatoes from the oven, and turn the heat down to 375 degrees F.
Hold the potato with an oven-mit or towel, trim off the top of the potatoes to make a canoe-like shape. Reserve the tops. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream. Stir in the scallion, nutmeg, and season with salt and pepper, to taste. Season the skins with salt and pepper. Refill the shells with the potato mixture mounding it slightly. Sprinkle the cheese on top of the potato filling. Brush the reserved top with the remaining butter and season with salt and pepper.
Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.

Where's the Beef?
I wasn't always a vegetarian. Even after becoming a vegetarian, those in the house with me have enjoyed meat. Therefore, I've managed to collect (and invent) meat recipes over the years. Here are a few with beef in them, including Bean Burger and Oven Pot Roast.
Note: The first five recipes in today's post can be found in my e-cookbook, Off the Wall Cooking.
BEEF STEW
One of my inventions; the recipes I had for stew seemed too bland.
2-3 lbs. stewing beef
3 T oil
2 C water
1 onion, chopped
8 oz. tomato sauce
1 C flour
1 T soy sauce
1 clove garlic, minced
4 carrots, cut up
1 large potato, peeled & cut up
6 oz tomato paste
4 T vinegar
3 T honey
salt & pepper
Cut beef into bite-sized pieces. Trim fat & dredge in flour & brown in oil. Add every-thing except carrots & potato. Cook 15 minutes. Add carrots & cook 15 more minutes. Add potato & cook 30 minutes. Add water as needed. Serve over noodles.
OVEN POT ROAST
This is from my Grandma Hallock. She added, "I sometimes add soy sauce to thicken & for color. This is an easy meal."
4 lbs. chuck beef (boneless)
1/3 C flour
1/4 C oil
2 C carrots, cut up
2 C onions, sliced
2 C celery, cut up
1 C tomatoes (opt.) or 1 small can tomato paste
1 tsp. salt
1/8 tsp. pepper
1 can mushroom soup (optional)
Wash & flour meat. Brown in fat on stove top (all sides of meat). Put in large casserole or Dutch oven. Cook at 400 degrees for 3 1/2 - 4 hours. Put vegetables around. Last 1/2 hour, add soup. Add 1 T cornstarch dissolved in 1/2 C water to thicken gravy (if necessary). Serves 6.

Another one of Grandma Hallock’s recipes. She wrote, "Made these a lot when we were young. Kids loved them. Used flank steak." She also sent a recipe for Baked Butter Carrots which, she also wrote, are "good with Beef Rolls."
1 1/2 lbs. flank steak, sliced thin
1 egg
1 tsp. salt
1/2 C boiling water
1/2 tsp. onion flakes
2 tsp. lemon juice
3/4 C bread crumbs
3/4 tsp. poultry seasoning
flour
1/8 tsp. pepper
butter for browning
Wash meat, trim fat. Cut into 6 slices, making them as square as possible. Beat egg. Add crumbs & seasonings. Place in center of pieces of meat, then pin 4 corners of meat with toothpick or tie with string. Flour them, then brown in butter. Add 2 T flour to thicken sauce around meat. Put in casserole. Pour boiling water over it. Cover & bake in oven at 275 degrees for 3 hours or 300 degrees for 1 1/2 hours. Serves 6.
BEAN BURGER
The kids had this one evening when I had a class to go to; they loved it.
1 1/2 lbs. hamburger
2 T mustard (or to taste)
2 cans baked beans
2 T brown sugar (or to taste)
Brown hamburger. Drain grease, then add beans, mustard & brown sugar. Heat thoroughly. May be eaten on hamburger buns, taco shells, or plain.
HAMBURGER SPECIAL
One of my variations of the good, ol’ hamburger. One-half diced yellow pepper may be added along with the red and green peppers, if desired.
2 lbs. hamburger
1 - 2 carrots, peeled & cut into rounds
1/2 green pepper, diced
1/2 red pepper, diced
1 small onion, diced
1 package dry onion soup mix
Mix all ingredients together & form into 8 patties. Cook immediately or freeze separately. Serve on hamburger buns.
OLD-FASHIONED MEAT LOAF
A.K.A. ‘BASIC’ MEAT LOAF
This last recipe is from Paula Deen on The Food Network website.
Total Time: 1 hour 10 minutes; Active Time: 10 minutes; Yield: 4 servings; Level: Easy

Ingredients
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper

1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Cookies
Most of us love an occasional snack. Homemade cookies definitely fit the bill. And so...six cookie recipes. Two are my Grandmother's recipes, and have been posted here before, but are yummy enough to warrant seeing again. Enjoy!
EASY LEMON HERB SHORTBREAD COOKIES

Ingredients
2 1/2 cups all-purpose flour
1 teaspoon salt
2 sticks butter, softened
1 cup confectioner’s sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons lemon zest
2 teaspoons lemon juice
6 to 9 sprigs assorted fresh herbs, such as rosemary, thyme and sage
1 egg white
1/2 teaspoon water
1 tablespoon granulated sugar (optional)
Directions
In a medium-size bowl, briefly mix the flour and salt. Set aside. In a large bowl with a hand mixer or in the bowl of a standing mixer, blend the butter and confectioner’s sugar well. Add the egg, vanilla extract and lemon zest and juice and mix well. Gradually blend in the flour mixture and stir until a dough forms. Scoop the dough from the bowl and wrap in a zip-top bag or in plastic wrap and refrigerate for 1 to 2 hours.
Preheat oven to 375º F. Prepare your herbs by either finely chopping the leaves or snipping more decorative, larger pieces. You can choose to keep the herbs separate and use only one kind of herb per cookie, or you can blend them into a mixture. Set aside.
On a lightly-floured surface, roll out the chilled cookie dough to 1/4-inch thickness. Use a 2 1/2-inch circle, oval or square cookie cutter to cut out your cookies. Transfer cookies to a parchment paper-lined baking tray. Mix the egg white and water. Lightly brush the top surface of the cookies with the egg white mixture. Sprinkle or place the herbs on each cookie. Gently press the herbs to flatten against the cookies. If desired, sprinkle a pinch of sugar on each cookie.
Bake for 15 to 18 minutes, or until the edges turn golden brown.
PEANUT BUTTER COOKIES


This was one of my grandmother's recipes, along with the oatmeal cookie recipe that follows. You can find them in my e-cookbook, Off The Wall Cooking.
1/2 C butter
1/2 C peanut butter
1/2 C sugar
1 egg, well beaten
1 1/4 C flour
3/4 tsp. soda
1/2 tsp. baking powder
1/4 tsp. salt
Cream butter & peanut butter together. Add sugar gradually & cream thoroughly. Add egg. Sift flour once before measuring. Sift flour, soda, baking powder & salt together & add to creamed mixture. Chill dough well, then form into balls the size of walnuts. Place balls on lightly greased baking sheet. Flatten with fork dipped in flour, making criss-cross pattern. Bake at 375 degrees for 10-12 minutes.
GRANDMA'S OATMEAL COOKIES

Another one of my grandmother's recipes. When it came to baking, cookies were her specialty. You can also find these in my e-cookbook, Off the Wall Cooking
1 C flour
1 C brown sugar
3 C quick cooking oatmeal (NOT the instant oats!)
1 C butter or margarine
1/4 C boiling water
1 1/2 tsp. baking soda
Mix flour & brown sugar. Add oatmeal; stir. Melt butter; add to dry ingredients. Mix baking soda into boiling water; add to other ingredients, stirring well. Place batter into loaf pan, lined with aluminum foil & place in freeze for several hours. Slice & bake at 375 degrees for 10 minutes.

DOUBLE CHOCOLATE VEGAN COOKIES
Jolinda Hackett, from About.com's vegetarian blog, writes, "If you can't find vegan chocolate chunks, use regular chocolate chips."
Ingredients:
2 cups flour
2/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup vegetable oil
1 1/4 cup sugar
egg replacer for 1 egg, prepared
1/2 cup soy milk
1 teaspoon vanilla
1/2 cup vegan chocolate chunks
Preparation:
Pre-heat oven to 350 degrees.
Combine the flour, cocoa, baking soda and salt in a small bowl.
In a separate large bowl, whisk together the sugar and vegetable oil until well mixed, then add the prepared egg replacer, soy milk and vanilla.
Add flour mixture to sugar and oil mixture, mixing just until well combined, then stir in vegan chocolate chunks.
Drop dough by spoonfuls onto a cookie sheet, then gently flatten. Baked for 8-10 minutes, until done, being careful not to over-bake.
Enjoy your vegan chocolate chunk cookies!
PEANUT BUTTER SANDWICH COOKIES
This yummy recipe is from the December 2012 issue of Vegetarian Times (page 55), and can be found at http://www.vegetariantimes.com/recipe/peanut-butter-sandwich-cookies/ and makes 24 sandwiches. The recipe states, "These sandwich cookies are held together by a rich (and ridiculously easy) chocolate filling."
Cookies
2 cups smooth natural-style peanut butter
4 oz. Earth Balance margarine (1 stick)
1 cup dark brown sugar
1/2 cup evaporated cane sugar
2 tsp. vanilla extract
1/2 cup plain soymilk or almond milk
3 1/3 cups all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/3 cup roasted unsalted peanuts, chopped
Filling
1/2 cup coconut creamer or soy creamer
8 oz. vegan chocolate chips (1 1/4 cups)
To make Cookies: Preheat oven to 350°F. Line 2 baking sheets with parchment paper, or coat with cooking spray.
Cream peanut butter, margarine, brown sugar, cane sugar, and vanilla 2 to 3 minutes with electric mixer, or until smooth. Beat in soymilk and 1/4 cup water.
Whisk together flour, baking soda, baking powder, salt, and peanuts in separate bowl. Add flour mixture to peanut butter mixture, and beat just until dough forms.
Scoop 1 Tbs. dough onto prepared baking sheets 2 to 3 inches apart. Make crisscross pattern on top of each Cookie by pressing down with fork. Bake 9 to 11 minutes or until edges of Cookies begin to brown. Cool on baking sheet.
To make Filling: Heat creamer in top half of double boiler over medium heat until steaming. Pour hot creamer over chocolate chips in bowl, and let stand 30 seconds. Mix creamer and chocolate with wooden spoon until chocolate is melted, then whisk until smooth.
Spread 2 tsp. Filling on flat sides of 24 Cookies. Top with remaining Cookies.

Ingredients:
1 1/4 cups shortening
1 1/2 cups packed brown sugar
5 eggs
1 teaspoon vanilla extract
1/2 teaspoon maple flavoring
2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
Frosting:
2 (1 ounce) squares semisweet chocolate
1 tablespoon butter (no substitutes)
1 1/2 cups confectioners' sugar
1/4 cup milk
Directions:
In a mixing bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine flour, baking soda and salt; gradually add to the creamed mixture. Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 8-10 minutes or until edges begin to brown. Remove to wire racks to cool.
For frosting, melt chocolate and butter in a microwave or heavy saucepan. Add sugar and milk; mix well. Frost cooled cookies.

DOUBLE CHOCOLATE VEGAN COOKIES
Jolinda Hackett, from About.com's vegetarian blog, writes, "If you can't find vegan chocolate chunks, use regular chocolate chips."
Ingredients:
2 cups flour
2/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup vegetable oil
1 1/4 cup sugar
egg replacer for 1 egg, prepared
1/2 cup soy milk
1 teaspoon vanilla
1/2 cup vegan chocolate chunks
Preparation:
Pre-heat oven to 350 degrees.
Combine the flour, cocoa, baking soda and salt in a small bowl.
In a separate large bowl, whisk together the sugar and vegetable oil until well mixed, then add the prepared egg replacer, soy milk and vanilla.
Add flour mixture to sugar and oil mixture, mixing just until well combined, then stir in vegan chocolate chunks.
Drop dough by spoonfuls onto a cookie sheet, then gently flatten. Baked for 8-10 minutes, until done, being careful not to over-bake.

PEANUT BUTTER SANDWICH COOKIES
This yummy recipe is from the December 2012 issue of Vegetarian Times (page 55), and can be found at http://www.vegetariantimes.com/recipe/peanut-butter-sandwich-cookies/ and makes 24 sandwiches. The recipe states, "These sandwich cookies are held together by a rich (and ridiculously easy) chocolate filling."
Cookies
2 cups smooth natural-style peanut butter
4 oz. Earth Balance margarine (1 stick)
1 cup dark brown sugar
1/2 cup evaporated cane sugar
2 tsp. vanilla extract
1/2 cup plain soymilk or almond milk
3 1/3 cups all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/3 cup roasted unsalted peanuts, chopped
Filling
1/2 cup coconut creamer or soy creamer
8 oz. vegan chocolate chips (1 1/4 cups)
To make Cookies: Preheat oven to 350°F. Line 2 baking sheets with parchment paper, or coat with cooking spray.
Cream peanut butter, margarine, brown sugar, cane sugar, and vanilla 2 to 3 minutes with electric mixer, or until smooth. Beat in soymilk and 1/4 cup water.
Whisk together flour, baking soda, baking powder, salt, and peanuts in separate bowl. Add flour mixture to peanut butter mixture, and beat just until dough forms.
Scoop 1 Tbs. dough onto prepared baking sheets 2 to 3 inches apart. Make crisscross pattern on top of each Cookie by pressing down with fork. Bake 9 to 11 minutes or until edges of Cookies begin to brown. Cool on baking sheet.
To make Filling: Heat creamer in top half of double boiler over medium heat until steaming. Pour hot creamer over chocolate chips in bowl, and let stand 30 seconds. Mix creamer and chocolate with wooden spoon until chocolate is melted, then whisk until smooth.
Spread 2 tsp. Filling on flat sides of 24 Cookies. Top with remaining Cookies.

Bake at 350 degrees F for 8-10 minutes or until edges begin to brown. Remove to wire racks to cool.
For frosting, melt chocolate and butter in a microwave or heavy saucepan. Add sugar and milk; mix well. Frost cooled cookies.

Baked Goodies
Many of us have fond memories of various foods from our childhood, while other good food memories come from later periods in our lives. Two of the cookies recipes in today’s offerings come from my mom’s mom, Lillian Longmuir Hallock. While both of my grandmothers’ places always smelled wonderful from all the great food they cooked, Grandma Hallock’s cookies were something to really look forward to.
When I was growing up, my family (parents, sister, brother and I) lived in New York (state, not city). I’d been home sick with the flu, while my sister had gone to school. By late afternoon, the skies turned grey. My grandmother had come to our house with a batch of her peanut butter cookies and oatmeal cookies. After my sister got home from school, just ahead of the rain, my grandmother regaled us over stories of her youth while we had tea and cookies. One of her stories entailed being introduced to one of her teacher’s friends, whose stage name happened to be Buffalo Bill Cody. So I’m always reminded of that when I bake either cookie recipe.
PEANUT BUTTER COOKIES


This was one of my grandmother's recipes, along with the oatmeal cookie recipe that follows. You can find them in my e-cookbook, Off The Wall Cooking.
1/2 C butter
1/2 C peanut butter
1/2 C sugar
1 egg, well beaten
1 1/4 C flour
3/4 tsp. soda
1/2 tsp. baking powder
1/4 tsp. salt
Cream butter & peanut butter together. Add sugar gradually & cream thoroughly. Add egg. Sift flour once before measuring. Sift flour, soda, baking powder & salt together & add to creamed mixture. Chill dough well, then form into balls the size of walnuts. Place balls on lightly greased baking sheet. Flatten with fork dipped in flour, making criss-cross pattern. Bake at 375 degrees for 10-12 minutes.

There’s also a story that goes along with the Peanut Butter Pie. I’d driven cab for several years. One Friday afternoon, I got a call to pick up a single dad from the store. When I dropped him off, his son and daughter came out of the trailer to help bring in the groceries.
“Did you remember to get the stuff for the peanut butter pie?” his daughter asked. They were taking it to an early Thanksgiving gathering that weekend.
“Sure did,” he answered.
“Peanut butter pie?” I asked, as we finished unloading the groceries. “How do you make that?”
“With peanut butter, confectioner’s sugar, and a few other things,” came the answer.
The following week, I managed to pick the dad up again. This time, I managed to get the ingredients: pie crust, peanut butter, confectioner’s sugar, cream cheese and Cool Whip. It wasn’t until the third (and final) time I picked him up in as many weeks that I got the exact amounts. He used 1/3 cup each of peanut butter and sugar, both of which I upped to 1/2 cup each.
8-ounce tub of Cool Whip (see note)
8-ounce block of cream cheese (see note)
1/2 cup peanut butter (smooth is preferable)
1/2 cup confectioner's sugar
Pie crust (see note)
Put Cool Whip, cream cheese, peanut butter and sugar in a large mixing bowl. With beaters, beat on high. Pour into pie crust, smooth out, and freeze for 1 hour.
Note: Cool whip (or store equivalent) can be fat-free. Cream cheese can be regular cream cheese or the 1/3 less fat kind, but do not use fat free, as the pie won't set up right. I usually use a store-bought graham cracker crust for the pie, which is what the man used to make this. However, you can also use an Oreo cookie crust.
GINGERBREAD
Sweeten the season with our gingerbread.
Whoever first posted this (probably on one of the emailing lists I was on, years ago), added, "I LIKE MINE TOPPED WITH A DOLLOP OF COOL WHIP!" The recipe starts, “This simple recipe is the perfect holiday dessert, especially when topped with yogurt or fresh fruit. Just grab a fresh box of ARM & HAMMER® Baking Soda- an important ingredient for great baking and prepare a treat for the whole family.”
INGREDIENTS:
1 1/2 cups sifted all-purpose flour
1 teaspoon Baking Soda
1 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup vegetable shortening
1/2 cup sugar
1 egg
1/2 cup light molasses
3/4 cup boiling water
DIRECTIONS:
Sift together flour, Baking Soda, ginger and salt. Using an electric mixer, cream shortening in large bowl until fluffy. Add sugar gradually, beating after each addition. Beat in egg thoroughly; blend in molasses. Gradually stir dry ingredients into creamed mixture. Beat thoroughly. Stir in water. Turn into greased and floured 8-inch square baking pan. Bake in a 350-degree oven 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan 10 minutes; remove from pan and cool on rack. Makes one 8-inch square cake. Cut into 16 servings.

I first found the recipe that this morphed from in an old, long-since-lost cookbook. Since losing the cookbook, the recipe has changed to this version. I've had numerous friends and relatives rave over this. One lady I knew said that it was one of the few bread recipes that could almost double as dessert.
1 cup milk (or soy milk)
1/2 cup (1 stick) margarine
1/2 tsp. salt
2-3 eggs
1 cup warm (not hot) water
2 Tablespoons honey
2 packages yeast
6 – 7 cups flour
3/4 – 1 cup margarine, melted
2 – 3 cups cinnamon sugar
Heat milk to almost scalding, stirring fairly constantly so that it doesn't burn. Remove from heat and place in a large bowl. Add ½ cup margarine, and stir until melted. Let milk and margarine cool.
Meanwhile, in a small bowl, place very warm water, add honey and yeast, then stir to dissolve. Let stand for 5 – 10 minutes.
Add salt to milk, then add yeast and water to milk. Add flour, 2 cups at a time, for a stiff, non-sticky dough. Knead for about 8 – 10 minutes.
Wash and dry bowl, then place dough in bowl. Place cooking oil (I recommend canola or olive oil) in hands, then rub over dough. Place clean towel over the top of bowl and allow dough to rise until almost double, about an hour.
Take 3 loaf pans and spray with cooking spray. Take dough out and divide into thirds.
Melt ¾ – 1 cup margarine. Set aside.
With a floured rolling pin, roll out first third of dough. Pour some of the margarine over the bread and spread 1/3 of the cinnamon sugar over the dough. Roll dough, then place in loaf pan with the bread-seam down. Repeat with other two thirds. Place towel over all three loaves and allow to rise again, approximately one hour.
Pre-heat oven to 350 degrees. Then, removing towel, bake loaves for 45 – 50 minutes. Allow to cool for about 15 minutes on cooling rack.
ROCKY ROAD CAKE
I was taking a speech class at a local junior college. One week we had to give a demonstration speech; one lady demonstrated how to make this cake, passing out copies of the recipe along with pieces of cake. It’s absolutely delicious. The icing can be used on almost any kind of cake; it would be really good on carrot cake! This can also be found on in my ebook, Off the Wall Cooking.
Cake
1 cup chopped nuts
1 cup raisins
1 cup mini-marshmallows
6-oz package chocolate chips
4 eggs
1 cup mayonnaise
1 cup water
1 package (18.25 oz) Devil’s Food cake mix w/pudding
Grease & flour 2 9” pans. Preheat oven to 350 degrees.
Mix first four ingredients in medium-size bowl.
In large bowl at low speed, mix cake mix, eggs, may & water until blended. Increase speed to medium & beat for 2 minutes. Stir in nut mixture. Pour into greased & floured pan. Bake at 350 degrees for 50 minutes.
Cool in pan 15 minutes on cooling rack.
Icing
1 tsp. vanilla
8 oz. cream cheese
1 stick butter
1 box confectioners sugar
Place ingredients in bowl & cream together. When cake is cool, ice. ENJOY!

CITRUS TRIO BUTTER DIPPING COOKIES
This recipe is from the Food Network's Melissa d'Arabian.
Prep Time: 30 min; Cook Time: 10 min; Level: Easy; Serves: approximately 80 cookies
Ingredients
1 cup unsalted butter
4 ounces cream cheese
1 cup sugar
3 tablespoons milk
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
Dash salt
1 lime, zested
1 orange, zested
1 lemon, zested
Directions
Preheat the oven to 350 degrees F.
Add the butter, cream cheese and sugar to the bowl of a stand mixer. Beat on medium-high speed until creamy, about 1 minute. Add the milk and vanilla and mix until blended.
In a separate bowl, whisk together the flour, baking powder and salt. On the lowest speed, gradually add the flour mixture into the butter mixture, just until blended. Divide the dough into 3 bowls, and gently stir in the different zests among the bowls, making 3 different citrus doughs.
Roll the dough into a long 1/2-inch in diameter rope by hand. Cut the dough into 2-inch lengths and arrange them on a cold ungreased cookie sheet. Bake for 12 to 14 minutes, or until golden brown.
Remove from the oven and let cool on the cookie sheet for a few minutes before removing with a spatula to cool completely on baking rack. Serve with tea or coffee, or just nibble...addictive!
Cook's Note: To butter cookie purists: these are also delicious without the zest!
Vegan Variation:
1 cup margarine (2 sticks)
4 ounces vegan cream cheese
1 cup sugar
20 sprays imitation butter flavor (recommended: I Can't Believe it's Not Butter)
3 tablespoons soy milk

Remove from the oven and let cool on the cookie sheet for a few minutes before removing with a spatula to cool completely on baking rack. Serve with tea or coffee, or just nibble...addictive!

Bake for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.
Glaze:
Combine 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

In a small bowl, combine the cake mix, egg, cocoa, cream cheese, and milk until well blended. The Batter Will Be Thick. Stir in the chips. Drop by tablespoonfuls 2 inches apart onto a greased baking sheet. Bake at 350 F for 14-16 minutes or until a toothpick inserted comes out clean. Makes 1 dozen cookies.
GRANDMA'S PEANUT BUTTER COOKIES

1/2 C butter
1/2 C peanut butter
1/2 C sugar
1 egg, well beaten
1 1/4 C flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
Cream butter and peanut butter together. Add sugar gradually and cream thoroughly. Add egg. Sift flour once before measuring. Sift flour, soda, baking powder and salt together and add to creamed mixture. Chill dough well, then form into balls the size of walnuts. Place balls on lightly greased baking sheet. Flatten with fork dipped in flour, making criss-cross pattern. Bake at 375 degrees for 10-12 minutes.
GRANDMA'S OATMEAL COOKIES
Another one of Grandma Hallock's specialties. This can also be found in Off The Wall Cooking.
1 C flour
1 C brown suar
3 C quick cooking oatmeal
1 C butter or margarine
1/4 C boiling water
1 1/2 tsp. baking soda
Mix flour and brown sugar. Add oatmeal; stir. Melt butter; add to dry ingredients. Mix baking soda into boiling water; add to other ingredients, stirring well. Place batter into loaf pan, lined with aluminum foil and place in freeze for several hours. Slice and bake at 375 degrees for 10 minutes.
CITRUS TRIO BUTTER DIPPING COOKIES
This recipe is from the Food Network's Melissa d'Arabian.
Prep Time: 30 min; Cook Time: 10 min; Level: Easy; Serves: approximately 80 cookies
Ingredients
1 cup unsalted butter
4 ounces cream cheese
1 cup sugar
3 tablespoons milk
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
Dash salt
1 lime, zested
1 orange, zested
1 lemon, zested
Directions
Preheat the oven to 350 degrees F.

Roll the dough into a long 1/2-inch in diameter rope by hand. Cut the dough into 2-inch lengths and arrange them on a cold ungreased cookie sheet. Bake for 12 to 14 minutes, or until golden brown.
Remove from the oven and let cool on the cookie sheet for a few minutes before removing with a spatula to cool completely on baking rack. Serve with tea or coffee, or just nibble...addictive!

Vegan Variation:

Just Desserts
We all know that we need to eat good, solid meals: chicken, fish, and lean beef (if we're so inclined), good vegetarian meals, breakfast, lunch and dinner with plenty of nutritian.

Squash Pie
This is from Grandma Hallock. She wrote, "I was given several large yellow winter squash by Grandma Carpenter & Grandma said, 'Make pumpkin pie' & I did. They were our favorite from then on."
2 T butter
3/4 C sugar
2 eggs
1/2 tsp. salt
1/4 tsp.cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1 C mashed yellow winter (hubbard) squash
1 1/4 C milk
Cream butter. Add sugar & eggs. Mix well. Add rest of ingredients. Line 9” pie plate with crust. Pour filling into unbaked pastry shell. Bake at 375 degrees for 1 hour. Serve with whipped cream
Cranberry Pie
Dad sent this in a letter dated "18 No 79". He wrote, "Here is a recipe for a pie. 1st the way it was in the paper and the way I made it."
2 T cornstarch
1 C sugar
1/4 tsp. salt
1 1/4 C hot water
1 C raisins
1 T butter
2 C cranberries
Pie crust
Blend 1st four ingredients & cook in double boiler until thick. Add next 3 ingredients & cook 10 minutes. Put in pie shell & bake at 450 degrees for 20-30 minutes, covering pie with foil for the first 10-15 minutes. (Crust can be any kind you want.)
Variation
2 T cornstarch
1/4 C honey + 1/4 C molasses
1/4 tsp. salt
1 C raisins
1 T margarine
1 1/2 C cranberries + 1 C canned cranberries (kind with berries in sauce)
1 1/4 C hot water
Pie crust
Make as above.
Egg Nog Pumpkin Pie
1 C canned eggnog
1 egg
18 oz. can pumpkin pie filling
9" pie crust
Preheat oven to 450 degrees. In large bowl, combine egg nog, egg & pie filling; blend well. Pour into crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake 50 minutes longer or until knife inserted near center comes out clean. Garnish with whipped cream.
Peach Pie
4 C peaches, cut up
1 - 1 1/4 C sugar
3 T unbleached flour
dash salt
2 T butter
1 unbaked pie shell and lattice top
Arrange peaches in unbaked pie shell. Mix sugar, flour & salt. Sprinkle over peaches. Dot with butter. Cover with lattice top. Bake at 425 degrees for 30-40 minutes.
Peanut Butter Cookies
One of Grandma Hallock’s cookie recipes.

Chocolate Cream Pie
The first time I made this pie, I was 15 and wanted to impress a boyfriend. I did, but not the way I’d planned: the crust came out tasting like under-cooked pizza dough, I burned the chocolate pudding, and the whipped cream came out almost to butter. Hmmm...

1 large package chocolate pudding(not instant)
whipped cream
Cook pudding according to package directions. Pour into baked pie crust. White cream & place on pie. Chill.

Now, Eat Your Veggies!
I have to admit, I love veggies.
There, I said it. And while I do tend to favor some of them more than others, I'm willing to give most veggies a try at least once. Who knows where one's next favorite will come from?
If you're like me, I think you'll find these a nice variety to get you started. And not to worry: I'll post more in the future.
Baked Butter Carrots
These are from my Grandma Hallock, who was a fantastic cook. She wrote, “Good with Veal Birds (Beef Rolls).” Eat & enjoy!
2 1/2 lbs. carrots
2 T oleo or butter
dash of pepper
1 T salt
1 1/2 tsp. sugar
2 tsp. lemon juice
Peel carrots. Cut into lengthwise slices. Put them & rest of ingredients into casserole. Cover & bake at 275 degrees for 3 hours. Uncover & brown on top for 15 minutes. Serves 6.
Sweet Potato Soufflé
My mom’s recipe. Really good with baked ham.
4-5 sweet potatoes
1 small can pineapple
2 T orange juice concentrate
cinnamon
1/2 C brown sugar
1 egg
1 C nuts
1/2 tsp. salt
dash pepper
9 large marshmallows
Peel & dice sweet potatoes, place in pan of water, and cook until tender. Mash & add other ingredients except marshmallows. Put in square pan, cut in 9 squares & place 1 marshmallow in each square. Bake at 350 degrees for 10 minutes.
Onion Supreme
My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.
2 leeks (discard green), sliced thin
4 bunches scallions (discard green), sliced thin
2 cloves garlic, sliced thin
3-4 yellow onions, sliced thin
1 stick butter or margarine
20 small white onions
1 1/2 C half & half
Melt butter over low heat & sauté leeks, scallions, garlic & yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet & pour in half & half. Cook over low heat for 10 minutes more & serve.
Jason’s Home Fries
This is another of J’s inventions. He fixed this on one of his many trips back home.
3-4 potatoes, scrubbed, not peeled
3-4 T butter or oil (or both)
1 pepper (red, green or yellow), diced
1 onion, chopped
1 clove garlic, minced (optional)
Cut potatoes across (not length-wise). Heat oil or butter. Add potatoes, onions, pepper & garlic. Cover, cook over medium heat, turning occasionally with a spatula, until brown & crusty.
Jean’s Special Potatoes
Jean and I used to spend many hours on the phone together. One afternoon, we spent the better part of 30 minutes talking about food. I told her about Dad’s Onion Supreme; she, in turn, gave me this recipe.
8-10 potatoes
8 oz. cream cheese
8 oz. sour cream
1/2 C butter
2 tsp. chives
Peel & cook potatoes. Whip cream cheese & add potatoes. Mix sour cream, butter & chives. Add to potato mix. Cover & chill overnight (or several hours). Put in greased 2-quart casserole & cover; bake in oven at 350 degrees for 1 hour.

My dad came for a week at Christmas, 1987. He fixed this to go with Christmas dinner, along with several other veggies. The day I drove him to Tampa International to fly back to New York, we went for coffee at a shop in the airport. When I asked for a copy of this, he grabbed a paper napkin and wrote down the recipe. It’s a great way to fix onions; I’ve always had onions in things, but never as a side dish. However, this is incredibly easy, as well as fantastic.
2 leeks (discard green), sliced thin
4 bunches scallions (discard green), sliced thin
2 cloves garlic, sliced thin
3-4 yellow onions, sliced thin
1 stick butter or margarine
20 small white onions
1 1/2 C half & half
Melt butter over low heat & sauté leeks, scallions, garlic & yellow onions for 45 minutes. Meanwhile, cook white onions in enough water to just barely cover. Add white onions (after 45 minutes) to skillet & pour in half & half. Cook over low heat for 10 minutes more & serve.
Jason’s Home Fries
This is another of J’s inventions. He fixed this on one of his many trips back home.
3-4 potatoes, scrubbed, not peeled
3-4 T butter or oil (or both)
1 pepper (red, green or yellow), diced
1 onion, chopped
1 clove garlic, minced (optional)
Cut potatoes across (not length-wise). Heat oil or butter. Add potatoes, onions, pepper & garlic. Cover, cook over medium heat, turning occasionally with a spatula, until brown & crusty.
Jean’s Special Potatoes
Jean and I used to spend many hours on the phone together. One afternoon, we spent the better part of 30 minutes talking about food. I told her about Dad’s Onion Supreme; she, in turn, gave me this recipe.
8-10 potatoes
8 oz. cream cheese
8 oz. sour cream
1/2 C butter
2 tsp. chives
Peel & cook potatoes. Whip cream cheese & add potatoes. Mix sour cream, butter & chives. Add to potato mix. Cover & chill overnight (or several hours). Put in greased 2-quart casserole & cover; bake in oven at 350 degrees for 1 hour.

Beef up that meal!
I wasn't always a vegetarian. Even after becoming a vegetarian, those in the house with me have enjoyed meat. Therefore, I've managed to collect (and invent) meat recipes over the years. Here are a few with beef in them.
BEEF STEW
One of my inventions; the recipes I had for stew seemed too bland.
2-3 lbs. stewing beef
3 T oil
2 C water
1 onion, chopped
8 oz. tomato sauce
1 C flour
1 T soy sauce
1 clove garlic, minced
4 carrots, cut up
1 large potato, peeled & cut up
6 oz tomato paste
4 T vinegar
3 T honey
salt & pepper
Cut beef into bite-sized pieces. Trim fat & dredge in flour & brown in oil. Add every-thing except carrots & potato. Cook 15 minutes. Add carrots & cook 15 more minutes. Add potato & cook 30 minutes. Add water as needed. Serve over noodles.
OVEN POT ROAST
This is from my Grandma Hallock. She added, "I sometimes add soy sauce to thicken & for color. This is an easy meal."
4 lbs. chuck beef (boneless)
1/3 C flour
1/4 C oil
2 C carrots, cut up
2 C onions, sliced
2 C celery, cut up
1 C tomatoes (opt.) or 1 small can tomato paste
1 tsp. salt
1/8 tsp. pepper
1 can mushroom soup (optional)
Wash & flour meat. Brown in fat on stove top (all sides of meat). Put in large casserole or Dutch oven. Cook at 400 degrees for 3 1/2 - 4 hours. Put vegetables around. Last 1/2 hour, add soup. Add 1 T cornstarch dissolved in 1/2 C water to thicken gravy (if necessary). Serves 6.

Another one of Grandma Hallock’s recipes. She wrote, "Made these a lot when we were young. Kids loved them. Used flank steak." She also sent a recipe for Baked Butter Carrots which, she also wrote, are "good with Beef Rolls."
1 1/2 lbs. flank steak, sliced thin
1 egg
1 tsp. salt
1/2 C boiling water
1/2 tsp. onion flakes
2 tsp. lemon juice
3/4 C bread crumbs
3/4 tsp. poultry seasoning
flour
1/8 tsp. pepper
butter for browning
Wash meat, trim fat. Cut into 6 slices, making them as square as possible. Beat egg. Add crumbs & seasonings. Place in center of pieces of meat, then pin 4 corners of meat with toothpick or tie with string. Flour them, then brown in butter. Add 2 T flour to thicken sauce around meat. Put in casserole. Pour boiling water over it. Cover & bake in oven at 275 degrees for 3 hours or 300 degrees for 1 1/2 hours. Serves 6.
BEAN BURGER
The kids had this one evening when I had a class to go to; they loved it.
1 1/2 lbs. hamburger
2 T mustard (or to taste)
2 cans baked beans
2 T brown sugar (or to taste)
Brown hamburger. Drain grease, then add beans, mustard & brown sugar. Heat thoroughly. May be eaten on hamburger buns, taco shells, or plain.
HAMBURGER SPECIAL
One of my variations of the good, ol’ hamburger. One-half diced yellow pepper may be added along with the red and green peppers, if desired.
2 lbs. hamburger
1 - 2 carrots, peeled & cut into rounds
1/2 green pepper, diced
1/2 red pepper, diced
1 small onion, diced
1 package dry onion soup mix
Mix all ingredients together & form into 8 patties. Cook immediately or freeze separately. Serve on hamburger buns.
